Queste istruzioni per l'uso e la
manutenzione sono inerenti al
seguente modello di macchina:

- Macchina per tritare, sminuzzare,
omogeneizzare, qualsiasi tipo di
verdura, carne, pesce e formaggi; per
montare creme, panna e salse in
genere. Per le sue caratteristiche
progettuali e costruttive, può essere
istallata in un qualsiasi Esercizio
commerciale o di ristorazione, ma non
in ambito industriale.
La targa di identificazione è fissata sul
retro della macchina, sul lato sinistro,
in prossimità del foro di uscita del cavo
di alimentazione, ed è configurata
come in figura 1.

These instructions for use and
maintenance apply to the following
model:
- CUTTER.
This model is available in the following
versions:
- COMPACT L3
- IDEAL L5 - L5 2V.
- PROFESSIONAL L8 - L8 2V.
- The machine is used for mincing,
chopping or homogenizing any type of
vegetable, meat, fish and cheese and
for whipping cream, mixing sauces or
preparing condiments in general. On
account of its design and features, it
can be installed in any workshop and
used by commercial operations but it is
not designed for industrial use.
The identification plate is attached at
the rear of the machine on the left-
hand side, close to the outlet of the
power cable. The data indicated in the
identification plate are as follows:

für den industriellen Gebrauch.
Das Identifikationsschild (s. Abb. 1)
befindet sich auf der linken Seite der
Maschinenrückwand, in der Nähe des
Speisekabelaustrittes.

1.3 USES OF THE MACHINE
This machine is a high-performance
cutter suitable for mincing, chopping
and homogenizing all types of
vegetables, meats and cheeses and
for whipping cream, mixing sauces
and mayonnaise and condiments of
any kind.
1.3 EINSATZBEREICHE
Diese Maschine ist ein qualitativ
hochwertiger Cutter zum Zerkleinern,
Hacken und Homogenisieren von
Gemüse, Fleisch und Käse, zum
Zubereiten von Cremes, Schlagsahne,
Mayonnaise und Saucen.

1.4 DOTAZIONE A CORREDO ED
ACCESSORI SPECIALI
L'allestimento di base della macchina,
prevede la fornitura dei seguenti
dispositivi:
- n. 1 Mozzo con lame liscie;
- n. 1 Paletta in legno per togliere il
prodotto lavorato dalla vasca;
- n. 1 Pietra smeriglia per affilare le
lame;
- n. 1 Copia del catalogo delle parti di
ricambio con disegno esploso;
- n. 1 Copia del manuale di istruzioni
per l'uso e la manutenzione;
- n. 1 Certificato di garanzia da far
convalidare dal rivenditore e da inviare
entro 8 giorni alla Casa Costruttrice.
1.5 DISPOSITIVI DI SICUREZZA -
ELETTRICI E MECCANICI
Questa macchina, come tutti i nostri
prodotti è stata progettata e realizzata
per offrire la massima sicurezza
operativa congiuntamente alle migliori
prestazioni, facilità d'uso ed elevata
affidabilità. Tutti i dispositivi di
sicurezza sono integrati nella struttura
della macchina per assicurarne il più
elevato livello di affidabilità ed
inviolabilità.
- La macchina è dotata di
microinterrutori di sicurezza che ne
bloccano il funzionamento se il
coperchio (D - Figura 2), non è
correttamente posizionato. Tali
dispositivi, sono posti a protezione
delle mani dell'operatore, affinché
anche con azione volontaria non
possa raggiungere gli organi da taglio
in movimento.
I comandi di marcia ed arresto
attivano le corrispondenti funzioni
della macchina attraverso una
interfaccia di comando dotata di un
trasformatore di isolamento (CEI 14-6)
a bassa tensione di sicurezza (24 V)
che alimenta un contattore
elettromagnetico che provvede
all'avviamento della macchina
attivando il circuito di potenza.
Tale circuitazione impedisce
l'avviamento spontaneo dopo ogni
interruzione o variazione della
tensione di alimentazione, rendendo
necessario un comando volontario di
avviamento (riarmo), al fine di
prevenire ogni condizione di pericolo
dovuta al riavviamento spontaneo
conseguente al ripristino della
tensione di rete. I comandi sono
protetti contro l'azionamento
accidentale.
- Protezione termica del motore.
- Protezione mediante fusibile del
circuito ausiliario a bassa tensione.
L'impianto elettrico è realizzato in
conformità delle norme europee CEI
EN 60204-1 (CEI 44-5 § 44-6
Fascicoli 2119 E &1364).
1.4 SUPPLIED MATERIALS +
SPECIAL ACCESSORIES
The standard equipment supplied with
the machine includes the following:
1 hub with smooth blades
1 wooden spatula for removing
products worked in the mixing tub
1 grinding stone for sharpening the
blades
1 copy of the spare parts catalogue
with exploded-view diagrams
1 copy of the instructions manual for
use and maintenance
1 warranty certificate - to be validated
by the retailer/agent and returned to
the manufacturer
within 8 days.
1.5 ELECTRICAL AND
MECHANICAL SAFETY DEVICES
Like all other products manufactured
by Us, this machine was designed and
constructed to ensure maximum safety
during operation together with high
levels of performance, simplicity in
operation and a high degree of
reliability. All safety devices are
incorporated in the structure of the
machine to ensure a high level of
reliability and inviolability.
The machine is fitted with micro
switches, which will impede operation
if the cover (D - fig.2) is not positioned
correctly. These devices are used to
protect the operator's hands in such a
way that, even if a deliberate attempt
is made to bring the hands into close
contact with the cutting parts in
movement, access to this part of the
machine will not be possible.
The start and stop controls switch the
machine on or off through a command
interface equipped with a low-voltage
(24V), safety, insulation transformer
(CEI 14-6), which feeds an electro-
magnetic contactor that starts the
machine by switching on the power
circuit.
This type of circuitry impedes
spontaneous starting after every
interruption or variation of the power
supply voltage, making it necessary to
have voluntary start commands
(resetting) so as to prevent any
dangerous situation caused by
spontaneous re-starting when mains
voltage is supplied to the machine.
The controls are protected against
accidental use.
- Thermal protection of the motor.
- Protection by means of a fuse in the
low-voltage auxiliary circuit.
The electric system is designed in
conformity with European regulations
CEI EN 60204-1 (CEI 44-5 § 44-6
sections 2119 E & 1364).
- The mechanical safety devices,
incorporated in the structure of the
machine to provide the highest
possible degree of intrinsic safety and

Zur Standardausstattung der
Maschine gehören:
- 1 Einsatz mit glatten Messern
- 1 Holzpalette, um das fertige Produkt
aus der Wanne zu nehmen
- 1 Schleifstein zum Schärfen der
Klingen
- 1 Kopie des Ersatzteilekataloges mit
Explosionszeichnung
- 1 Kopie des Betriebs- und
Wartungshandbuches
- 1 Garantiezertifikat, das vom Händler
gestempelt und binnen 8 (acht) Tagen
an den Hersteller geschickt werden
muß.
1.5 ELEKTRISCHE UND
MECHANISCHE
SICHERHEITSVORRICHTUNGEN
Wie alle unsere Produkte wurde auch
diese Maschine nach dem Stand der
Technik und den anerkannten
sicherheitstechnischen Regeln gebaut,
um hohe Leistungen, Zuverlässigkeit,
einfache Benutzung und maximale
Sicherheit bei der Bedienung
gewährleisten zu können.
Alle Sicherheitsvorrichtungen sind in
die Maschinenstruktur integriert,
sodaß sie zuverlässig und gut
geschützt sind.
- Sicherheits-Mikroschalter schalten
die Maschine aus, wenn der Deckel
(D- Abb. 2) nicht richtig positioniert ist.
Diese Vorrichtungen schützen die
Hände des Bedienungsmannes, damit
dieser die sich bewegenden
Schneidelemente auch nicht gewollt
erreichen kann.
Die Start-/Stop-Tasten aktivieren die
entsprechenden Maschinenfunktionen
über eine mit einem
Isolationstransformator (CEI 14-6) mit
24V Niederspannung ausgestattete
Steuerschnittstelle, die ein
elektromagnetisches Kontaktglied
speist, das die Maschine durch die
Aktivierung des
Leistungsstromkreises einschaltet.
Diese Schaltung verhindert ein
selbsttätiges Wiedereinschalten nach
einer Unterbrechung oder Änderung
der Speisespannung, und in diesem
Fall ist ein neuerlicher Startbefehl
erforderlich, sodaß keine Gefahr durch
ein durch die Wiederherstellung der
Netzspannung automatisches
Wiedereinschalten besteht. Die
Steuereinrichtungen sind gegen
unbeabsichtigte Betätigung geschützt.
- Motorschutzschalter.
- Schutz des Hilfsstromkreises mit
Niederspannung durch
Schmelzsicherung.
Die elektrische Anlage entspricht den
europäischen Normen CEI EN 60204-
1 (CEI 44-5 § 44-6 Faszikel 2119 E &
1364).

