1 - 300-2750C arasında “kombi” pişirme
Turbo ve Buhar birleştirilerek yemeklerin kuruması engellenir, ağırlık kaybı en aza iner ve ürünümüz eşit
oranda pişer. Geleneksel pişirme yöntemleri ile karşılaştırıldığında pişirme süresi büyük ölçüde kısaltılır. Kızartma,
buğulama, haşlama ve glace etme işlemlerinde bu pişirme yöntemi idealdir.
2 – 30° -2750C arasında “Turbo” pişirme
Yumuşak filetolar, pirzolalar, hamur işleri ürünleri eşit oranda pişirme sağlayabilir. 2750C’ ye kadar
ayarlanabilen sıcaklık, çalışma kapasitesi arttırır, özellikle derin dondurulmuş ürünlerin “convenience” usulüyle en
uygun biçimde pişmesini sağlar.
3 - 1000C’ de “Buharlı” pişirme
Buharlı pişirme; hafif haşlama, pişirme, buharlı pişirme ve buharda yumuşatma işlemleri için idealdir. Yüksek
performanslı buhar jeneratörü sayesinde kesintisiz buhar üretir ve yiyeceklerin canlı görünmesini sağlar.
4 - 300C-990C arasında “Ayarlanabilir Buharlı” pişirme
Hassasiyetle korunan pişirme odası sıcaklığı sayesinde Besinlerin kendine ait tatları korunur ve istenilen
yoğunluk sağlanır. Ayarlanabilir buharlı pişirme, az suda ha şlama, hafif ateşte pişirme, et ve sebze suyu pişirme ve
vakumda pişirme işlemleri için idealdir.
5 - Banket Pişirme
Yiyeceklere önceden düşük sıcaklıklarda ön pişirme uygulanır ve soğutulur. Sunuma hazırlanan yiyecekler
banket modunda kısa sürede pişirilerek taze pişmiş olarak hazırlanması sağlanır.
NOT : Mutfaklarda sağlıklı havalandırma yapılabilmesi için İnosmart fırınların üzerine seçilmesi önerilen davlumbaz ölçüleri
ve davlumbaz egzoz debisi aşağıdaki tabloda verilmiştir.

PİŞİRME MODU SEÇİMİ
I/O Açma/Kapama tuşuna basıldığında bütün
pişirme mod göstergeleri aydınlatılmış şekilde
Döner Ayar Butonunun döndürülmesini bekler.
Bu esnada hiçbir mod seçili değildir.
Döner Ayar Butonu döndürülene kadar
(program seçimi yapılana kadar) bu konumda
bekler.
Döner Ayar Butonu saat yönünde
döndürülmeye başlandığında bütün modlar
söner.
ilk önce Kombi Pişirme göstergesi;
döndürülmeye devam edildiğinde sırasıyla
Buharlı, Buharlı - Kuru, Kuru ve Ayarlanabilir
Buharlı pişirme modu göstergeleri aktif olur.
Döndürmeye devam edildiğinde aynı sıra tekrar
baştan başlar.
Saat yönü tersine döndürüldüğünde ise sıra
tersine döner.
Ayar butonu döndürülerek istenilen pişirme
modu seçilene kadar Döner Ayar Butonu
döndürülür. (Seçilen her pişirme modunda, en
son set edilmiş ilgili parametreler de
göstergelerde belirir.)
İstenilen pişirme modu Döner Ayar Butonunun
ortasına basılarak seçilir.
Pişirme modu seçildikten sonra Sıcaklık
Göstergesi yanıp sönmeye başlar. (Sabit
pişirme sıcaklığı olan bir mod seçilmişse bu
aşama geçilir ve zaman göstergesi yanıp
sönmeye başlar)
İstenilen pişirme sıcaklık değeri Döner Ayar
Butonu ile ayarlanır ve döner ayar butonuna
basılarak zaman ayarı yapılması için zaman
göstergesi yanıp söner, Zaman Ayar Butonu
ledi de sürekli yanar.
Zaman göstergesindeki değer Döner buton ile
ayarlanır.
Zaman ayarlama işleminde istenirse Et Probu
butonuna basılır (buton üzerindeki led yanar ve
zaman göstergesinde ayarlanacak olan prop
sıcaklık değeri görülür)
Döner Ayar Butonu ile istenilen pişirme
sıcaklığı seçilir ve Döner Ayar Butonuna
basılarak onaylanır.
Artık cihaz istenilen modda pişirme yapmaya
hazırdır.
Fırın kapısı açılıp içeriye malzemeler
konduktan sonra tekrar kapandığında fırın
otomatik olarak pişirmeye başlar.
Pişirme işlemi bittikten sonra tekrar pişirme
yapılmak istendiğinde;
Döner Ayar Butonuna basılır. (En son pişirme
modu ve sıcaklık zaman ayar değerleriyle
birlikte gelir.)
Bu konumda kapı kapatılırsa otomatik olarak
tekrar pişirmeye başlar.
Pişirme modu değiştirilmek istendiğinde
yukarıdaki adımlar tekrarlanmalıdır.
ON/OFF Butonu
Fırın kontrol panelinin çalışmasını ya da
durdurulmasını sağlar. Üzerindeki ışık fırının
devrede olduğunu gösterir. Kapatmak için 3 sn.
boyunca bu tuşa basılması gerekmektedir. Daha
kısa süreli basılırsa herhangi bir işlem yapılmaz.
Döner Ayar Butonu
Pişirme modlarının seçiminde, sıcaklık
ve zaman ayarlarının yapılmasında kullanılır. Saat
yönünde çevrildiğinde seçili olan değeri arttırır,
saat yönü tersine çevrildiğinde ise azaltır. İstenilen
değer döner butona basılarak onaylanır.
Sıcaklık Göstergesi
Anlık pişirme değeri ya da ayarlanan
sıcaklık değerini gösterir. Sıcaklık birimi yan
tarafında belirtilir. Max. set değeri 275 º C' dir.
Sıcaklık değeri Döner Ayar butonu ile ayarlanır.
Sıcaklık Ayar Butonu
Çalışma esnasında set değerinin
görülmesi için Sıcaklık Butonuna basıldığında
ayarlanan sıcaklık değeri göstergede 5 sn. boyunca
belirir. Sonrasında tekrar ölçülen sıcaklık değerini
göstermeye devam eder.
Hızlı Soğutma Butonu
Soğutma Butonu, gerektiğinde
soğutma işlevi için kullanılır. Soğutma işleminde

