This manual should be read carefully before transporting, installing, operating or performing any
maintenance on the machine.
This manual is to be considered an integral part of the machine and should be kept with the machine until
its demolition. If lost, request a new copy from the manufacturer.

1- Warranty and Assistance
1.1 Warranty
The company guarantees the construction quality of the product, certifying the absence of defects of
any kind.
Warranty period:
-12 months from the date of start-up/maximum
Warranty validity terms and conditions:
•Compliance with the standards in the user and maintenance manual;
•Demonstration by the customer in documentary form of regular preventive maintenance by
adequately trained personnel.
Warranty non-applicability conditions;
•Alteration or modification of equipment structure or circuits
•Introduction of gases in the refrigerant circuit, different either in quantity or quality, from the
one indicated on the rating plate
•Operation of equipment in acidic or corrosive atmospheres;
•Use other than the standard application
For each part found to be defective during the warranty period, the company will replace it at no
charge. The cost of shipping spare parts, the cost of the hand labour for part replacement, and any other
additional cost are borne by the customer. For the purposes of the warranty terms, the repaired
products do not change the start and end times of the warranty.
The company provides a warranty period equal to six months in relation to replaced parts.
1.2 Spare parts request
The company sells spare parts exclusively to its direct customers, distributors and authorized service
centres under the conditions of sale agreed. The cost of shipping spare parts are borne by the customer.

2- General warnings
2.1 General safety rules
A use of the machine that does not comply with what intended by the Company releases them from any
responsibility for damage to persons or property.
By the Machinery Directive 89/392/EEC:
oIt is forbidden to tamper with or replace parts of the machine if not expressly authorised. The
use of accessories, tools, consumables or spare parts other than those recommended by the
manufacturer and/or illustrated in this manual may present a danger to operators and/or
damage the machine.
oAny modification to the machine not expressly authorised by the company releases the
company from any civil or criminal liability.
oIt is strictly prohibited to remove or tamper with any safety or protective device on the
machine; check its integrity and proper operation.
oAny routine or extraordinary maintenance operation must be carried out with the machine
off, thus without a power supply.
oDo not operate the machine if it has defects of any kind or visible damage.
oAny maintenance operation and repairs must be performed by qualified personnel. Imperfect
repairs and maintenance can cause serious hazards for the user.

4 - Operating instructions
4.1 CH hood start-up
Each operator before starting work on the machine must have read this instruction manual and be aware of
all the warnings contained herein.
After connecting the power supply, press the power button (see picture) on the right side of the hood.
On detection of any type of malfunction, stop the machine using the main switch and request assistance
from the maintenance person.
4.2 Operating principle
The CH hood is an accessory designed to extract vapours from the cooking chamber of the oven when the
door is open, which are then expelled by the extractor [8].

6 - CHS steam exhaust connection
6.1 Single cooking chamber
Connect the steam exhaust [1], coming from the cooking chamber, located on the back side of the oven, with
the connection hole [7] located on the hood.
6.2 Multiple cooking chambers
Connect the steam exhaust [1], coming from the cooking chambers, located on the back side of the oven,
with the connection hole [7] located on the hood.

7.1 CHS hood start-up
Each operator before starting work on the machine must have read this instruction manual and be aware of
all the warnings contained herein.
Connect the steam exhaust [1] of the oven, with the connection hole [7] located on the CHS hood, with a
connection pipe [9]. (Connecting pipe supplied by the installer )
Connect the condensate drainage [2] located in the back side of the hood, to a water discharge or any other
liquid collector for condensation drainage. After connecting the power supply, press the power button (see
picture) on the right side of the hood.
On detection of any type of malfunction, stop the machine using the main switch and request assistance
from the maintenance person.
7.2 Operating principle
The CHS version of the hood is designed to break down the vapors and odors from the baking chambers
through the action of the extractor [8].
Steam condensation occurs through the passage of the air into a "refrigerant exchanger" or tube evaporator
[5], powered by the condensing unit [3], where the humidity condenses by cooling.
Odor break down is carried out by conveying the passage of air through a filter of activate charcoal [4],
which is capable of retaining volatile organic substances, such as odors and fats. The purified air is then
expelled from the extractor [8].
For proper operation of the hood, it is advisable to turn it on from 5 to 10 minutes before turning on the
oven on, and turn it off from 5 to 10 minutes after the oven has been switched off. This for the complete
elimination of the exhaust materials produced from the oven.

8 - Maintenance
8.1 General recommendations
Prior proceeding with any type of intervention carefully read the instructions contained in this manual.
Maintenance operations must be carried out exclusively by the maintenance person, that is, by skilled and
competent personnel.
WARNINGS:
-All routine and/or extraordinary maintenance should be carried out disconnecting the machine from
the electrical and hydraulic supplies.
-Comply with the schedule indicated for maintenance.
-To guarantee a perfect operation of the machine, any replacements of machine components must
be done exclusively with original spare parts.
-After carrying out maintenance work, before commissioning the machine, check that any parts
replaced and/or tools used for repair/ maintenance have been removed from the machine.
-Check that all the safety devices are in place and effective.
-Check that all the graphic signs and safety signs are present, in good condition and legible.
-It is important to keep the condenser, in the condenser unit [3] of the CHS hoods, free from dust in
the area of the metal fins to prevent the ventilation from obstructing. Cleaning of the condenser can
be done with a soft brush or a vacuum cleaner
8.2 Maintenance of carbon filter (CHS)
On the upper part of the hood, near the extractor[8], there is a filter drawer[4] containing the active carbon.
For continued effectiveness of the active carbon filters, it is recommended that you remove the drawer and
rinse with warm water. The rinse operation of the carbons should be carried out every 120 hours,
meanwhile the replacement should be carried out every 3000 hours of hood operation.
When the carbon is exhausted dispose of it in accordance with regulations.

9 - Hood demolition
Dismantling and demolition of the hood must be performed by qualified personnel.
Proceed with the dismantling of the individual components in order to facilitate the demolition task.
Then proceed with the demolition in accordance with the laws in force in the country of use.