- I dispositivi di sicurezza di tipo
meccanico, integrati nella struttura
della macchina per conferirle il più
elevato grado di sicurezza intrinseca
ed inviolabilità controllabile, sono i
seguenti:
- Il coperchio (D - Figura 2) con foro
per introduzione condimenti, inferiore
a 12 mm (E - Figura 2) che impedisce
l'introduzione delle dita all'interno della
vasca.
- Freno motore, che arresta la
macchina entro 2 secondi dallo
spegnimento, rendendo impossibile
raggiungere con le mani, le lame
ancora in movimento.
- Protezione del microinterruttore (F -
Figura 2); fa in modo che la macchina
funzioni solo se il coperchio è
perfettamente posizionato sulla vasca.
Gli elementi di sicurezza
menzionati, sono rispondenti alle
prescrizioni contenute nella norme
europee CEE 89/392 - 94/44 -93/68.

Lo schema elettrico della macchina è
realizzato secondo le prescrizioni
tecniche contenute nella norma CEI
EN 60204-1 - CEI 44-6 Fascicolo 1364
relativa agli equipaggiamenti elettrici
delle macchine industriali -Parte 2 -
Designazione dei componenti ed
esempi di disegni, schemi, tabelle,
ecc.

1 - Questa macchina di moderna
concezione è stata realizzata per
offrire elevate prestazioni con la
massima sicurezza per l'operatore.
2 - Prima di avviare la macchina è
indispensabile aver letto
attentamente e completamente
questo manuale di istruzioni.
3 - Il collegamento e la messa in
servizio della macchina deve essere
effettuato esclusivamente da
un'installatore civile specializzato ed
esperto, il quale deve preliminarmente
verificare mediante gli appositi
strumenti, l'efficacia dell'impianto di
messa terra al quale la macchina

- The cover (D - fig.2) with an aperture
for introduction of foodstuffs, the
diameter of which is smaller than 12
mm (E - fig.2) to make sure neither the
fingers nor the hands can enter the
tub.
- The motor brake, which stops the
machine within 2 seconds after the
machine is switched off, makes it
impossible for the hands to come
close to the moving blades.
- The micro switch (F - fig.2), which
makes sure the machine does not
start if the cover is not properly
positioned.
The safety measures and devices
mentioned above conform to
prescribed standards in
European regulations EEC 89/392 -
94/44 -93/68.
1.6 ELECTRIC WIRING
The electric wiring of the machine is
designed according to the technical
regulations in CEI EN 60204-1 CEI 44-
6 section 1364, which refer to
electrical parts and equipment in
industrial machinery cf. Part 2 -
Designation of the components and
examples of drawings, diagrams,
tables etc.

1- Diese Maschine entspricht dem
Stand der Technik und bietet neben
optimalen Leistungen und einen
maximalen Grad an Sicherheit für den
Bedienungsmann.
2 - Vor der Inbetriebnahme muß das
Handbuch aufmerksam und zur Gänze
durchgelesen werden.
3- Der Anschluß und die
Inbetriebsetzung der Maschine dürfen
ausschließlich von einem
spezialisierten Fachmann
vorgenommen werden, der vorab mit
den entsprechenden Instrumenten die
Erdungsanlage überprüfen muß, an

L'utilizzatore non deve mai in nessun
caso neppure tentare di provvedere da
solo alla riparazione della macchina
od alla rimozione di qualsiasi sua
parte, ma dovrà rivolgersi ad un centro
di assistenza specializzato nella
riparazione di tale genere di macchine.
5 - Non introdurre le mani o le dita o
qualsiasi altro elemento od utensile in
prossimità degli organi operatori sia
rotanti che mobili o qualsiasi parte in
movimento.
6 - Durante il funzionamento della
macchina è assolutamente proibito
tentare di aprire o sollevare il
coperchio, rovesciare o ribaltare la
macchina, aprire o togliere il carter di
protezione posto sul fondo. Tali
manomissioni possono causare
considerevoli danni alla macchina, al
prodotto in lavorazione, ed alle
persone.
7 - Durante il funzionamento, utilizzare
idonei mezzi di protezione individuale,
secondo le disposizioni emanate dagli
enti preposti alla sicurezza e dalla
direzione dell'azienda in cui la
macchina opera.
- Prima di iniziare a lavorare, serrare
bene le maniche attorno ai polsi
abbottonandole o fissandole in modo
sicuro.
- Togliersi la sciarpa e la cravatta che
penzolando che possono impigliarsi
nei posti più disparati.
- Tenere raccolti i capelli con
accessori opportuni.
- Togliersi l'anello, l'orologio, il
braccialetto ed altri accessori che
possono impigliarsi negli organi della
macchina.
- Utilizzare le calzature più idonee
all'ambiente di lavoro che le norme
antinfortunistiche, ovunque nel mondo,
prescrivono e raccomandano.
8 - La pulizia dell'area circostante la
macchina, costituisce un determinante
fattore di sicurezza.
Occorre mantenere costantemente
puliti ed asciutti sia la macchina che il
piano di lavoro che il pavimento,
rimuovendo con idonee attrezzature,
polvere, frammenti e residui diversi,
corpi estranei, ecc.

5- Do not introduce hands, fingers or
any object or tool into the machine
close to rotating or moving parts or
any mobile component.
6- To remove (from the inlet or outlet
openings) any residual substances
from the machine after it has been
used stop the machine, in the safe
condition, using the control START/
STOP/0 and proceed as required,
using a suitable wooden instrument
such as a spoon or spatula to remove
the residue remaining inside.
7- During operation of the machine it
is absolutely forbidden to raise or
remove the cover, upturn or tilt the
machine or open or remove the safety
housing located at the bottom. This
kind of action or improper handling
can seriously damage the machine
itself, whatever product is being
processed inside it and also the
operator or other persons.
- Before starting work button up tightly

- Remove scarves, ties or any other
loose garment that may become
entangled in any part of the
machinery.
- If you have long hair, use pins, a net
or any other accessory to keep it in
place.
- Remove rings, your watch, bracelets

workplace, as prescribed and
recommended by safety regulations in
every country in the world.
8- Cleanliness of the area
surrounding the machine is a further
and very important safety factor.

Schutzverkleidung des Bodens zu
öffnen oder zu entfernen, da dies eine
schwere Beschädigung der Maschine
sowie des Schnittgutes und
Verletzungen zur Folge haben kann.
7- Beim Arbeiten sind geeignete, den
Unfallverhütungsvorschriften und den
betriebsinternen Auflagen
entsprechende persönliche
Schutzmaßnahmen zu treffen.
- Vor Beginn der Arbeit Manschetten
gut zuknöpfen bzw. sicher befestigen.
- Das Personal darf keine offenen
langen Haare, lose Kleidungsstücke
(Schal, Krawatte, usw.) oder Schmuck
(Ringe, Armbanduhr, Armbänder,
Halskettchen, usw.) tragen. Es besteht
Verletzungsgefahr durch
Hängenbleiben.
- Den Unfallverhütungsnormen
entsprechendes und für den
Arbeitsplatz geeignetes Schuhwerk
tragen.
8- Sauberkeit am Arbeitsplatz ist ein
wichtiger Sicherheitsfaktor. Die
Maschine, die Arbeitsfläche und der
Boden um die Maschine müssen
immer frei von Staub,
Schnittgutresten, Fremdkörpern, usw.,
und trocken sein, da man auf feuchten
Stellen oder Gemüseresten
ausrutschen kann.
Ein sicheres Arbeiten ist nur an einem
gut beleuchteten Arbeitsplatz
gewährleistet.

9 - Sia per eseguire la pulizia della

potenza di presa su qualsiasi oggetto.
10 - Si deve considerare attentamente
che durante l'utilizzo di qualsiasi
macchina si possono correre alcuni
rischi: occorre tenerlo presente
costantemente.
Prima di iniziare qualsiasi lavorazione,
concentrare tutta la propria attenzione
su ciò che ci si accinge a fare.
Occorre essere estremamente attenti
e mantenere sempre vigile l'attenzione
e la prontezza dei riflessi: queste
sono condizioni fondamentali per
l'operatore.
Qualora la persona fosse soggetta ad
un qualsiasi malessere o
condizionamento fisico sfavorevole,
anche leggero, che possa ridurre il
grado di vigilanza, dovrà evitare di
mettere in funzione la macchina.
11 - Tutti i dispositivi di protezione e di
sicurezza della macchina, sia elettrici
che meccanici, devono essere
mantenuti in condizioni di perfetta e
costante efficienza.
Anche le targhe segnaletiche di
indicazione, raccomandazione e di
pericolo, non devono essere rimosse,
ma conservate in perfetta efficienza ed
al loro posto.
12 - Non azionare la macchina quando
si è sotto l'influenza dell'alcool, di
psicofarmaci o di droghe.
13 - Accertarsi sempre prima di
iniziare un ciclo di lavoro che i prodotti
da impiegare siano idonei per tipo,
qualità e dimensioni.
14 - Non eseguire il lavaggio e/o la
pulizia spruzzando l'acqua, sulla
macchina, ne immergerla in acqua od
altro liquido, per evitare il pericolo di
folgorazione od altri gravi danni.
15 - Non depositare pesi od oggetti
pesanti di qualsiasi tipo e genere sulla
macchina, ne salirvi sopra con il peso
del corpo.
16 - L'operatore dovrà possedere
almeno l'età minima prevista dalle
leggi sociali nell'ambito del lavoro ed
aver fruito della necessaria
preparazione tecnica almeno da
un'operatore più esperto che lo abbia
preliminarmente addestrato all'uso
corretto della macchina.
17 - Prima di procedere alla pulizia,
alla manutenzione od allo
spostamento della macchina, togliere
la spina dalla presa di alimentazione.
Se la presa di alimentazione è di tipo
europeo CEE, posizionare prima sullo
0/Zero/Off il comando

