INSTALLATION INSTRUCTIONS
CONFORMITY TO REGULATIONS AND LAWS
The appliance is to be installed by an authorised person in
accordance with AS5601 - the installer must ensure the
installation complies with all regulatory and manufacturer
requirements and operationally and functionally test, make
necessary adjustments and commission the appliance as part
of installation.
WARNING
The manufacture declines any responsibility if these
obligations are not respected.
INSTALLATION
The overall dimensions/connections and technical data are
given in the appendix.
If the appliance cannot be adjusted to perform correctly call
the tecnichal assistant service.
Positioning
• Install the appliance in a suitably ventilated environment.
• Position the appliance at least 10 cm from surrounding
walls. This distance may be reduced if the walls are
flameproof or protected by insulating material.
• This appliance is not designed for built-in installation.
• Remove the protective film from the external panels.
Use a suitable solvent to remove any glue residue.
• In stand-alone installations, appliances 40 or 60 cm wide
must be fixed to the floor using the flanged feet.
• Level the appliance by means of the adjustable feet.
Joining top on oven base (Fig.5)
•Screw the bolts (A) provided into the base (C).
•Position the top so that bolts A fit with the corresponding
seats (B) in the top.
Joining appliances togheter in line (Fig. 4)
• Position the appliances next to each other and level to the
same height.
• Fix the appliances together using the holes provided in the
side of the top
Connecting to the gas supply
• Install a shut-off valve upstream of the appliance, in a
place easily accessible.
• Check if the appliance is adjusted for the type of gas with
which it will be supplied. If not, convert it according to the
instructions in the paragraph "Conversion to different type of
gas".
• Check that there are no leaks at the connection points.
Connecting to the electrical power supply
• The appliance is set to operate at the voltage indicated on
the data plate.Total power is given in table T6 in Appendix.
• The appliance must be supplied with a separate electrical
line using a flexible rubber cable with insulating properties
not inferior to H07RN-F. The length of the cable between the
cable clamp and the connection terminal blocks must be such
that the live conductors tighten before the yellow/green earth
wire, in case the cable come out of the cable clamp.
• Install suitable automatic cut-off switches (contact opening
of at least 3 mm) and highly sensitive automatic differential
protection devices. These must guarantee protection against
direct or indirect contact with live parts and against currents
towards earth in the event of malfunction (maximum
dispersion current 1 mA/kW).
Earth and equipotential connection
• The appliance must be earth connected on the terminal
block marked by the symbol located beside the input line
terminal block.
• The metal structure of all the appliances installed must be
connected together on the terminal marked by the symbol
located close to the earth terminal (equipotential system).
CONVERSION TO A DIFFERENT TYPE OF GAS
To convert the appliance to a different gas supply, follow the
instructions below.
Use the injectors contained in the bag supplied with the
appliance.
Replacement of burner injector and adjustment of
burner air flow of cooking hob (Fig. 1)
• Remove pan grids, burner units, trays, front panel.
• Unscrew the existing injector "U" and replace it with the
one indicated in Table T1 in Appendix.
• Position the air regulator at the distance “A” indicated in
Table T2 in Appendix.
• Retighten screw V and seal it with red paint.

