First of all we wish to thank you for selecting an item from Valoriani.
Our company has manufactured refractory items and PREFABRICATED ovens for over
60 years in our premises located in Reggello, close to Florence. All items produced spring
from an idea that Mr. SILVIO VALORIANI had right after World Word II for bread baking.
The concept immediately met the favour of the Italian people and proved to be the winning
card of the company. Thanks to their easy assembly, installation and use, these ovens are
used to cook many traditional dishes, such as lasagne, roasts, baked pasta, besides of
course bread and PIZZA
The special design of the vault in refractory cotto perfectly matches the cooking surface
made up of elements in REFRACTORY COTTO.
This way our ovens off er the same – or even improved, we may add – features of old wood-
fi red ovens, which were built with refractory bricks laid down following a special design
according to ancient building techniques, whose origins are lost in the mists of time.

The present handbook is an integral and substantial part of the BABY OVEN and must be
kept available to the operators for any eventual consultation.
Before carrying out any operation, read carefully the information contained in the handbook,
with reference to safety , installation, use and maintenance.
The original text of the manual, written in Italian language, constitutes the unique reference
for the solving of possible interpretative controversies linked to the translations.
Moreover, this manual has to be considered as integrant part of the oven and has to be
saved for future consultations, until the oven exists.
The BABY OVEN must be used only for the use for which it has been conceived.
The Manufacturer declines any responsibility for direct and indirect damages caused by a
wrong installation , bad maintenance ,infringement, improper use and non-observance of
the norms and indications contained in the present handbook.

APPLICATION FIELD
The BABY VALORIANI oven has been designed in respect of the building norms of the
Directive Machines CE 2006/42 and has been built with features and refractory materials
of high quality, selected on purpose for baking of pizza, bread, meat, vegetables and oven
products in general, directly on the fl oor or on steel trays resistant to high temperatures.
The oven can be used both outdoor or indoor, in gardens, verandas, attic, tavern or terraces,
in respect of the features specifi ed by the builder.
The BABY VALORIANI oven is produced in two versions:
• WOOD (only fi rewood or pressed logs)
• GAS (with gas burner).

Place the BABY VALORIANI oven in a safe place, verify that the surface is plain, solid and
strong, so to support the weight of the oven. Moreover, pay attention to the following notes
about safety:
• Infl ammable materials has to be placed at minimum safety distance of 4 m from the
oven mouth, as per existing norms. The hot components inside the oven or in the fl ue,
may cause dangerous sparks.
• The chimney fl ue, the oven mouth and the tools used for baking and handling the fi re,
can reach temperatures dangerous to the touch. Please pay attention during the use,
we suggest to use oven gloves.
• The oven must be used only by adults properly instructed on its correct use.
• In case of installation of the optional wheels on the oven’s base, it is possible to move
the oven only on plain and perfectly levelled fl oors, inclined surfaces like stairs or ramps
as well as weak surface like lawn, gravel or clay court, may cause the upturning of
the oven while moving.
• Do not move the oven while there is still fuel inside, neither when it is still hot.
• Pay attention that the oven is not used by children as a toy, this negligence may cause
accidents and the movement and climbing on the base or on the dome may cause the
upturning of the oven itself with serious consequences.
• During the use and until the oven is completely cold, keep the children at a safe distance
from the oven and its tools.
• Do not close for any reason the mouth of the oven when there is fl ame combustion
inside of it, especially when the oven is gas fi red, as the combination of temperature
and unburned gas may cause an explosion when re-opening the oven mouth.
• When using a gas fi red oven, regulate the maximum fl ame so that the fl ame will develop
exclusively inside the oven and never has to reach the metal fl ue manifold of the fl ue.
• When the oven is wood fi red, ever put inside the oven more than 3 kg of wood, as the
fl ame only has to develop inside the oven and must not reach the metal fl ue manifold.

ASSEMBLY WHEELS (OPTIONALS) - BABY 75 OVEN
To assemble wheels under the base, follow the scheme below by using the spanners
supplied, tight effi ciently nuts and bolts.
Attenion:
The BABY OVEN VALORIANI must be positioned and used on an horizontal fl oor of suitable
loading capacity.
In case of installation of optional wheels, it is possible to move the oven only on plain and
perfectly levelled fl oors, inclined surfaces like stairs or ramps as well as weak surface like
lawn, gravel or clay court, may cause the upturning of the oven while moving.
The oven is only placed and wedged on the base, pay attention during possible moves and
always move the oven with more persons.
Do not move the oven while there is still fuel inside, neither when it is still hot
.

• ASSEMBLY SHELF - BABY 75 OVEN
To assemble the shelf, remove the frontal screws of the steel fl oorin position the shelf
and re-insert the screws, level the shelf with the steel fl oor and tight effi ciently the
screws.
• KIT PEELS HOLDER - BABY 75 OVEN
PTo assemble the shovels holder kit, it is necessary to remove one of the handles to lift the
oven, and replace it with the peels shovels holder , re-insert the screws and tight them
effi ciently.
To place the accessory peels holder it is enough to wedged it in the leg of the base and
shown in the images below.