replacing disks, use soft but strong
five-finger gloves for protection. The
gloves should not drastically reduce
sensibility and should allow for firm
control over any objects handled.
10 - Always remember that whenever
any machine is used, certain risks may
continue to be present. Always bear
this mind !
Before starting any work concentrate
your attention on the operation you are
about to start performing.
Be careful at all times and look out
constantly for danger, keeping your
wits about you to ensure you do not
run any risks. This is of fundamental
importance for the operator.
If the operator is subject to any difficult
physical condition or may for any
reason whatsoever have dulled
reflexes or suffer (also temporarily)
from even the slightest form of malaise
that may cause reduced vigilance, he
or she must not use the machine.
11 - All protective and safety devices
(whether electric or mechanical)
installed in the machine must be kept
in perfect working order at all times.
The warning stickers and other
indications attached to the machine
must never be removed and always
kept visible and legible.
12 - Never use the machine if you are
under the influence of alcohol, have
taken psychotropic drugs or any other
substance or medicine that may alter
the normal state of vigilance.
13 - Before starting work always make
sure the products you are going to
introduce in the machine are suitable
with respect to their type, quality and
size.
14 - Do not wash and/or clean by
spraying water onto the machine and
do not place it in water or any other
liquid to avoid the risk of electrocution
and other serious damage.
15 - Do not place any heavy weight or
object on the surface of the machine
and do not stand or climb onto it for
any reason.
16 - Any operator must be of the
minimum age prescribed by law and
must have received (from another
experienced operator at least) the
appropriate technical training
regarding the machine before being
allowed to use it.
17 - Before performing cleaning
operations, maintenance or moving
the machine, remove the electric

12 - Niemals unter Einfluß von Alkohl,
Medikamenten oder anderen Mitteln,
die das Reaktionsvermögen
beeinträchtigen könnten, arbeiten.
13 - Vor Beginn des Arbeitszyklus
sicherstellen, daß das Gemüse vom
Typ, der Qualität und der Größe her
geeignet ist.
14 - Die Maschine immer erst dann
einschalten, wenn der Deckel gut
verschlossen wurde.
15 - Beim Reinigen und/oder Waschen
niemals Wasser auf die Maschine
spritzen oder diese in Wasser oder
andere Flüssigkeiten tauchen, da dies
eine schwere Beschädigung der
Maschine bzw. Stromschlaggefahr zur
Folge haben kann.
16 - Keine Gewichte bzw. schwere
Gegenstände jeder Art auf der
Maschine ablegen. Nicht auf die
Maschine klettern.
17 - Die Maschine darf nur von
Personen bedient werden, die das
gesetzlich vorgeschriebene
Mindestalter erreicht haben, und
vorher zumindest von einer im
Umgang mit der Maschine und
technisch erfahrenen Person
entsprechend unterwiesen wurde.
18 - Vor der Reinigung, der Wartung
oder dem Versetzen der Maschine
immer den Netzstecker herausziehen.

cable. Protect the cable against high

19 - The machine must not be used in
the open without adequate and
effective protection against the rain or
liquids sprayed from any direction.
Keep the machine away from any
source of heat.
Never place on or inside the machine
any cutting disk or other instruments
or accessories.
Do not use the machine close to
flammable liquids or gas.
20 - Do not allow children to tamper or
touch the machine.
21 - Do not use the machine for any
use (albeit similar) other than that
prescribed. Do not attempt to alter or
modify in any way any component of
the machine.

SECTION 2. INSTALLING THE
MACHINE
2.1 CHARACTERISTICS OF THE
SITE OF INSTALLATION
The machine does not require form of
anchoring to the work top or floor. Set
the machine in the most appropriate
manner at the chosen site of
operation. Bear in mind when
selecting the location the dimensions
of the machine itself and the type of
products to be processed, leaving
sufficient space for the operator or one
person to move freely around the
machine.
All the support feet located under the
base must rest on a solid, stable,
uniform and properly- levelled
surface.
Install close to the machine and in the
most convenient position a shunt

Flüssigkeiten geschützt ist. Die
Maschine vor Wärme bzw.
Hitzequellen schützen.
Schneideinsätze oder andere
Elemente bzw. Zubehörteile nicht auf
oder in der Maschine ablegen.
Die Maschine nicht in der Nähe von
entflammbaren Flüssigkeiten oder Gas
benutzen.
Kinder dürfen sich nicht in der Nähe
der Maschine aufhalten.
21 - Die Maschine niemals für andere
Arbeiten einsetzen, auch wenn diese
den bestimmungsgemäßen Arbeiten
ähnlich sind. Keine
Maschinenkomponenten verändern.

ABSCHNITT 2 - INSTALLATION
2.1 BESCHAFFENHEIT DES
AUFSTELLUNGSORTES
Die Maschine muß nicht am Boden
oder auf einer Auflage befestigt
werden. Bei der Aufstellung sind der
Platzbedarf der Maschine und der zu
verarbeitenden Produkte zu
berücksichtigen. Um die Maschine
herum muß auch ausreichend
Bewegungsfreiheit für den
Bedienungsmann und Platz für den
Durchgang einer Person sein.
Alle Stützfüßchen der Maschine
müssen gleichmäßig auf einem
ebenen und festen Boden ruhen.
In der Nähe der Maschine muß sich
ein Anschlußkasten oder eine
Abzweigung mit einer geeigneten
Steckdose, einem Stromschalter/
Strombegrenzer und vorzugsweise
auch mit einem hochempfindlichen
thermomagnetischen
Differentialschutz befinden.

la macchina lontano da qualsiasi fonte
di calore.
Non depositare sulla macchina ne
all'interno di essa, dischi da taglio od
altri elementi od accessori.
Non utilizzare la macchina in
prossimità di liquidi infiammabili o di
gas.
20 - Non permettete che i bambini
tocchino la macchina o possano
accedervi.
21 - Non impiegare la macchina per
nessun altro genere di lavorazione
ancorché similare a quelle previste.
Non modificare ne alterare alcuno
degli elementi componenti la
macchina.

The installation site must be properly
illuminated to facilitate working with
the machine. You should avoid setting
up the machine in places that are too
dark or where bright or excessive light
is likely to disturb you.
Make sure that nothing can fall onto
the machine or cause an obstruction
over the ventilation slits. This would
cause overheating with consequent
risks and danger for the operator and
would probably damage the machine
itself.
For the particular type of operation the
machine has to perform there must be
low levels of dust in the surrounding
environment. The level should not
exceed 0.03 g/cu.m (0.0012 oz/cu.m).

2.2 E L E C T R I C P O W E R
REQUIRED
Install the terminal board for mains
distribution close to the machine
without having to use running
extension leads, which are strictly
forbidden.
The power cable output coupling is
located at the rear of the machine and
has a section diameter suitable for the
installed power.
The maximum supply voltage variation
permitted must be lower than 5% with
respect to the maximum rated value of
400V. See the electric diagram.
Electrical connection of the machine to
the mains circuit must be carried only
by a qualified (civil or industrial)
installation technician with specific
experience or recognized specialist,
respecting all current technical and
safety regulations of the country where
the machine is used.

2.2 STROMBEDARF

Der Anschluß der Maschine an das
Speisenetz muß von einem
qualifizierten Fachmann mit
einschlägiger Erfahrung oder einem
anerkannten Spezialisten unter
Beachtung der im Aufstellungsland
geltenden technischen und
sicherheitsrelevanten Vorschriften
vorgenommen werden.
2.3 SICHERHEITSRELEVANTE
HIWEISE
Zusätzlich zu den von den für den
Unfallverhütungsschutz zuständigen
Behörden und den innerbetrieblichen
Sicherheitsvorschriften erlauben wir
uns, den für die Sicherheit
verantwortlichen und den für die
Bedienung der Maschine abgestellten

Il bocchettone di uscita del cavo di
alimentazione è posto sul retro della
macchina ed è di sezione idonea alla
potenza installata.
La massima variazione ammessa
della tensione di alimentazione deve
essere inferiore al 5 % riferito al
massimo valore nominale di 400 V. -
vedere lo schema elettrico allegato in
fondo.
Il collegamento elettrico della
macchina alla rete, deve essere
eseguito esclusivamente da
un'installatore civile o industriale
specializzato con specifica
esperienza, o da uno specialista
riconosciuto, rispettando tutte le
disposizioni tecniche e di sicurezza
vigenti nella nazione di installazione.
2.3 CONDIZIONI DI SICUREZZA E

With regard to safety, apart from the
conditions recommended by various
authorities that preside over this
particular area of industrial interest
and any regulations laid down by the
managerial department of the firm/
organization in which the machine is
used, we should like to draw the
attention of safety controllers and
operators to the following instructions
and warnings:
- Always wear suitable clothing when
working with this machine.
- While the machine is operating,
never bring your hands close to any
moving parts or other mobile parts,
whether totally or partially accessible,
and do not introduce hand or fingers
through any slit or inlet or outlet
opening in the machine.
- Do not perform any operation which
is not expressly indicated in the
descriptions of the operative cycles of
the machine.
- Always keep the work place and area
surrounding the machine clean and
free from any inconvenient obstacles,
using a rational approach to position
the products to be processed, finished
products and tools or accessories.
- Do not tamper with and do not alter
the mechanisms or degree of
effectiveness of safety devices
installed in the machine and, in
particular, do not alter or tamper with
the cover attachments, micro switches
or any other device or component in
the electric circuit.
- Any alteration, modification or
tampering with components of the
machine is in fact fraudulent action
and involves the assumption by the
party that performs such action of all
civil and penal liability with regard to
any possible damage to persons and/
or things that may derive from such
action.
SECTION 3. PREPARING THE
MACHINE FOR OPERATION
3.1 UNPACKING THE MACHINE
The machine is packed in a strong
carton box. Open this box from the
upper side, as indicated by the arrow,
remove the anti-impact materials and
raise the machine, holding it with both
hands at the bottom. Free the machine
from the protective nylon wrapping
and perform preliminary cleaning of
the external surface of the machine,
using a soft dry cloth.
3.2 S E T T I N G U P F O R
OPERATION
Transfer the machine to the place
where it is required for operation,
bearing in mind its size and the
dimensions of the containers for the
products to be processed and for
finished products, leaving a sufficient
space all around the machine for
movement.

