Safe Use of the Equipment
Combi-steam ovens VISION have been esigne an
pro uce to meet all applicable international safety
stan ar s. Installation eviating from the installation
instructions, wrongful use, setting, servicing, as well as
improper cleaning or eventual changes to the combi-steam
oven, which are not authorize by the manufacturer, may
cause injury or eventual eath.
READ CAREFULL the operation manual before you begin to
use the equipment. Keep this manual safe to be use by all
users of the equipment an for further reference in the
future.
Make sure the electricity connection, water connection, as
well as the waste water pipe connections are correct an in
accor ance with the manufacturer’s irections state in
chapter “Transport an Installation” of the combi-steam
ovens technical ocumentation. Shoul you have any oubts
or questions regar ing installation, operation, or safety of the
equipment, please consult your supplier.

the agents.
The buttons on the control panel are to be
presse explicitly by fingers. The use of sharp,
pointe or other objects causes the warranty

Do not block the ventilation openings of the
combi-steam oven by placing things in front of
them, namely o not place GN containers on
the ovens, fabric or other objects. Ensue clear
steam exhaust through the ventilation openings

General notices
Do not install any heat sources ( eep-fryers, grills,
burners, cooking plates …) in the vicinity of the combi-
steam ovens.
The temperature of the outsi e glass of the oor can
excee 60˚C.
Switch off the water an electricity supplies when not
using the combi-oven for exten e perio of time.
Leave the combi-steam oven oor open when finishe
working, e.g. overnight
Shoul the GN containers be fille with liqui s for

Attention! When working with the combi-steam oven

Acci ent hazar !!! Be careful when using with gastro containers in
combi steamer where the upper tray is 160 cm an
more above the floor. Risk of injury because of hot GN
content.
III. General Information
Switching ON/OFF the combi-steam oven
The combi-steam oven is esigne for continuous connection to
electric power. Connect or isconnect the power by switching the
external main switch.
The switch is to be use for switching on an off (when brought to
use, maintenance, an installation an also uring emergency switch
off of the evice.)
Boiler preheating
(only for boiler combi-ovens)
After switching the combi-steam oven on the boiler fills with water
automatically an the water is then heate . During this process, in
mo es “Steam” or “Hot air” the start of the program will be elaye
until the water is hot. After that the combi-steam oven shall
automatically procee . After switching the combi-steam oven on the

Opening/closing the door
The combi-steam oven oor is fitte with a closing mechanism
enabling opening with both right an left han . By moving the han le
to the si es, the latch is release an the oor can be opene by
pulling the han le. For safety reasons, the heating an ventilation fans
are switche off upon opening the oor to prevent escape of steam
from the cooking cabinet. Open the oor slightly at first, opening it fully
after a short while in or er to prevent scal ing by hot steam. Close the
oor by pressing on the oor han le (shut the oor.)
Shoul the oor remain open an the equipment is set to
“START” a warning to close the oor shall appear.

Manipulation with GN containers
•Shoul the GN containers be fille with liqui s for more
than two thir s – special attention shoul be pai uring
manipulation an when taking them out. Place such fille
GN containers only to the racks where you can see. Pay
extra attention when extracting any hot GN containers
with any content!
Loading trolley
–applies to types 2011, 1221
–You must halt the trolley every time you rive it into the
combi-steam oven.
•When operating loa e trolley you must always use an
apply arrestment (GN closure) of GN containers.
•When moving GN containers fille with liqui s – sealing
covers must be use . Otherwise there is a risk of scal ing.
•In case the floor is uneven the loa ing trolleys are not to be
use to rive into the combi-oven.
•Never leave the han le bar of the trolley insi e a close
combi-steam oven – the oor might be amage .
•Never pull out the trolley not using the appropriate han le
bar – not using the han le bar might lea to burns.
•When using banquet trolleys always make sure the plates
are fitte to the stan s correctly.
•Always use the automatic cleaning program to clean the
trolleys.
•It is forbi en to use the combi-steam oven without loa ing
trolley for normal operation an for cleaning!
Temperature core probe
The core probe is use to rea temperature insi e the foo being
prepare an also for managing the cooking process uring gentle
way of foo processing.
•Use the core probe only with foo .
•Never inject the probe into frozen foo s – anger of
breaking!
•Avoi hyper flexing the fee in cable lea ing into the probe.
•Do not pull the core probe out by pulling the cable
•Place the probe so that it oes not touch the oor glass.
•The core probe might be hot – use protective gloves.
•Take out the core probe before you take the foo out an
place it in the probe hol er.
•When not using the core probe, place it in the probe hol er.
•Never leave the core probe outsi e the cooking cabinet –
anger of closing between the oor an amaging it
Cooling the cooking cabinet
For fast cooling of the cooking cabinet use the “Cooling” function in the
“Extras” section
Never use the manual shower to cool the cooking cabinet.
Shoul the temperature be higher than 90˚C – anger of
amaging the insi e oor glass!

