Introduction
YournewMachineisa qualityproductinthefinesttraditionofallWCBIceCream'sproducts.
Likeallmachinery,however,itrequiresbasicunderstandingandpropercareonthepartofthe
operatorandthosewhoserviceit,inordertogivea fullmeasureoftrouble-freeserviceand
longlife.
Thepurposeofthismanualistoprovideinstructionsforinstallation,operationand
maintenanceofthemachine.
Readandunderstandthemanualcarefullybeforeremovingfromthecrate,installingandprior
tooperatingorservicingyourmachine.

ReceivingandInspection
WCBIceCreamequipmentisruntested orinspectedpriortoshipment.Whenleavingthe
factory,itIswellcratedfornormaltransportationprocedures.WCBIceCreamcannot,
however,guaranteesafearrival.Therefore,uponreceiptofthisequipment,checkthe
receiveditemsagainstthepackinglistfordamageormissingparts.Checkthepacking
materialthoroughlyforsmallparts.
Visuallyinspectfordamageorloss.Damageorlossshouldbereportedimmediatelytothe
deliverycarrierwhilepresent.Followingtheimmediatenotificationofthelostordamaged
parts,a detaileddescriptionincludingquantity,descriptionofthelossordamage,anda cash
valueshouldbeclaimedagainstthecarrierwithrespecttotheguidelinessetforthbythe

areaswhileprovidingadequateaccessforservicebytrainedpersonnel.Hazardousareas
areprovidedwithguards.Varioustypesoffastenersmaybeusedfortheguardsdepending
onhowfrequentlyroutineaccessisrequired.Regardlessofthetypeoffastenerused,the
mereexistenceofa guardshouldalerttheworkertothepresenceofa hazard.Never
operateortestruntheequipmentwitha guardremoved,unlessunderthesupervisionof
properlytrainedandauthorizedpersonnel.Thenuseextremecautiontoavoidthehazard.

Thefreezerisnormallypoweredbyelectricmotor(s)andhavemanyotherelectroniccontrols
anddevices.Inaddition,electroniccontrolsordevicesmaybeaddedeitherattheWCBIce
Creamfactoryorattheinstallationsite.Thiscreatesa hazardofelectricalshock,which
couldcausesevereinjuryorevenlossoflife.
Tominimizetheriskofthishazard:
1.Allelectric/electronicinstallationmustcomplywithallapplicablecodesand
standards.
2.Allelectric/electronicinstallation,maintenanceandservice,mustbeperformedby
trainedandauthorizedelectriciansonly.
3.Installa mainpowerdisconnectOn-Offswitchthatcanbelockedinthepower-offfl^
positionandthekeyremoved.Thiswillallowmaintenanceorservicetobe

DONOTperformanymaintenanceorsen/iceonthefreezerunlessthemainand
controlpowersourceshavebeenturnedoffandLockedOutusinga locking
deviceforwhichonlythepersonperformingtheworkhasthekey.
Thefreezerhasmechanicaldrivecomponents,whichoperatesthedasherandpumps(belts
andpulleys).Allofthesecomponentsareguardedand/orenclosed.However,itisnecessary
toremovetheguards/enclosurestoperformroutinemaintenance,cleaningorservice
procedures.Thesecomponentsarepoweredbyelectricmotors,whichmaystart
unexpectedlyfroma remotecontrolsignal.Shouldthefreezerstartunexpectedlyduring
theseproceduressevereinjuryorevenlossoflifecouldresult.
DANGER
ALWAYSturnofftheelectricalpowersupplyandLockOutusinga locking
deviceforwhichonlythepersondoingtheworkhasthekeybeforeperforming
serviceormaintenance.Shouldthedasherstartrotatingunexpectedlyduring
serviceandmaintenanceproceduressevereinjuryorlossoflifecouldresult.
Dasher
Inordertoassuremaximumsanitaryoperatingconditionsorforcertainmaintenanceand
servicingproceduresitisnecessarytodisassembleandassemblethedasher.Thedasher
assemblyislargeandheavy.
Thiscreatesa hazardofsevereinjuryforanyonehandlingitincorrectly.Provideenough
workersormechanicalliftingassistancetoenableremoving,installing,andservicingthe
dashersafely.
Tominimizetheriskofthishazard:
1.Onlytrainedandauthorizedmechanicsshouldperformmaintenanceorservice
workonthefreezer.
2.Anemergencyshutoffswitchisinstalledwithineasyreachoftheoperator.
3.AlwaysturnofftheelectricalpowersupplyandLockOutusinga lockingdevice
forwhichonlythepersondoingtheworkhasthekeybeforeperforminganyofthe
following:
a.Removingthestainlesssteelpanels,whichprotectthedasherandpumpdrive
areas.
b.Performinganymaintenanceorserviceonthemotor(s).
c.Removingthefrontdoor,frontbearing,orthedasher.
d.Disassemblingthepumpcoverorrotors.
e.Assemblingordisassemblingthedasher.

