1. Application
The Winterhalter Gastronom glasswashing machine GS 29 is designed for cleaning all kinds
of glasses used in the catering trade. The machine may only be used for this purpose and
must be operated in accordance with these operating instructions.
Any deviation from the machine’s intended purpose or alteration of its design without our writ-
ten consent shall exempt us from all guarantee and product liability.
2. Installation and initial start-up
The machine must be installed and connected to the customer’s water supply and waste pipes
in accordance with the "Installation Instructions for Winterhalter Gastronom Glass and Dish
Washers".
The initial start-up and staff briefing must be performed by the Winterhalter Gastronom after-
sales service team according to the "Start-up Instructions for Winterhalter Gastronom Glass-
washing Machines". You should therefore contact the responsible Winterhalter Gastronom
factory representative once the machine has been correctly connected to your supply pipes.
•Your dishwasher is not ready for start-up until all connections have been completed.

3. Safety instructions for the operator
The following instructions are designed to ensure safe operation of the machine:
•Only use the machine if you have been instructed in its operation and workings.
•Operate the machine only as described in these operating instructions.
•Do not open any panels or machine parts for which a tool is required.
•When handling detergent and clear rinse, observe the warnings printed on the respective
packages.
•Wear protective gloves for any jobs which have to be performed inside the tank while the
machine is in operation or during the daily shut-down process.
•In the event of faults not attributable to the on-site water or power supply, contact the
Winterhalter after-sales service.
•Do not put any safety devices (e.g. door catches, etc.) out of operation.
4. General information on washing glasses
Glass drinking vessels are hygienic and quick and easy to clean. In order to get the most out
of your glasses, you should observe the following important points for handling glass:
What to look for when buying glasses
- The dimple in the base of the glass should be as small as possible.
- Do not choose glasses with thick rims, as these prevent the water film from draining off
properly after washing.
- Thick bases (e.g. for weissbier glasses) take a long time to cool down and can easily lead
to breakages.
- Extremely tall, thin glasses are always more difficult to clean than normal-sized glasses.
Important features of glass racks
- Winterhalter Gastronom glass racks are designed in such a way that the glasses are
washed at a slight angle. This intensifies the rinsing effect and enables the water to run out
of the dimple in the base more easily.
- Glass racks are made of plastic or plastic-coated wire so as not to damage the glasses.
- Never use damaged glass racks. If the plastic coating shows signs of damage, replace the
rack.
Points to observe in glasswashing machines
- Never wash glasses in a dishwashing machine, as the higher temperatures inside the
dishwasher will eventually corrode the glass, leading to cracks and opaqueness.
- The optimal temperatures for washing glasses are as follows:
Wash: 58°C
Rinse: 65°C
- Never clean ashtrays in the glasswashing machine!

How to avoid breakages
- Do not polish glasses after washing them. Not only is this unhygienic, but the mechanical
pressure also puts a strain on the glass.
- Do not use cold water or ice to cool glasses down quickly after the wash. A cold rinse in
the machine also puts a strain on the glass.
- Store clean glasses in closed cupboards. Do not put glasses away upside down, as this
may damage the rims.
- Do not stack glasses on top of each other.
How to avoid odours
- Use a non-perfumed detergent and clear rinse. We recommend the products "GASTRO-
NOM Reiniger F-30“ and "GASTRONOM Klarspüler N“, for example.
- Do not store glasses in rooms used for cooking and frying.
- Do not hang clean glasses above the bar, as cigarette smoke can become trapped inside
them.
- Do not place glasses on absorbent cloths, etc. to dry, but remove the rack from the ma-
chine after the wash cycle and leave the glasses on the counter for 1-2 minutes to dry in-
side the rack. We recommend that you obtain a second rack so that you can be filling one
rack while the other is inside the machine.
What to do about stains, streaks or lack of shine
- This is a job for the experts: get a Winterhalter service technician to inspect the machine.
Wash water
- In order to avoid mineral deposits and hard spots on the glasses, the water should be pre-
treated.
You can determine which type of water conditioning is suitable in your case by taking a
water sample. We will gladly assist you in this, and can supply you with the necessary wa-
ter softening unit.
Detergents and clear rinses
- We recommend our own clear rinse, "GASTRONOM-Klarspüler N“.
The clear rinse is dosed automatically via a dispenser.
- We also recommend our own detergent for glasses, "GASTRONOM Reiniger F-30“.
The detergent is dosed automatically via a dispenser.
Before putting your glasses in the machine
- Before your glasses are washed in the machine for the first time, they must undergo thor-
ough preliminary cleaning by immersing them in a bath of water.
Put your entire stock of glasses in a bath consisting of 10l of water at a temperature of
approx. 60°C and 100ml of "GASTRONOM Reiniger F-8400“ detergent. Once the water
has cooled down enough for you to put your hands in, clean all the glasses inside and out
with a brush or coarse sponge (caution: rubber gloves should be worn), then wash them in
your glasswashing machine according to these instructions.
You can also clean the glasses in the machine. For this purpose, add 50 ml of "GASTRONOM
Reiniger F-8400“ detergent to the tank water and wash the rack containing the glasses three
times. Then take the glasses out of the machine to dry.