fan hızı kabin kapısı kapalı iken yarım devirde,
açık iken tam devirde çalışır.
Zaman Göstergesi
Pişirme süreleri, Et probu sıcaklığı
ve hata / uyarı kodları gösterilir. Pişirme süresi
dakika cinsinden gösterilmektedir. Zaman set
edilen değerden geriye doğru saymaya başlar. Fırın
sıcaklığı set edilen değere gelmeden zaman
saymaya başlamaz. Göstergede pişirme esnasında
(zaman modu seçili ise) kalan zaman gösterilir. Bu
esnada ortadaki (:) ledler yanıp söner. Pişirme
Modu seçilirken zaman ayarı Döner Buton ile
yapılır. Ayarlanan zaman değerine ulaştığında
veya set edilen et sıcaklığına ulaştığında pişirme
işlemi sona erer. Pişirme süresi dolduğunda (0:00)
buzer öter ve pişirme işlemi sonlandırılır.
Zaman Ayar Butonu
Pişirme modu seçilirken bu butona
basılırsa Zaman Ayarlı pişirme seçilmiş olur ve
buton üzerindeki led yanar. Led yandıktan sonra
döner ayar butonu yardımıyla istenen pişirme
süresi ayarlanır, döner ayar butonuna basılınca
pişirme başlar. Pişirme sırasında zaman ayar
butonuna basılı tutulursa ekranda sırasıyla set
edilen toplam zaman değeri ve geçen zaman
görünür. Buton bırakıldıktan 3 sn sonra ekran
normal görüntüsüne döner (kalan zaman). Et Probu
Modunda pişirme yapılırken Zaman Göstergesinde
anlık et probu sıcaklığı gösterilir. Ancak; Zaman
Butonuna 5 sn. den az basılmış ise Zaman
Göstergesinde geçen zaman değeri gösterilir ve 5
sn. sonra anlık Et probu değeri göstergede tekrar
belirir. Eğer 5 sn. den fazla basılmış ise Zaman
göstergesinde geçen zaman değeri sürekli
gösterilir.
Et Probu Butonu
Pişirme modu seçilirken bu butona
basılırsa Et Probu pişirme modu
seçilmiş olur ve üzerindeki led yanar. Döner ayar
butonu ile 30-99°C arasında değer ayarlanabilir. Et
probu pişirme modunda zamandan bağımsızdır.
Ancak; Et Probu Butonuna 5 sn. den az basılmış
ise Zaman Göstergesinde ayarlanmış (set edilmiş)
et probu sıcaklığı değeri gösterilir ve 5 sn. sonra
anlık et probu sıcaklığı değeri göstergede tekrar
belirir. Eğer 5 sn. den fazla basılmış
ise Zaman göstergesinde geçen zaman
değeri sürekli gösterilir.
Manuel Buhar Butonu
Pişirme esnasında kabine extra buhar vermek için
kabin içi sıcaklık 100ºC – 250ºC arasında iken
kullanılır. Basıldığında kabin içerisine 1 sn.
boyunca buhar verir. Daha fazla verilmek
istendiğinde butona tekrar basılmalıdır.
Bilgi Butonu
Sensörlü olan bölgelerdeki sıcaklık
bilgisini verir.
Otomatik Yıkama Butonu
Yıkama menüsüne girmek için
kullanılır. “AZ”,”ORTA” ve “ÇOK” olmak üzere
3 farklı yıkama modu arasından Döner Buton
yardımı ile seçim yapılabilir, butona basılarak
yıkama işlemi başlatılır. Buton üzerindeki yanıp
sönen LED yıkama işleminin aktif olduğunu
gösterir.
Fan Kontrol Butonu
Fırın içindeki fan hızını kontrol eder.
Pişirme esnasında bu butona basılarak fan hızı
değiştirilebilir. 4 adet fan hızı vardır.

