1. INTRODUCTION
The correct and safe operation of ducted
hoods and extractor fans is only ensured if
they are used in accordance with the
instructions in this manual and in general in
the documentation accompanying the
machine.
It is therefore essential to read and keep all
accompanying documentation carefully.
Although the machine is equipped with
safety systems, all risks due to incorrect use
cannot be avoided.
No liability is accepted for damage to
persons or property resulting from improper
use of the machine.
1.1. GUARANTEE
The machine is covered by a warranty
against manufacturing defects for a period of
twelve (12) months.
The guarantee is only valid if the machine
has been installed and operated in accordance
with the manufacturer's instructions and has
not been subjected to any handling.
The warranty period starts from the date of
shipment of the machine from Vortex srl.
The guarantee includes the replacement of
defective parts; the labour required for their
replacement and out-of-pocket expenses
(transport, board, lodging, etc.) are borne by
the customer.
Parts subject to wear and tear are not
covered by warranty.
ATTENTION! The warranty is
immediately void if work is carried out
on the machine by unauthorised
personnel.
1.2. AUTHORISED PERSONNEL
Repairs and extraordinary maintenance
work on the machine may only be carried out
by Vortex srl personnel or personnel
authorised by Vortex srl.
Information on the personnel to be
contacted for interventions can be obtained
directly from Vortex Ltd.

2. INSTALLATION
AND
PREPARATION OF
THE KITCHEN
ENVIRONMENT
2.1. TRANSPORT AND HANDLING
The machine can be lifted manually, by
two or four persons depending on the size and
weight of the machine.

If the oven hood or exhaust fan motor box
is delivered in wooden crates, it can be
transported by means of forklifts - placing the
forks of the forklift in the appropriate forks in
the base of the crate.
WARNING! When lifting with a
forklift truck, always ensure that the
centre of gravity of the load is centred
in relation to the forks in order to
prevent unbalancing. Follow the lifting
and transport instructions given by the
forklift manufacturer.
Lifting and installation operations are
carried out with the machine fully assembled.
2.2. INSTALLATION
Installation of the machine can be carried
out by Vortex srl. or by the user; installation
must always be carried out by trained
personnel who are informed of the correct
installation methods as explained in the
following documentation.
The user must also prepare the place where
the installation will be carried out in a manner
appropriate to the requirements of the machine
as explained below.
2.3. OCCUPIED AREA
The area available for installation of the
machine must be determined taking into
account the overall dimensions and the

✓Place the hood on the furnace, making
sure it is well aligned.
✓Fasten the hood to the furnace with the
6x20 mm screws provided.
2.4. SMOKE EVACUATION DUCT
In order to ensure the proper functioning of
the oven hood or extraction motor fan, the
smoke extraction duct must be suitable for the
air flow of the machine.
The smoke evacuation duct must be
secured with screws above the air outlet area
of the hood or extractor fan (Figure 1).
WARNING! The smoke evacuation
duct must completely cover the air
outlet area. This is essential to ensure
good suction and evacuation of the
fumes and to avoid the possibility of
reaching the impeller.
2.5. INLET OF THE FLUE GAS
SUCTION DUCT IN
EXTRACTION BOX-TYPE
VACUUM CLEANERS
In order to ensure the proper functioning of
the box vacuum cleaner, the smoke suction
duct must be suitable for the air intake of the
machine, as indicated on the machine's
identification plate.
To connect the smoke extraction duct to
the box vacuum cleaner:
✓Drill a hole in one of the walls of the
box vacuum cleaner of the exact size of
the inlet duct; the inlet hole can be
drilled in any of the walls of the vacuum
cleaner - except for the removable one
for inspection - but it is preferable to
drill it in the wall opposite the wall
where the air outlet takes place;
✓Fasten the smoke extraction channel to
the hole thus drilled using screws.
WARNING! The smoke extraction
duct must completely cover the inlet
air hole. This is essential to ensure
good smoke extraction and to avoid
the possibility of reaching the
internal organs of the extractor fan.
2.6. POWER SUPPLY
The electrical power supply system
must have a voltage and frequency equal to
the nominal voltage and frequency of the
machine's power supply and must be
suitable for the power in- stalled on the
machine, as indicated on the machine's
nameplate.
The power supply must be equipped
with an isolating device that can be locked
in the open position to allow safe
maintenance work on the machine.
It is best not to use plug/socket
combinations to connect machines to the
power supply.

When connecting the external power
supply and making control circuits, always
ensure the correct connection of the neutral
conductor.

