1. General information
1.1 Warranty and liability
Our “General Terms and Conditions” apply. These are known to the user at the latest since signing
the contract. Claims on the warranty and for liability for injury to people and damage to property
are excluded if they are due to one or more of the following reasons:
•Inappropriate use of the product.
•Irregular installation, commissioning, operation and maintenance of the product.
•Operation of the product with defective safety components or safety components that have not
been properly installed and do not function.
•Failure to comply with instructions in the user guide regarding correct transport, installation,
commissioning, operation, maintenance and installation of the product.
•Unauthorised mechanical or technical alterations to the product.
•Insufficient maintenance of wearing and consumable parts.
•Unauthorised repairs.
•Force majeure.

1.3 General safety instructions
Please study this operation and installation manual carefully and follow the instructions contained
in it before putting the product into operation. In this way, you make you own contribution to always
having a functioning product.
Prohibition!
Prohibition signs prohibit actions or the use of certain objects or means!
Danger!
Health hazard / damage to the product caused by improper treatment!
• Obtain the manufacturers’ authorisation for any modification to the product.
• Only permit qualified personnel to perform technical work on the product. This
particularly applies to work on the mechanical portion, cooling system, heating
system, electrical installation and water supply.

Electric shock!
• Do not allow running water or water jets anywhere near the electrical connec-
tion or operating panel.
Danger!
Electric shock while cleaning!
• No part of the product must be cleaned with a water jet.
• Never use a pressure washer for cleaning.

• In the vicinity of the grill rollers, high temperatures can occur on the housing
and the scraper sheets.

• No easily combustible materials must be stored near the product because high
temperatures can be expected there.

The operating instructions provided in the following sections must be followed.

Fire hazard!
• No flammable cleaning agents must be used in the vicinity of the product.

Health hazard / damage to the product caused by improper treatment!
• The product must not be used for:
– heating rooms.
– heating or warming flammable, harmful-to-health, volatile or similar sub-
stances or liquids.

• The feed opening and the grill rollers must not be covered. This is especially
important during the heat-up, operation and cooling phases.

Health hazard / damage to the product!
• If the connecting cable of this product is damaged, it must be replaced by the
Professional Kitchens Service of Aichinger GmbH or a similarly qualified per-
son to avoid hazards.
Caution!
The warranty may be void in the case of failure to follow the specified
instructions!

1.4 Safety notices attached to the product
Prohibition!
Do not reach into the product!
• Do not reach into the product or between the grill rollers during the
heat-up, operation or cooling phase or in HEAT OFF mode.

Warning, hot surface!
• All surfaces can be hot. In particular, in the vicinity of the grill rollers,
high temperatures can occur on the housing and the scraper sheets.

1.2 Intended purpose
The product is used exclusively for grilling solid food products, such as meat (boneless, without
gristle), fish with firm flesh, vegetables or veggie burgers.
The slice thickness of the food product to be grilled must be at least 9 mm and must not exceed
13 mm.
The parameters stated below are designed for a function of the product at an ambient temperature
of 18 to 26 °C.
1.3 Intended use
Any type of use other than the intended use is regarded as inappropriate.
If you use the product for a purpose other than the intended purpose, its use may result in risks to
the health and/or life of the user or third parties or in damage to the product. The manufacturer /
supplier does not accept liability for any resulting damage. The risk rests with the user.
•Use the product only in technically sound condition, for its intended use, with safety and risks
in mind, and only by instructed qualified personnel.
•Intended use also includes observance of the installation and operating instructions and of the
inspection and maintenance conditions.
•Obtain the manufacturers’ authorisation for any modification.
•After cleaning, check the product for loose connections, shear points and damage. Rectify any
defects immediately.
•Only the manufacturer is authorised to modify the product!
The product is a state-of-the-art item of equipment that has been manufactured according to the
acknowledged safety regulations and is therefore safe to operate.
1.4 Inappropriate use
The product is not suitable for cooking liquid food.
Meat must contain neither bone nor gristle.
Food products with an artificial envelope or packaging must not be used for grilling.
The product must only be used for its intended purpose.

