INSTALLATION INSTRUCTIONS
REGULATIONS
The appliance must be installed only by authorised persons and in accordance with the manufacturer‟s
installation instructions, local gas fitting regulations, municipal building codes, AS 5601 –Gas Installations and
any other local authority, gas, electrical any other statutory regulations.
DATA LABEL
The data label is located on the front of the appliance. This appliance is suitable for Natural and Propane Gas.
Please ensure that the gas supply matches the Data Label ensuring that the gas supply is correct for the
appliance being installed and that adequate supply pressure and volume is available –refer to appliance data
plate for Mj/hr consumption, injector sizes of main burners/pilots, etc.
VENTILATION
It is strongly recommended that the appliance is installed under an extraction hood. Ventilation must be in
accordance with AS5601 -
Gas
Installations. In general, the appliance should have adequate ventilation for
complete combustion of gas, proper flueing and to maintain temperature of immediate surroundings within
safe limits.
This should comply with the following:-
The exhaust hood must be made from material which is impervious to fat, grease and vapour
The hood must be made so it can be readily and effectively cleaned
The hood must be made with its inside surfaces free of obstructions and all joints grease tight
The hood must be located so as to effectively ventilate the appliance and extend at least 150 mm
beyond the perimeters of the appliance.
The exhaust duct system must be adequately sized and must conform to all fire authority
requirements and must not be connected to any other ventilation or exhaust systems
Unless adequately protected the hood and ductwork must be fitted at least 450 mm from any
combustible material and so that the lower edge of the hood is no more than 2 meters from the floor
COMBUSTIBLE SURFACES
Ensure appliance is installed on a flat, solid, non-combustible floor.
The appliance must be installed so that;
There is a clearance of at least 150mm from combustible material at the sides.
There is a clearance of at least 50mm from combustible materials at the rear.
GAS CONNECTION
Unpack the appliance and remove any protective coating.
Place the appliance into its installed position and adjust the legs to the right height and stability.
The 20 mm gas connection is on the right hand side 100 mm above the floor and 220 mm from the front.
Install the regulator supplied to the gas inlet ensuring that the direction of flow arrow is the correct way.
This appliance is for fixed installations only

BEFORE CONNECTING NEW PIPE TO THIS APPLIANCE, THE PIPE MUST BE BLOWN OUT THOROUGHLY TO
REMOVE ALL FOREIGN MATERIAL. FOREIGN MATERIAL IN THE BURNER AND GAS CONTROLS WILL CAUSE
IMPROPER AND DANGEROUS OPERATION.
Connect to gas.
PRESSURE TEST POINT
All appliances that are dispatched from our factory are tested and adjusted according to the specifications for
the required gas type. The regulator may require adjustment to achieve required gas pressure.
Check the burner pressure at the test point on the regulator. The test point pressure should be adjusted to
1.00 kPa –Natural gas or 2.55 kPa –Propane gas with the burners operating at maximum.
BEFORE LEAVING -COMMISSIONING
Check all connections for gas leaks with soap and water. Do not use a naked flame for detecting leaks.
Ignite the pilot and main burners as prescribed below to ensure correct operation of gas valves, burners and
ignition. When satisfied with the operation of the appliance, please instruct the user on the correct method of
operation. Ensure that this instruction manual is left with owner of the appliance.
COMMISSIONING (BOILING TOP SECTION)
If appliance fitted with pilot and/or flame failure
A. Ensure gas control is in the „OFF‟ position.
B. Depress operating knob of relevant burner and turn anti-clockwise to „PILOT‟ position and light pilot.
C. Observe the pilot light is established. Pilot flame should be between 10-20mm in size and be in direct
contact with thermocouple (where fitted). Should the thermocouple require adjustment, lift off trivet
and undo the nut holding thermocouple on pilot assembly. After adjusting reassemble in reverse
order.
D. If pilot light does not light, turn control knob to „OFF‟ position, wait five minutes and repeat steps A to
C.Note. If pilot flame is smaller than the parameters described in part A, check the pilot gas line
(6mm stainless steel flexible tube) for any possible blockages/crimpage. To gain access to gas control
components, remove control knobs and undo screws located on either side and at the top of the front
panel. Remove front panel (reassemble in reverse order).
E. Once pilot is established turn control knob anti-clockwise to the „HIGH‟ position. Examine flame.
F. Turn control knob clockwise to the „LOW‟ position. Examine flame. Should flame extinguish when on
the low position, adjust flame adjustment screw on gas cock. To gain access to gas cock, gently
remove gas cock knobs from front of appliance and remove screws holding front panel in position.
Screw flame adjustment screw anti-clockwise for greater flame on lower setting, clockwise for less
flame on low setting. REASSEMBLE IN REVERSE ORDER.
G. Turn control knob clockwise to the „OFF‟ position.
H. Repeat steps A to Hfor all burners.
If appliance is not fitted with pilot and/or flame failure.
A. Ensure gas control is in the „OFF‟ position.
B. Depress operating knob of relevant burner and turn anti-clockwise 180oto the „LOW‟ position and light
burner. Examine flame. Should flame extinguish when on the low position, adjust flame adjustment
screw on gas cock. To gain access to gas cock, gently remove gas cock knobs from front of appliance
and remove screws holding front panel in position. Screw flame adjustment screw anti-clockwise for
greater flame on lower setting, clockwise for less flame on low setting. REASSEMBLE IN REVERSE
ORDER.

