PACKING AND DEVICE CHECK
The device leaves our stocks properly packed with appropriate symbols and labels. There are also appropriate
instructions for use. In case the packing shows bad handling or damage, it must be reclaimed at transporter
immediately by writing and signing of a damage protocol.
Important notice:
-This product is only intended for use inside.
Never use the appliance if it has a damaged supply cable or plug, if it is not working correctly, has fallen to
the ground and been damaged or fallen into water. In such cases take the appliance to a professional service
in order to verify that it is safe and works correctly.

PLACEMENT
The device must be instalated in well ventilated room what is necessary for regulation of the function of the
device (technician must go by valid standard (EN....). If the device is situated close to the wall or if it is in
contact with the furniture walls, these walls must resist the temperatures ranging to 90°C. Instalation, setting,
putting into operation must be done by qualifi ed person who is competent for this and according to the valid
standards.
Wrap up the device and check whether it was not damaged during transport. Settle the device on horizontal
surface (max imbalance 2°).Settle the device under the fumehood to eliminate water steam and bad smell.
The device can be instalated separately or in a set with devices of our production. Min. distance 10 cm
from other subjects must be kept.It is also necessary to prevent our product from contact with combustible
materials. In this case you must make corresponding changes to secure heat izolation of combustible parts.
Safety measures from the standpoint of the fi re protection according to EN 061008čl. 21:
The components of the appliance provided by the manufacturer or its representative must not be
reconfi gured by the person installing the product.

Important:
The manufacturer does not provide warranty for defects caused by improper use, failure to instructions
contained in the attached instructions for use and mistreatment of the appliances.
Installation, adjustment and repair of appliances for kitchens, as well as their removal because of possible
damage to the gas can be carried out only under a maintenance contract, this contract may be signed with an
authorized dealer, and must be complied with regulations and technical standards and regulations regarding
the installation, power supply, gas connection and health & safety system.
These instructions are intended for the qualifi ed technician who must perform the installation, put it into
operation and test the appliance.
Any activity as settings, placement, rebalancing etc, must be made only when is device disconnected from
electricity. If it is necessary to have the device connected to the electricity you must keep the highest attention
to avoid any injuries.

• only adults can operate the device
• device must be safely used in common surroundings according to EN 332000-4-462; EN 332000-4-42. You
must switch the gas device off under the circumstances leading: to the danger of the temporary rise of the
combustion gas or steam or during works when there is a big possibilityof rise ot the temporary fi re danger
or explosion (for example: to stick linoleum, PVC etc.).
• before you start to instal the device you must get the licence for connection to the gas feeder from the
gasworks
• device must be placed so as to stand or hang on the noncombustible surface which is on each side 10
cm larger than the device. No subjects from combustible materials can be placed directly on the device
or in distance which is shorter than safety distance (the shortestdistance is 50 cm in the direction of the
heat emission and 10 cm in other directions).- safety distances from various materials of different degree of

Devices must be instalated in a safe way. When instaling you must respect corresponding project, safety and
hygienic orders according to:
• EN 061008 fi re protection of local devices and sources of heat
• EN 332000 (33 2000-4-482; 33 2000-4-42) surrounding for electric devices ČSN EN 1775 Gas supplying
• Gas fi ttings in the buildings - the highest operational pressure < 5 bar - operation demands
• § 10 law nr. 185/2001 Sb. about waste