2.6.1. CROSS-SECTION OF
EXTERNAL POWER SUPPLY
CONDUCTORS
The cross-section of the external power
supply conductors (not supplied by Vortex
GmbH) must be such that the maximum
current can pass through without damage or
excessive heating.
When calculating the cross-sectional area,
the tripping current of the overcurrent
protection devices must be taken into
account: in the event of a fault - e.g. short
circuit - the maximum current that can flow
in the conductors is the tripping current of the
protection devices to which they are
connected, which must therefore be
withstood without damage by the conductors.
The minimum conductor cross-section
must be determined as a function of the
maximum permissible current using the table
above (taken from EN 60204-1).

must not be smaller than that of the phase
conductors.
2.6.2. OVERCURRENT
PROTECTION
The power supply must be provided to the
machine from a line protected against
overcurrents by means of a circuit breaker
(magneto-thermal) or delayed fuses, suitably
sized. The tripping current of the protections
must be as low as possible, taking into
account the maximum absorption of the
machine, in order to prevent overcurrents.

2.6.3. PROTECTION AGAINST
INSULATION FAULTS
The power supply system of the machine
must be equipped with an insulation fault-
sensitive device (differential) with a suitable
tripping current

(typically 30 mA). This device must be placed
downstream of the overcurrent protection
device (or be integrated with it).
WARNING! Protection against
insulation faults must be part of the
machine's power supply system and is
not provided by Vortex srl.

2.6.4. PROTECTION CIRCUIT
The machine must be connected to an
external protective equipotential circuit
(earthing) via the point identified bythe letters
PE located on the machine body near the
phase conductor connection terminals.
The conductor must be fitted with a
suitable terminal with hole; the fastening
screw must be removed, passed through the
hole in the terminal and secured again;
serrated washers must be placed between the
terminal and the body and between the
terminal and the screw head.
The screw must be tight to ensure good
electrical contact and avoid potential
loosening.
The cross-section of the external
equipotential bonding conductor (external
earthing) must not be smaller than that of the
phase conductors.
ATTENTION! The connection of the
external equipotential protective
conductor is essential for the safety of
operators (protection against electric
shock).
2.7. LIGHTING POWER SUPPLY
The hoods can be supplied with lights to
illuminate the hob.
The lights must be connected to a power
and control circuit by the user.
The power supply conductors of the lights
must be part of a multi-core cable; the cable
entry must be made through a hole drilled in
the body of the machine.
The power cable must be routed through
the hole by means of an appropriately sized
cable press, so as not to reduce the degree of
protection of the machine against penetration
by external agents.
Lights must be protected against
overcurrents by means of a circuit breaker
(thermal-magnetic) or fuses, suitably
dimensioned. The tripping current of the
protections must be as low as possible, taking
into account the maximum absorption of the
machine, indicated on the machine's
nameplate. Overcurrent protection devices
used for lights must be dedicated to them and be
independent of devices used to protect other
consumers (e.g. the vacuum cleaner motor).
2.7.1. ENGINE POWER SUPPLY
The supply conductors must be part of a
multi-core cable.
The entry into the housing of the hood or
box extractor fan must be made through a hole
drilled in the vicinity of the power connection
terminals.
The power cable must be routed through
the hole by means of an appropriately sized
cable press, so as not to reduce the degree of
protection of the machine against penetration
by external agents.
2.8. COMMANDS
The external power supply must be
connected to a control circuit, which will then
in turn power the extractor motor and possibly
the lights.
All control devices and their enclosures
must have a minimum degree of protection of
IP55 (according to IEC EN 60529:1997).
2.8.1. CONTROL WITH VARIABLE
SPEED DRIVE
Oven hoods with exhaust fan motor box
can be supplied with a motor control panel
(Figure 3).
The connection of the controls to the power
supply and the motor must be carried out as
indicated in the enclosed variable speed drive
instruction manual.
The meaning of the control devices must be
indicated by clearly recognisable lettering or
symbols.

2.8.2. MOTOR CONTROL
If the oven hood or exhaust fan motor box
is supplied without control devices,these must
be made by the user, observing the following
requirements:
✓The motor must be protected against
overload by a device that detects
overload on all active con- ductors and
interrupts all active conductors in the
event of an overload;
✓there must be a start command and a
stop command for the motor;
✓starting and stopping the motor must be
controlled by switches that interrupt all
phases.
2.8.3. LIGHTING CONTROL
The control of the lights (if any) must be
carried out by the user, respecting the
following requirements:
✓there must be an on/off command for
the lights;
✓The switching on and off of lights must
be controlled by switches that interrupt
all phases.
2.8.4. POSITIONING OF CONTROL
DEVICES
Control devices must be positioned:
✓so that they are within easy reach of the
operator;
✓at least 0.6 m above ground level;
✓so that the operator from the command
postcan see the controlled organs.
2.9. INITIAL VERIFICATIONS
When starting the hood for the first time,
make sure that the extractor motor turns in the
direction indicated by the arrow on the body
of the extractor: otherwise reverse one phase.