• ASSEMBLY GAS BURNER (if gas fi red)
The proper gas burner for good functioning of the BABY VALORIANI oven, can be supplied
already installed on the oven by the builder. It is made following the specifi cations required
during the order, or it can be installed later.
There are 4 diff erent version to choose, for the 1 sizes of BABY 75 VALORIANI:
FORNO BABY 75:

USER INSTRUCTIONS
• GENERAL WARNINGS
Once the assembly of the oven is completed with the installation of the fl ue, you can start
using the oven, carefully following the below instructions:
Use the oven exclusively to bake food, by wood or gas. Any other use is not authorized by
the producer.
Do not use diff erent qualities or quantities of fuels than the ones suggest.
Do not use liquid fuels.
The OVEN, in particular its outside surfaces , when in use, reaches high temperatures.
Please follow the safety warning written in this manual.
Do not carry out any not authorized changes.
When using a wood fi red oven, put inside the oven an adequate quantity of wood, as the
fl ame must develop exclusively inside the oven and never has to reach the metal fl ue
manifold of the fl ue.
IMPORTANT
DO NOT KEEP IN THE HEAT RADIATING AREA, OR IN FIRE HAZARD AREAS, FLAMMABLE
MATERIALS OR POTENTIAL ONES. OBSERVE ALL THE NORMS IN FORCE TO STOCK
CORRECTLY THE OVEN FUEL.
LITTLE AND EVENTUAL CRACKS INSIDE THE CROWN’S ELEMENTS ARE PERFECTLY
NORMALAND ARE DUE TO THE THERMAL EXPANSION SUFFERED AT HIGH TEMPERATURES
. SUCH CRACKS DO NOT COMPROMISE IN ANY WAY THE WORKING OF THE OVEN, THEY
ARE SYMPTOMS OF A DEHUMIDIFICATION OF THE HANDWORK.
IN CASE OF AN EXTENDED INACTIVITY OF THE BABY OVEN, PROCEED WITH A SLOW
FIRING
WE RECOMMEND TO FOLLOW CAREFULLY WHAT ABOVE INDICATED, SINCE MOST OF THE
CRACKS ON THE CROWN ELEMENTS ARE DUE TO A TOO FAST DRYING.

• FIRING OF THE WOOD FIRED
The fi rst fi ring is a very important step. Even if the dome structure seems to be resistant
and solid, it contains a quantity of water and moisture that has to be vaporized during the
CURING (drying) phase.
It is FUNDAMENTAL, to avoid the creation of cracks and veins in the oven crown, to make
a heating as measured and slow as possible, so that the water can evaporate gradually,
without causing a thermal shock to the material.
Any crack caused in this phase cannot be repaired. It won’t damage the performance of the
oven, but it compromise the aesthetic of the inside dome.
Refrattari Valoriani declines any responsibility about this.
For THE FIRST FIRING, which has to be carried out gradually and as constant as possible
for 3 days, you MUST proceed as follows:
»Light a little fi re in the central part of the oven, with a few light wood.
»Keep an even inside temperature to about 100/150 C° CONSTANTLY for the fi rst day.
»From the second day raise the temperature of 50 C° every 4 hours, when the dome
will start to whiten, then the fi rst baking tests can be made.
»Never put inside the oven a quantity of wood over 3 kg, as the fl ame must develop
exclusively inside the oven and never has to reach the metal fl ue manifold of the fl ue.
»For a proper heating of the oven, after starting the fi re we suggest to use small wood
logs of maximum length 20 cm and Ø 4 cm.
»We discourage the use of both resinous wood (pine – fi r), as that would give a not
suitable aroma, and poplar or birch wood because of their high level of incombustible
particles.

• USE OF SMOKE DETECTOR
The smoke detector can be used in two diff erent positions.
The INTERNAL position lowers the height of the oven’s mouth, thus allowing a smaller heat
dispersion and a bigger superior thermic refl ection
The OUTER position lowers the height of the oven’s entrance, thus allowing a major
combustion smokes extraction but as a consequence also a bigger heat dispersion and a
smaller superior thermic refl ection.

VERSION WITH GAS BURNER - M 2 M
The fi rst fi ring has to be gradual. Fire the gas burner in minimum fl ame , let the oven
dry as contious as possible, until the water has evaporated by the refractory. This can be
noticed also by the fact that the air inside the oven is not humid anymore.
HOW TO DRY THE OVEN:
»Connect the gas tube to the nipple 1/2” with connections that
follow the norms.
»Verify that the inlet pressure is correct, as indicated in the table
(see pag.14 / 15 of this manual).
»Open the gas valve, keep the red button pressed.
»Turn and keep pressed the knob in
the position of electric discharge, till
the fl ame is on.
»Turn the knob in minimum fl ame
position.

HOW TO USE THE MILLBERG GAS BURNER:
»Open the gas valve, keep the red button pressed
»Turn and keep pressed the knob in
the position of electric discharge, till
the fl ame is on.
»Turn the knob in minimum fl ame
position.
»Turn the knob in maximum fl ame
position, to get to the desired
temperature .
Choose the best knob position to get the desired fl ame power for cooking.

VERSION WITH GAS BURNER M 2 E (with temperature control)
First fi ring and drying of the oven have to be gradual. Turn on the gas burner in minimum
fl ame until the temperature on the display shows 300°C.
HOW TO DRY THE OVEN:
»Connect the gas tube to the nipple 1/2” with connections that follow
the norms.
»Verify that the inlet pressure is correct, as indicated in the table (see pag.14 / 15 of
this manual).
»Open the gas valve, put the green button on position ON (ACTIVATE ELECTRIC DISCHARGE).
»Verify that the central black switch is placed on position ○Minimum Flame.
N.B.: The flame detection is influenced by the polarity of the device electric supply.
For safety reasons, the flame is detected only if the device is properly supplied, which
means with line and neutral polarity respected. Otherwise the device will stop at the end
of the safety time in the firing phase.
The stop function of the gas burner is indicated by the red light WAIT 10 SECONDS
BEFORE FIRING IT AGAIN.
Press the RED BUTTON RESET to re-start.
HOW TO USE THE MILLBERG GAS BURNER:
»Open the gas valve, put the green button on position (ACTIVATE ELECTRIC DISCHARGE).
»Put the selector in position I AUT AUTOMATIC to work with temperature control..