Food outlet valve
The food outlet valve is used to drain the food from the boiler vessel. The bottom edge of the valve is
located at a minimum height of 280 mm (or higher, depending on the height setting of the appliance
legs).
Valve installation
Before installing the valve, insert the flat gasket (4) into the groove in the union nut. Then fit the valve onto the 2“
boiler outlet pipe and tighten. When tightening, hold the valve so that it does not rotate and stays upright.
Using the valve
To drain food, grasp the handle (5), li it to a horizontal position and turn clockwise (turn slowly - full opening is
half a turn).
To close the valve, turn the handle back counterclockwise. In the closed position, the handle (5) can be lowered
back down to the vertical position.
Beware of scalding from possible hot food! The metal parts of the valve may also be hot!
Maintenance of the valve
Maintenance of the valve should be carried out aer each use (daily). Maintenance is carried out as follows:
1) First, make sure there is no liquid (food) residue in the container.
2) Open the valve.
3) Pull the pin (6) in the direction indicated and remove the valve insert (2) upwards and out of the body (1).
4) Clean all parts of the valve. In particular, it is necessary to lubricate the O-rings (3) with food grade petroleum
jelly.
5) Insert the insert (2) back into the valve body (in the open position). Pull the pin (6) up again to fit into the groove
in the insert.
6) Close the valve.
CONNECTING THE POWER CABLE TO THE MAINS
WATER CONNECTION
Installation of the electrical supply - this supply must be separately protected. This is by an
appropriate circuit breaker of the rated current depending on the power input of the installed
appliance. Check the wattage rating on the nameplate on the rear panel (or side) of the unit.
The connected ground wire must be longer than the other wires. To connect the appliance
directly to the mains, it is essential to insert a switch between the appliance and the mains
with a minimum distance of 3 mm between each contact, corresponding to the applicable
standards and loads. The earth lead (yellow-green) must not be interrupted by this switch.
Connect the appliance intended for connection to a mains socket if the socket has adequate
protection.
In any case, the supply cable must be positioned so that at no point does it reach a tempe-
rature 50 degrees above ambient. Before the appliance is connected to the mains, it is first
necessary to make sure that:
- the supply circuit breaker and internal wiring can withstand the current load of the applian-
ce (see matrix label)
- the distribution is equipped with an eective earthing system in accordance with the stan-
dards (CSN) and the conditions laid down by law
- the socket or switch in the supply is easily accessible from the appliance
- the electrical supply to the appliance shall be of oil-resistant material.
Before first use, you must clean the device, see chapter „cleaning and maintenance“.
The appliance must be earthed using the screw with the earthing mark.
- This label indicates the grounding point of the device
- Do not plug the power supply plug into the power supply. Do not plug the power plug
into a socket or remove it from the mains. power supply plug with wet hands and by
pulling on the power cord!
- Do not use extension cords or combined sockets.
- The mains connection point must have a maximum impedance of ZMAX according to
EN 61000-3-11:2001. ZMAX = 0.042 + j 0.026 Ω for phase conductors and 0.028 + j 0.017 Ω
for neutral conductor
The water connection is made using supply hoses with G1/2 thread. The water supply must be fitted with
separate stopcocks that are freely accessible and within reach of the equipment. Check valves are inclu-
ded in the equipment. The water used to fill the duplicator compartment shall be soened - max. 5° on the
French water hardness scale. The supply water pressure shall be between 50 and 300 kPa.
Never use the device if the duplicator is without water! There is a risk of damaging the device! Check and
refill the water in the duplicator regularly.
If water boils out of the duplicator during operation on versions without automatic water supply, switch o
the boiler immediately. Topping up the water is
only aer the boiler has cooled down. Failure to observe this condition may result in damage to the dupli-
cator!

2) Open the valve.
3) Unscrew the locking nut (6) and remove the valve insert (2) upwards and outwards from the body (1).
4) Clean all parts of the valve. In particular, it is necessary to lubricate the sealing surface (3) with food grade petro-
leum jelly.
5) Insert the insert (2) back into the valve body (in the open position). Screw on the locking nut (6).
6) Close the valve.

Boiler lid
The hinge of the lid is fitted with a spring to help relieve its weight. However, the lid is not adjustable and is only
held open in the upper position (open at an angle of approx. 80°)!
The handle is positioned and curved to the right outside the cooking vessel to prevent scalding from rising steam
when opening the lid during cooking. However, it is still advisable to use caution when opening the lid during
operation.
The lid must be closed when cooking! Otherwise, too much heat escapes and the heating time is significantly pro-
longed.

Working pressure
The boiler is equipped with a pressure switch which limits the working pressure to 0.45 bar +/- 10%. The pressure
regulator is superior to all controls and will interrupt heating whenever this pressure should be exceeded. Heating
is restored aer the pressure drops.
The boiler is also equipped with a safety relief valve (1), calibrated to a pressure of 0.5 bar + 10%. In the event of a
failure of the pressure relief valve, the safety valve will release steam and prevent dangerous pressure values.
The pressure readings in the duplicator can be monitored on the pressure gauge (2) located on the front panel of
the unit.
Since the water in the duplicator is heated at the same time as the water in the container (food), steam formation
and pressure build-up in the duplicator does not actually occur until the food in the container is approximately 80
°C.

