How to Operate
◆Your Electric Knife Honer & Sharpener
will sharpen knives of alloy, carbon,
or stainless steel. It is designed to
sharpen kitchen knives and most
sporting knives, including those that
must be ground on only one side.
IMPORTANT:
◆DO NOT attempt to sharpen
scissors, serrated/electric knives,
or any blade that does not fit
freely into the blade guides.
◆DO NOT attempt to sharpen
scissors or screwdrivers.
◆DO NOT attempt to sharpen a wet
or damp knife. Please make sure that
knife to be sharpened is clean and dry.
◆Knives should be wiped clean
after sharpening. Take care
when wiping knives as they
become extremely sharp.
◆Until you are familiar and comfortable
with using the appliance, it is
recommended that you practise the
sharpening technique described below
with the Knife Sharpener switched off.
Before use
1. Position the appliance on a stable
work surface away from water
and heat sources. For best results,
moisten the bottom of the Suction
Feet on the appliance.
2. Insert the Mains Plug into a mains
socket and switch on at the socket.
Never leave the appliance unattended
while connected to the electrical outlet.
The appliance must always be unplugged:
◆After use.
◆Before any cleaning or maintenance.
◆If it appears to be faulty.
Sharpening Knives
The instructions below are for knives
that are sharpened on both sides.
◆Set the ON/OFF Switch to the ON
position (—); the switch will illuminate
and the grinding wheels will revolve.
◆DO NOT switch on the appliance with
a blade already in a grinding slot.
◆You will notice there is a number
between each sets of slots. The
side with the 1 is Stage 1 - Precision
Grinding / and the side with the
2 is Stage 2 - Fine Honing / .
◆Each stage has two slots, one to
sharpen each side of the knife.
The left hand slots / are used
to sharpen the right hand side of
the knife blade and the right hand
slots / are used to sharpen the
left hand side of the knife blade.
◆When using the knife sharpener on
your knives for the first time, begin
with Stage 1 - Precision Grinding.
Stage 1 - Precision Grinding
◆Start the knife sharpening process
by creating a precision angled edge.
1. Slowly draw the knife towards you
through both blade guide slots in
Stage 1 / three times, alternating
between the two slots. The knife’s
cutting edge should be kept parallel
with the table or worktop, except
when sharpening the tip of the blade.
2. To sharpen the tip, lift up on the
knife handle slightly as the curved
portion of the blade is drawn through
the blade guides. When drawing the
knife through the blade guides, allow
approximately one second for each
two inches of blade. For example,
if sharpening a knife with a 6-inch
blade, you should take approximately
three seconds for each passing.

Stage 2 - Fine Honing
◆Complete the knife sharpening
process by honing and polishing the
knife to an exact razor sharp edge.
1. Slowly draw the knife through both
blade guide slots in Stage 2 /
three times, alternating between
the two slots. Each passing should
take approximately three or
more seconds, again depending
on the knife blade’s length.
2. Complete the honing process with
one quick passing (approximately one
second) through both slots of Stage 2.
◆Before using the knife to slice
food, always wipe the knife
blade with a damp cloth.
◆If knife doesn’t slice food with
ease, repeat Stages 1 and 2.
Knives that must be
sharpened on only one side.
To sharpen knives that must be
ground on only one side, use the same
technique as described in Sharpening
Knives stages 1 and 2 but use only the
left or right hand slots of each stage.
Knives that must only be sharpened
on their right hand side:
◆Use only the left hand slots / .
Knives that must only be sharpened
on their left hand side:
◆Use only the right hand slots / .
Knife Sharpening Tips
How often should you
sharpen your knives?
◆Hone your knife (Stage 2) regularly to
maintain the sharpest possible edge.
◆If any dents or chips occur on
the blade edge, reshape to a
consistent angle, (using Stage 1)
followed by honing with (Stage 2)
Sparks
◆Knives with high carbon content
(usually higher quality knives)
sometimes will spark when they come
in contact with the sharpening wheels.
Please note that this is normal.
Cleaning and storage
◆The outside surface of the knife
sharpener may be cleaned with
a lightly dampened cloth.
◆DO NOT use abrasives.
◆DO NOT immerse the knife sharpener
in water or any other liquid.
◆Your knife sharpener has two special
receptacles on the bottom of the
unit for collecting metal filings from
your knives. Occasionally empty the
receptacles by removing the red Grind
Receptical Plugs on the bottom of
the unit and shaking out the metal
filings that may have collected inside
into a suitable container for safe
disposal. This should be done about
once a year under normal usage.
◆Store the appliance in a dry location.
◆DO NOT place heavy items on top of
appliance during storage as this may
result in damage of the appliance.
◆Never wrap cord tightly
around the appliance.

Basic safety precautions should always be followed to reduce
the risk of re, electric hazard and injury to persons, including the
following:
DO NOT immerse knife sharpener, cord or plug in water or other
liquids.
Should the appliance accidentally fall into water, unplug
immediately and DO NOT use; contact Judge Customer Services
at the address given in the Warranty section.
Always keep the appliance out of the reach of children.
Take extra care when this appliance is used near children.
This appliance is not intended for use by persons (including
children) with reduced physical, sensory or mental capabilities, or
lack of experience and knowledge, unless they have been given
supervision or instruction concerning use of the appliance by a
person responsible for their safety.
DO NOT operate with a damaged Mains Lead or Mains Plug .
DO NOT operate after the appliance malfunctions or has been
dropped or damaged in any manner.
DO NOT switch on or attempt to operate the appliance if it
appears to be faulty in any way - contact Judge Customer
Services at the address given in the Warranty section.
DO NOT attempt to make any repair to the appliance yourself
- contact Judge Customer Services at the address given in the
Warranty section.
DO NOT use outdoors or in a damp indoor conditions.
DO NOT place on or near a hot gas or electric burner or in a
heated oven.

DO NOT use appliance except as indicated in these instructions
and for the purpose for which it was intended; there is potential
for injury or damage from misuse.
The use of accessories or attachments not supplied with this
appliance may cause injuries.
Before use, check that your mains power supply corresponds to
the voltage shown in this manual (also shown on the rating plate
of the appliance, located on its underside).
DO NOT connect the Mains Plug into the socket, or use the
appliance, if your hands or the appliance are wet.
A short Mains Lead is provided to reduce the risk of personal
injury resulting from becoming entangled in or tripping over a
longer cord. If an extension cord is required, special care and
caution is necessary:
The extension cord should be marked with an electrical rating
of 125V and at least 14A.
The extension cord must be arranged so that it will not drape
over the worktop or tabletop where it can be pulled on by
children or tripped over accidentally.
The extension cord must be arranged so that it does not touch
hot surfaces.
DO NOT switch on the appliance with a blade already in a
grinding slot.
DO NOT attempt to sharpen scissors, serrated/electric knives, or
any blade that does not t freely into the blade guides.
DO NOT sharpen a wet or damp knife. Please make sure that
knife to be sharpened is clean and dry.
DO NOT leave appliance unattended while running.

Cautions (continued)
After sharpening, blades will be very sharp. Take care when
handling.
Unplug from outlet when not in use and before cleaning.
DO NOT unplug the socket by pulling on the supply cord.
DO NOT pull the Mains Lead to move the appliance.
DO NOT use any lubricants or oils, either for maintenance or in
the grinding process.
DO NOT attempt to use more than one grinding slot at a time.
Grinding wheels cannot be replaced.
