2. Important Information
2.1 Proper usage
This device should only be used by specialist or trained personnel. It
is only intended for the preparation of dishes specially developed for
the sisisi. Any other usae is deemed as improper usae. Carousto
AG assumes no liability for the consequences of improper usae.
Read and follow these instructions before usin the device. Keep
these operatin instructions with the device and pass them on to the
next user.
The device is desined for a maximum daily output of 80 dishes and
can only be used with inserted filter cartrides.
The device varies accordin to altitude and is intended for use up to
2000 m.

2.2 For your safety
Read and observe the followin important safety instructions care-
fully.
They are intended to prevent daner to life throuh electrocution:
• Never use a device that is damaed or that has a defective power
cable.
• Ensure that the power cable is never exposed to hot surfaces.
• Ensure that the power cable is not pinched or rubbin aainst
sharp edes.
• Never let the power cable han loose. The power cable could be
damaed or cause a trip hazard.
• If the power cable is defective, it should only be replaced by an
authorised technician.
• Never open and repair the device yourself. Do not make any chan-
es to the device that are not described in these operatin instruc-
tions. The device contains live elements. Openin the device poses
a daner to life. Repairs should only be carried out by authorised
service centres usin oriinal spare parts and accessories.
• In order to disconnect the device safely and completely from the
mains power, first switch the device o at the mains switch. Then
unplu the power cable from the mains socket.
• The device must be disconnected from the mains power for servi-
cin or for the replacement of components or parts.
• The mixer unit must be left to cool down before bein removed.
Burns and scalds may otherwise occur when the mixer unit is
removed.
• Below the preparation unit, the device has two water drainae
hoses, which remove the rinsin water. A suitable collection tank
must be set up to collect the rinsin water. The collection tank is
not supplied as part of the delivery.
• The drainae hoses should not be removed while the device is in
operation.
• Position the device out of reach of children.
• Always wipe the device clean usin a damp cloth. Do not position
the device near a direct jet of water.
• Only fill the water tank with fresh, cold water.
• Disconnect the device from the mains power durin any proloned
periods of inactivity.
• Protect the device aainst atmospheric factors, such as rain, frost
or direct sunliht.
• The device should not be operated in non-stationary places (e.. on
board a ship).

Safe use of the filter cartrides:
• Keep the filter cartrides out of reach of children.
• Store the filter cartrides in a dry place in their sealed packain.
• Protect the filter cartrides from heat and direct sunliht.
• Do not use any damaed filter cartrides.
• Do not open the filter cartrides.
3. Initial start-up
The initial start-up and confiuration of the
individual proramme settins must be carried
out by a qualified and trained technician.
3.1 Unpacking the device
➔Cut the two bands to remove the card-
board.
➔Remove the packain lid and lift the
brown accessories pack out of the pack-
ain.
➔Remove the outer packain and lift the
device on its moulded fibre pad out of the
base.
➔To remove the moulded fibre pad, lift the
machine on one side.
➔Before the initial set-up, remove the pad-
din between the dish receptacle and the
work surface.
3.2 Waste water drainage
Two waste water pipes are included as acces-
sories.
➔For the two pipes a hole with a diameter
of 70 mm must be drilled into the base
(table). The hole must be located in the
middle of the rinse cavity. Both waste water
pipes must lead to a collection tank and
kept free of kinks.
➔Chane the waste water every day.
3.3 Setting up the device
The device may only be set up and commis-
sioned by a trained technician.
➔Only lift the device from below usin the
special slots on the left and riht of the
device.
➔Place the device on a flat, waterproof sur-
face with sucient strenth.

