GAS CODE LIMITATIONS
The installation of this appliance must conform with local codes, or in the
absence of local codes, with the Australian Standard AS4563-2004 Commercial
Catering Gas Equipment (Barbeque Grillers) and AS/NZS 5601.1:2013 Gas
Installations – Part 1: General Installations, as applicable including: The
appliance and its individual shutoff valve (supplied by others) must be
disconnected from the gas supply piping system during any pressure testing of
that system at pressures in excess of ½ psi (3.45kPa).
The appliance must be isolated from the gas supply piping system by closing
its individual manual shutoff valve (supplied by others) during any pressure
testing of the gas supply piping system at test pressure, equal to or less than ½
psi (3.45kPa).

Gas Hose Restraint
The oven is mounted on

3/4” (1.9cm) must be used
along with a quick connect

The restraint supplied with
the Tandoor oven must be
used to limit the movement
of the unit so that no strain
is placed upon the flexible
connector. With the restraint
fully stretched the connector
should be easy to install and
quick connect.
The restraint should be
attached without damaging
the building. Do not use gas
piping or electrical conduit
for the attachment of the
permanent end of the
restraint. Use anchor bolts in
concrete or cement block. If
you have a wooden wall do
not use the tandoor near it
as the tandoor must not be
used near combustible
surfaces or materials
including walls.
Warning !!
If the restraint is disconnected for
any reason it must be reconnected
when the oven is returned to its
original position.
1350mm Clearance minimum required from top of burner to
bottom of canopy filter as per AS/NZS Standards.
Ensure left to right minimum clearance of 300mm from wall or any
other objects.
NOTE: Appliance must be located on Fire Proof Base
WARNING: Avoid locating Tandoor next to solid fuel, stoves, ovens,
or grills.
Installation Requirements
Installer to observe the following standards:
1. Increase minimums to 600mm if butted up close to glass
windows, mirrors or display equipment, etc.
2. Kitchen Exhaust Canopy in accordance with AS/NZS 1668 Parts 1

Opening the Packing (if your product came in a wooden box)

The Wooden Packing of
the tandoor is made as
per ISPM laws for
Fumigation and
Quarantine. The packing
should be disposed or
recycled in a manner as
directed by the norms
of the country /state.

Check that the container is upright. Check the Outer Packing for
visible damage. If such damage has occurred, do not refuse
shipment, but contact the carrier and file the appropriate freight
claims. Do not contact the factory, as responsibility for shipping
damage is between the carrier and dealer or end user.
1. The Tandoor Comes packed in a specially developed and tested
packing using the right material for safety during transportation
but care must be taken as it is clay clad and can break rendering
it useless.
2. Never tilt the packaged or Unpacked Tandoor Oven or let it rest
on the sides, only store in an upright position.
3. WARNING! Wear Protective eye cover and hand gloves while
handling metal strips as they are locked with high tension and
can harm if not handled professionally.
1. Using appropriate safety & cutting tools cut the steel strips.
2. Using Appropriate tools open the wooden box top, please ensure
that you pry the nails & not hammer them out.
3. Pry open the front side of the wooden box.
4. Gently pull out the tandoor oven on wheels out of the crate. This
is a forkliftable crate and the tandoor is heavy, you would need
more than 2 people to assist you in getting the tandoor out from
the wooden box.
5. IMPORTANT! Make sure that the tandoor does not drop down
on impact from the fork clearance height at the bottom of the
wooden crate, either get incline/sliders or use more people to lift
and put down the tandoor gently on the floor. Too much impact
while offloading shall damage the tandoor.
6. After the tandoor is placed on a still surface remove the tandoor
packaging. Do not use cutter knives to cut the stretch poly wrap.
You may accidently scratch the stainless steel body of the oven.
Use scissors to cut the wrap ensuring it does not touch surface.

1. Do not use the appliance for other than its intended use.
2. Never leave the appliance unattended when in use.
3. The appliance should not be used by children or infirm persons
and close supervision is necessary when used near such persons.
4. CAUTION Hot Surfaces.
5. NEVER leave the appliance ON unattended.
WARNING – This appliance should be used according to the
instructions. Staff should be trained in the correct operation
prior to using the appliance.