This lamp lights up if there is a fault in the detergent supply or if
the detergent container is empty.
This lamp lights up if a regeneration of the water softening is
necessary.
Before the wash
Before the wash can be started, the machine must be made ready for operation:
- Turn on the on-site main switch.
- Open the on-site shut-off valve.
- Check the inspection slits in the front panel to see whether there is enough detergent and
clear rinse in the respective containers. Top up if necessary.
•Make sure that no detergent gets into the clear rinse container when filling and refilling.
Never mix up the detergent and clear rinse containers!

- Insert the standpipe and turn slightly to make sure it is sealed tight.
- Check whether the three-piece surface strainer is inserted correctly.
- Turn on the power switch (1) (lights up).
The tank is then filled automatically and detergent is added to the tank water.
The heating time depends on the temperature of the incoming water. The temperature of the
incoming water must not exceed 60°C.
Once the required temperature has been reached, the indicator lamp "Heating up“ (2) is extin-
guished and you can start the wash cycle.
The wash cycle
- Place the dirty glasses in a rack suitable for the type of glass in question.
The glasses must be inserted upside down.
Leave a space between the glasses, otherwise they will rub against each other and become
dulled or scratched after a short time.
- Slide the filled rack into the machine and close the door.

The button lights up while the wash programme is in progress.
In case of normally dirty glasses: ●(3) = 75s = 48 racks/hour;
With very dirty or dried on glases: ●●(4) = 150s = 24 racks/hour
The wash cycle is now executed. The main wash cycle, during which the glasses are cleaned
intensively, is followed by a 12s rinse cycle. The specified programme time is only possible
provided the machine is connected to the hot water supply. In the case of cold water connec-
tions, the main wash cycle is not completed until the rinse water has reached the required
operating temperature of 65°C.
The wash cycle is completed when the "Programme“ button is extinguished.

- Open the door, tilt the rack slightly to allow the remaining water to drain off more easily,
and take the rack out of the machine.
Thanks to the specific heat of the dishes and the influence of the clear rinse added to the rinse
water, the dishes dry squeaky clean within a short time. It is advisable to place the glasses
upside down on a fine plastic grid to dry, or to leave them in the rack.
Drying with a tea-towel is superfluous and may even damage the glasses.
After the wash
- Turn of the power switch (1), take the rack out of the machine and remove the standpipe.
This causes the tank to be emptied.
Automatic wash tank cleaning
- Close the door, after drainig the tank.
The tank filling process is then activated via the rinse cycle and the tank area above the sur-
face strainer is cleaned. This process should only be executed for approx. 5 - 10 seconds.

Scrape all the dirt residues which have settled near the surface strainer onto the strainer
and remove it from the machine.

Clean the outside of the machine with a soft cloth and suitable cleaning agents.
We recommend the use of stainless steel cleaner and stainless steel polish.
•The machine is not hoseproof, and must not therefore be sprayed with high-pressure or
steam-jet cleaning devices.
Leave the machine door open after the cleaning process (a catch is provided in the door
for this purpose).
9. Faults
The machine is equipped with an automatic low-water alarm which causes the "Programme“
buttons (3/4) to flash if the tank has still not been filled with water after approx. 8 minutes.
If the low-water alarm flashes:
- Check whether the standpipe is inserted correctly and whether the on-site shut-off valve is
open.
- Then activate a new filling process by turning the power switch (1) off and on again.
Should the low-water alarm continue to flash, please contact your Winterhalter after-sales
service representative.

10. Special information
Please use only detergents and clear rinses which are suitable for commercial glass washing machines.
We recommend that you use our own products, which have been specially developed for our machines.
Should the tank water become exceptionally dirty on certain days due to intensive washing, it should be
drained off and the tank cleaned and refilled.
During the daily cleaning procedure, make sure that no rusty foreign bodies remain on the floor and walls
of the tank, as these can even cause "stainless steel" to rust. Such rust particles may originate from clean-
ing utensils or non-rustproof supply pipes.
Besides daily cleaning, the machine must also undergo thorough maintenance at least twice a year. This
should be performed by an expert (trained at the Winterhalter works).
When buying new or additional glasses, we recommend that you only buy those which are labelled by the
manufacturer as "suitable for dishwashers".
Protect the machine from frost, otherwise water-consisting systems could freeze and thereby be destroyed.

12. Optional extras
12.1 Automatic cold rinse
The boiler heater is switched on by pressing the "rinse temperature" button (6), which lights up accordingly.
The rinse cycle is then performed with hot water.
The boiler heater is switched off again by pressing the button a second time (light is extinguished). The
rinse cycle is then performed at the water temperature in the supply pipe.
12.2 Variable rinse temperature
By pressing the "rinse temperature" button (5), it is possible to select a lower temperature for the rinse
water (indicator lamp lights up accordingly).
If the button is pressed again, the machine switches back to 65°C, and the indicator lamp is extinguished.
