You canbake or slowly roastmany foodsona covered grillbycookingindirectly.Simply light thegas on one side of the grill
and place thefood on theotherside. Close thelid and yourgrillwillbakeor roastlikeaconventionaloven.

1/2cup fresh lemonjuice
1-1/2tsp.crushedsweetbasil
2 cloves garlic,crushed
1tsp.paprika

1 cup oil
1cutup trying chicken
Combine all ingredientsand pourintoplastic bag.Add chicken and marinate for 6 to 8 hoursin refrigerator,turning
occasionally,Remove from refrigerator 1 hour before grilling. Place chicken on grill, skin-side up. Cook for 20 to 25 minutes,
basting often with marinade.Turn, cook for 20 minutes longer. Serve immediately.
PolynesianChicken
Yield:4Servings-CookingTime• 1to1-112Hours• Method:Low
2(2 Lb.)split broilers 2 tsp.sail
1/2cup oil 1/2tsp.pepper
Brush chickenwith oil and seasonwith salt and pepper. Place on grill with bone side down. Grill slowly. Turn after 20 to 25
minutes and cook about 20 minutes longer. Meanwhile make the below listed glaze.
Pineapple Glaze
I cup crushedpineapple,
drainedand reserve1/4cupsyrup
2tbs,lemonjuice
2 tbs. preparedmustard
I/2 lsp. salt
1 cup brownsugar
Combine ingredients,brush both sides of chicken with glaze and broil about 10 minutes more or until tender,Turn and
baste with glaze. Serve extra glaze with chicken.
ChickenShishKabobs
Yield:4SeNngs .CookingTime:12-16Minutes, Method:Medium
4chickenbreast halves,boned
and cutinto1-1/2 inchpieces
1greenpepper,cut in Iinchpieces
1zucchinisquash sliced and parboiled
1 cupsoy sauce
1/2 lb, mushrooms
1 sma! canpineapplechunks,
juice reserved
Combine all but pineapple chunks(include the pineapple juice). Marinate for 8 to
12 hours in refrigerator.Thread chicken,pineapple, mushrooms and bell pepper
alternately on skewers. Grill over medium fire for 6 to 8 minutes on each side or
until done.

Add herbs andjuice to softened butter and creamall together. Cover and store in refrigerator forseasonings to blend.
Good on vegetables, bread, fishor steaks.
Mop Ribs
Yield:About8 Servings, allow I lb. Per Person •Cooking Times:1-112Hours •Method: Low •8 Ibs. el"spareribs or I lb.

Mop Sauce
2 cups beefslock or bouillon
1/4cupsalad oil
1/3cup vinegar
I bay leaf
3/4lsp. chili powder
1/2tsp.paprika
1/4isp. hotpeppersauce
1/2cup Worcestershiresauce
1lsp. salt
1 tsp,dry mustard
1 Isp. garlicpowder
Combine "Mop" ingredients and let spareribs marinate. Combine dry seasonings and generously sprinkle on spareribs
before cooking. Grill spareribs as far from the fire as possible, basling frequently. Should take ribs 1 to 1-1/2 hours over
low fire. Dry seasonings keep indelinitely in airtight container.

Use a Wire Grill Basket to grilldifficultchicken,fish, burgers, steaks, and shrimp. Cook manydifferentitems at thesame
time and same rateby flipping themall at once,safely, surely. Fishand chicken won't fall apart whileturning. To keep food
from sticking to lhe wire, coat the basketwith oil before use.
Grilled Fresh Vegetables
Fresh vegelablescan be cooked on the grill. Brushthe prepared vegetableswith cooking oil or a bottled vinaigrette
dressing. Place them directly on the cooking grate beside the meat. Turnvegelables once and before longtheywill be crisp
and ready toeat.
Corn On The Grill
Yield:6 Servings • CookingTime:15 Minutes • Method:Medium
6 ears unhuskedcorn I/4 cupsall
Placeunhusked corn in sink and coverwilh water. Add salt.
Soak 2 hours.Place unhusked cornon grill. Cook and turnunlil
entire outside husk is black. Remove from grill and husk corn.
Serve wilh Herb Butter.

2-1/2Ibs.groundvenisonor 1/2 venisonand1/2groundbeefor pork
114cupbutter 1 onion,chopped
2tbs.dryredwine 1tsp,pepper
1/2 cupfinely choppedparsley 1tsp.salt
2 cloves garlic, minced 2 tbs.soysauce
Saute onion, parsleyand minced garlic in 114cup butter. When onionsare clear removefrom heat. Combine sauteed
mixture with meat mixture of your choice.Add remaining ingredients and mix well. Form into 8 patties, cook over medium
fire for 8 to 10 minutes on each side.
Venison Tenderloin
Yield:1/2 Lb, (Uncooked)PerPerson .CookingTime:20 Minutes • Method:Sear,Then Medium
Venisontenderloin
1/4tsp.pepper
6-8 slices bacon (morefor larger tenderloin)
1 Ibs. seasonedsalt
2 garliccloves, pressed
2 tbs.soysauce
6tbs.oliveoil
Rub pressed garlic over tenderloin.Combine soy sauce, oliveoil, seasoned salt, and pepper. Pour over lenderioin and
marinate overnight. Wrap tenderloin in bacon, securing with toothpicks. Cover the meat completely withbacon. Cook on grill
over searing heat until bacon is almost done, about 5-7 minutes. Reducetemperature,cook for an additional 13 to 15
minutes over medium fire. Turn meat continuously while searing over medium heat to guarantee even cooking.