Cihazı kullanmaya başlamadan önce kullanım
kılavuzunu mutlaka okuyunuz ve ihtiyaç
duyduğunuzda başvurmak üzere saklayınız.
1. MONTAJ
Cihaz üzerindeki koruyucu naylonu soyunuz,
yüzey üzerinde yapışkan kalırsa uygun bir çözücü
ile temizleyiniz.
Cihazı pişirme işlemi esnasında oluşan duman,
koku ve buharın çıkışını sağlayacak şekilde bir
davlumbaz altına yerleştiriniz.
Çıkan dumanlar cebri olarak dışarı atılacaksa
aspiratörün elektrik bağlantısı cihazla müşterek
olmalıdır. Havalandırma yapılmadığında cihazın
çalışması durmalıdır. Cihazı, düzgün ve sert bir
zemin üzerine ayarlanabilir ayakları yardımı ile
teraziye alarak yerleştiriniz.
Montaj ve bakımın rahat yapılabilmesi için,
cihazın yerleştiği yerin sol tarafı yaklaşık 60 cm
boşluk olmalıdır. Bu motorun hava emişini de
rahatlatacaktır. Yine hava sirkülasyonu açısından
arkada da yaklaşık 10 cm boşluk bırakılmalıdır.

Cihazı, yerleştirirken yükleme ve boşaltmanın
rahat yapılabilmesi için fırın kapısının en az 1100
açılabilecek şekilde olmasına dikkat ediniz.
2. SU BAĞLANTISI
Cihaz su girişine 3/4" tesisat çekiniz ve uygun bir
yere 3/4" küresel vana bağlayınız.
Cihaz 70Fh sertliğinde, 2-4 bar su ile
beslenmelidir. Böylece fıskiyenin kısa zamanda
kireçlenmeden dolayı tıkanması önlenmiş olur.
3. ELEKTRİK BAĞLANTISI
Cihaz DIN VDE 0100 elektrik tesisat
standartlarına uygun bir şebekeye bağlanmalıdır.
Cihaz 380-400 V 3N AC 50Hz şebeke gerilimi ile
beslenmelidir.
Voltaj toleransı %10'u geçmemelidir.
cihaz ile şebeke beslemesi arasına uygun amper
değerlerine sahip sigorta bağlanmalıdır.
Cihaz mutlaka topraklanmalıdır. Bunun için DIN
VDE 0100 madde 540 göz önünde
bulundurulmalıdır. Topraklama vidası " "
etiketi ile belirtilmiştir.
4. KULLANIM ÖNCESİ
Eğer gerekirse aşağıdaki “Olası Problemler ve
Çözümleri” kısmına bakınız.
5. KULLANICI TALİMATI
Cihaz profesyonel kullanım için tasarlanmıştır ve
sadece bu konuda eğitim almış kişiler tarafından
kullanılmalıdır.
Eski model fırınlara göre üstünlükleri;
Kabin İçi Yanma Kontrolü vardır.
Kontrol Panel Üzerinde Tek Düğmeden
Kontrol Özelliği vardır.
Isı kayıplarını minimuma indiren ve aynı
zamanda çevre dostu olan yeni izolasyon
malzemesi kullanılmıştır.
Daha fonksiyonel yeni kapı kolu vardır.
Pişirilecek ürünlerin iç ısısını kontrol edecek
et probu mevcuttur.
Fırının içine girebilen fırın arabası mevcuttur.
Konveksiyonlu fırınlar biriken sıcak havanın fan
vasıtası ile fırın kabini içerisine üfletilerek
endirekt pişirme yapılan çok amaçlı cihazlardır.
Cihaz tablo-1'de verilen bütün yiyecek türlerinin
pişirilmesi amacına yöneliktir. Ayrıca önceden
pişirilmiş ve dondurulmuş yiyecekleri yenebilecek
sıcaklığa kadar ısıtabilirsiniz.
Konveksiyonlu fırınlarda tepsi derinliği seçimi
çok önemlidir. Tepsiler, mayalı hamur türleri için
delikli ve 20mm, börek türleri için normal deliksiz
ve 20mm, sulu ve soslu yemek türleri için ise
yemeğin özelliğine göre 40-65mm derinlikte tepsi
seçiniz. Tepsi seçimi ve önerilen azami tepsi
kapasiteleri aşağıdaki gibidir.
GN 1/1 tepsi kullanılması durumunda tepsi
kapasitesi belirtilen adetlerin iki katı olacaktır.
Sıcak hava dolaşımını engellememesi için 65mm
den daha derin tepsilerin kullanılmaması gerekir.
Mayalı hamur türlerinde kullanılan GN2/1 20mm
delikli tepsilerde ekmeğin gramajına göre 1 tepsi
25–30 ekmek alabilmektedir. Ancak bu tip
fırınlarda 180 gramın üzerindeki ekmekleri
pişirebilmek mümkün değildir. Bu durumda 25ad.
ekmek alan tepsilerden 10ad. Yerleştirildiğinde
fırının bir seferlik kapasitesi 250 ekmek
olmaktadır. Pişme süresi ise 18-20 dakikadır.
Börek türlerinde kullanılan GN2/1 20mm düz
tepsiler ise börek cinsine göre değişebilmektedir.
Ortalama olarak bir tepside 35-40 porsiyon börek
pişirmek mümkündür. Bu durumda fırın
kapasitesi 350-400 kişilik olmakta ve süre olarak
malzemenin özelliğine göre 20-35 dakika arasında
değişmektedir.
Fırın yemeklerinde kullanılan GN2/1 40-60mm
derinlikteki tepsiler içerisine örneğin tavuk but,
soslu olarak 40 parça almakta ve süre 75-80dk.