Use the manual shower to rinse the insi e of the cooking cabinet, to
cool the cooking cabinet to lower temperature an for further helping
processes in combi-steam ovens (basting…)
Manual shower is functional only when the combi-steam
oven oor is open
Never spray water from the manual shower onto the hot
oor glass – anger of glass estruction.
Always place the manual shower to its hol er after use.
Cleaning the combi-steam oven
It is necessary to clean the combi-steam oven on a regular
basis (see chapter “Cleaning the combi-steam oven”) When
cleaning the combi-steam oven it is necessary to follow these
instructions:
•use only cleaning agents recommen e by the manufacturer
of the combi-steam oven
•follow instructions written on the cleaning agents
•never apply cleaning agents onto hot stainless surfaces –
anger of isturbance of the surface an consequent
iscoloration. The warranty oes not cover such amage!
•always rinse the insi e of the cooking cabinet with the
manual shower after cleaning – thus ri of the cleaning
agents use .

•never apply mechanical cleaning means to clean the combi-
steam oven (such as wire wools, scrapers, knives)
•o not clean the combi-steam oven with high-pressure
water cleaners

Always use protective wear an recommen e working
attire (gloves, goggles, mask) when cleaning the combi-
steam oven! You are protecting your health!
When the combi-steam oven is not cleane often enough –
left over grease buil s up on the cooking cabinet walls – it
can ignite at high temperatures. Such amage is exclu e
from warranty!
Malfunction repairs
Malfunctions can be repaire only by authorize service, traine
an certifie by the manufacturer.

Monitoring and maintenance
It is necessary to provi e minimum annual check up of the combi-
steam oven an its equipment by an authorize service to ensure safe

The plate contains the following information: the manufacturer,
technical ata regar ing the equipment, i.e. type an mo el,

V. Equipment characteristics
GOLDSTEIN VISION is a universal evice for preparation of ishes. It
enables the user to prepare a complete menu. It is possible to carry
out all kin s of thermal processing of foo in the GOLDSTEIN VISION
combi-steam oven, such as roasting, frying, grilling, stewing, steaming,
cooking at low temperatures, low-temperature overnight
roasting/baking. One of the a vantages is foo -processing with low
consumption of water an oil, exclusive of smell transfer when
processing two ifferent ishes, preservation of vitamins an minerals,
great power, water, place an time saving. Due to the possibility to
control humi ity in the cooking cabinet there are great savings in the
weight of the foo processe .
It is also possible to use the combi-steam oven as proofing
compartment, to preserve an ry fruits or other technological
processes. All such processes are programmable an can be carrie out
regar less of the personnel. Use of the temperature probe is another

Thermal processing of foo takes place in the cooking cabinet where

All processes are automatically controlle by a microcomputer, inbuilt
in the CPU of the combi-steam oven.
The cooking itself can take three different forms:

prepare . EASY COOKING uses technology which has been
evelope by a team of GOLDSTEIN expert chefs an
inclu es all kin s of foo processing that can be one in a
combi-steam oven.
•Another option is to use pre-set programs or create own
programs. 1000 programs (recipes) can be entere in the
combi-steam oven memory an they can contain up to 20
steps. Each step can inclu e ifferent parameters an
ifferent cooking mo e. The a vantage of such programs is
the fact that they are carrie out automatically an when
keeping the same input con itions the same quality result
can be reache every time.
•The last option is the setting of al the parameters manually.
Only an experience user shoul use this option, setting the
parameters of cooking process exactly accor ing to their
requirements.