Duplicator venting
The boiler is equipped with an automatic venting valve. When the boiling process starts, the excess air is gradually
expelled by the steam. When suicient warm air (and steam) starts to escape through the vent valve, it closes au-
tomatically. Only then does the pressure in the duplicator begin to rise. There is no need for the operator to worry
about the venting.
Aer the boiler has finished cooking, the vent valve opens again as the boiler cools down, letting air into the dupli-
cator and preventing a vacuum from building up.
Any condensate that may escape from the vent valve is discharged into the drain pipe (1) together with the drain
from the worktop (2).
Working pressure
The boiler is equipped with a pressure switch which limits the working pressure to 0.45 bar +/- 10%. The pressure
regulator is superior to all controls and will interrupt heating whenever this pressure should be exceeded. Heating
is restored aer the pressure drops.
The boiler is also equipped with a safety relief valve (1), calibrated to a pressure of 0.5 bar + 10%. In the event of a

INCTRUCTION FOR USE
Filling the duplicator
Semi-automatic (basic version)
The basic version of the device is equipped with semi-automatic duplicator filling. An overflow cock (1) flows from
the front of the duplicator intermediate chamber. A rocker switch for filling (2) is located on the front panel. For
correct operation, the water level in the intermediate tank must be checked and topped up regularly.
The procedure for refilling the intermediate tank is as follows:
Open the overflow tap (1), if no water is flowing out, press and hold the cradle fill switch (2). Hold the switch until
a thin stream of water begins to flow out of the overflow tap. At this point, release the cradle switch and close the
overflow tap.
Note: The semi-automatic filling system is equipped with a thermostat to prevent water from filling the hot dupli-
cator. The priming is inactive when the temperature is above 60°C.
Automatické (verze AWF)
The AWF version boilers are equipped with an automatic duplicator filling system. In this version, the level monito-
ring and refilling is carried out automatically, even during operation.
The automatic filling system is active whenever the power switch knob is in the position , or .
The blue indicator light (1) is used to signal the operation of the automatic refilling. It lights up when the
water is being filled.

Filling water for cooking
Water filling handle
The handle (3) is rotatable by 90° and care must be taken to prevent it from colliding with the boiler lid (1) when
opening and closing the lid. There is a hole in the worktop below the filling arm for draining water from the top
plate moulding area (5).
Water filler tap
The tap (2) is located on the front panel near the controls. Turning the tap releases cold water into the filling arm
(3).
Level lines in the vessel
The level lines (4) are moulded on the back of the container and indicate the volume of food in the container. The
lines indicate the volume:

Filling water into the container
Raise the boiler lid (1) to the upper position. Turn the water filling arm (3) towards the vessel. Turn the filling tap (2)
and fill the desired amount of water, then close the tap (2). Turn the filling handle (3) away from the container so
that it does not collide with the lid (1). Close the lid (1).
Note: Filling the full volume of water takes approximately 20 min for 90/100-200 boilers and 30 min for 90/140-300
boilers, depending on the water pressure in the water line.