kapasiteli çalıştığında 400 kişilik yemeği bir
seferde pişirebilmektedir.
Sulu yemek türlerinde özellikle bakliyatlarda
kullanılabilecek olan GN2/1 80mm tepsilerde her
tepside 60 porsiyon yemek bulunmakta ve bir
seferde 7 tepsi fırınlandığında 420 porsiyon
yemek alınabilmektedir.
Cihazda pişireceğiniz ürünü fırına koymadan önce
seçeceğiniz ısı derecesinden en az 700C fazla bir ön
ısıtma yapınız. Ancak pişireceğiniz ürün ne olursa
olsun 2300C de ön ısıtma yapılması en ideal olanıdır.
Örneğin 1900C'de 20dk. süreyle talaş böreği
pişirilecekse fırının en az 2300C'ye kadar ısıtılması
gerekir. Çünkü fırına girecek malzemelerin (araba,
tepsi, pişirilecek ürün) soğuk olması fırın içi
sıcaklığını düşürecektir. Bu nedenle lütfen ön ısıtma
yaptırmadan mamülü fırına koymayınız.
Fırın arabası üzerinde bulunan tepsi raylarına
pişirilecek mamüle göre tepsiler yerleştirilmelidir.
Çünkü sık sık dizilmiş tepsi aralarından hava
sirkülâsyonunun tam sağlanamayacağı için
pişmede farklılıklar oluşacaktır. Örneğin patisseri
hamurlarından olan sable bisküvi, Torba Hamuru,
Amerikan Bisküvi, İtalyan Kurabiye gibi
yapılacak uygulamalarda pastacı tepsisi denilen
10mm derinliğindeki tepsilerden (düz ya da
delikli) tüm ray aralıklarına yerleştirilebilir. Fakat

ray boş bırakılarak dizilmesi hava
sirkülâsyonunun ve dolayısıyla pişmenin daha
sağlıklı olmasını sağlayacaktır. Lütfen bu konuya
önemle dikkat ediniz.
Tepsiler arasındaki boşluğun 20mm'den az
olmamasına dikkat ediniz. Normalde bu boşluk
40mm olmalıdır.
Tavuk ızgara, Balık ızgara ve Kuru köfte gibi
uygulamaların tepsi yerine fırınla birlikte verilen
tel ızgaralar (530x750mm) üzerinde yapılması
daha uygun olacaktır. Cihazların maksimum
ızgara kapasiteleri FBE 20 için 5 ad. ve FBE 40
için de 10 ad.'tir.
Özellikle mayalı hamur ve börek türlerinin
pişirilmesi sırasında fırın içerisine periyodik
aralıklarla nemlendirme butonu vasıtası ile buhar
püskürterek ürünün nemlendirilerek kuruması ve
kabuklaşması önlenmelidir.
Tepsileri fırın arabasına yerleştirirken aynı hizada
olmasına ve tepsilerin tam olarak fırın rayları
sonuna kadar gitmesine dikkat ediniz. Aksi
takdirde farklı pişmeler olacaktır.
Fırın arabası, fırın kabini içerisinde tam ortada
olacak şekilde dikkatlice yerleştirilmelidir. Bu
maksatla fırın tabanına durdurucu konulmuştur.
Arabayı kaydırarak bu noktaya temas etmesini
sağlayınız.
8. ÇALIŞTIRMA
Elektrik şalterini açınız.
Panel üzerindeki açma butonuna basarak cihaz
enerjilenir.
Seçim Butonu ile pişirme modunu seçip butonun
ortasına basınız.
Sıcaklık displeyi üzerinde sıcaklık ayarı yine
seçim butonu ile ayarlanır ve onaylanır.
Zaman ve /veya et probu butonuna basılarak,
zaman veya et probu sıcaklığı seçilerek pişirme
işlemi başlatılır.
9. KAPATMA
Çalışma esnasında zaman sıfırlandığında pişirme
işlemi sonlandırılır. Cihazı kapatmak için açma-
kapama butonuna basarak enerji kesilir.