Pipework from the gas outlet to the appliance must be Flexible 3/4"
BSP Gas Hose and Quick Release Fitting must be Australian
Certified. DO NOT use pipes of a smaller size than the gas
connection.
A restraining chain/wire shall be attached to the wall and cooker
with 50mm of flexible hose attachment points and shall retain the
appliances movement to 80% of the hoses length.
To avoid undue stress on pipework and burner, adequate support
should be used when connecting and disconnecting to the union.
The Gas Inlet is located on the rear right hand side of the appliance
as per clearance diagram.
The appliance is floor mounted and must be installed on a solid fire
proof floor or base which is capable of supporting the total weight
of the tandoor plus the force generated by the usage of the tandoor
when the chef bends over to cook.
Wall and floor materials must be non combustible, water proof
and durable to avoid fire hazard. Wall material can be brick, tile
and/or stainless steel while the floor must be a solid foundation
made using concrete with non slippery surface as per the
commercial kitchen regulations of the state / country.

Note 1 : Gas Supply Connection
Connect the Gas Supply Pipe to the gas inlet point at the back of the
Tandoor Oven. The socket is a 3/4" BSP (F-Female) thread.
A listed and approved pipe/hose/QRCH (Quick Release Coupling
Hose) as per National Standards as governed by local law should be
used in conjunction with an isolation valve on the gas inlet. When
using hose prefer to have a 90 Degree bend at end hose for
convenience and safety.
Note 2 : Leveling and Locking
IMPORTANT! Once the gas hose connection is complete, use a
spirit level to ensure the tandoor is level, or adjust the castors (see
castor adjustment nut) if necessary. Non levelled Tandoor shall
result in the burners firing erratically thus reducing performance.
The Tandoor is supplied with 2 front lockable castors for easy
access. Press the locks down using feet to prevent any movement.
Note 3 : Pre-Commissioning Checks
The Tandoor is checked for performance and tightness at high
pressure (i.e. 13 kPa/2 PSI /150mbar). Do not put pressure more
than 10kPa for checking tightness. Over Pressure shall damage the
gas valve and the pilot.
An authorized gas technician should inspect that the baffle is in
place, remove the baffle & check that the pilot with the
thermocouple are intact & not moved. The Oven must be fired and
tested for correct operation before commissioning the oven.

Gas Conversion Instructions (FROM NG - LPG)
Front panel opening will
reveal the gas fittings for
tightness check.
ONLY AN AUTHORIZED GAS
TECHNICIAN MAY PERFORM
THE INSTALLATION.
The following conversion may only be completed by a licensed
plumber or gas fitter. Gas Conversion is achieved by installing a new
Gas Manifold for either NG, LPG or ULPG purchased via Golden
Tandoors Australia with the correct Injectors for the desired gas type.
1. Disconnect the incoming Gas Supply.
2. Disconnect Gas Line between the valve and the Gas Manifold.
3. Remove the Burner Support Bracket and Remove Burner.
4. Install the new Burner for the desired Gas Type, repeat the above
in reverse order to connect new burner.
5. Reconnect the incoming Gas Supply and pressure test the oven.
6. Check High/Low Gas Pressure at Test Point and adjust valve to the
rating plate values. NOTE: If the Tandoor cannot be adjusted to
operate correctly, contact Golden Tandoors Australia immediately.

Step 1 : IGNITION OF PILOT

Operation Procedure
The Tandoor Gas Circuit (Schematic Diagram GC-01) is equipped with
a flame failure safety circuit that includes an initial pilot of lighting
the main burner.
Press the knob downwards (keep depressed) and rotate
anticlockwise till a 30 degree turn (you will feel a mechanical stop).
While the knob is still depressed fire the igniter (a couple of times).
This shall ignite the pilot flame (diagram P-01).
Keep the knob depressed for 10 to 15 seconds.
The first ignition will require the installer to purge air from the lines
and may take a couple of attempts before burner remains light.

POINTS TO NOTE
1. Gas is only being delivered to the pilot in the first step.
2. The gas is not being delivered to the main burner.
3. After about 15 seconds the thermocouple will heat up for further
transfer of gas to the main burner.
4. Pilot/burner ignition will be confirmed by sight by opening the
viewing panel on the front of the control box.
Step 2 : IGNITION OF THE MAIN BURNER
Once the pilot is ignited and the thermocouple has taken heat you
can release the depressed knob to turn it further anticlockwise to
LOW. This shall be the slowest position of the burner where the
burner should be ignited.
The burner shall cross light and then you can turn the knob
clockwise to HIGH for maximum flame.
POINTS TO NOTE
1. The pilot and the burner both shall run now.
2. The main valve has a simmer control (LOW) at the end of the turn.
3. Unless required heat the tandoor at low flame and then increase
when desired.
4. Never keep your face on top of the main tandoor hole when
igniting the main burner. A lot of heat is emitted when the main
burners work.
THE TANDOOR IS NOW OPERATIONAL AND ONCE HEATED TO THE DEGREE
REQUIRED AS PER THE NEED OF THE CHEF COOKING CAN BEGIN.
IMPORTANT! DO NOT FORGET TO SLOW HEAT THE TANDOOR FOR THE FIRST
TIME YOU OPEN THE PACKAGE.
THE SLOW HEATING IS ONLY REQUIRED ONCE TO A NEW TANDOOR.

