The Culinaire War ing Drawer unit has been specifically designed to eet the rigorous de ands of a busy food
service operation. The unit is anufactured fro high quality 304 grade, 1.2 stainless steel, and has been
designed to hold bulk foods above 65oC to eet ini u health require ents. Each drawer is designed to hold
up to 1/1 x 150 deep gastronor pans (optional), with a divider bar to allow for use of optional 1/2 and 1/3
size pans.

Se ing Up
Handling
• Use suitable eans to ove the appliance: eg. A lift truck or fork pallet trucks (the forks should
reach ore than halfway beneath the appliance).
Site Preparation
• Ensure the site is level and properly cleaned.
• Ensure that all joinery or benches for the unit are ade before installation.
Unpacking
• Check the unit for da age before and after unpacking. If achine is da aged, contact the
dealer.
• Wear pro ec ive gloves to unpack the appliance fro the box.
• The unit is supplied fully asse bled.
• Gastronor pans are packed separately.
• Unpack and visually inspect the unit for da age or issing parts. Report any proble s to the distributor
or anufacturer.
• Re ove all protective plastic fil , tapes, ties and packers before installing and operating. Clean
off any glue residue left over fro the protective plastic fil .
• Wipe all surfaces with a clean, sanitised cloth.
Positioning
• Ensure the unit is positioned on a level surface.
• Do NOT install the operating unit next to any heat source or grease-e itting appliance (i.e. fryers). Allow
approxi ately 300 gap.

Power Supply
The appliance is supplied with a 3-core, 240 Volt, 10 A p, 2.3 flexible power cord with a standard 3 pin
plug.
Before connecting to the power supply, check with a qualified echnician that the power supply fro
the wall socket is correct for this unit.
Check the power cord and plug for da age before inserting into the wall socket. If da aged, do NOT
swi ch ON and contact the distributor or anufacturer for repair or replace ent.
Ensure that the POWER switch is in the OFF posi ion before connecting the power supply.
The power supply should be plugged directly into a dedicated wall socket, NO ex ension cords or
mul i-boxes should be used.
• Ensure that the power cord is placed out of the har s way and cannot be da aged when the unit is in
operation.
Grounding
• All electrical wiring in the appliance is correctly grounded when leaving the factory.

General Recommenda ions
When using any electrical appliance, safety precautions should always be observed.
Our appliances have been designed to give high perfor ance. Hence, the appliance ust be used exclusively for
the purpose for which it has been designed.
Read these instrucitons carefully and retain for future reference.
• All appliances MUST be installed according to the procedures stated in the installation section of this
anual.
• In the case of new personnel, training is to be provided in advance.
• Do NOT use this appliance for any other purpose than its intended use.

• Ensure ele ent covers are installed before switching the ele ents ON.
• Keep fingers out of "pinch poin " areas. Clearances between the doors, pans and panels are necessarily

empera ure before placing he PRE-HEATED/COOKED food in o he uni .
Uni Opera ion
Power
• The unit can be switched ON or OFF with the POWER button on the front of the unit.
• The POWER button is a protection switch. No other switch can operate if the POWER button is OFF.
• Ensure that the power cord is stored out of the way and can not be da aged.
Ther ostat
• The heater pads can be switch ON or OFF and the te perature can be adjusted with the THERMOSTAT
KNOB. The THERMOSTAT KNOB is located on the front of the unit.
• The ther ostat te perature can be set between 30°C to 110°C. Twist the knob around reaching the
desired te perature.
Allow 20 inutes between adjust ents for the unit to reach operating te perature.
• The ther ostat probe only easures the empera ure of he wa er/air, NOT the te perature of the
food in the pans. The te perature can be checked using the TEMPERATURE GAUGE.
Drawers
• The drawers can be OPENED and CLOSED using the handles on the drawers.
• Gastronor pans sit on the drawer runners
• Ensure that the drawer is fully closed when in use.
Heat Cycle Light
• The heat cycle light switches ON when the heater pads are heating up the unit.
Gas ronorm Pans
• All gastronor pans and extra dividers are sold separa ely.
• All food placed in the pans MUST be pre- cooked or hea ed above 65°
°°
°C.
• Ensure only 1 type of product is placed in each pan to prevent cross conta ination. If ore pans are
needed, contact your distributor or the anufacturer.
• Do NOT replenish food in old pans, replace and clean pans before using again.
• Each drawer can hold one 1/1 pan with depths that can be all 25 , 65 , 100 and 150 .

Drawer Opera ion
Initial Start up
• Before switch ON the unit, ensure the unit is installed correctly.
• Switch ON and check the drawers are hea ing up.
• Check the te perature after 45 inutes to ensure the unit has reached operating te perature.
• Leave the unit to operate with water in the well for 1 - 2 hours to re ove any fumes or odours.
• Allow the unit to cool. Once cooled, clean the whole unit.
• Your unit is now ready to operate.
Food Te perature
• All food MUST be pre-heated/cooked before placing in the unit. Atte pting to cook food in this unit can
lead to food poisoning.
• Ensure the drawers are aintaining the food te perature over 65°C.
• The te perature reached on the te perature gauge is the water/air te perature, NOT the food
te perature.
• It is i portant to regularly onitor the food te perature in each pan.
Loading and Display
• Ensure that the drawer has reached operating te perature before placing any food in the unit.
• All food placed in the unit MUST be pre-hea ed/cooked. Ensure drawers are clean before placing food
inside.
• Use only the handles to open and close the drawers
• Only one 1/1 gas ronorm pans can be placed in a drawer. 2 x 1/1 per unit.
• Take caution when opening as the drawer can be ho and ho s eam can rise from he food.
• Open he drawer slowly, hot liquids can spill.
• Ensure drawers are not left open when the heat cycle light is ON or food is in the unit.
• Food should be left in the drawer no longer han 3 hours.
Af er Hours
Infor ation
• This unit is NOT designed to store product after hours. The unit MUST be swi ched OFF.
• All pans should be cleaned and placed in night storage. No pans should be left in the war ing drawers.
Storage
• All storage of food should co ply with local health standards and regulations.