10. EMNİYET TEDBİRLERİ
Pişirme konumunda fırının kapısı tam kapalı değil
ise cihaz çalışmaz. Kapı kolunun tam yerine
oturmuş olmasına dikkat edilmelidir.
Cihaz çalışırken fırın kapısı açılırsa cihazın
çalışması durur.Kapı kapandığında ise
çalışmasına devam eder.
Cihazda herhangi bir arıza durumunda display
üzerinde ilgili mesajlar görülecektir.
Fırın üstüne, özellikle baca çıkışlarının üstüne
tepsi veya benzeri çıkışları kapatacak malzeme
koymayınız.

Yıkama Programları
Yıkama işlemini başlatmak için
Yıkama butonuna basınız.

Döner ayar butonunu çevirerek fırın
kabininin kirlilik durumuna göre yıkama programı
seçiniz. Butona basarak yıkama işlemini
başlatınız.
Yıkama işlemi başlayınca, fırın yıkama
şartlarını sağlamak için ön hazırlık yapar.
Boşaltma vanası kapanır, kabin ve yıkama suyu
sıcaklığı ideal şartlara getirilir.
Ekranda “KAPI AC” yazısı görüldüğünde, fırın
kapısını açınız.
Ekranda "DTRJ KOY" yazısı
görüldüğünde,
1su bardak = 200 ml
FBE40T için 3 bardak,
FBE20T için 2 bardak,
FBE10T için 1 bardak deterjan koyunuz.
Kapı açık olduğu müddetçe ekranda
“KAPI KAPA” mesajı görünecektir.
Deterjan koyduktan sonra fırın kapısını kapatınız.
Seçilen yıkama programı
otomatik olarak başlayacaktır. Ekranda seçilmiş
olan yıkama programını simgeleyen harfler ve
yıkama süresi görülür.
UYARI: Yıkama programlarından hangisi
seçilirse seçilsin, yıkama işlemi başlamadan önce
fırın otomatik olarak ideal yıkama şartlarını
sağlamak için arka planda çalışmaya başlar. Bu
sırada ekranda seçilen yıkama programını
simgeleyen harfler ve yıkama zamanı saat ve
dakika olarak görünür.
İdeal yıkama şartları aşağıdaki şekilde
oluşturulur;
İlk olarak boşaltma valfi kapatılır. Bu
işlem yaklaşık 1 dakika sürer.
Fırın kabin ısısı 60°C olması gerekir.
Eğer kabin ısısı 60°C üzerinde ise kabin
fanları çalışmaya başlar ve ekranda
“KAPI AC” mesajı görünür. Bu arada
soğutma butonu ledi yanarak soğutma
işleminin gerçekleştiğini gösterir. Eğer
kabin ısısı 60°C altında ise ısıtıcılar
çalışmaya başlar ve kabin ısısını 60°C ye
ulaştırır.
Buhar jeneratöründeki suyun sıcaklığı 50-
55°C civarında olmalıdır. Eğer suyun
sıcaklığı 55°C üzerinde ise soğutmak için
buhar jeneratörüne soğuk su girişi olur.
Eğer suyun sıcaklığı 50°C altında ise
buhar jeneratörü çalışmaya başlar ve
suyun sıcaklığını 50°C üzerine çıkarır.
Yıkamanın İptal Edilmesi
Yıkama işlemini iptal etmek için açma
kapama tuşuna basarak fırın kapalı konuma
getirilir.
Tekrar aynı tuşa basılarak fırın kontrol
paneli açılır. Ekranda “YKMA İPTL” mesajı
görünür.
Bu sırada döner ayar butonuna
basılarak yıkama işlemi iptal edilmiş olur. Fırın
içerisinde deterjan kalma ihtimalini ortadan
kaldırmak için fırın durulama işlemine geçer ve
30 dakika durulama yapar ve fırın pişirme için
hazır hale gelir.
Eğer “YKMA İPTL” mesajı göründüğünde 10
saniye içerisinde döner ayar butonuna basılmaz
ise yıkama işlemi kaldığı yerden devam eder.
UYARI: Elektrik donanımına zarar vermemek
için direkt ya da yüksek basınçlı su ile
temizlemeyiniz.
12. BAKIM
Cihazın kullanıcı tarafından tamir edilecek veya
değiştirilecek kısmı yoktur.
Cihazda tehlikeli bir durum görülmesi halinde,
önce elektrik bağlantısını kesiniz, sonra yetkili
servise haber vereniz. Ehliyetsiz kişilerin cihaza
müdahale etmesine izin vermeyiniz.

Enerji lambası yanmıyor ise elektrik şalterini
kontrol ediniz.
Cihazın çalışması için tüm işlemleri (ısı
seçimi) yaptınız fakat cihaz yine çalışmıyor
ise kapı tam olarak kapatılmamış olabilir.
Kapıyı kontrol edip kolunun tam yerine
oturmasını sağlayınız.
Tüm bunlara rağmen cihaz yine çalışmıyor ise
kontrol panosundaki arıza lambası yanacaktır.
Bu durumda yetkili servise haber veriniz ve
cihaza hiç bir müdahalede bulunmayınız.