C. Turn control knob clockwise to the „HIGH‟ position. Examine flame.
D. Turn control knob clockwise to the „OFF‟ position.
E. Repeat steps A to Dfor all burners.
Adjusting aeration of boiling top burner (if required)
ALWAYS USE CAUTION WHEN REMOVING TRIVETS AND BURNERS, SURFACE MAY BE HOT.
If necessary to adjust aeration to boiling top burner;
Remove front burners by lifting at the rear and then pulling towards the rear.
oLoosen screw on butterfly valve at the inlet and adjust.
oReplace burner and light.
oRepeat the process if necessary.
The rear burners are lifted at the front and then pulled forward to remove. Then adjust as for the
front burners.
COMMISSIONING (OVEN SECTION)
A. Open the oven door and keep it open until the oven is alight.
B. Depress the pilot ignition button and at the same time press and release piezo ignition three to four
times to ignite pilot.
C. When the pilot is alight continue to keep the control knob depressed for 30 seconds and then release.
The pilot should remain alight. Observe the pilot light is established. Pilot flame should be between
10-20mm in size and be in direct contact with thermocouple (where fitted). Should the thermocouple
require adjustment, lift off oven chamber baffle and undo the nut holding thermocouple on pilot
assembly. After adjusting reassemble in reverse order. Note. If pilot flame is smaller than the
parameters described in part C, check the pilot gas line (6mm stainless steel flexible tube) for any
possible blockages/crimpage.
D. If pilot light does light, wait five minutes and then repeat steps A. to C.
E. Turn the control knob to the desired temperature.
F. Inspect oven burner flame which should burn sharp and in a rich blue color. Adjust aeration of oven
burner if/as required (refer oven burner aeration below).
G. Turn control knob to „OFF‟ position. Observe flame is extinguished.
H. Depress pilot extinguish button and observe pilot light is extinguished.
Adjusting aeration of oven burner (if required)
If necessary to adjust aeration to oven burner;
The butterfly valve sits at the inlet of the burner on the RHS. For better access remove the RHS
deflector plate above the burner.
oLoosen screw on butterfly valve at the inlet and adjust.
oReplace deflector and light.
oRepeat the process if necessary to achieve optimum flame.
In the event the appliance fails to operate correctly, check the following;
1. Data plate to ensure correct gas type and pressure (adjust if necessary).
2. Adjust aeration by adjusting air shutters.
3. Injector sizes –check against data plate and installation manual.
4. View pilot size and adjust if required.

OPERATING INSTRUCTIONS
WARNING!
DO NOT spray aerosols in the vicinity of this appliance while it is in operation.
DO NOT store or use flammable liquids or items in the vicinity of this appliance.
Prior to lighting, smell the area surrounding the appliance for gas (please note that as some
gas types are heavier than air, we recommend the operator to also smell the floor around the appliance)
In the event you smell gas: DO NOT light any appliance. DO NOT touch/operate any electrical switch or
phone in your building. Call the local gas supplier immediately and follow their instructions
IMPORTANT WARNING!
ENSURE NO OR MINIMAL AMOUNTS OF OIL AND FOODSTUFFS FALL INTO THE BURNER AREA WHILST COOKING.
FAILURE TO DO SO MAY AFFECT THE EFFICIENT AND SAFE OPERATION ON THE APPLIANCE AND MAY VOID
WARRANTY.