Cleaning
Schedules
• After use, the gastronor pans should be cleaned STRAIGHT AWAY.
• The unit should be cleaned at the end of the EVERY WORK DAY.
Infor ation
• Cleaning is reco ended for health and safety purposes and to prolong the life of the unit.
• All liquids in the drawers or around the unit MUST be cleaned up s raigh away.
• Do NOT use abrasive pads or cleaners on the stainless steel or any other etal parts of the unit.
• Do NOT use indus rial chemical cleaners or caus ic based cleaners, any will da age the etals
and plastics used on this unit.
• The gastronor pans MUST be re oved.
• For baked on grease, scrape off with a plastic scraper before cleaning.
• When drying, etal surfaces should be wiped with a soft cloth in the sa e direction as grained polish.
• Do NOT remove any screw for cleaning. All internal sections of the unit are to be cleaned by a
qualified echnician.
• For aintenance of stainless steel surfaces, check the aintenance section for ore infor ation.
Gastronor Pans
• Clear of food and/or any food scraps before cleaning.
• Pans can be cleaned in a kitchen sink with war soapy water.
• Thoroughly wipe dry after cleaning, do NOT allow to air dry.
External Surfaces
• Clean the stainless steel and etal parts with war (not hot) soapy water and a sponge.
• Rinsed the stainless steel and etal parts with clean, fresh water.
• After cleaning, thoroughly wipe the stainless steel and etal parts dry with a soft cloth. Do NOT let water
pool on the unit. Check crevices and folds.
Internal Surfaces
• Clean the internal surfaces with war (not hot) soapy water and a sponge.
• After cleaning, thoroughly wipe the stainless steel and ele ents with a soft cloth.
• If possible, vacuu the inside of war ing drawers with a we and dry vacuum cleaner.

Schedules
• To aintain opti al perfor ance, aintenance and cleaning schedules ust be regular and thorough.
• After use, the gastronor pans should be cleaned STRAIGHT AWAY.
• The unit should be cleaned at the end of the EVERY WORK DAY.
• It is reco ended that servicing is co pleted MONTHLY and 3 MONTHLY, speak to your technician or
the anufacturer about your unit.
Log Books
• Log books should be kept for all cleaning and aintenance of this unit.
Inspection
• Surfaces should be checked at least once a week for da age or deterioration.
• As part of the aintenance, a qualified echnician MUST check the controls, echanical parts and
electrical wiring for da age, deterioration or need of adjust ent.
Faults
• Not repairing s all faults i ediately can cause a co plete breakdown. If any s all faults occur, have
the attended to pro ptly by a qualified echnician.
• All faults should be reported to the distributor and anufacturer.
Wa er Damage
• Water da age to the electrical and echanical parts of unit can occur through hosing on or around the
unit.
• I proper cleaning of the unit can lead to water da age.
• If water da age occurs allow the unit to dry and ensure the unit is checked by a qualified echnician
before switching the unit ON.
• All water da age that is not due to construction or echanical faults is not covered by warranty.

Cleaning
• For cleaning the stainless stain, check the cleaning section of the operation anual.
• All etal surfaces should be checked while cleaning for da age, scuffs or scapes as these can lead to rust
and further da age to the product.
Corrosion Protection
• Stainless steel exhibits good resistance to corrosion however, if not properly aintained stainless steel can
rust.
• Any sign of ild rust or corrosion should be thoroughly cleaned with war soapy water and dried as soon
as possible.
• NEVER use abrasive pads or cleaners for cleaning.
• Mediu rust or corrosion can treated by a co ercial cleaning agent that contains
citric/oxalic/nitric/phosphoric. Do NOT use cleaning agents with chlorides or other harsh che icals as this
can cause corrosion. After treat ent, wash with war (not hot) soapy water and dry thoroughly.
• Thoroughly wipe the surfaces dry after cleaning and do NOT let water pool on the unit. Check crevices and
folds for pooling.
• If an abrasive product is used while cleaning, thoroughly dry the unit and leave in an open or oxidised
area for the stainless steel protective layer to replenish.
• When using, ensure all liquids and oisture is cleaned up straight away. Food liquids such as juices fro
vegetables and fruits should NOT be left on preparation surfaces.
• Do NOT leave ite s on the stainless steel such as cutting boards, rubber ats and bottles.
Surface Finish
• To protect the polish, stainless steel should be dried by wiping a dry soft cloth in the sa e direction as
grained polish.
• For NON-food contact surfaces, a light oil can be wiped on the surfaces with a cloth to enhance the
stainless steel surface. Wipe in the direction of the grain.
• So e co ercial stainless stain cleaners can leave residue or fil on the etal; this ay trap fine
particles of food on the surface, thus dee ing the surfaces not food safe.

Electrical Junction Box
• The electrical junction box has the switches on the face, and contains ain wiring to the unit inside.
1. Unscrew the Fixing screws on the electrical junction box.
2. Pull out panel slowly.
Drawer Runners
1. Pull the drawer out and unscrew the screws on the inside of the drawer.
2. Re ove drawer and unscrew the screws connecting the drawer to the runner.
3. Replace the runners and reverse the way that the runners where re oved.

• Heater pads are a NON-SERVICEABLE part.