1 - 300-2750C “combi” cooking
By combining Turbo and Steam methods , dishes drying will be prevented, the weight loss will be minimized and
cooking will be equivalent. By using conventional cooking methods the cooking time will be reduced . This cooking
method is ideal for frying, steaming, boiling and gouging.

2 – 30° -2750C “Turbo” cooking
Soft fillets, chops, pastry products can be cooked equal way . The temperature may be increased up to 275C , there
will be increased also the working capacity, especaially deep-frozen products can be cooked by using “convenience”
method .
3 - 1000C’ “Steam” cooking
Steam cooking is ideal for light boiling, cooking, steam cooking and steam softening. Due to its high-performance
steam generator, it produces the uninterrupted steam and makes food look better.
4 - 300C-990C “Adjustable steam ” cooking
This cooking is ideal and helpful for , cooking in low temperature, light cooking, meat & vegetable cooking, vacuum
cooking.
5 - Banquet Cooking
First of all food should be prepared at low temperature and after that we must wait for its cooling. The food ready for
presentation which must be also cooked in banquet mode will make our food looks better and fresh.
SELECTING THE COOKING MODE
Once you press the I/O On/Off button, all
cooking mode displays are illuminated,
indicating that the user is prompted to turn the
Rotary Set Switch. Meanwhile, no mode is
selected by default.
The rotary set switch remains in this mode
until it is turned (until a program is selected).
Once you start turning the rotary set switch
clockwise, all modes go off.
First the Boiler Cooking display sequentially
followed by Steam, Steam-Dry, Dry and
Adjustable Steam cooking mode displays - if
you keep turning - are activated.
If you still keep turning, the same sequence is
repeated from the beginning.
If you turn the button counter-clockwise, the
sequence is reversed.
Turn the rotary set switch until desired
cooking mode is selected. (In each cooking
mode, last preset parameters relating to that
mode are indicated on the displays)
Press centrally the rotary set switch to select
the desired cooking mode.
Once the cooking mode is selected, the
Temperature Display starts flashing. (If the
mode selected has a constant cooking
temperature, this step is skipped and the time
display starts to flash)
Set desired cooking temperature by means of
the rotary set switch. When you press this
button, the time display starts to flash for time
setting and the Time Setting LED starts
constantly flashing.
The value in the time display is set by means
of the rotary switch.
During time setting procedure, press the Meat
Probe button (the LED on the button flashes
and the probe temperature to be set is
displayed on the time display).
Turn the Rotary Setting Button to select the
desired cooking temperature and press to
acknowledge.
The device is now ready to cook in the desired
mode.
Once you open the oven door, load the
foodstuffs and close back the oven, the oven
automatically starts cooking.
For a new cooking cycle;
Press the rotary set switch. (The last cooking
mode and temperature values with time
settings are displayed)
If you close the oven door in this mode, the
oven automatically starts cooking.
Repeat the steps above if you desire to change
the cooking mode.
On/Off Button
This button is used to operate or stop
the oven control panel. The LED on the panel
indicates that the oven is active. Press and hold
this button for 3 seconds to turn off. No operation
is performed if you hold the button for a shorter
time.
Rotary Set Switch
Use this button to select the cooking
mode and set temperature and time. The value is
incremented with clockwise turn, and
decremented with counter-clockwise turn. Press
the button to acknowledge the value.

Temperature Display
The display indicates the instant
cooking value or the temperature setting. The
temperature unit is displayed next to the value.
Maximum setting is 275ºC. Use the rotary set
switch to set temperature.
Temperature Setting Button
Press the Temperature Button Setting
to display current setting for a period of 5 seconds
during operation. After this period, the display
turns back to show the measured temperature.
Fast Cooling Button
Use the Cooling Button when
necessary to start the cooling function. During
cooling function, fan speed is half when the cabin
door is open, and full when the door is open.
Time Display
Cooling time, meat probe
temperature and error/warning codes are
displayed. Cooking time is displayed in minutes.
Time starts to count down from the value set.
Time count does not start until actual oven
temperature reaches the value set. The display
indicates the remaining time to the completion of
cooking (if time mode is selected). Meanwhile,
centre (:) LEDs start to flash. Use the rotary
switch to set the time while selecting the cooking
mode. Once the time value setting or the meat
temperature setting is reached, cooking is ended.
Once cooking time is complete (0:00), the buzzer
sounds and cooking is ended.
Time Setting Button
Press this button to select time-set
cooking. In this case, the LED on the button
flashes. Once the LED flashes, use the rotary
switch to set the cooking time, and press the
button to acknowledge the setting. If you hold the
time setting button during cooking, the display
starts to sequentially indicate the total time setting
and elapsed time. If you release the button, the
display turns back to its normal indication
(remaining time) after 3 seconds. While cooking
in the Meat Probe Mode, the time display shows
the instant meat probe temperature. However, if
you hold the time button for less than 5 seconds,
the time display starts to instantly show the
elapsed time, and then turns back to show the
meat probe value after 5 seconds. If you hold this
button for more than 5 seconds, the time display
constantly shows the elapsed time.
Meat Probe Button
Press this button to select meat-probe
cooking mode. In this case, the LED on the button
flashes. Use the rotary switch to set the value
within the range of 30-90°C. The meat-probe
cooking mode is time-dependent. However, if you
hold the Meat Probe button for less than 5 seconds, the
time display shows the meat probe temperature setting,
and then turns back to show the instant meat probe
temperature setting after 5 seconds. If you hold this
button for more than 5 seconds, the time display
constantly shows the elapsed time.
Manual Steam Button
Use this button to supply extra steam
into the cabin during cooking while the cabin
temperature is within the 100ºC – 250ºC range. If
you press this button, steam is supplied into the
cabin for 1 second. Repeatedly press the button to
increase the supply.
Information Button
Gives information on the temperature of
the sensor.
Automatic Wash Button
Use this button to enter the wash menu.
Use the rotary switch to select among 3 different
washing modes, namely "LOW", "NORMAL",
and "HIGH". Press t he button to start washing.
The flashing LED on the button indicates that
washing is active.