LIGHTING INSTRUCTIONS
Boiling Top Burners - Models with Pilot and/or Flame Failure
1. Ensure the control knob is in the „OFF‟ position. If not, turn control knob clockwise until it is in the „OFF‟
position.
2. Push knob, and turn knob anti-clockwise to „PILOT‟ position.
3. Whilst keeping the knob pushed in, light pilot.
4. Continue to hold the knob for 30 seconds after the flame appears on the plot. Release the knob. The
pilot should remain lit. If pilot fails to remain lit, push down the control knob and turn
clockwise to the ‘OFF’ position. Wait for five minutes before attempting to re-light (repeat
steps 1-4).
5. Once pilot is lit, push down and slowly turn the knob anti-clockwise to the „HIGH‟ position.
6. Adjust the size of the flame as required by turning knob anti-clockwise.
7. To turn burner off whilst keeping pilot lit, turn knob clockwise to the „PILOT‟ position.
Boiling Top Burners - Models without flame failure
1. Ensure the control knob is in the „OFF‟ position. If not, turn control knob clockwise until it is in the „OFF‟
position.
NOTE: Do not allow a period greater than 5 seconds to elapse between steps 2-3 for the following
instructions.
2. Push knob, and turn knob anti-clockwise to „LOW‟ position.
3. Whilst keeping the knob pushed in, light burner. If burner fails to light, push down the control

knob and turn clockwise to the ‘OFF’ position. Wait for five minutes before attempting to
re-light (repeat steps 1-3).
4. Adjust the size of the flame as required by turning knob clockwise.
Oven
1. Open the oven door and keep it open until the oven is alight.
2. Depress the pilot ignition button and at the same time press and release piezo ignition three to four
times to ignite pilot.
3. When the pilot is alight continue to keep the control knob depressed for 30 seconds and then release.
The pilot should remain alight. If it does not wait five minutes and then repeat steps 1. to 3.
4. Turn the control knob to the desired temperature.
SHUTDOWN PROCEDURE
Boiling Top Burners - Models with Pilot and/or Flame Failure
1. To turn pilot “OFF”, turn knob clockwise to „OFF‟ position.
2. Ensure main burner and pilot are extinguished.
Boiling Top Burners - Models without flame failure
1. To turn burner off, turn knob clockwise to the „OFF‟ position.
2. Ensure main burner and pilot are extinguished.
Oven
1. To turn burner off, turn oven control knob clockwise to the „OFF‟ position.
2. Depress oven pilot ignition button.
3. Ensure by observation that the main burner and pilot are extinguished.
MAINTENANCE AND CARE
To ensure longevity and continued performance efficiency of your appliance, a good cleaning and maintenance
program is paramount. In general the use of steel wool, abrasive cloths/cleansers/powders should not be
used to clean this appliance
DAILY CHECKS &SERVICE
Look for any foreign materials in burner area, leaks, damaged knobs and any other signs that the
boiling top is not ready and safe for operation.
Inspect burner area and ensure pilots (if fitted) are in position near the burner, and that the pilot
flame when ignited is blue in color and approximately 10-20mm in length.
If fitted with thermocouple ensure pilot flame is in contact with it. Call the manufacturer if you see
any problems.
Always ensure that area surrounding pilot and thermocouple (if fitted) is clear of any fats, oils or
foodstuffs.
Clean the boiling table with a clean, damp cloth soaked with mild detergent to remove any food stuffs,
oils, dust and any other materials.
The spillage tray located under the control knobs, and underneath oven compartment should be
removed (by pulling out) and any carbonised foodstuffs and oils should be removed using a clean,
damp cloth soaked in a mild detergent.
Remove oven baffles (reflector plates) located on top of oven burner and with a clean, damp cloth
soaked in a mild detergent to remove any food stuffs, oils, dust and any other materials.
WEEKLY CHECKS &SERVICE
Remove trivets and soak in hot water with a mild detergent for a period of one hour. Ensure trivets
are dried prior to replacing on appliance.
To clean boiling top burners, firstly remove trivets and gently remove the upper lid of burner by gently
pulling up. Soak upper lid in hot water with a mild detergent for a period of one hour. Ensure burner