2. Requirements
2.1 Safety guidelines
The unit was manufactured in compliance with all relevant safety regulations, particularly the rel-
evant VDE and international CEE guidelines. The product was subjected to a comprehensive final
inspection in the factory.
2.2 Disposal
Have old units disposed of by a qualified company. The display cabinet must not be disposed of
by the public waste disposal service.
2.3 Personnel
Work on the product must only be performed by trained personnel with the necessary specialist
knowledge.
All persons assigned to work on the product undertake before commencing work:
•to observe the fundamental regulations for work safety and the prevention of accidents.
•to read and understand the safety chapter and the warning notices in this operating manual and
confirm that they have done so with their signature.
The owner is under an obligation to provide these instructions to all persons before they perform
work on the product.
Children or persons with reduced physical, sensory or mental abilities or with a lack of
experience or knowledge must not perform any activities on the product, in particular no
cleaning or maintenance, nor must they come into the vicinity of the product.

3. Design and function
3.1 Design
3.2 Function
The grill is used exclusively for grilling solid food products, such as
•Meat (boneless, without gristle)
•Fish with firm flesh
•Vegetables or veggie burgers.
The grilled product is inserted at the top and passed through the grill area. After completion, it exits
the grill rollers automatically. The intensity of cooking is controlled exclusively by selecting the grill-
ing speed levels, which set the grilling time directly.
The grilled food products and the escaping liquids are collected in a collection pan with a collection
grate made of stainless steel.

4. Initial commissioning
4.1 Setting up the product
•Place the product on a firm table or similar stable substructure
(product weight approx. 40 kg) at an ergonomic working height. The product is operated from
the front. The surface on which the product is set up must not be inclined by more than 5°. The
surface required to set up the product is at least 800 mm x 400 mm.
•The product must not be placed near to flowing water or easily combustible products.
•The product must be at least 100 mm from a refrigerated display cabinet and at least 500 mm
from a device with radiant heating.

Caution!
Damage / malfunction due to improper handling!
• If a product is installed near to a cooling device, a minimum distance of 100 mm
from the refrigerated display cabinet must be maintained.
• Exchange of air between the devices must be prevented.

•Warnings
Covers showing warnings may only be opened by qualified persons!
•Protective covers
Do not remove any protective covers and protective devices. There is a risk of injury.
•Socket outlets
Do not touch socket outlets. This are constantly energised!
•Air flows
Avoid draughts and air flows due to improperly installed vents in the vicinity of the product.
•Ambient temperature
The parameters stated below are designed for a function of the product at an ambient temper-
ature of 18 to 26 °C. Avoid draughts because they severely impair the functioning of the pro-
duct.
•Lighting
Operate lighting with splinter guards only. Breakage poses a hazard for goods and personnel.
•Sharp objects
Do not keep loose sharp objects in or near the display cabinet. There is a risk of injury!
•Spare parts
Replace components or consumables with original parts only.
•If damage or a fault occurs during the warranty period, AICHINGER Professional Kitchens Cus-
tomer Service must be notified immediately to avoid consequential damage.
4.2 Installation
Connect the product to a 400 V / 3x16 A CEE three-phase power socket.
•Installation of a RCD (residual current device) is always recommended.
•Local regulations and the valid VDE / DIN standards must be complied with.

Caution!
Damage / malfunction due to improper handling!
• If a product is installed near to a device with radiant heating, a minimum dis-
tance of 500 mm must be maintained.
• Otherwise the product may be damaged by the radiated heat.

4.3 Precleaning
The product has been precleaned after production in the factory. However, we do recommend
cleaning the product to remove any residue left after production and any accumulated dirt.
Use a damp, soft cotton cloth.
4.4 Burn-in
The grill rollers must be burned in before they are used for the first time. Burning in is also neces-
sary every time after cleaning and every time before operation.

•Remove the food product support grid (1).
•Remove the front (2) and rear (3) cover sheet.
•Remove three scraper sheets (4) by pushing them out.
2. Switch on the product

•Switch on the main switch and the power key (see also Chapter "Switching on")
Set the speed key to 5 (for the highest grill roller speed during heat-up).
Danger!
Fire hazard!
• Before you switch on the product, make sure that no easily combustible objects
or substances are anywhere near the product.

