Introduction
Dear Customer,
Thank you for choosing the X-Oven.2 model, we hope you will use it for
many years with maximum satisfaction.
The Installation, Use and Maintenance Manual is a fundamental part of
the product and should always be made available to the operator.
The use of the product for purposes other than what it is meant for is strictly
forbidden, see Dangers.
Only original parts supplied by the Manufacturer or Authorized sales channel
can be used, visit ww w.x-oven.com.
The X-Oven.2 is covered by a two-year warranty starting from the delivery
date, except for those parts that are subject to fair wear and tear, please refer
to the Customer Care and Warranty section.
If the Customer fails to comply with the instructions outlined in this Manual
and as a result damages and/or malfunctioning occur, the Manufacturer can-
not be held responsible and is relieved from its warranty obligations.
Before purchasing the product, the Customer is responsible to know and com-
ply with the national and international laws and regulations applicable
in the place of use.

* The performances declared are obtainable with the use of X-Oven’s Canutillo charcoal, see Charcoal. The Customer may choose to utilize charcoal of
his choice, but the Manufacturer does not guarantee the same results.
The performances declared could be subject to variations depending on the specific use by the operator. For instance, the frequency of the opening/
closing of the grill drawers and/or the opening of the air inlet valve during service.
Performances may be altered by an improper maintenance of the product, of the extractor hood and/or of the exhaust pipe.
Performances may be altered due to atmospheric conditions during service and by the extractor hood performance.

Preliminary check
The Customer, once received the product, is responsible to verify that all com-
ponents, see Image 1 and Chart 2, are included, don’t present compliancy
defects and have not suffered damages during transportation.
If any faults or damages are present, the Customer is responsible to promptly
inform the Manufacturer and/or the Authorized sales channel, see Customer
Care and Warranty.
The Customer must remove any protective plastic material present on the ex-
ternal and internal surface of the product before completing the installation
and beginning to use it.

Product assembly
The X-Oven.2 model is delivered with its main components pre-assembled
(Cooking chamber, Grill drawers and Brazier lifting cart). The Customer, be-
fore installing and using the product, is responsible for completing the assem-
bly of the following parts:
Insert the Smoke outlet valve into the smoke outflow opening on top of
the product, see Image 2.

Secure the Grease drainer on the lower lateral cover panel on the side the
Grill drawers open, utilizing the screw caps and the Grease drainer support
holder, see Image 5.
Position the Warmer grill in the specific slots on top of the product, see
Image 4.

Installation
The X-Oven.2 model has been designed to be installed and utilized in indoor
professional kitchens with aeration as by law enacted or outdoor.
There are two alternative types of installations possible indoor:
•Installation under extractor hood
•Installation under extractor hood with exhaust pipe connector
In both types of installations it is mandatory to place the product under an
extractor hood.
The product can be also used outdoor obtaining the same performances
declared and cooking result.
SAFETY DISTANCES
In an indoor environment, the X-Oven.2, must be positioned at a minimum of
5 cm from the walls or other appliances in order to permit proper ventilation
and guarantee a safe installation, see Chart 3. It is mandatory to keep inflam-
mables materials at a minimum of 5 cm distance from the product.

EXTRACTOR HOOD
The X-Oven.2, in order to be used safely and to guarantee optimal perfor-
mances indoor, needs to be installed under an extractor hood, see Chart 4.

The Manufacturer is not responsible for the installations, use and maintenance
of the extractor hood and/or exhaust pipe.
The Manufacturer is relieved from any responsibilities in the case the Custom-
er does not comply with the national and international laws and regulations
applicable in the place of use.
MOVEMENT AND POSITIONING
The X-Oven.2 is equipped with wheels to facilitate positioning in the designat-
ed space and adjustable feet to fix its position during use, see Image 7, and
to secure the levelling, see Image 8.

INSTALLATION UNDER EXTRACTOR HOOD
It is mandatory to install the X-Oven.2 under an extractor hood. The com-
bustion fumes can be discharged directly into the extractor hood if safety
distances, see Chart 3 and the extractor hood requirements, see Chart 4, are
satisfied.
Below find examples of the correct front and side view installation positioning
under an extractor hood, see Image 9 and 10.

