This sequence is important, as it prevents residual gas from being left in the system under
pressure and will make the next use easier.
TIPS ON USINGYOUR GAS BARBESKEW
First Use
Before cooking, turn on the grill and operate on HIGH for about 15 minutes with the lid closed.
DO not open the lid during this procedure. Open the lid and continue to run on HIGH for
another 5 minutes. The BarbeSkew should now be burnt in and ready to use.
Preparation
The BarbeSkew should be preheated before adding any food. This is done by lighting the grill
and running it at HIGH for up to ten minutes, with the lid closed. If the food you are cooking
needs a lower temperature, turn the control knob to the required setting before adding food.
Cooking Time
This is affected by many things, and experience in grilling will help you. The type of food, the
thickness of the food, and even the weather can have an effect on cooking times. You will learn that
on a hot day, a lower setting will work better and on a cold day a higher setting may work better.
Flare-Ups
Flare-ups can increase the temperature in the grill and add to the build up of grease, resulting
inahigherriskofagreasere.Someare-upsarenormalandarerequiredtocreatesmoke,
which enhances the flavour of your food. To keep these flare-ups at the desired level, you
should:
• Alwaystrimfatfromsteaks/redmeatsbeforegrilling;
• Cookchickenandporkatalowersetting;
• Makesurethatthedriptrayisnotfull;
• Alwayscookwiththeliddown,andcookatthelowestefcientheatsetting.
Note:With the lid down, you will maintain a more consistent temperature inside the cooking
areaanduselessenergy/gas.

FOOD SAFETY
Keep raw meat away from ready-to-eat food.
Raw meat can contain food poisoning bugs. So if raw meat touches or drips onto food that is
already cooked or ready to eat, the bugs can get onto that food. Bugs can also transfer onto food
from your hands, chopping board, knife or tongs.This is called cross-contamination.You can prevent
it by doing the following things:
1. Always wash your hands thoroughly after handling raw meat;
2. Use separate utensils for raw and cooked meat;
3. Never put cooked food on a plate or surface that has been used for raw meat;
4. Keep raw meat in a sealed container away from ready-to-eat foods, such as burger buns
and salads;
5. Don’t put raw meat products next to cooked or partially cooked meat on the barbecue;
6. Don’taddsauceormarinadetocookedfoodifithasalreadybeenusedwithrawmeat.
Cooking barbecued food properly.
Always make sure you cook chicken, pork, burgers, sausages and kebabs until they’re piping hot all
the way through, none of the meat is pink and any juices run clear.
Remember, when you reheat food on the barbecue, always make sure it’s piping hot all the way
through before serving.
Also:
1. Make sure frozen food is properly thawed before you cook it;
2. Check that the centre of the food is piping hot.
THREE MODES OF OPERATION
1. Kebab Skewers x 9
Your preparations can start the day before your BarbeSkew Party. Marinate your food overnight
(trytheGreekmarinadeintheRecipeBook!)
Then before the guests arrive, skewer up the food using the following tips:
• makesurethefooditemsareskeweredthroughthemiddletomakesuretheskewerturns
evenly;
• ensurethefooditemsaren’ttoolargesothattheyaffecttheskewernexttothemwhenthey
start rotating;
• pushthefooditemstogethertokeepthefoodfromslippingwhilsttheskewerrotates.To
ensure the meat does not slip whilst rotating you can apply large cup mushrooms at either end;
• donotttoomuchfoodontheskewer–rememberonlyplacethefoodoverwherethegas

7

When the BarbeSkew has been lit and has heated up, switch on the rear motor and load the
skewers onto the BarbeSkew:

• ensuretheendsoftheskewersarermlylocatedintheholestoensurerotation;
• donotallowthesquarepartoftheskewertogettrappedinthecutoutholeatthefront.If
this does happen, immediately switch off the motor, and remove the skewer by force before
restarting the BarbeSkew.
The time taken to bbq depends on the type of food and the heat of the BarbeSkew but can take
5-10minutesforprawnkebabs,20-30minutesforchicken/vegetablekebabsor30-40minutesfor
lamb kebabs.

Remember not to use the same utensil for raw food and cooked food as this could lead to
food poisoning. For more information on this, see the leaflet from the British Government

they don’t clash, then they will rotate freely until the food is ready. You may wish to swap the cages
around half way, as the rear skewer position tends to be slightly hotter.
Be very careful with the 2 clamps as they are very sharp.
When the food is ready, hold the cage horizontally and open the catches using a pair of BarbeSkew
Mitts to ensure that you don’t burn yourself on the hot cage.

3. Grill with Heating Rack
The grill with the heating rack converts the BarbeSkew into a conventional barbecue giving total
flexibility to the way you barbecue.
The grill with heating rack can be purchased separately from www.barbeskew.com
CLEANINGYOUR BARBESKEW
• Thekebabskewerscanbecleanedinthedishwasherorconventionallyusingwarmsoapywater.

COVERYOUR BARBESKEW!
Although the porcelain enamel lid is rust-proof, and the steel parts of your BarbeSkew have been
rust protected, and all the screws have been galvanised to ensure that they do not rust, the two
battery motors are not weatherproof and therefore it is essential after your BarbeSkew has been
used and it has cooled down that it be covered with the BarbeSkew Cover.
This will keep the whole of your BarbeSkew in tip-top condition, but it also ensures that your
motors do not break down due to rusting or break down from water damage.
Motors left unprotected will rust and will subsequently go wrong. In this case the motors are not
covered under the Warranty.
STORAGE
When the outdoor cooking season is over and you are going to store the unit for the winter,
please do the following:
• Afterremovingandcleaningtheburners,wraptheminpaperandstoreindoors;
• CovertheBarbeSkewwithaBarbeSkewCoverifitistobestoredoutdoors;
• Donotstorethegascylinderinanenclosedarea.
When the BarbeSkew is not in use, the gas must be turned off at the cylinder valve. The
BarbeSkew and cylinder should be stored outdoors, in a well ventilated area. Do not store the
BarbeSkew in a garage or near heat. If there is a need for the BarbeSkew to be stored indoors,
remove the cylinder. The BarbeSkew can be stored indoors if the cylinder is disconnected from the
appliance and stored outside.