• Remove the panel under oven's door.
• Unscrew the existing injector "U" and replace with the one
indicated in Table T1 in Appendix.
• Position the air regulator at the distance “A” indicated in
Table T2 in Appendix.
• Retighten screw V and seal it with red paint.
Adjustment of minimum flow to the cooking hob burners
(Fig. 1)
• Remove the front panel.
• Unscrew the existing screw "VM" and replace it with the
one indicated in Table T1 in Appendix.
Replacement of pilot burner injector of cooking hob and
oven (Fig. 1-3)
• Remove pan grids, burner units, trays, front panel.
• Remove the panel under the oven's door.
• Unscrew fitting R and replace injector UP with the one
indicated in Table T1 in Appendix.
• Retighten fitting R.
Adjustment of the gas control outlet pressure
• The outlet pressure adjustment screw is factory
commissioned (1 turn closed from fully open) and sealed
with red paint.
No adjustment are required in case of conversion to a
different type of gas.
COMMISSIONING PROCEDURE
Testing the gas system
• Switch on the appliance following the instructions for use.
Test burners ignition and flame uniformity. Also check the
appliance for gas leaks and make sure the gas exhaust system
functions correctly.
• If necessary, consult the “Troubleshooting guide” below.
Testing the gas nominal thermal power
• After installation, conversion to a different type of gas or
servicing, check the nominal thermal power of the appliance.
• The appliance functions at the nominal thermal power when
is fitted with the appropriate injectors for the gas used, the
gas control is commissioned according to manufacturer
requirements (see paragraph "Adjustment of the gas control
outlet pressure), and the gas pressure measured at the
manifold pressure test point is commissioned to the
appropriate nominal value as specified in Table T5 in
Appendix.
Setting the manifold gas pressure (Fig. 2)- (Fig. 5 only
for ABF7-8G)
• Remove the front panel.
•Remove sealed bolt PP from the test point pressure and
connect the pressure gauge pipe.
• Switch on the appliance following the instructions for use
and commission the test point pressure values to the
appropriate nominal values as specified in Table T5 in
Appendix.
Testing the electric oven
• Switch on the oven following the instructions for use.
• Check the correct functioning of the controls and heating
elements, trying the various combinations (bottom heating,
top heating and simultaneous top and bottom heating).
• If necessary, consult the “Troubleshooting guide” below.
Cheking the electrical nominal thermal power
• After installation, check the nominal thermal power of the
appliance.
• The appliance functions at the nominal thermal power when
the electrical power supply is as indicated in Table T1 in
Appendix.

The pilot burner is difficult or impossible to ignite
• Gas supply pressure low.

• Piezo igniter faulty.
• Ignition electrode (ignition spark gas should be 3 + 1/0 mm)
or cable faulty.
The pilot burner goes out during use
• Thermocouple faulty, insufficiently heated or incorrectly
connected to gas valve.
• Gas tap/valve faulty.
The main burner is difficult or impossible to ignite
• Gas supply pressure low.
• Injectors clogged.
• Gas tap/valve faulty.
The temperature of gas oven is difficult or impossible to
regulate
• Gas valve faulty.
Electric oven do not heat
• Check the fuses.
• Working thermostat faulty.
• Selector faulty.
• One or more heating elements faulty.
• Safety thermostat in operation or faulty.
The temperature of electric oven is difficult or
impossible to regulate
• Working thermostat faulty.
• One or more heating elements faulty.
REPLACEMENT OF SPARE PARTS
Before every any intervention close the gas and water
shut-off valves upstream the appliance and disconnect the
electrical supply.
Never tamper with any of the sealed components.
After every intervention, check for gas leaks, if necessary.
Burners, Thermocouples, Gas taps of cooking hob
• Remove the front panel, pan grids, tray and replace the
component.
Gas valve, Piezo igniter of gas oven
• Remove the vertical panel and replace the component.
Burners, Thermocouple,Ignition electrode of gas oven
• Remove the vertical panel, the panel under oven's door and
replace the component.
Electric oven heating elements
• Work from inside the oven. Disconnect the heating
elements from the oven and the cable, and replace them.
Electric oven working and safety thermostat
• Remove the control panel.
• Remove the thermostat bulb from the holder located inside
the oven.
• Disconnect the electrical connections.
• Replace the component.
USE AND MAINTENANCE INSTRUCTIONS
WARNINGS
Do not store flammable materials in or near the appliance. Do
not spray aerosols in the vicinity of this appliance while it is
in operation.
Beware of the appliance’s hot surfaces!
This appliance is designed for professional use and must only
be used by trained personnel. It is exclusively designed to
cook food. Any other use is considered improper.
ATTENTION The use of the steak griddle on the pan grids
is not permitted.
Never leave the oven door open (even partially) during use.
If the appliance breaks down, close the gas shut-off valve
upstream of the appliance and call the technical assistance
service.
Repairs should only be carried out by authorised service
centres.