Maschine installierten
Sicherheitsvorrichtungen, und im
besonderen den Verschluß des
Deckels, die Mikroschalter und andere
Vorrichtungen des Stromkreises nicht
beeinträchtigen.
- Wer Maschinenkomponenten
verändert oder beschädigt, trägt die
alleinige zivil- und
strafrechtliche Verantwortung für
mögliche Personen- und/oder
Sachschäden.
ABSCHNITT 3 - INBETRIEBNAHME
3.1 AUSPACKEN
Die Maschine wird in einem robusten
Karton verpackt geliefert. Den Karton
wie vom Pfeil angezeigt oben öffnen,
das Schutzmaterial entfernen, die
Maschine mit beiden Händen von
unten anfassen und anheben. Den
Nylonsack abziehen, und das Äußere
der Maschine mit einem weichen,
trockenen Tuch reinigen.
3.2 AUFSTELLEN
Die Maschine am gewünschten Ort
aufstellen, und dabei den Platzbedarf
der Maschine selbst
sowie der Behälter für das Gemüse
berücksichtigen, und ausreichend
Platz für den Bedienungsmann lassen.
Die Maschine muß auf einem ebenen,
stabilen und gleichmäßigen Boden
aufgestellt und nivelliert werden. Eine
Befestigung am Boden ist nicht
erforderlich.
3.3 MONTAGE DER SEPARAT
GELIEFERTEN TEILE
Die Maschine wird mit einem
geschliffenem Universal-
eventualmente predisposte dalla
direzione dell'ambiente in cui la
macchina opera, si ritiene utile
richiamare l'attenzione dei
responsabili della sicurezza,
dell'operatore e del personale addetto,
raccomandando l'adozione delle
prescrizioni di seguito elencate.
- Adottare ed indossare sempre
l'abbigliamento più idoneo al lavoro da
svolgere.
- Durante il funzionamento della
macchina, non avvicinare le mani a
nessun organo in movimento od altri
organi mobili accessibili del tutto od in
parte, ne introdurre altre parti del
corpo attraverso qualsiasi feritoia o
bocche di ingresso ed uscita del
prodotto.
- Non compiere manovre non
espressamente previste nel ciclo
funzionale della macchina e produttivo
d'insieme.
- Mantenere pulito e sgombro il posto
di lavoro e tutta l'area circostante la
macchina, disponendo con logica
intelligente sia i materiali da lavorare
che il prodotto finito e le attrezzature.
- Non manomettere ne alterare il
funzionamento o l'efficienza dei
dispositivi di protezione installati sulla
macchina e particolarmente il
fissaggio del coperchio, i
microinterruttori ed ogni altro
dispositivo anche a livello circuitale.
- Qualsiasi alterazione, modifica o
manomissione di elementi della
macchina, configura azione
fraudolenta con l'esclusiva
assunzione di ogni responsabilità,
civile e penale, in ordine a possibili
danni a persone e/o cose, da parte
di chi vi abbia provveduto.
SEZIONE 3 - MESSA IN OPERA
DELLA MACCHINA
3.1 DISIMBALLO
La maccina è imballata in una robusta
scatola di cartone. Aprire detta scatola
di cartone nella parte superiore,
indicata dalla freccia, togliere il
materiale antiurto e sollevare la
macchina afferrandola con entrambe
le mani nella parte inferiore. Liberare
infine la macchina dal sacchetto di
nylon protettivo e procedere alla
pulizia preliminare della parte esterna
mediante un panno morbido ed
asciutto.
3.2 PIAZZAMENTO IN OPERA.
Sistemare opportunamente la
macchina nel locale previsto,
considerando sia il suo ingombro che
quello dei contenitori delle verdure da
lavorare, e già lavorate, lasciando
tutt'intorno lo spazio opportuno. Il
basamento deve appoggiare su una
superficie solida, uniforme e ben
livellata. La macchina non richiede
alcun fissaggio al piano di appoggio.

3.3 INSTALLAZIONE DELLE PARTI
SMONTATE.
La macchina viene fornita con in
dotazione le lame affilate (A - Figura
4), con le quali si possono effettuare la
maggior parte delle lavorazioni. Esse
sono già correttamente posizionate
all'interno della vasca.
A richiesta, possono essere fornite
anche le lame dentate (B - Figura 4),
e/o le lame forate (C - Figura 4), per
eseguire lavorazioni più specifiche. In
questo caso, dette lame, si troveranno
all'esterno della macchina, racchiuse
nell'apposita scatola di protezione.
Per procedere alla sostituzione delle
lame, procedere come segue:
- Assicurarsi che la macchina sia
spenta, disinserendo l'interruttore
magnetotermico a muro e premendo il
pulsante di STOP/ARRESTO della
macchina stessa;
- Togliere il coperchio, facendolo
ruotare in senso antiorario (Figura 3);
- Adottare le opportune cautele,
indossando quanti morbidi ma con
buona presa, onde evitare un
accidentale contatto delle dita con le
lame affilate;
- Afferrare con una mano la parte
superiore del mozzo porta-lame,
quindi estrarlo con cautela;
- Riporre il mozzo estratto dalla
macchina, in posto sicuro, avendo ben
cura di proteggere le lame da
eventuali futuri contatti accidentali;
- Procedere all'inserimento del mozzo
porta-lame che necessita, avendo ben
cura che vada correttamente infilato
nell'albero motore e che, la lama
inferiore, sfiori il fondo senza toccarlo.
Nel caso che la predetta lama tocchi il
fondo, si rende necessario regolarne
l'altezza, procedendo nel modo
seguente:
- Nella parte superiore del mozzo
porta-lame, si trova una vite che
permette la regolazione dell'altezza
delle lame;
- Agendo su di essa, con un
cacciavite, in senso orario, si
provocherà un allontanamento delle
lame dal fondo della vasca; di
conseguenza, agendo su di essa in
senso antiorario, si provocherà un
avvicinamento delle lame al fondo
della vasca.
The base must rest on a solid, uniform
and properly levelled surface. The
machine requires no anchoring to the
supporting surface.
3.3 INSTALLATION OF
DISASSEMBLED PARTS
The machine is supplied with the
cutter blades (A - fig.4) (sharpened),
with which the user can perform most
of the operations possible with this
machine. The blades are already
positioned correctly inside the tub.
On request, GAM can also supply
toothed blades (B - fig.4) and/or bored
blades (C - fig.4) for more specific use.
If supplied, these blades will be
delivered outside the machine and
packed in their own protective carton.
To replace the blades, proceed as
follows:
- Make sure the machine is switched
off, by disconnecting the thermo-
magnetic switch in the main power
circuit (on the wall) and pressing the
STOP button on the machine itself.
- Take off the cover by turning it in the
counter-clockwise direction (fig.3).
- Be very careful so that fingers do not
come into contact with the sharp
blades. Wear protective gloves during
this operation. These should be soft
and yet strong enough to allow the
user to grip the blades securely.
- With one hand take hold of the upper
part of the blade support hub and
remove carefully.
- Put the blade hub in a safe place and
cover the blades in some way so that
accidental contact is not possible.
- Insert the blade hub required, making
sure it is correctly positioned on the
motor shaft and that the lower blade
rests at a minimum distance from the
bottom surface of the tub without
actually touching it.
If this blade touches the bottom of the
tub, its height must be adjusted. To
adjust the blade height proceed as
follows:
- In the upper part of the blade support
hub there is a screw which allows for
height adjustment.
- Use a screwdriver to turn this screw
(clockwise direction) and distance the
blades from the bottom of the tub. If
the screw is turned in the opposite
direction (counter-clockwise), the
blades will move closer to the bottom.
Schneideinsatz (A- Abb.4) geliefert,
mit dem die meisten Bearbeitungen
durchgeführt werden können. Dieser
Einsatz ist bereits korrekt im
Wanneninneren motniert.
Auf Wunsch kann auch ein Einsatz mit
gezahnten Schneiden (B - Abb.4) und/
oder ein gelochter Einsatz (C - Abb.4)
für spezifische Bearbeitungen geliefert
werden. In diesem Fall werden diese
Einsätze separat in einer Schachtel
verpackt mit der Maschine geliefert.
Auswechseln der Einsätze:
- Maschine ausschalten (den
thermomagnetischen Schalter an der
Wand ausschalten und die STOPtaste
der Maschine drücken).
- Den Deckel gegen den
Uhrzeigersinn drehen und abnehmen
(Abb. 3).
- Weiche Handschuhe, die ein gutes
Zugreifen gestatten, anziehen, um die
Hände zu schützen.
- Mit einer Hand den oberen Teil der
Einsatznabe anfassen und vorsichtig
herausziehen.
- Den Einsatz an einem sicheren Platz
ablegen und die Schneidmesser
entsprechend schützen.
- Den gewünschten Einsatz vorsichtig
in die Motorwelle einsetzen; die untere
Klinge darf den Boden nicht berühren,
muß sich jedoch unmittelbar über
diesem befinden.
Berührt die Klinge den Boden, ist ihre
Höhe wie folgt zu justieren:
- Am oberen Teil der Nabe befindet
sich eine Schraube zum Einstellen der
Schneidmesserhöhe.
Mit einem Schraubendreher im
Uhrzeigersinn drehen, bis die Klingen
weit genug vom Wannenboden
entfernt sind. Dreht man gegen den
Uhrzeigersinn, werden die
Schneidmesser wieder zum Boden hin
verstellt.