Controls
Power selection knob
e knob (1) switches the appliance o/on. e switch has four positions:
Position 0 - the appliance is switched o.
Full power - all heating coils of the heating system are used during heating. is position is found
twice on the knob.
Half power - Part of the heating system coils are used during heating.
Controller knob
Both full and half power can be further ne-tuned using the control knob (2) when:
Position 0 - heating system o.
Positions 1 to 7 - regulation between 10 and 70% of full or half power according to the setting of the knob (1).
e regulation is carried out by cycling the heating elements at dierent intervals.
MAX position - 100% of full or half power according to the setting of the knob (1). e heating elements heat
continuously (except when switched o by the preset due to reaching the working pressure).
Green indicator light
e green indicator light (3) indicates that the device is switched on. e light turns green when the power
switch knob is switched to the full or half position. When the green indicator light is on, the automatic inter-
mediate water supply is activated at the same time (for AWF version) and water starts to ow in case of low
water level.
White (orange) indicator light
e white light (4) indicates the status of the heating system. e light is always orange when the device is
heating.
Regulation
To set the full power, switch the power switch knob (1) to the full power position and at the same time
switch the ne control knob (2) to the MAX position. Full power is used to bring food to a boil as quickly as
possible.
To maintain the food temperature at approximately 95 °C (recommended temperature for drawing broth)
- rst bring the food to a boil and then pull the power switch knob (1) to half power and at the same
time the ne control knob (2) to level 2 (level may vary depending on the amount of food being cooked).
Before starting to boil, it is rst necessary to check the water level in the duplicator by opening the over-
ow tap. If no water is coming out of the duplicator, it is necessary to let the water out by holding the rocker
switch. When water starts to ow, close the overow tap. Note: For AWF versions, skip this step.
Operate the appliance by switching the power selector knob to the full or half power position. In
these positions, the green light will illuminate to indicate the appliance is on (the boiler is not yet heating).
Note: If the boiler is in AWF version, the intermediate tank priming will be activated at the same time (and
if the level in the duplicator is not reached, the water will also be primed). Turning the controller knob to
positions 1 - MAX will switch on the electric heating system. e heating status is indicated by an orange
indicator light.
To achieve the fastest boil-up, the lid must be closed and the full power + regulator set to MAX. Even
at maximum power, the pressure control by the preset is still active. erefore, the heater may cycle when the
operating pressure is reached.
Once the desired temperature is reached, the heating output should be adjusted by pulling down to half
power or setting the control to a value lower than MAX, which will extend the life of the switching elements.
- For the function and life of the heating elements, it is essential that the correct water level is maintained in
the duplicator intermediate casing, thus keeping the heating elements submerged at all times.
- If the pressure switch fails and the pressure is greater than 0.5 bar +10%, the safety valve located on the top
plate will open and release the steam.
- Heat transfer is most eective when the full capacity of the cooking vessel is used, or at most to the next
groove (210 l for the 90/140-300 and 120 l for the 90/100-200). At lower ll levels, heat loss increases and
cooking performance is reduced.
- To achieve the most ecient boiling of food, the lid must be closed.

Green indicator light
e green indicator light (3) indicates that the device is switched on. e light turns green when the power
switch knob is switched to the full or half position. When the green indicator light is on, the automatic inter-
mediate water supply is activated at the same time (for AWF version) and water starts to ow in case of low
water level.
White (orange) indicator light
e white light (4) indicates the status of the heating system. e light is always orange when the device is
heating.
Regulation
To set the full power, switch the power switch knob (1) to the full power position and at the same time
switch the ne control knob (2) to the MAX position. Full power is used to bring food to a boil as quickly as
possible.
To maintain the food temperature at approximately 95 °C (recommended temperature for drawing broth)
- rst bring the food to a boil and then pull the power switch knob (1) to half power and at the same
time the ne control knob (2) to level 2 (level may vary depending on the amount of food being cooked).
Before starting to boil, it is rst necessary to check the water level in the duplicator by opening the over-
ow tap. If no water is coming out of the duplicator, it is necessary to let the water out by holding the rocker
switch. When water starts to ow, close the overow tap. Note: For AWF versions, skip this step.
Operate the appliance by switching the power selector knob to the full or half power position. In
these positions, the green light will illuminate to indicate the appliance is on (the boiler is not yet heating).
Note: If the boiler is in AWF version, the intermediate tank priming will be activated at the same time (and
if the level in the duplicator is not reached, the water will also be primed). Turning the controller knob to
positions 1 - MAX will switch on the electric heating system. e heating status is indicated by an orange
indicator light.
To achieve the fastest boil-up, the lid must be closed and the full power + regulator set to MAX. Even
at maximum power, the pressure control by the preset is still active. erefore, the heater may cycle when the
operating pressure is reached.
Once the desired temperature is reached, the heating output should be adjusted by pulling down to half
power or setting the control to a value lower than MAX, which will extend the life of the switching elements.
- For the function and life of the heating elements, it is essential that the correct water level is maintained in
the duplicator intermediate casing, thus keeping the heating elements submerged at all times.
- If the pressure switch fails and the pressure is greater than 0.5 bar +10%, the safety valve located on the top
plate will open and release the steam.
- Heat transfer is most eective when the full capacity of the cooking vessel is used, or at most to the next
groove (210 l for the 90/140-300 and 120 l for the 90/100-200). At lower ll levels, heat loss increases and
cooking performance is reduced.
- To achieve the most ecient boiling of food, the lid must be closed.