3. MACHINE
DESCRIPTION AND
FEATURES
Extraction oven hoods and box extractor
fans are designed and constructed for
extracting cooking fumes in large cookers.
WARNING! The machine may not be
used for any purpose other than that
indicated above; in particular, it is not
suitable for operation in environments
where acids or corrosive agents are
present.
The hood consists of an electro-welded
stainless steel body, an extractor fan and LED
lamps for lighting.
The hoods are equipped with removable
stainless steel labyrinth-type filters.
The exhaust fan motor boxes are equipped
with an extractor driven by a directly coupled
electric motor or via a belt drive.
3.1. ENVIRONMENTAL CONDITIONS OF
OPERATION
The machines have been designed and
constructed to operate in a closed, dry
environment; furthermore, the machines must
not operate in environments with explosive
atmospheres, in the presence of fine dust or
corrosive gases.
The machines are not suitable for
operation in the presence of ionising and non-
ionising radiation (X-rays, lasers,
microwaves, ultraviolet radiation).
Some models of box vacuum cleaners -
equipped with a water drainage cover at the
top - are suitable for outdoor operation.
3.2. AIRBORNE NOISE PRODUCED
FROM THE MACHINE
The sound pressure level emitted by the
machines is
✓VTP-SM and VTP-KM hoods: the A-
weighted equivalent continuous sound
pressure level is 73.95 dB (A); the
measurement was carried out at the
operator's normal position on a VTP-
SM 10 hood model operated at
maximum speed, with air being blown
back into the room (a condition that is
worse than the standard operating
condition with air being blown out of
the room); the maximum sound pressure
is 102.3 dB and was measured at the
central filter;
✓VTC-KM hoods: the A-weighted
equivalent continuous acoustic pressure
level is75.15 dB (A); the measurement
was carried out at the operator's normal
position on a VTC-KM 13 model hood
operated at maximum speed, with the air
being blown back into the room (a
condition that is worse than the standard
operating condition with the air being
blown out of the room); the maximum
acoustic pressure is 100.9 dB and was
measured at the central filter;
✓Exhaust fan motor box: the A-weighted
equivalent continuous sound pressure
level is 70.03 dB (A); the measurement
was carried out at a distance of one
metre in front of a model 8/2V extractor
fan operated at a speed of 110 rpm, with
the air being sent back into the room
through a duct measuring 0.4×0.4×2 m
(a condition that is worse than the
normal condition of use with the air
being extracted from the room); the
maximum acoustic pressure is 109.4 dB
and was measured at the air intake point.

Airborne noise measurements were carried
out according to ISO 11202 (1995).
3.3. NAMEPLATE
The machine's identification plate bears the
following information:
✓name and address of the manufacturer;
✓model;
✓weight [kg];
✓flow rate [m3h];
✓power [kW];
✓number of steps;
✓nominal voltage [V];
✓frequency [Hz].

4. DESCRIPTION OF THE
COMMANDS
4.1. CONTROL PANEL WITH
VARIABLE SPEED DRIVE
The machine can be supplied with a
control panel with variable speed drive
(Figure 3).
4.1.1. ASPIRATOR CONTROL BUTTON
The illuminated rocker switch allows the
vacuum pool cleaner to be switched on or off
depending on whether it is in position I or
position O respectively.
The start-up of the vacuum cleaner is
confirmed by the illumination of the indicator
light on the control button.
4.1.2. ASPIRATOR SPEED
ADJUSTMENT
The rotary control allows the speed of the
suction unit to be infinitely adjusted; turning
the control clockwise increases the suction
speed.

5. SECURITY SYSTEMS
The fume hood is equipped with safety
systems: the combination of these systems
enables the machine to prevent dangers to
persons working on or near the machine.
WARNING! The presence of safety
systems does not exempt operators to
act with the utmost caution and
avoiding behaviour that could endanger
their own or others' safety or the
integrity of the machine. It is absolutely
forbidden to modify or attempt to
circumvent the machine's safety
systems in any way.
5.1. PANELS
All moving parts are enclosed by fixed
panels that cannot be removed without tools.
In particular, the panels of the hood
extractors that give access to moving parts are
locked by screws that cannot be opened
without the use of tools (Figure 5), while the
extractors of the hoods - accessible by
removing the filters - are protected at the sides
by grating guards locked with screws that
cannot be removed without the use of tools
(Figure 4).
WARNING! It is absolutely forbidden
to remove or tamper with the guards.
Vortex srl accepts no liability for
personal injury or damage to property
resulting from tampering with the
machine guards.

