The Redneck Convection Oven™
Congratulations on your new purchase! If you are looking at smoking meat at 200-275 degrees
faurenheight, then you are at the right place. If you are looking at cooking a 2 inch rib eye, then you are
not. Seriously, you’ve purchased a tool that should bring joy to your hearts and happiness to your
stomach.
There are some things needed to be done prior to your first test run on your smoker.
DO’s:
1. SEASON YOUR SMOKER!!!!! By seasoning it, you will prolong the life of your smoker for many
years to come. Seasoning it is simple.
a. First, remove all of the racks and charcoal basket out of the REDNECK CONVECTION
OVEN™.
b. Saturate a cotton rag (or hand towel) in vegetable oil. Hold the rag using a set of tongs.
Rub the inside (only) of the smoker until each bit of the surface has been covered in oil.
c. Replace the bottom grill and charcoal basket (seasoning the other 2 racks is not
necessary).
d. Fill the basket full of charcoal.
e. Light using the following described lighting method.
2. Vacuum out your smoker after each use prior to putting it up.
3. Close off all valves and insert all plugs in openings. This will ensure the “flavor” stays in and not
in your storage area. You may think the smell of a smoker is a good thing (which I fully agree
with) but so do insects and other critters that may come and investigate.
4. Clean the cooking grills off after each use. The bits of food left over from cooking become
harder to clean over time.
DON’Ts
1. NEVER leave your smoker lid open for ANY extended periods of time when the charcoal (and
wood) is lit. The temperature will rise to highly elevated levels causing warping and damage to

the integrity of the smoker. You have purchased a SMOKER, not a GRILL. There are several less
expensive grills out there if that is what you intend to do.
2. NEVER leave you smoker outside in wet or damp conditions when not in use. It is a metal object
that does not really like being wet.
3. Do not clean the insides of the smoker after using it. It is the “seasoning” that you will work
hard to achieve after several uses.
4. Do NOT use lighter fluid to start your smoker!!! Unless you enjoy the taste of petroleum…..use
the lighting method we describe in this manual.
5. Don’t keep constantly opening and closing the unit while in operation. It relies on a regulated
intake of oxygen to maintain its consistent temperature.
6. Don’t add charcoal after you have lit the smoker. This will “drown” out the lit charcoal and
cause a rapid temperature. If you fill the basket full, there will most likely be charcoal left at the
end of cooking that you can re-use later.
7. DO NOT USE THIS SMOKER INSIDE!!!! It emits a lot of smoke (and CO2) which humans and pets
do not like very well.
8. Do not use wood by itself. You will need charcoal in this unit to make it work properly.
Lighting Instructions
1. Open smoker.
2. Open all valves and remove both (2) plugs from bottom of smoker .
3. Fill charcoal basket with charcoal (and wood if you like). Do not overfill!
4. Light the charcoal using a weed burner similar to the one in the picture.
LIGHT THE TOP OF THE CHARCOAL/WOOD MIXTURE ONLY!!!
5. Continue to light the charcoal until several bricket edges turn grey and smoke arises
from them when you remove the weed burner.
6. Place grilling racks with food on them in the unit.

7. Seal the unit completely making sure the bolt is threaded into the locking
ring.
8. Monitor temp after 30 minutes and then an hour to get proper temperature.
Maintaining the proper temperature
1. At the 1 hour mark of cooking, the smoker should have reached its highest temperature.
2. To LOWER temperature, adjust both ball valves the same turns. Start with a ¼ movement.
Wait 15 minutes. Then repeat, if needed, until you get the proper temperature. IF you have
completely closed both valves and NOT got the right temperature you desire: fully open
both valves and insert 1 plug back in the bottom inlet of the smoker. Repeat the above until
you get the temperature you desire.
3. To RAISE the temperature, simply open the valves (or remove the plug if you inserted it)
until the desired temperature is reached
a. NOTE: towards the end of a long smoke (12-18 hrs) the temperature may decrease
due to the charcoal basket being clogged somewhat with ash. To fix this problem,
open the smoker and use a clothes hanger bent straight to poke the charcoal and
thus allow the ash to fall to the bottom of the smoker. DO NOT SHAKE THE SMOKER
as this will cause ash to swirl with the smoke and attach itself to your food.
IF YOU WANT TO KNOW THE TEMPERATURE WITHOUT HAVING TO REMOVE THE LID OF THE SMOKER,
use a digital probe thermometer (the style with a long lead/cord leading to a metal probe that goes into
the meat). Run the cord through the exhaust port that you removed the plug from prior to lighting the
smoker. Connect it to the thermomter and know what is going on inside your smoker without having to
manually probe it every time you want a reading.
Smoker Maintenance
1. Keep the smoker under a shelter or garage when not in use. If you leave the smoker outside,
elevate the smoker using cinder or wood blocks to keep it off the ground. You will have cover
the smoker to keep water from getting inside the smoker and causing it to rust.
2. After each use, wipe the smoker down on the outside to get rid of dirt and grime. If needed, use
warm soapy water to clean with. Gentle spraying from a hose is alright as long as there is no
extreme pressure used and the smoker is allowed to dry before putting it in storage.
3. After numerous uses, some grease may build up on the inside/bottom of the smoker. You may
need a brush attached to a pole to loosen the buildup prior to vacuuming it out.

4. Ball valves and plugs may need some oil applied to them periodically to keep them moving
freely. Use as little as possible as too much oil can cause added buildup of grime on the outside
of the smoker.
5. Keep BOTH intake and exhaust valves open while storing the RCO. This will help manage the
moisture build up that can occur if you leave old charcoal/ash in the smoker for an extended
period of time. DO NOT DO THIS WITHIN 24 HOURS OF USING THE REDNECK CONVECTION
OVEN™ AS UNSPENT COALS INSIDE THE REDNECK CONVECTION OVEN™ MAY STILL IGNITE!!!