CLEANING AND MAINTENANCE
It is recommended to have the unit rechecked by a professional service technician at least once a year. Any
work on the instrument must only be carried out by a qualified person who is authorised to do so.
WARNING!
The device must not be cleaned with direct or pressurized water. Clean the device daily. Daily maintenance
prolongs the life and eiciency of the equipment. Always disconnect the main power supply to the equi-
pment before starting cleaning. Wash stainless steel parts with a damp cloth and detergent free of coarse
particles and wipe dry. Do not use abrasive or corrosive cleaning agents.
Attention! Before using the appliance, the protective film must be removed from the entire surface and
then washed well with water and dish detergent, then wiped with a damp cloth.
NOTICE
The warranty covers all consumable parts subject to normal wear and tear (rubber seals, bulbs, glass and
plastic parts, etc.). The warranty also does not cover the equipment if the installation is not carried out in
accordance with the instructions - by an authorised person according to the relevant standards and if the
equipment has been tampered with (tampering with internal equipment, etc.) or operated by untrained
personnel and in contravention of the instructions for use, and the warranty does not cover damage caused
by natural influences or other external intervention. Inspection by a service organisation 2 times a year

WARM - UND KALTWASSERANSCHLUSS
Der Anschluss an das Warm- und Kaltwasser erfolgt über Zuführschläuche mit Gewinde G1/2. Der Anschluss
wird nach dem Abnehmen der vorderen Platte vorgenommen. Die Wasserzufuhr muss mit unabhängigen
Verschlüssen versetzt werden, die frei zugänglich sind und die sich in der Reichweite der Einrichtung befi n-
den. Einen Bestandteil der Einrichtung bilden Rückschlagventile.
Das Wasser zur Füllung des Duplikatorsraumes muss enthärtet sein – max 5° der deutschen Skala für die
Wasserhärte. Der zugeführte Wasserdruck muss im Bereich 50 – 300 kPa liegen. Der Anschluss muss in
Übereinstimmung mit der EN 1717 und den gültigen nationalen Vorschriften für die Wasserwirtschaft ausge-
führt werden.
DIE VERPACKUNGS-, UND VORRICHTUNGSKONTROLLE
Die Vorrichtung verlässt unsere Lager in ordentlicher Verpackung, auf deren die entsprechenden Symbole
und Bezeichnungen stehen. In der Verpackung befi ndet sich entsprechende Bedienungsanweisung. Falls die
Verpackung eine schlechte Behandlung oder Anzeichen der Beschädigungen vorweist, muß dieses sofort
beim Transporteur reklamiert werden und zwar durch Unterzeichnung eines Schadensprotokolles.

DIE PLATZIERUNG
Es ist unbedingt notwendig, zu der Regulation der Gerätetätigkeit, daß das Milieu - der Küche -, wo das Gerät
installiert wird, sehr gut belüftbar ist (im Hinblick darauf: sei der Techniker sich mit geltenden Normen (EN)
richtet). Wenn die Einrichtung so plaziert wird, daß sie im Mobiliarwandkontakt stehen wird, so müssen diese
einer Temperatur von 90°C wiederstehen. Die Installation, Herrichtung, Inbetriebsnahme müssen durch
qualifi zierte Person, die zu solchen Vorkehrungen eine Befugnis hat und dies laut geltenden Normen nach,
durchgeführt werden.
Packen Sie das Gerät aus und kontrollieren Sie , ob sich das Gerät während des Transportes nicht beschädigt
hat. Platzieren Sie das Gerät auf eine waagrechte Fläche (maximalle Unebenheit bis 2°). Stellen Sie das
Gerät unter den Haubenabzug, damit Sie die Wasserdämpfe und den Geruch eliminieren. Das Gerät kann
selbständig oder in einer Reihe mit Geräten unserer Herrstellung installiert werden. Es ist notwendig die