5.2. ELECTRICAL SYSTEM
PROTECTIONS
All accessible metal parts of the machine
are connected to the equipotential protection
circuit, in order to avoid dangers from
insulation faults.

6. IMPROPER USES
Although the machine is equipped with
safety systems, operators must take care to
avoid potentially dangerous situations for
themselves or others.
All persons operating the machine must be
properly trained in the correct working
methods and informed of the nature and
operation of the safety devices.
They must also be informed of the parts of
this documentation that are relevant to their
work.
6.1. POSITION OF OPERATORS
All operations must be carried out by the
operators while remaining at floor level or on
elevated work platforms or ladders positioned
in such a way as to be stable and not toimpose
positions on the operators that are unsuitable
for the operations to be carried out.
The means to be used to carry out work at
height must comply with the legal provisions
applicable to them in force at the place of use.
It is absolutely forbidden to climb onto the
machine or any of its supporting parts.
WARNING! Do not bring body parts
or objects close to moving parts.
6.2. MACHINE INTERVENTIONS
All ordinary and extraordinary
maintenance, adjustment, fine-tuning and
inspection work must be carried out with the

7. MAINTENANCE
Oven hoods and exhaust fan motor boxes
have been designed and constructed to reduce
maintenance requirements as much as
possible and ensure trouble-free operation
over the years.
ATTENTION! Before any
maintenance work is carried out on the
machine, it is necessary to switch it off,
remove the power supply and lock the
power disconnector in the open
position.
7.1. ROUTINE MAINTENANCE
To keep the extractor hood and box
extractor in perfect working order, simply use
them correctly and carry out the routine
maintenance work described here.
ATTENTION! All routine
maintenance work must be carried out
by competent personnel who have been
instructed in how to operate the
machine correctly and safely.
7.1.1. CLEANING
For fume hoods to work properly, they
must be cleaned constantly, especially the
filters. The frequency of cleaning varies
depending on the amount and type of fumes -
especially their grease content - that thefume
hood or extractor fan draws in.
7.1.1.1. SURFACE CLEANING
Clean the surfaces of the hood or exhaust
fan motor box with a damp cloth and steel
degreaser; do not use rough cloths or other
objects that could scratch the surface of the
hoods.
7.1.1.2. FILTER CLEANING
To clean the filters (Figure 6):
✓Grasp the filters by taking two
labyrinths and push upwards, following
the profile of the hood, until the lower
side of the filter is pulled out of the
guides;
✓Pull down the filters and pull them out;
✓clean the filters by washing machine or
manually using degreasing products for
steel;
✓let the filters dry thoroughly;
✓Grasp the filters by taking two
labyrinths and insert the upper side of
the filters into the upper guide of the
hood;

✓Insert the filters into the hood and pull
them downwards, following the contour
of the hood, until the underside of the
filters is completely pushed into the
lower profile of the hood.
7.1.1.3. CLEANING THE GREASE
COLLECTION CHANNEL
To clean the grease trough:
✓Place a container under the grease drain
cock (Figure 7) in which the discharged
grease is collected;
✓open the tap to drain the grease in the
collection channel;
✓clean the collection channel with a cloth
and a degreasing agent for steel;
✓Close the grease drain cock.
7.1.2. TENSIONING AND CHANGING BELTS
Checking and tensioning the drive belts
should only be carried out for box vacuum
cleaners equipped with a belt-driven motor.
To access the motorbike, the side bulkhead
must be opened by turning the fixing screws.
When work is completed, replace the side
bulkhead and fasten it with the screws.
7.1.2.1. VERIFICATION OF BELT TENSION
Every 500 operating hours, check that the
drive belts are correctly tensioned by pressing
the belt in the centre: the belt should give
approximately 12 cm.

7.1.2.2. BELT TENSION CORRECTION
If the belt tension is not correct, it must be
changed by loosening or tightening the tie rod
shown in Figure 8.
After changing the belt tension, it is
necessary to check it as indicated in Section
7.1.2.1.
7.1.2.3. CHANGING BELTS
Replace the drive belts every 2000
operating hours:
✓Loosen the tie rod in Figure 8;
✓Remove the old belts to be replaced
from the pulleys; always replace all
belts;
✓Mount the new belts on the pulleys;
✓Adjust the tension of the belts as
indicated in 7.1.2.2.
7.2. EXTRAORDINARY MAINTENANCE
Any extraordinary maintenance work must
be carried out by a person from Vortex GmbH
or authorised by it.