ScraperBlades
Thescraperbladesassembledonthedashermustbesharptoworkcorrectly.Thiscreatesa
hazardofseverecutsforanyonehandlingthescraperbladesincorrectly.Wearprotective
clothingforthehandsandarmswhenhandlingthedasherassemblyorthescraperblades.
Avoidcontactingthecuttingedgeofthescraperblades.
Alldashershaveremovablescraperblades.Thesebladescanbeverysharpandcause
severeinjuryifnothandledproperly.
Tominimizetheriskofcutsfromthesesharpbladeswhenremovingandinstallingthe
dasher:
1.Whenremovingthedasherbyhand,alwaysuseheavyprotectivegloves(suchas
weldersgloves)thatreachtotheelbows.
2.Alwaysworkwithatleastoneothertrainedpersonwhenremovingorinstalling
thedasher.
3.Removeeachbladefromthedasherassoonaspossibletoremovethedanger
fromothersintheimmediatearea.
4.Alwaysstorethebladestogetherina labelledcontainerwhennotinuse.

Toproperlycleanandsanitizethefreezerforusewithfoodproductsitmaybenecessaryto
usechemicalsolutions.Manyofthecommonlyusedchemicalsolutionscouldcausesevere
injurytopersonnelifcontacted.Thehazardisespeciallysevereforeyes,skin,orinhalation.
Tominimizetheriskofthishazard:
1.Thoroughlytrainallpersonnelworkingwithcleaning/sanitizingchemicalsintheir
safehandlinganddisposalaccordingtoallapplicablecodesandstandards.
2.Additionalprecautionsarerequiredduringtheuseofcleaningorsanitizing
chemicalsolutionstominimizetheriskofpersonnelcontact,whichcouldcause
aninjury.
3.Duringautomaticcleaning/sanitizing:

Thefreezerusescompressedairforthefollowingfunctions:

2.Operatethebypasscoversontheproductpumps.
3.Operatepartsofthecontrolsystemofthefreezer.
Compressedaircreatescertainunavoidablehazards.Compressedairmayretainthepower
tomoveobjectsevenafterthesupplyisturnedoff.Airoperatedmechanicaldevicesmay
operateunexpectedlyfroma remotecontrolsignal.Iftheairsupplypressureexceedsdesign
limits,plasticlineconnectionscouldcomeapartandmovearounduncontrolled.These
createa hazardofsevereinjurytopersonnelworkinginthearea.
Tominimizetheriskofthishazard:
1.Aninstallationofcompressedairservicemustbeperformedbytrainedand
authorizedpipefittersonly.
2.Allcompressedairinstallationsmustcomplywithallapplicablecodesand

3.Installa 10.5barsafetyreliefvalveinthecompressedairsupply.
4.Installa handoperatedshutoffvalveinthesupplylinetoallowisolationof
componentsbeforeserviceormaintenance.

Yourfreezermayusehalocarbonastherefrigerantforfreezingtheproduct.
Halocarbonisa hazardouschemicalwhich,whenusedincorrectly,cancause
severeinjuryorevenlossoflife.
IfyourfreezerusesHalocarbonasa refrigerantforfreezingtheproduct,thefollowing
precautionsareimportant.Halocarboniscolourlessandclearinappearancewithonlya
slightetherealodour.Itisheavierthanairandthusdisplacesmuchoxygenneededfor
breathing.Thusithasthepotentialhazardofproducingunconsciousnessandevenlossof
life.
Donotopenanyconnectionintotherefrigerationsystemuntilallrefrigerantisevacuatedand
thefreezerisisolatedbyclosingthehandvalveintheliquidandsuctionline
WARNING
Asuddenreleaseofrefrigerantliquidsprayedontheskincancauseserious
damagetoskintissue.Keepeyesandexposedskinareasawayfrompotential
refrigerantdischarge.Ifsucha refrigerantburnoccurs,flushimmediatelywith
coldwater,applyicepacksIfsevereandseea physicianatonce.
RefrigerantsR-404Aaregenerallyconsideredtobechemicallynon-toxicandnon-
flammable;however,anygasunderpressurecanbehazardousbecauseoftheenergylatent
inthepressurealone.Neverfillanyrefrigerantgascylindercompletelywithliquid.Always
limittoapproximately80%liquidfull,thiswillallowfornormalexpansion.
UsedHalocarbonandotherfluorocarbonsshouldberecoveredandrecycled.

freezefurther,requiringdefrostingprocedurebeforeproductioncanresume.

1.DONOTturnontherefrigerationwithoutthedasherrunning.
2.DONOTallowthesupplyofmixtothefreezertostopduringfreezingoperations.
3.DONOToperatewithproductstiffnessatgreaterthan1007omotorload.
4.DONOTturnontherefrigerationwhenwaterispresentinthecylinder.

BewareofSanitizingSolutions
Sanitizingsolutionsareextremelycorrosive,especiallythosewhichcontainhalogen
compounds(chlorine,bromine,iodine).Solutionsofthesechemicals,willattackthechrome
surfaceofthefreezingcylinderandthespecialhardalloystainlesssteelscraperblades.To
preventseriousdamage:
1.DONOTsanitizethefreezersoonerthan15minutesimmediatelypriortostarting
production.
2.DONOTleavesanitizingsolutionsinprolongedcontactwithanysurface-product
contactorexterior.Asdropletsdryouttheybecomemoreconcentratedandwill
causecorrosionpitting.
3.DONOTuseanytypeofacid-sanitizer.Acidattackschrome.
PreventPumpDamage
Incorrectoperatingproceduresmaycausedamageorrapidweartopumpparts,especially
therotorsandshafts.Toobtainmaximumservicelifeofpumpparts:
1.DONOToperatethepumpsdry(withoutwaterorproductpresent).
2.DONOTusea screwdriveroranyotherpryingtypetoolswhenremovingrotors.
3.DONOToperateproductpumpagainstexcessivedischargepressure.