lids are dried prior to replacing onto lower part of burner. While upper lid is soaking, clean lower part
of burner with a clean damp cloth soaked in a mild detergent.
YEARLY CHECKS &SERVICE
The appliance should be inspected and adjusted periodically by a qualified service person
as part of any kitchen maintenance program.
B&S recommends that this appliance is inspected at least annually by a authorized service
technician as follows:
Inspect the table inside-out for excessive build-up of any fats, oils and foodstuffs.
Inspect that the burners and other components (i.e. pilots, thermocouples, etc.) are in good condition
and functioning properly.
Inspect all gas connections for leaks and ensure all connections are tightened properly.
Ensure burner manifold pressure is in accordance with that specified on the data plate of the
appliance.
Inspect all gas connections for leaks and ensure all connections are tightened properly.
In case of difficulties contact B&S Commercial Kitchen Appliances Pty Ltd or their authorised
service agent.
SERVICING INSTRUCTIONS
WARNING!
Servicing shall be carried out by authorised personnel only. Failure to do so will void the B&S
warranty and may result in damage to equipment or injury to personnel.
Before commencing any disassembly/assembly of gas controls, please ensure the gas supply is
turned off (isolated).
FAILURE TO DO SO WILL VOID THE B&S WARRANTY AND MAY RESULT IN DAMAGE TO EQUIPMENT OR INJURY TO
PERSONNEL
ABNORMAL OPERATION
Any of the following are considered to be abnormal operation and may require servicing;
Incomplete ignition of burner/Burner failing to keep alight
Check burner is not blocked
Yellow tipping of the burner flame
Check aeration of burner
Pilot is not holding
Check connection of the thermocouple to the control is not loose.
Check if pilot flame is in contact with thermocouple
No pilot flame
Check main gas valve is in “ON” position.
Ensure pilot injector is not blocked
Gas valves which are difficult to turn
GAINING ACCESS TO BOILING TOP BURNERS AND PILOT ASSEMBLY
1. To gain access to boiling top burners and pilot assembly, lift off trivets. Note: Use extreme care
when lifting off trivets as they may still be hot from appliance operation.
ADJUSTING BOILING TOP BURNER AERATION
2. To adjust front row boiling top burners;

a. Remove front burners by lifting the burner at the rear, and then slowly pulling it towards the
splash back (rear) of the appliance off the injector.
b. Adjust the interrupter screw located at the top end of the venturi section as required
(Clockwise: more interruption, Anti-clockwise: Less interruption).
3. To adjust back row boiling top burners;
a. Remove rear burners by lifting the burner at the rear, and then slowly pulling it towards the
splash back (rear) of the appliance off the injector.
b. Adjust the interrupter screw located at the top end of the venturi section as required
(Clockwise: more interruption, Anti-clockwise: less interruption).
4. REASSEMBLE IN REVERSE ORDER
REPLACING/SERVICING BOILING TOP GAS COCKS,THERMOCOUPLES AND PILOT
5. Remove the front panel by pulling off the control knobs and undoing the screws located on either side
and at the top of the front panel. Pull off panel.
a. Remove burners as described under 2. and 3.
i.
For models with no thermocouple and pilot light;
1. Undo union nut connecting gascock to manifold located at the top of gascock.
ii.
For models with pilot light only;
1. Follow steps as per
i.
then undo nut attached to flexible tubing connecting
pilot light outlet on gascock to pilot light.
iii.
For models with pilot light and thermocouple
1. Follow steps as per
ii.
then undo nut attaching thermocouple to gascock
located at the rear of the gascock.
b. Gently remove gascock from spigot.
c. REASSEMBLE IN REVERSE ORDER
6. The pilot light located on the RHS of the burner can be removed from the gascock as under 5. ii, and
then unscrewing the nut under the pilot located on the pilot assembly bracket.
7. The thermocouple can be removed from the gascock as under 5 iii, and then unscrewing nut under
the thermocouple bulb located on the pilot assembly bracket.
8. REASSEMBLE IN REVERSE ORDER
REPLACING/SERVICING OVEN COMBINATION CONTROL
To remove the combination control:
1. Remove the front panel by pulling off the operating knobs and undoing the six screws holding the
panel. Pull off the panel.
2. Undo the union on the manifold which is at the inlet to the control.
3. Inside the oven, lift off the RHS deflector plate. Undo the bracket at the inlet of the burner holding the
thermocouple lead and pilot burner.
4. Lift off the rear RHS hotplate burner as detailed above.
5. The cover plate at the rear is now in view. Undo the screws and remove the cover plate.
6. Pull out the thermostat bulb which is held to the back of the oven but not attached. Now lift out the
control for service or replacement. It will still have the capillary and bulb as well as the pilot burner
and thermocouple connected to it.
7. REASSEMBLE IN REVERSE ORDER
REPLACING/SERVICING OVEN THERMOCOUPLE LEAD
To replace oven thermocouple lead;
1. Remove the front panel by pulling off the operating knobs and undoing the six screws holding the
panel. Pull off the panel.
2. Undo the union at the side opposite the control outlet.