3.4 ESECUZIONE DEI
COLLEGAMENTI.
Nella sezioni 1.2 e 2.1, sono state
indicate sia le prescrizioni
fondamentali per l'installazione che i
valori della potenza assorbita dalla
macchina.
Il collegamento della macchina alla
rete elettrica deve essere eseguito
da un'installatore specializzato ed
esperto, dotato degli strumenti
tecnici necessari.
Per la determinazione dei parametri
dell'interruttore di sezionamento con
dispositivo di interblocco e del
protettore magnetotermico-
differenziale, attenersi alle prescrizioni
tecniche CEI - IEC ed alle disposizioni
tecniche vigenti nel paese di
installazione.
La spina di alimentazione della
macchina dovrà essere collegata ad
una apposita presa interbloccata, in
grado di fornire le prestazioni richieste,
indicate nella sezione 1.2.
La macchina con alimentazione trifase
deve essere collegata ad una presa di
sicurezza secondo la sequenza ciclica
delle fasi indicata sulla etichetta,
applicata in prossimità dell'estremità
del cavo di
alimentazione. La sequenza ciclica
delle fasi della presa di corrente
all'interno della cassetta di
distribuzione deve essere abbinata a
quella indicata sulla targhetta fissata al
cavo.
L'esatto abbinamento della sequenza
ciclica delle fasi della macchina con
quella della rete di alimentazione,
assicura il corretto senso di rotazione
del motore, evitando ripetuti interventi
di collegamento sulla spina ed esclude
possibili gravi danni derivanti
dall'errato collegamento.
Eseguire il collegamento adottando la
metodologia prescritta utilizzando il
sequenzioscopio.
NOTA - Il cavo di messa a terra di
colore giallo/verde deve essere
collegato allo spinotto specifico
contrassegnato con il simbolo di terra
e le sigle PE, secondo le norme CEI/
IEC.
Il collegamento del cavo di
alimentazione all'interruttore, deve
essere effettuato nel rispetto del
disegno applicato a fascetta sul cavo
di alimentazione stesso e di seguito
riportato per maggior chiarezza:
3.4 CONNECTIONS
Sections 1.2 and 2.1 describe the
fundamental operations for installation
and the values of absorbed power.
Connection of the machine to the
mains circuit must be carried out by
a specialized installation operator,
who must have all the technical
instruments required for this
purpose.
To determine the parameters for the
section switch with interlocking device
and the thermo-magnetic ground-fault
circuit interrupter refer to CEI - IEC
and technical regulations in force in
the country where the machine is
installed.
The connection plug must be
connected to an interlocked socket,
capable of providing the
characteristics indicated in section 1.2
of this manual.
Machines with three-phase power
supply must be connected to a safety
socket, according to the cyclical
sequence of the phases indicated on
the label, located close to the end of
the power cable of the machine.
The cyclical sequence of phases of
the socket inside the distribution box
must be atched with the sequence
indicated on the plate attached to the
cable.
The exact combination of the cyclical
sequence of phases of the machine
with that of the mains circuit ensures
the correct direction of rotation of the
motor and avoids the necessity to
repeat connection operations of the
plug and excludes any risk of serious
damage which may result from an
erroneous connection.
Carry out electrical connection, using
the methods described and also using
a sequence- meter.
N.B. The earth cable (yellow/green)
must be connected to the specific pin
marked with the earth-connection
symbol and codes PE as per CEI/IEC
standards.
3.4 ANSCHLÜSSE
In den Abschnitten 1.2 und 2.1 wurden
bereits die grundlegenden Regeln
bzw. Angaben für die Installation und
die Werte der Leistungsaufnahme der
Maschine angeführt.
Der Anschluß der Maschine an das
Stromnetz darf ausschließlich von
einem erfahrenen, qualifizierten
Fachmann mit der erforderlichen
technischen Ausrüstung
vorgenommen werden.
Für die Bestimmung der Parameter
des Trennschalters mit
Verblockungsvorrichtung und des
Differentialschalters sind die CEI-IEC-
Normen und die im Aufstellerland
geltenden technischen Bestimmugen
zu beachten.
Der Speisestecker der Maschine muß
an eine verblockte Steckdose
angeschlossen werden, die den
verlangten Leistungen entspricht
(siehe Abschnitt 1.2).
Die Maschine mit Dreiphasenspeisung
muß der auf der Etikette in der Nähe
des Endes des Speisekabels
angegebenen zyklischen
Phasensequenz entsprechend an eine
Sicherheitssteckdose angeschlossen
werden.
Die zyklische Sequenz der Phasen der
Steckdose im Anschlußkasten muß
mit der auf der am Kabel befestigten
Etikette angegebenen Sequenz
übereinstimmen.
Die exakte Übereinstimmung der
zyklischen Sequenz der Phasen der
Maschine mit jener des Speisenetzes
gewährleistet die korrekte
Drehrichtung des Motors, sodaß
wiederholtes Anschließen am Stecker
und eventuelle, auf falsche
Anschlüsse zurückzuführende
schwere Schäden vermieden werden
können.

BIANCO. Mantiene in moto il motore
sintanto che rimane premuto;
rilasciandolo il motore si arresta.
SECTION 4. USING THE MACHINE
4.1 DESCRIPTION OF THE
CONTROLS (fig.6 - fig.7)
The control panel is located on the
front of the machine (A - fig.2). The
panel is configured as follows:
A - GREY, STOP (OFF/
DISCONNECT) push-button. When
pressed this button will switch the
machine off.
B - GREEN, START (ON/CONNECT)
push-button. When pressed, the
machine will run continuously. In two-
speed machines, this button starts the
lower speed (fig.7).
B1 - GREEN, START (ON/
CONNECT) push-button. This button
will be found only in two-speed
machines and, when pressed, starts
the higher of the two speeds.
C - WHITE, START (ON) push-button.
This button keeps the motor running
as long as it is kept pressed. When
released, the motor will stop.

cipolla, mozzarella; fare la passata di
pomodoro, ecc.).

4.2 AVVIAMENTO OPERATIVO
DELLA MACCHINA
ATTENZIONE: IL MOZZO DELLE
LAME NECESSARIE ALLA

VERSARE IL PRODOTTO DA
LAVORARE.
- Inserire le lame più opportune per la
lavorazione da effettuare (Vedi Figura
7 e Paragrafo 4.1.1);
- Introdurre il prodotto la lavorare
all'interno della vasca. è buona norma
non caricare la vasca con eccessive
quantità di prodotto; il livello ottimale di
riempimento della vasca è
leggermente al di sopra della lama
superiore del mozzo. Nel caso di
prodotti liquidi, bisogna fare molta
attenzione che il livello non superi
l'altezza del tubicino posto al centro
della vasca.
- Agganciare il coperchio sulla vasca
avendo ben cura di far combaciare gli
inserti presenti nella parte superiore
della vasca stessa, con i fori di cui il
coperchio è provvisto.
ATTENZIONE: Il magnete situato
nella parte sporgente del coperchio,
deve combaciare perfettamente con il
sensore posto sulla colonnina, in caso
contrario la macchina non parte.
- Premere il pulsante di AVVIAMENTO
(B - Figura 6). Dopo alcuni secondi,
fermare la macchina con il pulsante di
ARRESTO (A - Figura 6) per verificare
il risultato ottenuto ed eventualmente
ripetere l'operazione; se per ultimare
la lavorazione, necessitano ancora
pochi secondi, è possibile utilizzare il
tasto di MARCIA di colorazione bianco
(C - Figura 6), che permette la messa
in funzione della macchina fintanto
che rimane premuto, una volta
rilasciato, la macchina si arresta
immediatamente.
- Una volta ultimata la lavorazione,
premere il pulsante di STOP/
ARRESTO e disinserire l'interruttore
magnetotermico a muro; a questo
punto si può provvedere a rimuovere il
coperchio (D-Figura 2), afferrandolo
con entrambe le mani e facendolo .
4.2 A R B E I T E N M I T D E R
MASCHINE
ACHTUNG - DER FÜR DIE ARBEIT