Description of the control panel
The combi-steam oven is fitte with touch-screen control panel.
In ivi ual functions are selecte in an easy way – by gentle “tapping”
on a esire symbol on the isplay, or relevant button of the esire
way of foo processing.
In the upper part of the panel, above the isplay, there are three
buttons for selection of the cooking mo e, in the area bellow the
isplay, there are buttons “VISION AGENT” an “START/STOP”.

Pressing the button sets the cooking values as following:

“Hot air and steam” button
Pressing the button sets the cooking values as following:

VII. Manual mode
Select this mo e when you o not wish to use the “Easy cooking”
mo e, or use the pre-set programs in the mo e “Cookbook”. Choice of
manual mo e enables to create ones own creative proce ure, which,
after finishing the cooking process, an if you are satisfie with your
results, can be store as newly create program.
The manual mo e can be selecte in two ways:
a) by pressing any button of the mode selection

By pressing we start the cooking process.
If you chose the function “Preheating/Cooling” , the
combi-steam oven firstly evaluates the insi e temperature. Shoul the
temperature be lower than esire , the combi-steam oven will then
preheat itself to a temperature 25% higher than the pre-set
temperature an upon reaching the temperature the combi-steam
oven shall pro uce an au io signal with a sign to place in the foo .
Shoul the temperature be higher than the esire one, the combi-
stem oven will cool the insi e to the esire temperature an upon
reaching the esire temperature will soun an au io signal with a
sign to place in foo .
The cooking process accor ing to the actual setting starts
automatically once the GN containers with foo have been put in an
the oor close , you do not need to press the “START” button.
e) Ending the manual operation and returning to the initial
menu
Follows automatically after the finish of the cooking process, after
elapse of the pre-set time, or upon reaching pre-set temperature
when using the core probe or after pressing the en icon.
f) Entering the finished cooking process to the programs
If you are happy with the result of the cooking process an assume
that you will repeat it with the same set parameters, you can enter the
steps an parameters of the finishe cooking process as new program.

1. Using the „Recipes“ section
Press “Recipes” on the initial screen
The screen shows the initial offer of the “Recipes” section, which
you can use to set prepare an create programs:
1.1 „All programs“ option
Allows you to use pre-set programs, which are in chronological
or er accor ing to typical foo groups or accor ing to the way of
preparation.
Basic operations with programs
When pressing this button the foo group (fol er) option appears,
where in ivi ual programs are sorte . The groups may vary accor ing
to the types of ishes or way of preparation.

you will get the offer of all programs store in this fol er.
After pressing selecte recipe (or “Select” button) the selecte
program is set. At this moment you can press the “Start” button an
initiate the selecte cooking process.
Applying the same proce ure, you can also choose programs from
the options “Last ten” and “Favorites”.
Using the Quick View function you can see all the steps of the
selecte program an check the set parameters.
In ivi ual steps an program parameters setting can be shown by
pressing the “Recipes” button“.
On the screen with the list of program steps there is possible:
Create an a next step which is place as
a last step
A Cook&Hol function as the last step.
Default parameters are possible to set in
the „Settings“ section.
Show the parameters of the selecte step. It
is possible to change.
Create an a new step. The new step is
inserte before selecte step.

If you mark any category in „ALL PROGRAMS“ section you have
several choices in „Options“ option:
- Create a new program which is place in
the selecte category.
- Create a new program for „Rack timing“

Cut a category or a program.
- Rename the selecte category.

You can store your favorite recipes here for quick access. You can
create your own atabase of programs, which you use most often or
like the most.
Programs save in this category are specifie with the „Smile“ icon.

1.4 “Find” option
For quick search through the large number of programs you can
use the “Fin ” function
If you know the name of the program, you can enter it in a similar
way to writing a text message on your mobile phone.
By repetitive pressing of the relevant button you select the
esire letter. Short pause between the selections will move the
cursor to the next position of name selection.
By pressing “OK” button you get the selection of all programs
that begin with the entere name. The buttons an are use to
move the cursor an the button to elete a letter.
You can also use the option of entering only a part of a program
or category name an the search help will offer all the programs an
categories beginning with the same letters.
The choice an selection of the program is the same as in the
prece ing chapter.
