This is the way to go for low
temperature smoking. You also

mid-range temperatures too.
Remove the heat spreader to create
a hot zone directly over the charcoal
and cooler indirect zones along the
sides of the grill.
People love this setup when cooking
things like steaks, where you’re
doing some indirect cooking on the
sides, but want to nish with an ultra
hot sear right above the charcoal.

spreader and heat shield to create dierent heat
zones and cooking styles.
Use the heat spreader accessory
(included) to get the largest direct
heat cooking area, and a more
gradual dierential between the
center and edges of the grill.
This is the seing you’ll probably
use most often for everyday grilling.