➔Choose a location for your sisisi device
which ensures that the ventilation slots at
the back are not covered.
A distance of 40 cm between the back of the
device and the wall is recommended, so that
the area can be cleaned as required.
➔To do this, lift the device by holdin it in the
middle of the front and tiltin it backwards.
Make sure that the centre of ravity always
stays to the front.
➔Always use two people to lift the device
into place.
3.4 Collection tank
➔Place a collection tank of approx. 10 litres
under the device to collect rinsin water
and condensation.
The collection tank is not supplied as part of
the delivery.
➔Remove the two hoses from the accesso-
ries pack and connect these to the drain
fittins.
➔Shorten both hoses so that the ends sit
securely in the collection tank.
3.5 Measuring and setting water hardness
You can use the Aquadur® test strip supplied
as part of the delivery to determine your water
hardness.
➔Hold the test strip briefly (1 second) under
runnin water. Shake o any excess water.
➔Wait approx. 1 minute.
➔Determine the water hardness usin the
colour scale of the Aquadur® test strip
accordin to the description on the pack-
ain.
You can use the software to set the water
hardness.
3.6 Inserting the water ilter
In the accessories pack you will find the filter
cartrides that need to be inserted into the
water tank.
➔Cut open the protective foil and place the
filter cartride on the water tank outlet.
➔Turn the cartride clockwise as far as it
will o.
The device can only be used with a filter
cartride inserted.
The filter should be replaced after a maximum
of 3 months or approx. 120 litres at 17 CH
(carbonate hardness).
3.7 Power socket
➔Only connect this device to a separate
power socket (3PNE) with a minimum 13
A fuse.

The power cable is approx. 2 m in lenth.
➔Lay the cable in line with workplace safety
uidelines. The cable should not pose a trip
hazard.

The dish receptacle moves to the loadin
position and the mixer unit moves to the rinse
position. Make sure that no objects are placed
between the mixer unit and the rinse cavity.
No manipulations should be carried out in the
area surroundin the rinse cavity.
As soon as the system has heated up, the
display shows the “READY” symbol.
The device switches o automatically after a
timeout (factory settin 30 minutes).
➔The device switches back on when you
press the Standby button.
4. Switching on the device
4.1 Filling the water tank
Remove the water tank before use and rinse it
thorouhly.
➔Fill the water tank up to the “MAX” mark
with fresh, cold water.
Carbonated mineral water or other liquids
could damae the water tank or the device.
The device can only be used with a filter
cartride inserted.
4.2 Switching on the device
➔Turn the main switch to the “I” position.
The display shows “WELCOME”
4.3 Starting the device
The Standby button lihts up.
➔Press the Standby button.
The system heats up and the display shows
the “System heatin up” symbol.

5. Preparation
When the device is ready, the display shows
the “READY” symbol.
➔Choose a dish and carefully peel o the
protective foil.
➔Place the dish in the dish receptacle.
➔Press the Start button.
The device heats up by means of a rinsin
cycle (flush).
WARNING: The mixer unit moves to the rinse
cavity durin the rinsin cycle. Make sure that
no objects are placed between the mixer unit
and the rinse cavity. No manipulations should
be carried out in the area surroundin the
rinse cavity.
The dish moves to the preparation position.
Preparation beins and a proress bar appears
in the display.
Once preparation is complete, the dish is
returned to the finished position ready to be
removed.
WARNING: Burns and scalds are possible
when removin the dish.
The device will undero a rinsin cycle after
every preparation.
➔Remove the hot dish.
Troubleshootin:
If the dish does not move to the preparation
position, the scanner will not reconise the
dish and the display will show the “Dish not
reconised” symbol.
The instruction “Read aain” will appear in the
text field below.
➔Press the “OK” button.
Preparation will bein aain and the dish
should move to the preparation position.
If the dish aain fails to move to the prepara-
tion position, the display will show the “Clean
scanner screen” symbol.
➔Remove the dish and clean the scanner
screen with a dry cloth.
➔After cleanin, place the dish in the recep-
tacle.
➔Press the Start button.
The dish will move to the preparation position.

