Requires a Quality Burr Grinder!
You will need to “dial-in,” or trial dierent sized
grounds until you get the right pressure. Grind too
ne, and you won’t be able to lower the lever. Grind
too coarse, and the lever will lower without any
resistance and not make espresso.
All Brewers Should Start Here!
The Flow-Control Portalter features a restricted exit
port, which builds pressure for brewing espresso in
the chamber. This portalter can be used with almost
any grinder, or with coarse pre-ground coee, without
the need to “dial-in” your shot. Use for convenience.

Preheat the
Brew Cylinder
Boil water. Add preheat
cap to bottom of brew
cylinder. Fill with boiled
water. Leave for at least
30 seconds.
Start with the Flow-
Control Portalter
Red portalter – no
special grinder required
- avoid coee grounds
that are too ne.
Prepare your Freshly
Roasted Beans
Start with 15 grams
of beans or grounds
(roughly 3 tablespoons).
If grinding, do so right
before brewing for the
best results.
Separate Your
Brew Head
Separate the brew
head into four parts: 1)
Piston 2) Brew Cylinder
3) Screen 4) Portalter.
Tip: Use dosing cup to
remove piston.

Dialing-In Lever Force
Your Flex comes with two “Training Discs” (red); one of which is installed in the piston. Use this red disc as
you learn how much lever force is appropriate. The foil seal of the Training Disc (red) will break if
excess force is applied to the lever, indicating that your grounds are too ne. If the foil breaks,
water will bleed into the brew head. Reattempt with coarser grounds (try ne sea salt consistency if using Flow
Control Portalter) and retest with the second red disc. Extra discs can be purchased on our site.

facing out. Never remove foil of
Training Disc.
Graduation
Disc
Install the “Graduation Disc” (black) once condent that the force applied is never excessive. If trying new coee
with the Graduation Disc and you feel you’re applying excessive force on the lever, carefully STOP brewing and
start over with coarser grounds.

Cleaning your NEO Flex
Follow the steps below. Cleaning your NEO Flex should be done with water only. No soap is needed, as
it can aect your espresso’s taste. Never put your Flex parts in the dishwasher.
Slowly lift lever and
remove assembled
Brew Head from
NEO Flex frame,
gripping the silicone
where indicated
above.
Troubleshooting your NEO Flex
We recommend periodically ushing your Flow-Control Portalter and brew head with fresh water. This
will prevent the build-up of any coee residue and ensure optimum ow. Simply follow the brewing
steps, without coee, to ush. For more thorough cleaning, remove the ow-control spout and rinse all
pieces with water, as shown below. Leave all portalter parts disassembled and upside down to dry.
Detach portalter
over sink by gripping
portalter in one
hand and silicone
on brew cylinder in
other hand, then
pull apart.
Remove dispersion
screen and eject
grounds by knocking
them out against the
side of a trash can,
or dig the grounds
out with a utensil.
Remove the piston
using the dosing
cup. Place cylinder
over dosing cup and
press down on a
hard surface.

Removable, replaceable
spout to enable cleaning and
declogging. Each Flex comes with
an additional spout. Replace as
necessary and if clogged.
For cleaning: Unscrew the spout cap
and rinse spout and bottom of portalter
in cool water. No soap is needed and
may alter your espresso’s taste.
Rinse all brewing
parts with water
from the tap.
Reminder, don’t use
soap as it will impact
your espresso’s
taste.
Rening Your Brew
To better manage the
force on your lever,
and the pressure in
your system, consider
Or, place your complete Flair on a
bathroom scale to help gauge the
force applied while brewing. 30-40
pounds is the target. Never surpass
70 pounds!