The installation under an extractor hood is possible thanks to the presence of
the Fire breaker, see Image 11. The Fire breaker has the double function of
cooling the combustion fumes before entering the filters of the extractor hood
and to withhold inside the product any potentially incandescent particles.
The temperature of the combustion fumes at the extractor hood intake has
been measured by an independent specialized technician that has verified and
certified that the temperature, if the product is installed according to the safe-
ty distances required, see Chart 3, results sufficiently low (< 80 C°) not to
be considered dangerous nor cause damages to the aspiration system, see
Exhibit 3.
To assure a correct and safe use of the product it is important to daily clean
the Fire breaker’s net filter, see Exhibit 1.

INSTALLATION UNDER EXTRACTOR HOOD WITH EXHAUST PIPE
CONNECTOR
The installation of the X-Oven.2 under an extractor hood, see Chart 4 and
connected directly to an exhaust pipe is possible with the use of the Exhaust
pipe connector. The device is optionally supplied, visit ww w.x-oven.com
and substitutes the Fire breaker’s net filter, see Image 12.

The Manufacturer is not responsible for the installations, use and maintenance
of the extractor hood, exhaust pipe and for the setup of the connecting pipe.
The Manufacturer is relieved from any responsibility in the case that the
Customer is not observant of the laws and regulations of the country where
the product is installed and used.
OUTDOOR INSTALLATION
The installation of the X-Oven.2 outdoor is possible with the use of the
optional accessories Exhaust pipe connector and Outdoor pipe, visit
ww w.x- oven.com and see Image 14.
The mentioned accessories allow to recreate the draft effect generated by the
extractor hood indoor and consequently guarantee the same performances
and proper use also outdoor.
The Exhaust pipe connector allows to connect the product directly to an ex-
haust pipe with a 10 cm diameter pipe (not supplied) and discharge the
combustion fumes through the exhaust pipe into the open-air, see Image 13.

To assure a proper and safe outdoor use of the product, it is necessary to set-
up a solid support base appropriate to withstand the weight of the product
and to guarantee leveling.
The product should be positioned in a wind protected location in order not to
compromise the draft of the chimney pipe.

Use
For a proper and safe use of the X-Oven.2, it is forbidden to use any
combustible material other than charcoal, see Charcoal. The use of other
combustibles alters and compromises the proper functioning of the product,
the safety of the operator and relieves the Manufacturer from its warranty
obligations.
Opening the Front hatch during service reduces the temperature inside the
cooking chamber, increases charcoal consumption and causes smoke release
in the surrounding environment.
The Manufacturer recommends keeping the space under the Grease drainer
and next to the Air inlet valve free from any object that might clog or obstruct
the air flow.
TEST: FIRST IGNITION
The Manufacturer informs the Customer that the new product, once assem-
bled and installed, must be started at least once before it can be used for
cooking. The proper test procedure specifies that the Customer should follow
the ignition procedure instructions, see Ignition and once the operating tem-
perature is reached, the product should be kept in use for at least 2 hours
before starting to cook.

The Manufacturer recommends the use of X-Oven certified charcoal, to
obtain the correct heat intensity, avoid excessive residue and limit sparks de-
velopment.
X-Oven charcoal guarantees temperature stability without generating high
temperature peaks during the ignition phase and sudden drops during service.
The Manufacturer informs that the selected charcoal in order to perform as
required, is prepared meticulously. In particular, the focus is on selecting the
right charcoal pieces size, sufficiently large to guarantee the correct heat in-
tensity and duration but not excessively large to lengthen ignition time.
The Manufacturer underlines the importance of the charcoal choice to reach
the performances declared and guarantee an effective use and service.
The Client is free to utilize his own selection of charcoal being aware that this
choice can considerably influence the performance of the product.
IGNITERS
The Manufacturer, as per the choice of charcoal, underlines the importance of
the choice of igniters.
The igniters are used in the ignition process, inside the brazier tray, in the same
environment of the cooking chamber. Therefore, the use of odorless and
ecological igniters is highly recommended not to contaminate the cooking
environment and to be able to treat charcoal residue gathered in the brazier
tray and ash pan, as organic waste.
The Manufacturer offers its own selection of odorless and ecological igniters
that ensure an average flame duration ideal for an effective ignition.