If the dish aain fails to move to the prepara-
tion position, the display will show the “Dish
not reconised” symbol.
The instruction “Read aain” will appear in the
text field below.
By pressin the arrow buttons, 3 dierent
menu roups can be selected:
Default 1 quantity 55ml, 10s
Default 2 quantity 55ml
Default 3 quantity 50ml
The quantity of 55ml describes the water ab-
sorbed by the dish after preparation and 10s is
the pause time durin preparation for the heat
transfer to the food.
➔Press the OK button or the Start button.
Preparation beins and the dish moves to the
preparation position.
Preparation with manual activation is
achieved by pressin the OK button. The
manual activations are added and the status
can be seen in the “Preparation” display menu
under “QR Code not reconised”.
Durin preparation, you can interrupt the
process at any time by pressin the Standby
button.
The “STOP” symbol appears in the display.
If the same dish is used for a second time
in the device, the device will reconise the
duplication and the start will be denied. The
display will show Error 71.

6. Rinsing
6.1 Manual rinsing
➔If the rinse proramme button lihts up,
you can press this button to rinse the
device before the next preparation.
A proress bar shows the status of the rinsin
cycle.
WARNING: Durin the rinsin cycle the mixer
unit moves to the rinse cavity. Make sure
that no objects are placed between the mixer
unit and the rinse cavity. No manipulations
should be carried out in the area surroundin
the rinse cavity. Durin the rinsin cycle, the
“Rinsin” symbol appears in the display.
6.2 Automatic rinsing
After every preparation, an automatic rinsin
cycle will bein after a timeout of a few min-
utes. Before the rinsin cycle beins, a warn-
in tone will sound to alert you to this fact.
A proress bar shows the status of the rinsin
cycle.
WARNING: Durin the rinsin cycle the mixer
unit moves to the rinse cavity. Make sure
that no objects are placed between the mixer
unit and the rinse cavity. No manipulations
should be carried out in the area surroundin
the rinse cavity. Durin the rinsin cycle, the
“Rinsin” symbol appears in the display.

7. Cleaning
7.1 Starting the cleaning process
➔You can switch the device o at any time
usin the Standby button.
The rinsin cycle will bein after every prepa-
ration.
WARNING: Durin the rinsin cycle the mixer
unit moves to the rinse cavity. Make sure
that no objects are placed between the mixer
unit and the rinse cavity. No manipulations
should be carried out in the area surroundin
the rinse cavity. Durin the rinsin cycle, the
“Rinsin” symbol appears in the display.
7.2 Cleaning the mixer unit
➔Remove the cover from the preparation
unit.
The mixer unit can now be seen.
WARNING: Parts of the mixer unit can be very
hot. Use a protective cloth to remove it.
The unlockin lever is located on the riht of
the mixer unit.
➔Before pressin the lever, hold the mixer
unit with the protective cloth.
➔You can then depress the unlockin lever
and remove the mixer unit from below.
In order to avoid any impurities from the
dishwasher enterin the mixer unit, you must
insert the red sealin plus.
➔These can be found in the accessories
pack.
➔Place the mixer unit in the dishwasher to
clean it.
The device switches o automatically after a
timeout followin the last preparation.
7.3 Finishing the cleaning process
➔Remove the red sealin plus from the
mixer unit once it has been cleaned in the
dishwasher.
In order to replace the clean mixer unit, please
note the followin:
➔The positionin uide (see 1.3 Mixer unit)
on the cap must point forwards towards
you.
➔Guide the couplin of the mixer unit into
the openin in the preparation unit and
press upwards until the mixer unit clicks
into place.
➔Pull down ently to check that the mixer
unit is correctly enaed.
➔Now replace the cover of the preparation
unit.