Fan Control Button
This button is used to control fan
speed in the oven. Press this button to change fan
speed during cooking. There are 4 different fan
speeds.

Please read this instructions manual carefully
before starting to use the device, and keep it for
future reference when necessary.
1. INSTALLATION
Remove the protective nylon coat on the device,
and clear any adhesive on the surface with an
appropriate solvent.
Fit the device underneath a hood to exhaust the
smoke, stink and steam released by the cooking
process.
The exhaust fan should have the shared energy
connection with the device if it is proposed to
exhaust the steam by forced draught. If no
ventilation is available, device operation should
stop. Fit the device on a smooth and tough surface
by levelling it through its adjustable feet.
For a smooth installation and maintenance, the
surface on which the device is placed should have
a clearance of 60 cm on the left. This would also
ease the air suction of the motor. Again for
seamless air circulation, a clearance of around 10
cm should be left on the rear.
While fitting the device, it should be ensured that
the oven door can be opened by minimum 1100
for smooth loading and discharge.
2. WATER CONNECTION
Install a 3/4" water line to the water inlet, and
mount a 3/4" global valve to an appropriate
location.
Water supply to the device should be 2-4 bars at
an hardness of 70Fh. Hence, the nozzle is
prevented from shortly getting clogged due to
calcification.
3. ELECTRICAL CONNECTION
The device should be connected to an appropriate
network at DIN VDE 0100 standards.
The device should be supplied with 380-400V 3N
AC 50-60Hz mains voltage.
Voltage tolerance should not exceed 10%.
The unit must be connected with the appropriate
amperage fuse between the mains supply.
The device should strictly be earthed. For this
purpose, DIN VDE 0100, Article 540 should be
taken into consideration. The ground screw is
marked with label " ".

Convection furnaces are multi-functional devices
where indirect cooking is performed by blowing
hot air trapped in the combustion chamber into
the oven cabin via the fan. This version further
offers the functionality of preventing unburned
The device is aimed at cooking all food types
listed in Table 1. Furthermore, you can use the
oven to warm previously cooked and frozen foods
up to a suitable heat level for eating.
Choosing the right tray depth is of crucial essence
in convection ovens. Choose 20-mm perforated
trays for leavened doughs; 20-mm ordinary non-
perforated trays for pastries; and 40-65 mm trays
for sauce dishes depending on the type of the

