!

Due to va r ious conditions such as ext remely high ki tc h e n
te m pe rat u re, high fre q u e n cy of trayact i v i t y brea k ing the
air curtain and exces sively long ope rat i o n s, the door may
need to be closed so the unit can re cover to pro per ope ra-
tion te m pe rat u re.
1. Plug unit into a 120 Volt 20 Amp power source.
2. Turn unit on by activating the ON/OFF switch located in
the lower rear of the unit.
3. Pre-chill empty cabinet, with door closed for approxi-
mately 45 minutes. Always keep the door closed except
when actually unloading the refrigerator. Do not load
the cabinet until the proper operating temperature has
been reached.(34°F - 40°F)
4. Load the cabinet from the bottom up.Make sure the
trays are pushed to the rear wall. Optimum Air Screen
operation requires that all trays be pushed all the way in
during unloading. Do not leave protruding into the air
screen at the front of the cabinet. After loading, close
the door and allow inside air temperature to restabilize
to (34°F - 40°F).
The Air Curtain can maintain 34°F - 40°F in excess of two
hours with the doors open. This performance is depend-
ent upon the temperature of the food product going
into the unit, ambient room temperatures humidity lev-
els and conditions relating to outside air flows.
5. Unload the cabinet from the top down.
6. Close the door during slow periods to extend the effec-
tive temperature maintenance time.
7.In cases where the air curtain will not be filled to
cap a c i ty, evenly space the trays from top to bottom.
Proper trays sizes (14 x 18 or 18 x 26) must be used.
If 14 x 18 trays are used, in ser t 2 trays per slide. This
will allow for pro per air flow thru out the cabinet.
Remember:
• The air curtain re f rig erator must be at the pro per
te m pe rat u re (36 F. to 40 F.) be fo re the door is ope n e d.
• The air curtain will not lower food temperatures. For
the air curtain to perform properly, the food temper-
atures going into the unit must be at a maximum of
36 F.
• Always close the door during slow serving periods
and after the last serving period of the day. Never
leave the door open longer than 2 hours.
• Never allow for trays to protrude out the front of the
air curtain.
This unit is equipped with an automatic condensate evap-
orator. To prevent water spills, leave the unit plugged in
with the door closed for minimum of 90 minutes after use.
DIGITAL THERMOSTAT CALIBRATION
1. Remove operator right duct assembly to gain access to bulb.
2. Remove bulb from inside wall.
3.
Remove Angled Fro nt,to gain access to digital thermom eter.
4. Place bulb into a glass of ice water.
Page 3
5. Use the ca l i b rat ion pote nt i ometer to adjust to 32° F (0° C)
6. Reverse procedure to reassemble.
NOTE: Digital Thermostat Calibration not covered under
warranty.
PAN SLIDES
Pan/Tray Slides are attached to the side panels. To remove
for cleaning, simply lift the side panel up and our of the
refrigerator.
MOVING THE CABINET
Even though the cabinet weighs 320 pounds,it is easy to
maneuver when in use. This is accomplished by the use of
recessed side hand grips,a push bar handle with rubber
bumpers and heavy duty non-mar casters. Since the
condensing unit is located in the base of the cabinet,
there is a low center of gravity making it more stable
when transporting and the operator has easy access to
all pans at a comfortable working height.
CLEANING
NOTE: This equipment has been designed and manufac-
tured to meet all applicable health and safety codes and
will give years of dependable service if used properly. All
equipment should be thoroughly before using.
WARNING: Electrical components should not be exposed
to direct contact with water or cleaning sprays. Permanent
damage to the electrical components will result.
CAUTION: Cleansers, detergents, sanitizers, or bleaching
agents that contain chlorides or phosphates will cause per-
manent damage to stainless steel products. The damage
appears as pits, eruptions, voids, small holes, cracks, severe
discoloration, or dulling of the finish of the metal.THIS
DAMAGE IS PERMANENT, COSTLY TO REPAIR, AND IS NOT
COVERED BY THE WARRANTY.

The Air Screen Refrigerator was designed to operate at a
range of 36 F (2.22 C) to 40 F (4.44 C). The pull down time
(time required to go from room temperature to 36 F) is
approximately 40 minutes.
The Air Screen Refrige rator ope rates basically the same as
other refri g e rated ca rt s, except it maximizes air flow through
s pecial duct s. The Ra n co therm o s t atmonitors the ca rt te m-
pe rat u re and turns the condensing unit on when be l ow
se tp oint te m pe rat ure. The condensing unit then conden se s
the ref ri g e ra nt to crea te the cold air, which is cycled thro ugh
the eva po rator located in the top housing. The two ce nter
fa ns, which are always on, then circul ate air through the
eva po rator cold coils and into the ca rt . When the ca rt rea ches
the set te m pe rat u re the therm o s t at turns the con d en s in g
unit off. Mo i s t u re is removed from the air when the co n-
d e n s ate unit is energ i ze d. When this oc cur s, the moisture
will drip into the pan located be n e ath the evapo rator. The
mo ist ure then drains down to the co n d e n s ate eva po rator,
which boils the water away. When the ca rt door is ope n e d,
the two outer fans turn on and increase the air flow. Th i s
in creased airf l ow through the ducts cause a screen of air
ac ross the car t holding the cold air inside.
IMPORTANT:
To maintain proper temperatures in the air curtain and
to prolong the life of the compressor, the condenser coils
must be cleaned on a regular basis. It is recommended
that the coils be checked and cleaned on a m o nt hl y.
This proce d u re is not cove red under warra nty, however
is to be performed only by qualified engineering/main-
tenance personal.
Cleaning procedure:
• Tu rn unit off and unplug from elect ri cal power source.
• To access the coils, remove the louve red panels locate d
at the bottom of the unit.
• Use a vacuum cleaner with a brush at t a c h m e nt to clean
the co ils. In ext reme cases of dust and grease buildup,
co m p ressed air may be re q u i red for cleaning the coil
fins. Use caution when doing this. The air curtain must
be moved to an isolated location to pe r fo rmthis proce-
d u re. O n ce the coils have been cleaned, i ns p e ct for be nt
coil fins. St raighten be nt fins using a straightening too l
called a comb.
• The co m p ressor motor and other co mp one nts can be
cleaned using stiff brush or whisk broo m .
CAUTION: Do not use steel wool pads as they will result in
rusting from the ferrous metal in the pads.

2. Vinyl trim should be washed with a chlorine-free deter-
gent and water. Rinse thoroughly with clear water and
allow to dry. Never use abrasive cleaners, waxes, car pol-
ish, or substances containing strong aromatic solvents or
alcohol. Use of direct steam/hot water cleaning at tem-
peratures above 190° F may result in “bubbling” or loos-
ening or vinyl adhesive.
3. To clean stainless steel surfaces use only cleansers,
detergents, degreasers, or sanitizers that are certified to
be “chloride-free” and “phosphate-free,” and cleansers,
degreasers, or sanitizers only in the recommended
concentrations. DO NOTexceed recommended concen-
trations or mixing ratios. After cleaning and sanitizing,
rinse all exp osed surfaces thoroughly with large amount s
of clear water. Wipe off any standing liquid or residue
from all horizontal surfaces in corners, or near edges.
