Lighting Instructions
The burners are fitted with individual standing pilots for each burner. This allows the
main burners to be turned ‘ON’ or ‘OFF’ without the need to manually relight the burner
each time it is turned ‘ON’. The burner will automatically light itself by the pilot burner.
Flame Failure Protection is incorporated by way of a thermo-electric system which will
shut off the gas supply to that burner(s) in the event the pilot burner goes out. This
prevents unburned gas from continuing to flow.
1. Select the required burner, press the gas control knob and rotate counter-
clockwise to the ‘pilot’ position.
2. With the gas control knob held in the pressed position, press the Piezo igniter
button to ignite the pilot burner (or use a lighting stick to ignite the pilot burner).
3. Hold in the gas control knob for approximately 10-15 seconds, then release.
The pilot burner should remain lit. (If not, wait 5 minutes then repeat steps 1
and 2 above.)
4. The pilot ignition can be viewed through the hole between the Piezo igniter
button and dial.
5. Ensure that the pilot burner is lit by checking through the hole beside the
control knob on the front control panel.
6. Rotate the gas control knob counter-clockwise. The main burner will ignite
automatically.
7. To turn the main burner off, rotate the gas control knob clockwise to the
‘pilot’ position. The main burner will extinguish and the pilot burner will
remain lit.
8. To turn all the burners off, rotate the gas control knob fully clockwise to the
‘●’ (OFF) position. The main burner and the pilot burner will extinguish.
9. Wait 5 minutes before relighting

Lighting Instructions
Initial Cleaning
Prior to operating your new broiler, thoroughly wash the exterior with a mild
detergent solution. Do not use abrasive cleaners; these will damage the cabinet
finish. If the stainless steel surfaces become discolored, scrub by rubbing only in the
direction of the finished grain.
When the broiler is first heated, it will smoke until the oil used in manufacturing and
dust from storage and shipping are burned off. An hour at "max." on all burners is
usually sufficient.
Main burner air supply
1. For efficient burner operation, a proper balance of gas volume and primary
air supply must be maintained which will result in complete combustion.
Insufficient air supply results in a yellow flame. The primary air supply is
controlled by an air shutter on the front of the burner.
2. Loosen the screws on the front of the burner and adjust the air shutter to
eliminate the yellow tips of the burner flame. Lock the air shutter in place by
tightening the screws.
• Never attempt to move a unit while it is lit. An unexpected flare could cause
personal injury. Turn off the unit, let it cool and use potholders and/or gloves
to reposition the unit. The space between the legs at the bottom of the unit
allows combustion air to enter the unit. DO NOT BLOCK THIS SPACE.
• During normal operation, the burners are lit from the standing pilots burners.
Turn the knob to the desired flame height to put the unit in service.
• All valves must be checked and lubricated periodically. This must be
performed by an authorized service agent as part of a regular maintenance
program.

OM-LCB 11
Operating Instructions
Operation
Turn the burners on about 15-20 minutes before cooking and allow the unit
to preheat. Set the knobs to the desired flame height. Each valve will control
the gas flow to the burner to bring that area of the unit up to temperature. If
different temperature settings are to be used, adjoining areas should be set at
progressively higher temperatures, using the lowest temperatures on the outside
burners. A uniform and systematic approach to the use of the unit will produce
the most consistent product results.
Radiants
Place the radiants in position as shown. Make sure that the radiants are set properly
into the slots on the front and rear supports. Radiants should be centered over the
straight section of the burners.
Cooking Grates
Place the top cooking grate with the grid bars sloping toward the front as shown.
NOTE: When cooking grates are placed sloping toward the front, the grooves on top
will guide the excess fat drippings into the grease trough.

Cleaning & Maintenance
DO NOT COVER THE TOP OF THE
GRATES DURING A “BURN OFF”
OPERATION. RESTRICTING THE AIR
FLOW BY COVERING THE GRATES
MAY CAUSE THEM TO WARP. IT
WILL ALSO CAUSE DAMAGE TO THE
VALVES, KNOBS AND FRONT PANEL.
Initial Cleaning
Prior to operating your new broiler, thoroughly wash the exterior with a mild detergent
solution. Do not use abrasive cleaners; these will damage the cabinet finish. If the stainless
steel surfaces become discolored, scrub by rubbing only in the direction of the finished grain.
When the broiler is first heated, it will smoke until the oil used in manufacturing and dust from
storage and shipping are burned off. An hour at “max.” on all burners is usually sufficient.
Daily Cleaning
Remove the drip tray, empty and wash it.
Grate “Burn Off”
Grease buildup on the grates should be cleaned daily (more often as needed).
: When handling grates or radiants, always use insulated gloves
to prevent burns.
A. Place the grates on broiler with grid bars horizontal, facing down.
B. Turn the broiler on for approximately 45 minutes.
C. Turn off the broiler and allow it to cool for 20 minutes.
D. Clean top and bottom surfaces of grate with a wire brush to remove any deposits.
E. Clean channels on grates with a scraper.
F. Remove grates from broiler. Clean top surface of radiants with the wire brush.
These may be cleaned in place.
NOTE: This unit is covered by the manufacturer’s warranty and may not be adjusted by
the installer, unless the installer is an authorized service agent.
Regulator Cleaning
Clean the regulator at least once a month. Make sure the vent opening is open and not
blocked in any way. Failure to do so will cause variations in pressure. This can affect
how the unit functions and may shorten the life of the product.
Once a month, clean the area surrounding vent opening (see illustration on left) with a
clean, wet rag to remove accumulated dust, dirt, lint etc.
