1 Introduction
1.1 Intended use
MKN units are solely intended to be used for commercial purposes,
especially in commercial kitchens.
The unit may only be used for cooking food with suitable cookware.
It is not permitted to use the unit for the following purposes, among others:
●Heating acids, brines or other chemicals
●Heating of warming plates, GN containers and tinned goods
●As a worktop or place to lay things
●Heating of magnetisable metal parts
●Heating of foods in foil or trays made of aluminium
This unit is not intended for sale in the USA or Canada. It may not be
used there.
1.2 About this operating manual
This operating manual is part of the equipment and contains information
required by the persons operating the unit to enable them to operate it
safely, for cleaning and looking after the unit and for handling faults.
●Staff must have read the operating manual before they start work, in
particular the section on “Safety information”.
●Keep this operating manual stored safely during the life of the unit.
●Make sure that this operating manual is constantly available for the
staff at the place where the unit is used.
●Supply this operating manual to any subsequent owner or user of the
unit.
●Include any supplements received from the manufacturer.
●Supplement the instructions, including supervisory or notification
requirements, to take account of special operational circumstances
e.g. work organisation, workflows or deployed staff.

1.3 Warnings
Warnings are indicated with a pictogram and a signal word.
The type and source of the risk as well as the consequences are described
together with instructions for avoiding the danger. The meanings of the
pictograms and signal words used are explained in section “Signs and
symbols”(see Chapter “Signs and symbols”, Page 7).
1.4 Warranty and liability
The unit may not be modified or technically changed.
All guarantees or warranties cease to exist if technical changes are made.
Furthermore, the safety of the unit is no longer guaranteed.
Claims for warranty or liability for damages to persons or property are
excluded if they arise from one or more of the following causes:
●Improper use of the unit
●Incorrect commissioning, operation or servicing of the unit
●Technical changes to the unit without the binding agreement of the
manufacturer
●Use of spare parts or accessories not approved by MKN
●Faults resulting from the failure to comply with these operating
instructions

2 Safety information
MKN appliances comply with the relevant safety standards. However,
this does not mean that all possible dangers that may arise, e.g. due to
incorrect operation, can be excluded.
Therefore, when operating the unit, the operating staff must be familiar
with and observe local regulations, e.g. in Germany BGR 111 “Working
in catering kitchens”.
Target group ●This operating manual is intended for staff who are responsible for
operating, cleaning and looking after the unit.
●Repairs to the unit may only be carried out by specially trained
technical staff.
●The unit may not be used without supervision if
-users are unable to do so due to their physical, sensory or mental
capabilities,
-they do not have the knowledge and experience required to
operate the unit safely and in the manner intended.

●Allow surfaces to cool before cleaning.
●Do not touch the cooking zone immediately after operation.
●Do not place any pot lids or cutlery on the cooking zone, otherwise
the pot detection function will turn on the heat.

Electricity Risk of electric shock
●Do not operate the unit if any controls are damaged.
●Only put a defective unit back into operation after it has been repaired.
Risk of fire Risk of fire due to cookware overheating
●Do not leave the unit unattended during operation.
●Do not operate the unit with empty cookware.
●Disconnect the unit from the mains immediately in the event of fire.
●Never attempt to put out a fire with water. Use ABC fire extinguishers
to put out fires.

Damaged Ceran®hob Risk of injury due to ceramic glass splinters
●Do not allow any hard or pointed objects to fall onto the Ceran®hob.
●Do not operate the unit if the Ceran®hob is damaged.
●Switch off the damaged unit immediately and disconnect it from the
mains.
Magnetic field Risk of injury due to magnetic field
●Pregnant women should not stand near the hob.
●Persons with metal implants or heart pace-makers should consult a
physician as to whether they may remain in the area of hob.
Risk of property damage due to magnetic field
●Do not place any magnetically sensitive objects (e.g. credit cards,
mobile phones) on the hob.
●Cookware should be spaced so that they do not touch.
Hot cookware Damage caused by hot cookware
●Do not set hot cookware on the glued joint of the hob; silicone seals
would be damaged.
●The cookware diameter may not overlap the edge of the Ceran®hob.
Hygiene Damage due to dirty air filter
●Observe the cleaning instructions.
●Change the air filter insert in good time.
Cleaning Risk of injury on slippery floor
●Clean the floor in front of the unit regularly.
Equipment damage due to incorrect cleaning
●Do not clean the unit with a water or steam high-pressure cleaner.
●Do not clean the surfaces with abrasive cleaners, scouring pads or
chemically aggressive cleaners.
●Observe the reaction times for cleaning agents.
●Clean the unit regularly.
●Use a glass scraper to clean the Ceran®hob.
●Use a glass-ceramic cleaner.
●Do not use cleaners containing acetic acid.