dish. Tray types and recommended maximum tray

If the GN 1/1 tray is used, the tray capacity will
be two folds of the quantities provided.
Trays deeper than 65 mm should not be used to
avoid any obstruction of hot air circulation.
For 20mm GN 2/1 trays used for leavened
doughs, one tray may accommodate 25-30 breads
depending on the bread weight. However, with
this oven type, it is not possible to bake breads
over 180 grams in weight. In this case, when you
load 10 trays, each capable of accommodating 10
breads, the oven gains a capacity of 250 breads
per single use. Baking time is 18-20 minutes.
The 20mm flat GN2/1 trays used for pastries may
vary by pastry type. In average, it is possible to
cook 35-40 portions of pastry with a single tray.
In this case, the oven has a capacity of 350-400
portions, and cooking time varies in a range of
20-35 minutes depending on the foodstuff.
40-60 mm GN2/1 trays used to cook oven dishes
can accommodate, for example, 40 sauce
drumsticks, along with a cooking time of 75-80
minutes. In this case, the oven is capable of
cooking 400 portions at a time at full capacity.
The 80mm GN2/1 trays that may be used for
sauce dishes, particularly legume dishes, can
accommodate 60 portions, yielding a total
capacity of 420 portions when 7 loads are loaded
at a time.
Before loading the foodstuff into the device, first
conduct a pre-heating at a temperature exceeding
the selected cooking setting by minimum 70oC.
However, regardless of the foodstuff to be
cooked, conducting a pre-heating at 230oC is the
most ideal one. For instance, to cook meat pastry
for 20 minutes at 190 oC, the oven should be pre-
heated up to minimum 230oC. Because cold materials
to be loaded in the oven (trolley, tray, foodstuff) are
supposed to decrease the interior oven temperature.
Therefore, please do not load the foodstuff without a
pre-heating session.
Tray arrangement upon tray rails on the trolley
depends on the foodstuff to be cooked. Because,
densely-arranged trays would yield varied levels
of cooking due to lack of full air circulation
between the trays. For example to cook sable
biscuits, pie crusts, American biscuits or Italian
cookies, trays of 10 mm in depth that are
typically called "pastry trays" (flat or perforated)
may be loaded into all rail gaps. However, in
cooking other foodstuffs, arranging the trays so
that each loaded rail gap is followed by an empty
one would allow air circulation, thereby yielding
better cooking. User attention is particularly
drawn to this principle.
Please ensure that, clearance between trays is not
less than 20 mm. This should typically be 40 mm.
To cook grilled chicken, grilled fish and grilled
meat balls, use of wire grids (530x750 mm)
accompanying the oven is recommended.
Maximum grill capacity of the device is 5 grills
for FBE 20, and 10 grills for FBE 40.
Particularly during cooking leavened doughs and
pastries, steam should be sprayed periodically
into the oven through the moistening button to
avoid foodstuff from getting dried and crusted.
Please take care to ensure that trays are aligned in
the oven trolley and that oven rails are fully
driven up to the end. Otherwise, varied cooking
may occur.
Please align oven trolley exactly centrally inside
the oven cabin. For this purpose, a stopper is
provided on the oven base. Please keep sliding the
trolley until the stopper is reached.
6. OPERATION
Turn on the power switch.
Press the ON button on the panel to energize the
device.

On the temperature display, temperature setting is
made and acknowledged again by means of the
selector switch.

Press the time or the meat probe button and select
the time or meat probe temperature to start
cooking.
7. SWITCHING OFF
Once timer reaches zero during operation,
cooking is ended. Press the on/off button to de-
energize and so to switch off the device.

8. SAFETY MEASURES
If the oven door is not fully closed during
cooking, the device would not function. Please
take care to ensure that the door handle is fully fit
in its place.
Device operation would be interrupted if the door
is opened during the operation. And operation is
resumed when the door is closed.
In case of a failure on the device, appropriate
messages will be indicated on the display.
Avoid placing trays or any other material that
would obstruct the exhaust on the oven,
particularly on hood outlet.

Turn the rotary switch to select a
proper washing program depending on actual
contamination of the oven cabin. Press the button
to start washing.
Once washing is started, the oven performs a
preliminary set-up to meet washing conditions.
Discharge valve is closed, and cabin and
washwater temperature is brought to ideal
conditions.
Once the indication "OPEN DOOR" is
shown on the display, open the oven
door.
Once the indication "PUT DTRG" is
shown on the display,

As long as the oven door is open, the
indication "CLOS DOOR" remains in the display.
Close the oven door after detergent is loaded.
The washing program selected will
automatically start. The display shows the letters
representing the selected washing program, as
well as the washing time.
WARNING: Regardless of the washing program
selected, the oven automatically starts a
background work to meet ideal washing
conditions before washing is started. Meanwhile,
letters representing the selected washing program
and washing time in hour and minute are
displayed.
Ideal washing conditions are set up as follows:
First the discharge valve is closed. This
procedure takes around 1 minute.
Cabin temperature of the oven should be
60°C. If actual cabin temperature is above
60°C, cabin fans start during which the
indication "KAPI AC" appears on the
display. Meanwhile, the cooling LED
lights, indicating that cooling process is
in progress. If cabin temperature is below
60°C, burners start to bring cabin
temperature to 60°C.
Water temperature in steam generator
should be around 50-55°C. If water
temperature is above 55°C, cold water is

fed to the steam generator to cool down.
Otherwise, the steam generator burner
starts to increase water temperature above
55°C.
Cancelling the Washing Process
Press the on/off button to cancel
washing and switch off the oven.
Press the same button to open the
control panel. The display shows the message
"WASH END".
Meanwhile, press the rotary switch to
cancel washing. To prevent any detergent residue,
the oven starts flushing for 30 minutes and then
gets ready for cooking.
If you do not press the rotary switch within 10
seconds following the indication of the message
"YKMA IPTL", washing procedure is resumed.
WARNING: To prevent damage to the electrical
installation, do not use direct or highly
pressurized water for cleaning.
10. MAINTENANCE
The user should not attempt to repair or replace
any device part or component.
In case a dangerous situation is observed in the
device, first cut the power connections, and then
call the authorized service. Intervention in the
device by unauthorized persons should be
avoided.
11. TROUBLESHOOTING
Check the power switch if the power light is
off.
Perform all procedures necessary for the
device to start (temperature setting). If the
device still does not start, check whether the
door is fully closed. Check the door and
ensure that its handle is fully fit in.
If the device still does not start, the failure
light on the control panel will be on. In this
case, call the authorized service and avoid
making any intervention in the device.