3. Release the thermocouple head from the pilot assembly inside the oven.
4. Pull out the thermocouple lead from the top.
5. REASSEMBLE IN REVERSE ORDER.
REPLACING/SERVICING OVEN PILOT BURNER
To replace the pilot burner:
1. Undo the union connecting the pilot feed tube to the RHS of the gas control.
2. Undo the screw holding the pilot assembly to the inlet of the oven burner.
3. The pilot assembly can then be lifted out.
4. REASSEMBLE IN REVERSE ORDER
AERATION OF OVEN BURNER
For adjustment of aeration to oven burner:
1. Lift off the RHS deflector plate.
2. Loosen the butterfly valve adjustment screw.
3. Adjust the butterfly valve at the inlet to the burner while it is in operation.
4. When the burner is operating correctly re tighten the adjustment screw.
5. REASSEMBLE IN REVERSE ORDER
GAS CONVERSION
Prior to commencing any conversions from Natural to Propane Gas, or Propane to Natural gas, please ensure
that the gas supply is correct for the appliance being converted and that adequate supply pressure and
volume is available. Prior to performaing any conversions, please ensure gas supply to appliance (if
already installed) is turned off (isolated).
1. Regulator
a. Remove existing regulator located at the bottom right hand side of the appliance.
b. Install replacement regulator ensuring flow arrow on regulator is pointing the correct way.
2. Boiling Top Burners (with/without flame failure)
a. Remove trivets
b. Remove front burners by lifting the burner at the rear, and then slowly pulling it towards the
splash back (rear) of the appliance off the injector.
c. Remove rear burners by lifting the burner at the rear, and then slowly pulling it towards the
splash back (rear) of the appliance off the injector.
d. Unscrew burner injector located on the manifold from the base and replace with correctly
sized injector. Refer TABLE 1: Nominal Terminal Input Rates & Injector Sizes (page 3 of this
booklet).
e. If the boiling section is fitted with flame failure device, remove pilot as prescribed under
REPLACING/SERVICING BOILING TOP GAS COCKS,THERMOCOUPLES AND PILOT and replace pilot injector
spud with correctly sized pilot injector spud. Refer TABLE 1: Nominal Terminal Input Rates &
Injector Sizes (page 3 of this booklet).
f. REASSEMBLE IN REVERSE ORDER
3. Oven Burner (with flame failure)
a. Remove wire trays from oven compartment
b. Remove all three baffle panels concealing the burner.
c. Undo burner mounting screw located on the left hand side of the burner.
d. Gently lift burner up and then slowly pull off the oven burner injector.
a. Unscrew oven burner injector and replace with correctly sized injector. Refer TABLE 1:
Nominal Terminal Input Rates & Injector Sizes (page 3 of this booklet).
b. To change oven pilot injector spud, undo the union connecting the pilot feed tube to the RHS
of the gas control.

c. Undo the screw holding the pilot assembly to the inlet of the oven burner.
d. The pilot assembly can then be lifted out.
e. Change pilot injector spud with correctly sized injector Refer TABLE 1: Nominal Terminal Input
Rates & Injector Sizes (page 3 of this booklet).
e. REASSEMBLE IN REVERSE ORDER.
Once conversion is complete, please refer to installation instructions of this booklet paying
particular attention TEST POINT PRESSURE and COMMISSIONING -BEFORE LEAVING.