4 Operation

4.1 Initial use
Before using for the first time:
1. Remove any production or packaging residues.
2. Clean the unit (see Chapter “Cleaning”, Page 17).
4.2 Tips on handling
To avoid heat loss:
●Use suitable cookware (e.g. made from steel, cast iron, enamelled
steel or stainless steel and with a flat base).
●Pots and pans made from aluminium, copper, glass, ceramic or plastic
are not suitable cookware.
●Use pots of the right size. The diameter of the base must be at least
12 cm.
●Place lids on pots during cooking.
●Switch off cooking zones that are no longer needed.
●Avoid boiling over.
4.3 Displays of control lamps
The control lamp indicates that the unit is operating and shows any faults
with the induction generator.

4.4 Switching on/switching off the unit
4.4.1 Switching on
→Turn the unit switch (1).
Unit is switched on.
4.4.2 Switching off
→Turn the unit switch (1) to the zero position.
Unit is switched off.
4.5 Basic functions
4.5.1 Setting the temperature
→Set the power level (temperature) with the power selection switch
(3).
The control lamp (2) lights up.
The control lamp (2) goes out once the selected temperature is reached.
4.6 Parboiling and simmering
1. Switch on the unit.
All control lamps briefly light up.
2. Place cookware in the centre of the cooking zone marking.
3. Set the power level.
Induction is active.
The cookware will be heated.
Adjustments can be made during parboiling and simmering.
Settings of 5% to 100% are possible. For pot detection to function, the
base diameter must be at least 12 cm.

4.7 End of operation and breaks
4.7.1 Short breaks
1. Remove cookware from the cooking zone.
The induction function is switched off and is in stand-by mode.
All control lamps light up for four seconds.
2. To continue cooking, place the cookware back on the cooking zone.
Induction is active.
The control lamp lights up.
4.7.2 End of operation and breaks
Switch off the unit at the end of operation and during breaks:
1. Turn the power control to the zero position.
2. Turn the unit switch to the zero position.
Cooking zone is switched off.
Control lamp is off.
The unit is switched off.

5 Cleaning
5.1 Avoiding corrosion
●Keep the surfaces of the unit clean and well aired.
●Regularly remove accumulated layers of scale, grease, starch and
protein.
●Regularly remove salt deposits.
●Only allow parts made of stainless steel to come into brief contact
with strongly acidic foodstuffs, spices, salts or similar substances.
●Avoid damaging the stainless steel surface with other metallic items
(steel spatulas, steel wire brushes).
●Avoid contact with iron and steel (steel wool, steel spatulas, chippings
from the water pipes, water containing iron).
●Eliminate newly rusted points (e.g. which may have formed due to
contact with iron) using a mild scouring agent or fine sandpaper.
Always remove rust spots completely. The treated areas need to be
exposed to air for at least 24 hours. They may not come into contact
with grease, oils or food. During this time, the anti-corrosive passive
layer is able to form again automatically.
●Do not use cleansers containing bleach or chlorine.
●Clean contact surfaces with fresh water.
5.2 General cleaning

→Allow surfaces to cool before cleaning.

Damage due to penetration of water
The unit is spray waterproof.
→Never splash the unit with a water or steam high-pressure cleaner.
CAUTION
Damage to surfaces caused by incorrect cleaning
→Do not use abrasive cleaners or cloths.
→Do not use aggressive cleaners (e.g. grill cleaner).

CAUTION
Damage due to abrupt cooling
→Never cool the unit abruptly.
●Clean the unit after use.
●Switch off the unit and allow to cool before cleaning.
●Clean the housing with warm water and standard detergent.
5.3 Cleaning the Ceran®hob
Requirements Unit is switched off and is cool
1. Wipe off light soiling with a damp cloth.
2. Remove heavier dirt deposits with a standard glass-ceramic cleaner.
Wipe off all cleaning residue.
3. Remove encrustations with a glass scraper.

5.4 Exchanging the air filter
5.4.1 Replacing the air filter underneath the unit
Do not operate the unit without the air filter. Only use original filter mats
(order no. 216036) or a pre-cut mat of filter class EU4.
1. Switch off the unit.
2. Pull down the filter frame (held in place by a magnet).
3. Take out the old filter mat and insert a new one.
4. Reinsert the filter frame and press it back in place.

5.4.2 Exchanging the air filter in the tray insert
Check the air filter regularly for soiling and replace if necessary.
1. Switch off the unit.
2. Pull out the filter insert.
3. Take out the old filter mat and insert a new one.
4. Slide the filter insert back in until it reaches the stop.