FIRST BURNING (MOST IMPORTANT)
THE MOST IMPORTANT STEP IN ENSURING THE LONGEVITY OF
YOUR TANDOOR POT
The Pot is cooked to a certain heat but not full heat before it is
packed i.e. it is cooked to a point where it shall be good for
transportation handling. Now you intend to cook food in it so it still
needs preparation to remove any moisture still left.
This process needs to be carried out with patience. Once all gas
tightness & connections are checked, fire the Tandoor (as per
Operations Procedure on Page 8) and maintain the lowest position
on the burner knob. If you give instant heat to the pot the moisture
will in turn damage the pot thus reducing its life.
Fire the burner and leave it on with lowest flame for a good 5 hours,
you can even let it be from morning to evening but do not leave it
unattended. This process shall remove the moisture form the pot &
shall also ensure a settled pot.
THIS PROCESS AS MENTIONED ABOVE IS VERY IMPORTANT FOR THE
LIFE OF YOUR TANDOOR POT AND MUST BE FOLLOWED.
The next day you can use your tandoor in a normal way, never over
fire the tandoor with a closed cover. You are just reducing the
lifetime of the pot. Give it ample time to heat and then start cooking.
Following the above process will ensure durability of your tandoor
pot. HAPPY TANDOORI COOKING.....
NOTE: Chefs love to prepare the Tandoor Pot with their own recipes,
we do not encourage or discourage them as cooking is an art
dependent on every individual but please ensure that you follow the
above procedure with or without preparation.
CHEF’S - PLEASE DO NOT MOIST YOUR POT WITH PREPARATIONS FOR
OVERNIGHT, FOLLOW YOUR WISH BUT ENSURE THAT THE TANDOOR
IS FIRED SLOW FOR RECOMMENDED HOURS.
SUMMARY
1. Follow FIRST USE procedure
2. SLOWLY preheat pot for 1 - 1½ hours each day
3. DO NOT wet the pot prior to cooking.

MAINTENANCE
General
New units are wiped clean at the factory to remove any visible
signs of dirt, oil, grease remaining from the manufacturing
process. They should be washed thoroughly (on the outside and
not the pot) with hot soapy water to remove any installation
dust or debris before being used for food preparation.
Also wash any accessories shipped with the Tandoor.
Any piece of equipment works better and last longer when
maintained properly and kept clean. Tandoor is no exception.
The Tandoor must be kept clean during the working day and
thoroughly cleaned at the end of each day.
During the day, all stainless steel body parts should be wiped
regularly with hot soapy water. At the end of each day, a liquid
cleaner designed for this material should be used. Using soapy
water can cause corrosion. Thereafter clean with warm water.
IMPORTANT: The Tandoor should be checked and adjusted
periodically by a qualified service personnel as part of a regular
kitchen maintenance program. This service should include the
removal of any built up grease in or around ventilation areas.
CAUTION: Do not use steel wool, abrasives clothes, cleansers, or
powders. If it is necessary to scrape stainless steel to remove
encrusted material, soak the area with hot cloths to loosen the
material then use a wood or nylon scraper. Do not use a metal
knife, spatula, or any other metal tool to scrape stainless steel.
Scratches made by these types of instruments are difficult to
remove.
DO NOT ATTEMPT TO MODIFY OR SERVICE GAS SYSTEM ON
YOUR OWN. USE QUALIFIED AND CERTIFIED GAS SYSTEM
INSTALLERS AND SERVICE PERSONNEL AS PER THE NORMS OF
THE LOCAL AUTHORITIES.

