Your Foodservice Center can be turned ON by press-
ing the DOWN arrow button, with the display 10, two
times within two seconds. Continue by setting the
control to the desired temperature.
You may turn OFF your Foodservice Center by press-
ing the UP arrow button until the display reads “10”.
With the display at “10’, press the Up Arrow button
two more times within two seconds. The display will
read “0F”.
TEMPERATURE SETTING
The desired temperature inside the Foodservice Center
can be set using the UP and DOWN arrow buttons on
the control panel, located on the door of the freezer.
Press either the UP or DOWN arrow buttons to change
the temperature setting to one which suits your needs.
The range of settings is -10°F to 10°F ( -24ºC to -
12ºC ) (See Figures 1 and 2).

TEMPERATURE CONTROL
The Foodservice Center will not cool anything while it
is in “0F” position. The door light will continue to
operate while in ‘0F”.
WARNING: The Foodservice Center still has
electrical power while in 0F. Disconnect freezer
from the outlet before cleaning or moving it.
TEMPERATURE MODE CHANGE
Temperature display can be changed from ºF to ºC by
pressing the “Temp Display”. Press the button again to
change it back to the previous mode.
EXTREME FREEZE
Extreme Freeze enables the compressor to run
continuously to help cool large quantities of warm
(room temperature) foods faster. Always cool down
hot foods to room temperature before placing them in
the unit. Use this feature just prior to adding large
quantities of unfrozen foods (not to exceed 3 pounds
per cubic foot of freezer space). For example, do not
place more than 60 pounds of room temperature food
into a 20 cubic foot Foodservice Center. To activate
the Extreme Freeze feature, push the Extreme Freeze
button. The control panel will beep once and the dis-
play will show “-F-”. See Figure 4.
For your convenience, Extreme Freeze will automati-
cally turn off after a period of 72 hours and the unit
will return to the previous temperature setting. You
may deactivate Extreme Freeze at any time by pressing
the Extreme Freeze button. The display will return to
displaying the last temperature setting.

CONTROL LOCKOUT
This feature prevents someone from accidentally
changing the temperature and Extreme Freeze settings.
To activate the control lockout, press and hold the
Control Lock button for three seconds. “LO” (see Fig-
ure 5) will be displayed for 3 seconds indicating that
the control panel is locked. “LO” will be displayed if
any button is pressed. To cancel Control Lockout,
press and hold the Control Lock button for three sec-
onds. When the lockout is cancelled, “UL” (for
Unlocked, see Figure 6) will display for 3 seconds, and
then show the current temperature setting.
SABBATH MODE
Sabbath mode provides the ability to disable all lights
and other electrical activity from occurring with the
exception of the compressor, which continues to oper-
ate automatically. Sabbath mode is started or stopped
by pressing the Control Lock and Temp Display but-
tons at the same time and holding for three seconds.
When started, “Sb” will be displayed for one second
and then the display will turn off. When the Sabbath
Mode is stopped, the current temperature setting will
be displayed and all functions resume normal opera-
tion.
MANUAL DEFROST
Manual defrost will force the Foodservice Center to
enter an immediate defrost cycle. The mode can be
started or stopped by pressing the Extreme Freeze and
Alarm Reset buttons at the same time for five seconds.
When active, “dE” is displayed. After thirty minutes,
the cycle will complete and the Foodservice Center
will display the current temperature setting and resume
normal operation.
TEMPERATURE ALARM
If the cabinet temperature rises to a level above 23ºF
(-5ºC), the “Hi Temp” display indicator will illumi-
nate. If the temperature stays above 23ºF (-5ºC) for
more than one hour, a high temperature alarm will also
be activated. The control panel will beep every 5 sec-
onds. You may stop the beep by pressing the Alarm
Reset button. The Hi Temp display indicator will con-
tinue to be displayed until the problem is determined,
corrected and temperature once again drops to a level
below 23ºF (-5ºC). During the high temperature condi-
tion, the display will show the actual internal tempera-
ture until the set temperature is once again reached.
The display will then show only the set temperature.
DOOR AJAR ALARM
The door alarm will activate if the door is open for
more than five minutes. There will be an audible beep
every five seconds and the “Door Ajar” indicator will
illuminate. Press the Alarm Reset button to turn the
audible alarm (beep) off. The “Door Ajar” indicator
will remain on until the door is closed. If the door re-
mains open, audible alarm will sound again after five
minutes. If the door remains open for 15 minutes, the
interior light will shut off.
POWER FAILURE
When power to the Foodservice Center is restored
after the occurrence of a power failure, the “Power
Loss” LED will be illuminated. If the internal tem-
perature of the Foodservice Center has risen to a tem-
perature greater than 23ºF (-5ºC), the “Hi Temp” dis-
play indicator will also be illuminated and there will
be an audible beep every five seconds. Press the Alarm
Reset button to turn the audible alarm (beep) off. If
this condition persists, the “Duration” indicator will
also be illuminated and the display will show how
many hours (up to a period of 99) the internal tempera-
ture has been above 23ºF (-5ºC). Food quality is con-
sidered to be impaired at temperatures greater than
23ºF (-5ºC). It is left to the user’s discretion to decide
how to best manage the contents within the Foodser-
vice Center .

SYSTEM ERROR ALARMS
If “E7”, “E8”, or “E9” are shown on the display every
half second and the control panel beeps every five sec-
onds, call A la Carte at 913-888-5000 to notify us
about the problem. Press the Alarm Reset button to
turn the audible alarm (beep) off. Until changes are
made, your Foodservice Center will continue to run.
