Burn some logs, stoke some coals, and
cook some meat all while connecting
with friends.
The Outback Grill can burn charcoal
briquettes, lump charcoal, or hardwood
logs.

LIGHTING CHARCOAL
Using a chimney starter
The simplest way to start the grill is by using a chimney starter.
Refer to cautions and warning with the chimney starter
1. Place a few sheets of wadded up paper in the bottom of
the chimney starter. Place the chimney starter in the
center of the fire bowl.
2. Fill the chimney starter with charcoal to the appropriate
level as recommended by chimney starter manufacturer.
3. With the chimney starter in the center of the fire bowl, light
the wadded paper through the holes in the chimney starter
using a long stick match or a multi-purpose lighter.
4. Keep the chimney starter in place until the charcoals are
fully lit. The charcoal is fully lit when it is covered with white
ash.
5. Once the charcoal is fully lit, dump the charcoal out of the
chimney starter into the fire bowl. Heat-resistant gloves or
oven mitts should be used to dump the charcoal into the
fire bowl.
Using a lighter cube or log
1. Build a pyramid of charcoal or logs in the center of the fire
bowl and insert several lighter cubes or a lighter log.
2. Using a long stick match or a multi-purpose lighter, light the
lighter cube or log.
3. Wait for the charcoal to be fully lit, or the logs to burn down
to coals. You can tell when the charcoal or logs are fully lit
when they are covered with a white ash.
4. Make sure the lighter cubes and or lighter log is completely
consumed before cooking any foods.
GRILLING
Grilling with direct heat
Direct gilling is used for small pieces of food that take less than
20 minutes to cook. Items such as:
• Chops
• Hamburgers
• Sliced vegetables
• Steaks
• Kabobs
• Boneless chicken pieces
• Fish fillets
• Shellfish
Direct heat grilling is when the coals are directly below the food.
This will sear or brown the surface of the food, developing flavor
profiles and textures, as well as caramelizing the sugars on the
surface of the food. Direct heat also cooks the food all the way
to the middle.
Arranging the charcoal for direct heat grilling
1. Always wear oven mitts or heat-resistant gloves when
operating the grill with lit charcoal.
2. After the charcoal is ready (coated with white ash), spread
the charcoal evenly across the surface of the fire bowl,
using long handled tongs.
3. Place the cooking grate on the vertical adjustment rod and
secure to the desired height.
4. Heat cooking grate for 10 to 15 minutes.
5. Once cooking grate is preheated, use a stainless-steel
bristle grill brush to clean the cooking grate.
6. After cleaning, place food for cooking on grate.
Safe minimum cooking temperatures
Use the chart below and a food thermometer to ensure that
meat, poultry, seafood, and other foods are at a safe minimum
internal temperature.

Cooking Tips
• Grill steaks, pork, fish, and boneless chicken pieces
using the direct cooking method for the given internal
temperature, turning the food at least one time.
• Consider using marinades to give your meal a distinct
flavor.
• Allow food to rest for 3 – 5 minutes before carving.
• Do not add salt until meat is cooked to prevent it from
getting dry and tough.
• Thaw food before grilling.
Food Safety Tips
• Do not defrost meat, poultry of seafood at room
temperature. Defrost in refrigerator.
• Wash hands thoroughly with hot soapy water before
meal preparation and after handling fresh meat, fish
and poultry.
• Never place cooked food on the same platter raw food
was on.
• Thoroughly wash all plates, cookware and utensils
that have come in contact with raw meat, fish or
poultry.

DANGERS
Do not use grill indoors! This grill is designed for outdoor
use in a well-ventilated area and is not intended for and
should never be used as a heater. If used indoors, toxic
fumes will accumulate and cause serious bodily injury or
death.
Keep children and pets at least three feet away from the
grilling area
.
If you use a starter fluid, use only charcoal starter fluid.
Never add charcoal fluid or any other flammable liquids
to the fire or hot coals.
Keep charcoal fluid out of the reach of children and away
from heat sources
.
Keep the cooking area clear of all combustible materials.
The grill should be placed far away from the home, deck
railings and out from under eves and overhanging
branches.
Never leave the grill unattended.
When you are finished grilling, let the coals completely
cool before disposing in a metal container.
WARNINGS
Do not place cooking grate over direct flames. Cooking Grate
is to be used over hot coals only. Direct flames could damage
cooking grate.
This grill
must
be

Improper assembly
and use
may be hazardous
.
Never use grill above dried grass, leaves, wooden deck,
or other flammable materials
.
Do not use this grill under combustible materials such
as trees, bushes, or combustible construction
.
Exercise caution
when
operating
your
grill.
This will
get hot during use. Do not empty or clean grill if it is hot.
This grill should never be left unattended.
WARNING! During use, this grill will become ridiculously
hot, do not move, or adjust while in use.
This grill is not intended to be used in or installed in
campers, recreational vehicles, boats, or cabins
.
Do not use this grill within five feet of flammable
materials; including but not limited to wood, treated
decks, patios, walkways, grass, leaves, or other
combustible materials
.
Grill legs are always to be used to level the fire bowl and
cooking grate. Do not use grill if it is not level.
Do not use grill in high-wind situations.
Do not wear loose fitting clothing or oversized sleeves
while lighting or using grill
.
Never touch the cooking grate, fire bowl or other surfaces
to see if they are hot.
Use heat-resistant gloves or oven mitts/ potholders while
cooking or in use.
Never dump charcoal or ash where it can be stepped on
or create a fire hazard.
Never dump ash or charcoal until it is completely
extinguished.
Use proper tools, with long, heat-resistant handles.
Do not use on a table
.
Do not store grill with ashes or charcoal in the fire bowl.
Do not remove charcoal or ash from grill until it is
completely burned out and fully extinguished and the grill is
cool to the touch.
Keep the grill free of all walkways and high traffic areas
while in use.
Have baking soda on hand to control a grease fire and a
fire extinguisher nearby for other fires. If you do not have a
fire extinguisher, keep a bucket of sand next to the grill.
Never use water to put a grease fire out
.
CAUTIONS
It is recommended to use a stainless-steel wire brush to
clean cooking grate.
When cleaning the cooking grate surface with a grill brush,
brush should be checked for loose bristles and extensive
wear on a regular basis. If bristles are found to be loose, or
on the cooking grate, replace the brush.
Do not use the Explore 300 Fire Pit/ Grill from
Outback-Grills in confined or habitable spaces
such as houses, garages, barns, tents, campers,
recreational vehicles, boats, or other confined
areas. There is a significant danger of carbon
monoxide poisoning or fire, both of which can
be fatal.