Before using the appliance, thoroughly clean all surfaces that
may come into contact with food.
Safety device for electric oven
• A manually-reset safety thermostat, automatically cuts off
the electrical supply to the heating elements when the
temperature in the oven exceeds the maximum working
temperature permitted (working thermostat faulty). To restore
operation, undo the screw on the front panel, press the
thermostat reset button through the hole, using the tip of a
screwdriver. If the oven does not heat, disconnect the
electrical power supply to the appliance and call the technical
assistance service.
USE
Use of cooking hob
The gas tap control knob is marked with the following
symbols:
• off
pilot ignition
maximum cooking temperature
minimun cooking temperature
Turning on the cooking hob burners
• Press the knob in and turn to the position .
• Press the knob fully and light the pilot manually. Hold the
knob pressed in for approx. 20 seconds, then release it. If the
pilot flame goes out, repeat the operation
Make sure the pilot burner is lit by checking the flame
through the inspection hole in front panel.
• Turn the knob to desired cooking temperature.
Turning off the cooking hob burners
• To switch off the main burner, turn knob to position .
• To switch off the pilot burner, turn knob to position ●.
Use of gas oven
The gas valve control knob is marked with the following
symbols:

Pilot ignition
100° C Minimum cooking temperature
330° C Maximum cooking temperature
Turning on the oven burners (Fig. 3)
• Press the knob in and turn to the position .
• Press the knob fully and press the piezo igniter button to
light the pilot flame. Hold the knob pressed in for approx. 20

seconds, then release it. If the pilot flame goes out, repeat the
operation.
The pilot can be seen and if necessary lit throught the hole in
the floor of the oven.
• Turn the knob to the desired cooking temperature.
Turning off the oven burners
• To switch off the main burner, turn knob to position .
• To switch off the pilot burner, turn knob to position ●.
Use of electric oven
The oven is equipped with two control knobs and one yellow
pilot light.
The selector knob is marked with the following symbols:
0 not in operation
Top heating (grill) in operation
Bottom heating in operation
Top + bottom heating in operation
The working thermostat knob is marked with the following
symbols:
• off
50 Minimum cooking temperature
100-200 Intermediate cooking temperature
300 Maximum cooking temperature
Turning on the oven
• Turn the selector knob to the desired cooking position.
• Turn the working thermostat knob to the desired cooking
temperature (yellow indicator lights).
Turning off the oven
• Turn the working thermostat knob to position •.
• Turn the selector knob to position "0".
CARE AND MAINTENANCE
• Do not wash the appliance with jets of water.
• Before cleaning the appliance, disconnect from the electric
power supply (if connected).
• Clean stainless steel surfaces daily using water and non-
abrasive detergents. Rinse thoroughly and dry.
• Do not use steel wool pads or chlorine-based products.
• Do not use corrosive substances to clean the floor
underneath the appliance.
• If the appliance is to remain idle for a long period, close the
gas shut-off valve upstream of the appliance and clean
thoroughly.
• The appliance should be inspected and the gas exhaust pipe
cleaned by an authorised service engineer at least twice a
year.
For this purpose we recommend taking out a service contract.
Cleaning the interior of the oven
Daily cleaning of the interior of the oven avoids maintenance
problems in the future.
Use a suitable degreasing spray product (not foaming) for
cleaning even in the “hidden” zones.
• heat the oven to 75 – 80° C.
• spray the degreasing solution throughout the interior of the
oven, on the grilles, the grille supports and the oven floor.
• close the oven door and allow the product to react for about
20-30 minutes.
• open the oven door carefully, paying attention to the eyes
and the skin.
• remove from the oven cavity the grille supports, the grilles
and the floor and wash separately.
• clean and rinse the oven interior with a sponge using tepid
soapy water and/or normal liquid detergents, drying
afterwards.
• Remount the internal parts and dry further by turning on the
heating for a few minutes.
