Slow Cooker Hints and Tips.
One of the best methods of preparing tough cuts of meats is a
slow cooker as the meat is tenderized by the lengthy cooking
time. Popular cuts are lamb shanks, pork shoulder, and
braising steak. Meat is best fried to seal before adding to the
slow cooker.
Poultry can also be cooked in a slow cooker and it is even
better if left on the bone such as chicken thighs or drumsticks.
Liquid always needs to be added to the meat to prevent
drying out such as water, stock or wine and add your
flavouring of choice such as herbs and spices.
To make a “one pot meal” also add vegetables, beans, pasta
or pulses.
Avoid lifting the lid during cooking as this causes considerable
heat loss and will extend the cooking time by up to 15
minutes.
The smaller the food is chopped, the quicker it will cook.
There is no need to be precise when weighing and measuring
ingredients for slow cooking. Cut everything to similar sized
chunks to allow for even cooking and place vegetables at the
bottom of the cooker as they take longer to cook through than
meat.
One hour of high generally equals two hours of low.
Converting recipes
You can find many slow cooker recipe books or ideas in books,
magazines, and websites, or you can adapt one of your own
favourite recipes. The main change will be the amount of
liquid that is used can be reduced by up to half as slow
cookers retain liquids better than an open cooking pan.The
time will obviously be extended, and we suggest 4 hours
minimum cooking NB: As ingredients, personal
preferences and cooking times may vary, please check
your food thoroughly to ensure it is fully cooked and
adjust the cooking time as necessary until you are
happy with the result. All recipes require pre heating of the
slow cooker as explained in the instructions.
To convert conventional recipes for the slow cooker, use the
following cooking times and reduce the amount of
stock/liquid by around half. Most dishes will take around 8-10
hours to cook on a low setting , 5-7 hours on medium or for
4-6 hours on high.
Conventional Slow cooker Slow cooker
oven/hob - low setting - high setting
20-30 mins 4-6 hours 1.5-2.5 hours