- Den für die Arbeit erforderlichen
Einsatz montieren (siehe Abb. 8 und
Abschnitt 4.1.1).
- Das Produkt in die Wanne geben.
Die Wanne nicht zu hoch anfüllen; der
optimale Füllstand liegt ein wenig über
der oberen Einsatzklinge. Werden
Flüssigkeiten eingefüllt, darf die Höhe
des Schlauches in der Wannenmitte
nicht überschritten werden.
Den Deckel einhaken; die Einsätze im
oberen Wannenteil müssen in den
Löchern des Deckels zu liegen
kommen.
ACHTUNG
Der Magnet im vorstehenden
Deckelteil muß den Sensor auf der
Säule berühren; andernfalls läßt sich
die Maschine nicht einschalten.
- Die STARTtaste (B - Abb. 6-7)
drücken. Die Maschine nach einigen
Sekunden durch Drücken der
STOPtaste (A - Abb. 6-7) anhalten,
das Schnittresultat kontrollieren, und
gegebenenfalls nochmals einschalten.
Fehlen für ein optimales Ergebnis nur
mehr wenige Sekunden, kann man die
weiße Intervallbetriebstaste (C - Abb.
6-7) drücken. In diesem Fall bleibt der
Motor nur so lange eingeschaltet, wie
die Taste gedrückt gehalten wird, und
bleibt mit dem Auslassen der Taste
sofort stehen.
- Die STOPtaste drücken und den
thermomagnetischen Wandschalter
ausschalten. Nun kann der Deckel (D -
Abb. 2) mit beiden Händen in
Pfeilrichtung (gegen den
Uhrzeigersinn) gedreht und geöffnet
werden (Abb. 3).
- Den Einsatz herausnehmen
(Abschnitt 3.3 beachten!), die Wanne
mit beiden Händen anfassen, gegen
den Uhrzeigersinn drehen und
abnehmen (Abb. 9).
- Das Schnittgut mit Hilfe der

CAUTION: THE HUB OF THE

INTRODUCING ANY FOODSTUFFS
INTO THE MACHINE.
- Insert the most suitable blades for
the type of work to be carried out (see
fig.7 and paragraph 4.1.1).
- Introduce the product to be worked
into the tub. It is best not to overload
the tub with excessive quantities of
any product. The level which should
not be exceeded is just above the
upper blade. In the case of liquids the
operator must always make sure that,
when introduced, the level of liquid
does not go above the full height of
the small tube located at the centre of
the tub.
Clamp the cover to the tub, making
sure the inserts at the top of the tub
correspond with the holes in the cover.
CAUTION:
The magnet located in the protruding
part of the cover must be made to
correspond perfectly with the sensor
located on the column otherwise the
machine will not start.
- Press the START push-button (B -
fig. 6). After a few seconds stop the
machine with the STOP push-button
(A - fig.6) to check the result obtained
and if necessary repeat he operation.
If a few more seconds are still required
to complete the operation, it is also
possible to use the white START
button (C - fig.6), which allows the
machine to run only as long as it is
kept pressed. When released, the
machine stops immediately.
- When the operation is completed,
press the STOP push-button and
disconnect the mains (thermo-
magnetic) switch on the wall. At this
stage the cover can be removed (D -
fig.2), taking hold of it with both hands
and making it turn in the direction of
the arrow (counter-clockwise)(fig.3).
- Remove the hub with the blades,

4.3 PULIZIA DELLA MACCHINA.
NOTA - Prima di procedere alla
pulizia della macchina, disporre
sullo 0/ZERO/OFF/DISINSERITO il
comando dell'interruttore di
alimentazione per la macchina ed
estrarre la spina afferrandola
opportunamente, evitando di
esercitare lo sforzo di trazione sul
cavo di alimentazione.
Indossare gli indispensabili guanti
protettivi a cinque dita per proteggere
le dita da possibili tagli dovuti alla
manipolazione delle affilate lame da
taglio. Togliere il coperchio
afferrandolo con entrambe le mani e
facendolo ruotare in senso antiorario
(Figura 3), afferrare con precauzione il
mozzo installato all'interno e lavarlo
accuratamente adottando tutte le
opportune cautele già menzionate nel
Paragrafo 3.3. Afferrare la vasca con
entrambe le mani e sganciarla
facendola ruotare in senso antiorario
(Figura 8)
Mediante una spugna leggermente
imbevuta di una piccola quantità di
sostanza detergente ed igienizzante,
ovunque reperibile, procedere
all'accurata pulizia di tutti gli elementi
operatori della macchina, ripetendo
l'operazione sino al raggiungimento
del risultato voluto.
Asportare ogni residuo di sostanza
detergente utilizzando un panno-
spugna perfettamente pulito e solo
leggermente umido, risciacquandolo
frequentemente in acqua calda
corrente.
Non utilizzare detergenti abrasivi,
creme detergenti anticalcare, solventi
o diluenti; i residui di tali prodotti
possono contaminare pericolosamente
le sostanze alimentari durante le
successive lavorazioni.
Non utilizzare abrasivi sintetici o
pagliette metalliche che potrebbero
4.3 CLEANING THE MACHINE
N.B. Before starting to clean the
machine, turn the machine power
switch to the 0 (ZERO) position and
pull the plug out gently, making
sure you do not pull on the power
feed cable.
Protective, five-finger gloves are
indispensable when handling the
cutting blades, which are very sharp.
Remove the cover, holding it with both
hands and making it turn in the
counter-clockwise direction (fig.3).
Carefully extract the blade hub from
the tub and wash it thoroughly, taking
every precautionary measure as
described in paragraph 3.3. Hold the
tub with both hands and detach it,
making it turn in the counter-clockwise
direction (fig.8).
Remove any residual detergent, using
a perfectly clean, slightly damp cloth/
sponge, which
should be rinsed frequently in warm
running water.
Do not use abrasive detergents or
products/creams for removing
calcareous deposits. Do not use
solvents or diluents. Residual traces of
these products can contaminate the
foodstuffs introduced into the machine.
Do not use synthetic abrasives or
metal wool, which might damage the
machine surfaces besides producing
unsightly marks and scratching.
SECTION 5. GENERAL
MAINTENANCE
5.1 MAINTENANCE
The machine is constructed very
carefully and is fitted with high-quality
components such as the permanently

Fingerhandschuhe anziehen, um die
Finger bzw. die Hände vor den
scharfen Schneiden zu schützen; den
Deckel mit beiden Händen anfassen,
gegen den Uhrzeigersinn drehen
(Abb. 3) und abnehmen. Den
Schneideinsatz vorsichtig
herausnehmen und sorgfältig waschen
(dabei alle im Abschnitt 3.3
angeführten Sicherheitsmaßnahmen
beachten). Die Wanne mit beiden
Händen anfassen, gegen den
Uhrzeigersinn drehen und abnehmen
(Abb. 9).
Alle Arbeitselemente der Maschine mit
einem mit handelsüblichen Hygiene-
Reinigungsmittel leicht angefeuchteten
Schwamm sorgfältig reinigen, und
danach mit einem sauberen und nur
leicht angefeuchteten Schwammtuch,
das öfters unter fließendem
Warmwasser ausgewaschen werden
muß, nachwischen, bis alle
Reinigungsmittelrückstände
vollständig entfernt sind.
Keine Scheuermittel,
Entkalkungsmittel, Lösungsmittel oder
Verdünnungsmittel benutzen, da die
Rückstände derartiger Mittel
gesundheitsgefährdend sind, und das
in der Folge bearbeitete Gemüse
vergiften könnten.
Keine synthetischen Scheuermittel
oder Metallbürsten o. ä. Gegenstände
zum Reinigen benutzen, da die
Oberflächen zerkratzt und beschädigt
werden könnten.