3. Apply ROG - ROLL´N´GRILL emulsion

•Apply the ROG - ROLL´N´GRILL emulsion with kitchen paper for the first 5 minutes (grill rollers
lukewarm).
•Wipe evenly from left to right over each of the three grill rollers until they are completely cov-
ered.
4. Wait for the burn-in time of approx. 5 to 10 minutes to pass.
5. If excess residue is still present, wipe it off again with clean kitchen paper.

6. Insert the removed parts again.
7. Select the required speed key.
When this key is continuously lit, the product is ready for operation.

5. Operation

Cleaning mode display.
1. Press the Heat OFF key: The heating switches off. The grill rollers stop. The Heat OFF con-
trol LED flashes fast. The cooling phase starts.
2. The Heat OFF control LED flashes slowly: Press the Heat OFF key again.
The grill rollers turn at the highest speed. Coarse dirt is scraped off the grill rollers. The cooling
phase continues.
3. The Heat OFF control LED shines continuously: Cleaning can now start.
Roller stop 1. Option: Press one of the Speed keys for 3 seconds.
Display: All control LEDs of Speed keys 1-5 light up. Rollers stop, heating continues.
2. Option: Press the HEAT OFF key for 3 seconds.
Display: All control LEDs of Speed keys 1-5 light up. Rollers stop, heating continues.
To cancel roller stop press one of the Speed keys 1-5 again or press the HEAT OFF key.
SERVICE LED, orange Fault display
Slow flashing: A fault has occurred that can result in functional limitations. (For example, the
temperature has not been reached or is decreasing.)
However, you can continue to use the Product.
Fast flashing: A fault has occurred that can impair the safety of the user or the Product. The
heating and rollers are switched off. Remove the food product being grilled.
Contact Customer Service!
OFF: Fault-free operation.
Emergency functions Emergency off: Switch off at the main switch.
Rollers stop, cooling starts.
Power off: Press the POWER key.
Rollers stop, cooling starts.

5.2 Switching on
•Switch on the product at the main switch.

5.3 Activating
•Activate the product with the green Power key.
•The Power control LED beneath this lights up green.
The control LEDs of the Speed keys and the Heat off control LED flash.

5.4 Heating up / roller speed
•Speed keys:
– Speed key 1: slowest roller speed.
This setting is suitable for grilling from frozen or for products that must be specially well
done.
– Speed key 5: fastest roller speed.
This setting is suitable for all products, such as beef steak medium rare.
–Tip:
Speed key 3 is the correct choice in 95% of cases.
Dark meat is grilled medium and light meat is grilled well done.
•Press a Speed key from 1 to 5.
•The control LED next to the selected Speed key flashes.
•The operating temperature has been reached after approx. 30 minutes.
The control LED is continuously lit and the Product is ready for operation.

5.5 Inserting the food product to be grilled
The grill rollers must be burned in before operation (see Chapter "Burn-in").
Note on the food product to be grilled:
– Meat must contain neither bone nor gristle. Remove bone and gristle first.
– Any food product to be grilled briefly is suitable (meat, fish with firm flesh, vegetables, veggie
burgers, etc.)
– The slice thickness of the food product to be grilled must be 9 to 13 mm.
– The food product to be grilled can be seasoned beforehand but also after cooking.
Notice: Seasoning before grilling increases the need for cleaning.
•Insert the food product to be grilled at the top.
It passes over the grilling surface and exits automatically after completion.
•Remove the grilled food product from the grate using suitable implements.

Burning hazard!
• In the vicinity of the grill rollers, high temperatures can occur on the housing
and the scraper sheets.

5.6 Switching off
•Press the HEAT OFF key.
Wait for the control LED to light up continuously.
•Press the Power key.
•Switch off at the main switch.
Notice: Even after switching off, all surfaces can remain hot until they have finally cooled down
completely.
5.7 Breaks in operation
After a lengthy break in operation (>1 hour), the following must be done:
•Burn the grill rollers in again with the ROG - ROLL´N´GRILL emulsion.