7.4 Daily cleaning of additional parts
➔Rinse out the water tank with fresh water.
➔Remove the dish receptacle by liftin it up
out of the device.
➔Wipe the work surface with a clean, damp
cloth.
➔Clean the work surface and the scanner
screen with a soft cloth.
➔Clean the rinse cavity with a wet cloth.
➔Empty the collection tank below the device
and clean it on a daily basis.
8. Daily operation
8.1 Daily care
The daily care of the device and hyiene when
handlin food are critical for the preparation of
consistently perfect dishes.
Carbonated mineral water or other liquids
could damae the water tank or the device.
➔Only fill the water tank with fresh, cold
water.
➔Remove the lid of the water tank.
➔Remove the water tank and rinse it out with
cold water.
➔Fill the water tank with fresh, cold water up
to the “MAX” mark and put it back in place.
➔Replace the lid of the water tank.
8.2 Switching on the device
➔To switch on the device, turn the main
switch to the “I” position.
The display shows “WELCOME”.
➔Press the Standby button to switch on the
device.
The system heats up and the display shows
the “System heatin up” symbol, see Chapter
4.5 “Startin the device”.
When the device is ready, the display shows
the “READY” symbol.

10.Care
The device has the followin interated care
prorammes:
• Rinse device, see Chapter 6 “Rinsin”
• Clean device, see Chapter 7 “Cleanin”
• Chanin the filter cartride
• Decalcification
10.1 Changing the ilter cartridge
You can order filter cartrides for the device
from Carousto.
In their sealed protective foil, the filter cartrid-
es have a storae life of two years.
The filter should be replaced after approx. 120
litres at a water hardness of 17 CH. Before the
filter has to be replaced, a “counter” will appear
on the display. This counter is desined to
remind you that another filter cartride should
be immediately available as a replacement
because the device will not operate unless it
has a filter cartride. Once the counter has run
out, no more preparations can be made until a
new filter cartride has been inserted.
Once the counter has run out, the display
shows the “Chane filter cartride” symbol,
and the device will not allow any more prepa-
rations.
➔To chane the filter cartride, remove the
water tank from the device and empty out
the water.
➔Turn the filter cartride anticlockwise and
remove it from the water tank.
➔Clean the water tank thorouhly with an
appropriate cleanin aent before carefully
insertin a new filter.
➔Remove the protective cover from the new
filter cartride.
➔Place the filter cartride in the water tank.
➔Turn the filter cartride clockwise until you
hear it click into place.

➔Fill the water tank with fresh, cold water up
to the “MAX” mark and replace the water
tank.
The device will rinse the filter cartride with
approx. 0.4 litres of water.
10.2 Decalcifying the device
The need to descale the device depends on
the composition of the water.
The messae “Device calcified” automatically
appears when the device is switched on.
➔You can delete this messae by pressin
the OK button and carry out the decalcifi-
cation at a later time.
WARNING: Use a liquid decalcifier with citric
acid and follow with the mixin ratio. A total
amount of 700 ml (0.7 litres) of liquid is
needed to decalcify the device.
➔The decalcifier for the device can be or-
dered from Carousto.
WARNING: Contact with the decalcifier may
cause irritations to skin and eyes.
➔Avoid contact with skin and eyes.
➔Rinse the decalcifier o with plain water.
➔If the descalin aent comes into contact
with your eyes please seek medical help.
WARNING: If the decalcification process is
interrupted the device may be damaed.
➔Always complete the decalcification
process.
WARNING: Contact with the decalcifier may
cause damae to susceptible surfaces (e..
marble).
➔Wipe away any splashes immediately.
The decalcification proramme takes approx.
20 minutes.
Requirements: The display shows “READY”
and the water tank is at least half full of fresh
water.
The selection of the decalcification pro-
ramme can be found in Chapter 9 “Display
menu” under the menu point “Service”.
➔Use the arrow keys to select
“Decalcification” and press the OK button.
The operatin menu “Decalcification” appears.
➔Select “Start” and press the OK button.
The decalcification process beins.
The device is first rinsed throuh with water.
The display shows the “Rinsin” symbol.
After a short time, the “Remove filter cartride”
symbol appears with the command to remove
the water tank and take out the filter cartride.
➔Shake the water out of the tank and take
out the filter cartride.