MAINTENANCE
General
Gas Parts Inspection
General Maintenance can be carried out by the end user whereas all
gas related maintenance should be done only by a licensed Gas Fitter.
1. All gas parts including the burner, pilot assembly, input
connections should be inspected for tightness check, firmness and
any development of layer of dirt with oil.
2. If any part is found with looseness, leakage or dirty then the same
must be attended to by a gas certified person.
3. If you spill a liquid in the main cooking area of the tandoor then
immediately stop using the tandoor and call a qualified gas
technician who shall have to inspect and service the gas
components.
4. As a general rule remove the baffle plate every six months and
inspect the burner holes, get them cleaned if you see any dirt
being accumulated. Cleaner holes shall give you better heating and
a lot of saving in gas consumption.
IMPORTANT! Care of your appliance shall give a longer and
successful working life to the product and the end product.
1. Never overheat your tandoor with the cover on.
2. Shut the pilot when not cooking for long hours.
3. Never leave your tandoor unattended.
4. Keep heavy objects like trolleys and bulky objects from hitting the
tandoor.
5. Always pay attention to gas leakages, in the event that you smell
gas shut the isolation valve located on the gas line off and call your
gas company or authorised service personnel.

FDA Approved High Temp Silicone
Clay Pot Brim
The FDA Approved High Temp Silicone is filled between
the ring and the clay brim. This is to prevent the
accumulation of food particles. If during the course of
usage this filling is removed then you should immediately
put a new layer. The silicone (only FDA Approved) is
available at major hardware stores.

PROBLEM CAUSE / SOLUTION
FLAME DOES NOT LIGHT
1. Is the Gas Supply on.
2. Check Igniter Spark & Pilot Flame, if the flame on
the pilot is not igniting then check if spark is there.
If the spark happens and no flame, call an
authorised gas fitter to rectify the problem.
Spares can be supplied by Golden Tandoors.
3. Inspect the burner, if the pilot is lighted & the
main burner does not then call an authorised gas
technician to check and clean the burner. New
Burners are available at Golden Tandoors. Specify
serial number with model code and date of
purchase when ordering.
FLAME CUTS OUT
1. Purge Gas Lines, there could be air trapped in the
lines (especially when using the tandoor for the
first time or when you change a hose or
connection).
2. Make sure that the top hole is not fully covered.
3. The pilot flame is big enough to heat the
thermocouple ( if the thermocouple does not get
enough flame from the pilot it will automatically
cut the supply to the main burner)
4. Check for obstructions in the restricted areas of
the tandoor as marked.
5. Debris in Burner - call authorised gas fitter to clean

Tandoors for purchase of a new suitable burner.
(Do not replace the burner with any other brand,
the tandoor is calibrated with specific burners to
give optimum heat input & control flue gases).
ALTERNATIVE FIRING
1. There is no way that you can fire the main burner
without lighting and heating the FFD connected
thermocouple so please do not try this.
2. There might be a chance that the pilot does not
ignite but the gas and the spark are there - this
can be as though the pilot setting and main valve
setting are locked but a small spill might just block
it. Call the gas fitter for correction but in the
meantime if you want to use your tandoor you can
with the alternate firing method.
3. Locate the pilot as in the diagram, open the front
panel & with the valve depressed for pilot lighting
use a long peizo lighter (manual) or a very long
match to light the pilot flame. Once you see the
pilot flame lit turn the knob as in step to of
operations procedure.
ALTERNATIVE FIRING IS ONLY FOR EMERGENCY USE WHEN YOUR GAS
FITTER CANNOT MAKE IT ON TIME & THE TANDOOR HAS TO SERVE.
GET IT SERVICED BEFORE YOU FIRE THE TANDOOR FOR THE NEXT TIME
IF NEW PILOT ASSEMBLY OR PARTS ARE REQUIRED CONTACT GOLDEN
TANDOORS FOR PURCHASE OF SPARES.

GAS CODE LIMITATIONS
The installation of this appliance must confirm with local codes, or in the
absence of local codes, with the Australian Standard AS4563-2004 Commercial
Catering Gas Equipment (Barbeque Grillers) and AS/NZS 5601.1:2013 Gas
Installations – Part 1: General Installations, as applicable including: The
appliance and its individual shutoff valve (supplied by others) must be
disconnected from the gas supply piping system during any pressure testing of
that system at pressures in excess of ½ psi (3.45kPa).
The appliance must be isolated from the gas supply piping system by closing its
individual manual shutoff valve (supplied by others) during any pressure
testing of the gas supply piping system at test pressure, equal to or less than ½
psi (3.45kPa).
