around 45-60 seconds to ignite the pellets. Once you are happy that the fuel is lit and
burning well, place the wood box back inside the oven.
3. Once the fire is established, keep adding pieces of wood or a small handful of pellets
through the hopper to ensure that the oven steadily increases in temperature.
Overfilling the wood box could smother the fire - you are always aiming to see bright
yellow flames rolling along the top of the oven.
4. Keep adding wood until the oven is over 400°C. If you are using wood pieces, adding
some pellets can help the oven get to optimal cooking temperature.
5. Once you have your pizza on the peel and ready to bake, remove the oven door and
slide the pizza onto the ceramic tile floor. Replace the door whilst the pizza is
cooking. Check the pizza after 40 seconds, as you will need to begin turning the edges
away from the back of the oven to avoid burning. The pizza will take around 60-90
seconds to cook –check that the base of the pizza is cooked before removing.
Instructions for other baking and roasting
Follow instructions until the end of step 3. Add wood until the temperature is above
your target cooking temperature, then allow the wood to burn to embers.
6. If the oven cools, add small pieces of wood to restore the temperature.
7. Once you are happy that the oven is at your desired cooking temperature, place your
tray or pot inside the oven. Never allow fatty liquid to come into contact with the
ceramic tile floor. Cook your food for the desired time or internal temperature is
reached.