ABSCHNITT 5 - ALLGEMEINE
WARTUNG
5.1 WARTUNG
Die Maschine wurde so konstruiert
und mit qualitativ hochwertigen
Komponenten - wie
dauergeschmierten Wälzlagern für die
Bewegungsübertragung und den
Motor, sowie einem speziellen
Treibriemen - ausgestattet, daß hohe
Leistungen und eine besonders lange
Lebensdauer gewährleistet sind, und
sie wartungsfrei ist. Sie muß also
weder regelmäßig gewartet, eingestellt
noch geschmiert werden.
5.2 STÖRUNGSSUCHE
Drückt man die Starttaste B, Abb. 6-7,
für den Dauerbetrieb, oder die
Starttaste C, Abb. 6-7, für den
Intervallbetrieb, und beginnt die
Maschine trotzdem nicht zu arbeiten,
ist wie folgt vorzugehen:
- Sicherstellen, daß die Hauptanlage
unter Spannung steht und der Schalter
des Anzapfpunktes der Maschine auf
I/ON liegt.
- Sicherstellen, daß der
thermomagnetische Schutzschalter
und der Differentialschalter aktiv sind
und die entsprechenden
Vorrichtungen eingeschaltet sind.
- Die Auslöse-/Rückstelltasten beider
o. a. Vorrichtungen wiederholt
betätigen.
- Die Starttaste der Maschine
nochmals drücken.
Beginnt die Maschine nun nicht zu
arbeiten, ist der Wartungsfachmann zu
verständigen, der die o. a. Elemente
nochmals kontrollieren und den
Zustand der Sicherung des
Maschinenhilfskreises überprüfen
muß. Die Sicherung befindet sich auf
der in der Maschine eingebauten
Schnittstellenkarte. Tritt eine
Veräderung des Betriebsverhaltens
auf, ist die Maschine sofort
auszuschalten, die Stromzufuhr zu
unterbrechen, der Stecker
abzuziehen, und der zuständige
Händler oder ein erfahrener,
spezialisierter Techniker oder direkt
der Hersteller zu verständigen. Es ist
strengstens untersagt, zu versuchen,
die Maschine alleine zu reparieren.
Der Herstller haftet nicht für
Personen- oder Sachschäden, die
auf vom Benutzer oder nicht vom
Hersteller ausdrücklich befugten
Personen durchgeführte Eingriffe
bzw. Reparaturen an der Maschine
und im besonderen an den
Sicherheitsvorrichtungen und -
systemen zurückzuführen sind.
5.3 AUF BEWAHRU NG DER
MASCHINE BEI LÄNGERER
NICHTBENUTZUNG
Wird die Maschine für längere Zeit
danneggiare le superfici, oltre a
produrre antiestetiche rigature o
graffiature.
Si raccomanda di adottare particolare
cautela nel lavaggio del coperchio.
Essendo in materiale plastico, non va
mai lavato con acqua troppo calda, nè
con solventi o detergenti contenenti
alcol.
SEZIONE 5 - MANUTENZIONE
GENERALE
5.1 MANUTENZIONE
L'accurata costruzione della macchina
e l'adozione di componenti di ottima
qualità, quali i cuscinetti a rotolamento
lubrificati "for life" sia per la
trasmissione che per il motore,
permettono alla macchina prestazioni
eccellenti
con la garanzia di una durata
operativa senza pari. Pertanto nessun
intervento di manutenzione o
lubrificazione o regolazione periodica
dovrà essere effettuato sulla
macchina.
5.2 RICERCA DELLE AVARIE
Qualora premendo il pulsante di
avviamento (B Fig. 6), la macchina
non si avviasse, procedere nel modo
seguente:
-Verificare che l'impianto generale sia
sotto tensione e che l'interruttore della
presa di correte della macchina, sia
posizionato su I/ON.
- Verificare che li protettore
magnetotermico e l'interruttore
differenziale siano attivi con i rispettivi
comandi in posizione operativa.
- Eseguire alcuni tentativi azionando i
rispettivi pulsanti di sgancio e riarmo
per entrambi i dispositivi citati.
- Azionare nuovamente il pulsante di
marcia della macchina.
Qualora non si avviasse, si dovrà
richiedere l'intervento del tecnico
addetto alla manutenzione, per
verificare nuovamente gli elementi
citati ed inoltre verificare la condizione
del fusibile di protezione del circuito
ausiliario della macchina. Il porta
fusibile è alloggiato sulla scheda di
interfaccia installata all'interno della
macchina. Qualora si dovesse
presentare qualsiasi anomalia di
funzionamento, si dovrà procedere
all'arresto della macchina,
all'isolamento della macchina dalla
rete elettrica ed all' estrazione della
spina dalla presa. Rivolgersi al proprio
rivenditore autorizzato od a un tecnico
specializzato ed esperto oppure
direttamente al costruttore. E' fatto
assoluto divieto all'utilizzatore di
manomettere la macchina.
La Ditta Costruttrice declina ogni
responsabilità presente e futura in
ordine a danni alla persona ed
all'ambiente che dovessero derivare
dalla manomissione della macchina

5.2 TROUBLE-SHOOTING
If you press the start button (A fig.6)
and the machine does not run,
proceed as follows:
- Make sure voltage is supplied to the
mains circuit and see whether the
socket switch is turned to the ON (I)
position.
- Make sure the thermo-magnetic
protector and the circuit interrupter
have not been triggered and that the
controls are in the correct position.
- Perform a simple test on both these
devices by pressing the respective
push-buttons.
- Press the start button again on the
machine.
If the machine still does not run, a
maintenance technician must be
consulted. The technician will have to
test the above devices again and
check the condition fuse used to
protect the auxiliary circuit of the
machine. The fuse is on the
interface card installed inside the
machine. If you see the machine is
not working properly, switch it off
immediately and isolate it from the
mains circuit by pulling out the plug
from the mains socket. Consult the
authorized dealer, a specialized
technician or contact the manufacturer
directly. The user must not tamper
with the machine.
The Manufacturer declines all
responsibility, both present and
future, with regard to damage to
persons or the environment which
may derive from tampering with the
machine and in particular with the
safety systems and devices by the
user or by persons not expressly
authorized by The Manufacturer
5.3 STORING THE MACHINE -
WHAT TO DO IF THE MACHINE IS
NOT USED FOR LONG
PERIODS
If the machine has to be left unused
for long periods of time, it must be
cleaned thoroughly.
Protect it from dust with a clean dry
cloth. Do not cover the machine with
plastic bags or sheets of synthetic
material as mould and condensation
may develop under them.

5.4 HINWEISE FÜR DEN MIT
DER INSTALLATION
BEAUFTRAGTEN TECHNIKER
Detaillierte Angaben zum Anschließen
der Maschine wurden bereits in
anderen Abschnitten dieses
Handbuches gegeben.
Diese zusätzlichen Informationen sind
ausschließlich für spezialisiertes
technisches Personal bestimmt, daß
eine Änderung am Stromanschluß
zwecks Änderung der
Betriebsspannung von 380 auf 220 V
und umgekehrt vornehmen kann. Soll
die Betriebsspannung von 380 V
Drehstrom auf 220 V Drehstrom
geändert werden (Abb. 6), ist wie folgt
vorzugehen:
- Der Drehstrommotor 380V 50Hz hat
zwei Bündel mit je drei Kabeln mit drei
verschiedenen Farben.
- Die drei verschiedenfarbigen Leiter
sind utereinander kurzgeschlossen
und befinden sich ein einer Klemme
oder einer Kappe.
- Die anderen drei Kabel sind direkt an
die Schnittstellenkarte angeschlossen.
- Für den Anschluß für 220V-
Drehstromspannung sind die drei
miteinander verbundenen Kabel zu
trennen.
- Drei Kabelpaare mit jeweils der

5.3 CONSERVAZIONE DELLA
MACCHINA - LUNGHI PERIODI DI
INATTIVITA'
Dovendo lasciare inattiva la macchina
per un lungo periodo di tempo, si
dovrà provvedere alla accurata pulizia
ed igienizzazione.
Proteggerla dalla polvere mediante un
panno pulito ed asciutto escludendo la
ricopertura con un sacchetto od un
foglio di materiale sintetico, al disotto
del quale, si potrebbero produrre
muffe e condensazione di umidità.
5.4 RACCOMANDAZIONI PER
L'INSTALLATORE
SPECIALIZZATO -
Dettagliate indicazioni per il
collegamento della macchina sono
state fornite in altre sezioni del
presente manuale di istruzioni.
Queste ulteriori informazioni sono
rivolte esclusivamente al personale
tecnico specializzato, che potrà
eseguire una modifica al collegamento
elettrico originale per variare la
tensione di funzionamento da 400 a
230 V e viceversa. Volendo variare la
tensione di funzionamento predisposta
a 400 volt trifase per il funzionamento
a 230 V trifase, procedere nel modo
seguente:
- Il motore trifase 400 V 50 Hz è
provvisto di due fasci aventi tre cavi
ciascuno, di tre diversi colori. - I tre fili
di diverso colore sono cortocircuitati
fra loro e segregati in un cappuccio o
morsetto.
- Gli altri tre cavi sono direttamente
collegati alla scheda di interfaccia.
- Per ottenere il collegamento per la
tensione di 230 V trifase, separare i tre
cavi uniti fra loro.
- Abbinare tre coppie di cavi aventi il
medesimo colore, quindi ripristinare il
collegamento dei cavi così raggruppati
ai terminali della scheda
contrassegnati con i riferimenti U1 -
V1 - W1. - Procedere in fine al nuovo
collegamento del cavetto posto a
ponte fra i riferimenti 0 - 400
spostando una estremità in
corrispondenza del nuovo valore 230
(Figura 9).
Dopo l'esecuzione di collegamenti
eseguire il collaudo funzionale ed il
controllo del corretto senso di
rotazione del motore.

connection of the machine are given in

The data indicated below is for
specialized technicians, who can
make a modification in the original
electric connection to vary the
operation voltage from 400V to 230V
and vice versa.
If the voltage has to be changed from
400V three-phase to 230V three-
phase (fig. 8), proceed as follows:
- The 400V 50Hz three-phase motor
has two groups of cables each
containing three leads of three
different colours.
- The three wires with different colours
are short-circuited and separated
under a cover or terminal.
- The other three leads are directly
connected to the interface card.
- To make the connection for 230V
three-phase separate the three leads
that are joined.
- Combine three pairs of leads of the
same colour and then recreate the
connection of the leads matched in
this way to the terminals of the card
marked with the codes U -V -W.
- Finally, make the new connection of
the lead in the bridge position between
references 0 - 400, moving one end to
coincide with the new value (230).
After completing the connections run a
test and check for correct direction of
rotation of the motor.