WARNING: Use a liquid decalcifier with citric
acid and follow with the mixin ratio. A total
amount of 700 ml (0.7 litres) of liquid is
needed to decalcify the device.
➔Replace the water tank with the descalcifier
(without filter cartride).
After replacin the water tank with the decalci-
fier (0.7 liters) the Rinse button lihts up.
➔By pressin the Rinse button you are
confirmin that decalcifier is present in the
water tank.
The decalcification proramme beins. The
display shows “DECALC” with a proress bar.
Once the decalcifier has one throuh, the
display shows the “Rinse water tank” symbol.
➔Remove the water tank and rinse it out with
plenty of fresh water.
➔Replace the filter cartride in the water
tank and fill it with with fresh water up to
the “MAX” mark.
After replacin the water tank with fresh water,
the Rinse button lihts up.
➔By pressin the Rinse button you are
confirmin that fresh water is present in
the water tank.
The device will now be rinsed.
The display shows the “Rinsin” symbol.
The decalcification process is complete.
After rinsin, the device heats up and is
ready for preparation. The display shows the
“READY” symbol.
10.3 Transport setting
The transport settin consists of an automatic
drainae proramme that can prevent frost
damae in winter.
WARNING: The device may only be transport-
ed after the automatic drainae process has
been carried out and the transport settin is
activated.
Requirements: The display shows “READY”.
In the display menu (see Chapter 9) under the
menu point “Service” you can find the “Trans-
port settin” settin.
➔Use the arrow keys to select this option
then press the OK button.
The operatin menu “Transport settin” will
appear.
➔Use the arrow keys to select “Start” then
press the OK button.
The transport settin beins. First the device
is rinsed with water. The display shows the
“Rinsin” symbol.

After a short time the “Water tank” symbol
appears with the command to remove the
water tank.
➔Remove and empty the water tank.
➔Then remove the filter cartride.
Once the drainae proramme has been
completed, the display shows the “Clean work
surface” symbol.
➔Remove the cover and dry the wet areas.
➔After cleanin, press the Rinse button.
The dish receptacle moves to the transport
settin. This position is the same as the prepa-
ration position.
The device switches o automatically in this
position.
➔Turn the main switch to the “0” position.
The device is disconnected from the mains
power.
➔Now you can unplu the power cable from
the mains socket.
The device is now ready for transport.

12. Alarm messages and corrective measures
Dish not reconised
➔Check the QR Code on the base of the
dish, attached centrally.
Proceed as follows:
➔If the display shows the “Dish not reco-
nised” symbol, you can use the arrow keys
to select the 3 dish roups in the display.
➔Press the OK button. Preparation beins
and the dish moves to the preparation
position.
Preparation stop:
The preparation may come to a halt.
If the Standby button is pressed or the water
tank is removed durin preparation the device
will come to an immediate halt.
➔If the water tank is replaced, the dish will
move to the finished position ready to be
removed.
Remove foil:
Durin preparation the device has identified
that the foil has not been removed from the
dish.
➔Remove the foil from the dish.
Fill water tank:
➔Please fill the water tank.
If the water tank is full but the error messae
is still showin:
➔Remove the water tank and reposition the
tank correctly.
If the error messae is still showin:
➔Remove the tank, take out the filter car-
tride (turnin anticlockwise) and decalcify
the tank.
➔Then rinse the tank thorouhly, replace the
filter cartride and refill the tank with cold
water.
Cover of preparation unit missin:
➔Check that the cover of the preparation unit
is fully enaed.
Mixer unit missin:
➔Check that the mixer unit is correctly
enaed.
Replace filter cartride
➔Replace the expired filter cartride with a
new cartride.
Filter cartride missin:
➔Remove the tank and insert a filter car-
tride.

➔Clean the scanner screen with a dry cloth.
Device calcified
➔Run the decalcification proramme.

on by turnin the main switch to the “I”
position.

Standby button is pressed.