GARANTIEBEDINGUNGEN
1) Der Hersteller garantiert die
Leistungsfähigkeit und Nutzdauer seiner
Produkte, die kunstgerecht hergestellt und
einer strengen Abnahmeprüfung im eigenen
Werk unterzogen wurden, gemäß den
Schilddaten und in Abhängigkeit der
vorgeschriebenen Betriebsbedingungen.
Die Garantiezeit ist mit 12 (zwölf) Monaten
festgelegt und läuft ab Ankaufsdatum, das
am Warenbegleitschein angegeben ist, oder
aus der gesetzlich vorgeschriebenen
Quittung des Verkäufers ersichtlich ist.
2) Die Garantie deckt sämtliche Bauteile der
Maschine, mit Ausnahme der elektrischen
Komponenten, der Kunststoffteile und der
zerbrechlichen Teile, Griffe, abnehmbarer
Teile, Lackierung und Verchromung,
etwaiger Zubehörteile, da ihr Zustand von
der Sorgfalt, mit der sie vom Benutzer
gepflegt werden, abhängt.
Der Hersteller haftet nicht für Schäden,
die durch mangelnde Achtsamkeit beim
Transport oder beim Handling des
Produkts, durch Nachlässigkeit oder
unsachgemäße Verwendung der
Maschine, durch fehlerhafte Installation
oder mangelhafte Wartung,
ordnungswidrige Auslegung der
elektrischen Anlage, an die die Maschine
angeschlossen ist, durch
Neueinstellungen von seiten unbefugten
und/oder unfähigen Personals und auf
jeden Fall durch Faktoren bewirkt sind,
für die der Hersteller nicht verantwortlich
gemacht werden kann.
3) Der Hersteller verpflichtet sich, während
der Garantiezeit, unter Einschaltung des
Verkäufers und unter den vorab
beschriebenen Bedingungen, den Ersatz
oder die kostenlose Reparatur jener Teile
auszuführen, die Material- oder
Konstruktionsfehler aufweisen. Eingriffe an
Ort und Stelle müssen vom Benutzer auf
der Grundlage der örtlich geltenden oder
der einschlägigen nationalen Tarife bezahlt
werden.
Sollte sich eine Reparatur im Herstellerwerk
nötig erweisen, gehen die Transportkosten
gänzlich zu Lasten des Benutzers.
Während der Garantiezeit ausgeführte
Reparaturarbeiten stellen keinen
Ausgangspunkt zur Verlängerung der
Garantie dar.
4) Um seinen Garantieanspruch geltend zu
machen, muß der Benutzer seiner Anfrage
um Einsendung unseres Technikers den
Garantieschein und die gesetzlich
vorgeschriebene Quittung oder den
Warenbegleitschein (in denen das
Ankaufsdatum angegeben ist) beilegen.
Diese Dokumente müssen regelrecht
abgefaßt und einwandfrei leserlich sein und
dürfen keine eigenmächtigen Korrekturen
enthalten.
5) Der Hersteller übernimmt keine anderen
Verpflichtungen, als den Ersatz von Teilen,
die nach eigenem Ermessen Mängel
aufweisen.
Ebenso besteht keine Haftung für
Folgeschäden durch Maschinenstillstand,
auch wenn die Maschine nur zur
Ausführung der Garantieleistungen
stillgesetzt wurde.
6) Es werden ausschließlich die
vorliegenden Garantiebedingungen vom
Hersteller anerkannt. Änderungen oder
andere mündliche oder schriftliche
Abmachungen haben keine Gültigkeit.
7) Für etwa auftretende Streitfragen
bezüglich der Ausdeutung und / oder der
Anwendung der vorliegenden
Garantiebedingungen ist der Gerichtshof
von der Herstellerstadt.
CONDIZIONI DI GARANZIA
1) Il costruttore, garantisce l’efficacia e la
durata dei prodotti di propria fabbricazione,
costruiti a regola d’arte e sottoposti a
collaudo funzionale presso il proprio
laboratorio, secondo le caratteristiche di
targa ed in funzione delle condizioni
teoriche di lavoro normale. La durata della
garanzia è stabilita in 12 (dodici ) mesi,
con decorrenza dalla data di acquisto,
indicata sul documento di
accompagnamento o desumibile dalla
ricevuta fiscale rilasciata dal venditore.
2) La garanzia copre tutti i componenti
dell'apparecchiatura, ad eccezione delle
parti elettriche, dei particolari in materiale
plastico e le parti fragili, le manopole, le
parti asportabili, la verniciatura e la
cromatura, e gli eventuali accessori, in
quanto il loro livello di conservazione
dipende direttamente dal livello di cura
posto dall’utente.
Non sono inoltre coperti da garanzia,
tutti i danni causati da incuria nel
trasporto o nella manipolazione del
prodotto, da trascuratezza o incapacità
d'uso dell'apparecchiatura, da errata o
cattiva installazione e manutenzione, per
inadeguatezza dell’ impianto elettrico cui
l'apparecchiatura è collegata, per
manomissioni da parte di personale non
autorizzato e/o non in grado di svolgere
la propria attività a regola d'arte e
comunque per qualsiasi causa non
dipendente dalla Casa Costruttrice.
3) Durante il periodo di garanzia, la Casa
Costruttrice, s'impegna, a mezzo del
rivenditore che ha effettuato la vendita e
secondo quanto esposto nel paragrafo
precedente, a sostituire o riparare
gratuitamente quei particolari che
dovessero presentare disfunzioni causate
da vizi originari di materiali, o da difetti di
lavorazione. Per gli interventi effettuati a
domicilio, l'utente, dovrà corrispondere il
diritto fisso di chiamata secondo le tariffe in
vigore localmente, o secondo le tariffe
nazionali di settore.
Se l'apparecchiatura dovrà essere riparata
in fabbrica, le spese di trasporto saranno ad
esclusivo carico dell'Utente.
Qualunque riparazione effettuata durante il
periodo di garanzia, non dà diritto al
prolungamento della stessa.
4) Per aver diritto alla prestazione in
garanzia, l'Utente deve esibire, a richiesta
del Nostro incaricato, il certificato di
garanzia e la ricevuta fiscale o documento
di accompagnamento a convalida della data
di acquisto dell'apparecchio. Questi
documenti dovranno risultare
impeccabilmente redatti ed assolutamente
privi di manomissioni, correzioni, abrasioni
ecc.
5) La Casa Costruttrice non assume altri
oneri se non quelli relativi alla sostituzione
dei particolari ritenuti difettosi a proprio
insindacabile giudizio.
Non si assume inoltre alcuna responsabilità
per qualsiasi pregiudizievole conseguenza
dedicante al Cliente per il fermo della
macchina, anche per il tempo necessario
per eseguire le prestazioni in garanzia.
6) La Casa Costruttrice, riconosce soltanto
le condizioni di garanzia riportate su questo
certificato. Nessuno è autorizzato a
modificarle e a rilasciarne delle altre verbali
o scritte.
7) Per qualsiasi controversia riguardante
l’interpretazione è / o l’applicazione delle
presenti condizioni di garanzia, sarà
esclusivamente competente il Foro nella cui
circoscrizione risiede il Costruttore.
Per tutti i rapporti giuridici si applica
esclusivamente la legge italiana.
WARRANTY CONDITIONS
1) The manufacturer guarantees the
operation and the duration of the products it
manufactures. These products were built in
a professional manner and underwent a
functioning test in the manufacturer's
workshop according to the specifications
listed on the information plate and according
to the theoretical normal working conditions.
This warranty is valid for 12 (twelve)
months from the date of purchase which is
listed on the delivery documents or which
can be deduced from the receipt issued by
the dealer.
2) The warranty covers all the unit's
components except for the electrical parts,
the plastic parts and other fragile parts, the
knobs, the removable parts, the painting
and the chromium plating, and any
accessories, since their condition depends
directly on the user's care.
The following are also not covered by
the warranty: all damage caused by
carelessness when transporting or
handling the product, by negligence or
incompetence when using the machine,
by incorrect or bad installation or
maintenance, by an inadequate electrical
system to which the machine is
connected, and by tampering by
unauthorized personnel and/or
personnel who are not qualified to work
on the machine in a professional
manner, as well as for any other reason
that does not depend on the
manufacturer.
3) During the warranty period the
manufacturer pledges, through the dealer
that made the sale and according to what is
stated in the previous paragraph, to replace
or repair free of charge those parts that are
defective due to original material defects or
due to defects in workmanship. If on-site
service is requested, the user must pay a
fixed charge for service calls according to
the local rates in force or according to the
national industry rates.
If the machine must be repaired at the
factory, the user will be exclusively
responsible for all transport costs.
Any repairs performed during the warranty
period will not extend it.
4) To be eligible for service under warranty,
the user must exhibit the warranty certificate
and the receipt or delivery document to
validate the purchase date of the machine.
These documents must be impeccably
compiled and absolutely free of tampering,
corrections, erasures, etc.
5) The manufacturer does not undertake
any other responsibilities except for those
regarding the replacement of parts found to
be defective according to its own
unquestionable judgment.
No responsibility is undertaken for any
damages to the client due to the machine
not running, or due to the time necessary to
perform any service under warranty.
6) The manufacturer acknowledges only the
warranty conditions listed on this certificate.
No one is authorized to modify them or to
issue other verbal or written warranty
conditions.
7) The Court of Manufacturer’s Town will be
the exclusive competent court for any
dispute arising concerning the interpretation
and/or the application of these warranty
conditions.
Italian law will be applied exclusively
regarding all legal aspects.
