•Radiused stainless well 180 mm. (71/16”) deep (for a maximum 85 mm. (33/8”) water level) flush with the top and with
an 8 mm. (5/16”) reinforced base.
•Peripheral gulley to recover any spillages connected to drain.
•Well drain and overflow connected to drain outlet.
•Manual fill via taps on the front facia with hot or cold water.
•Standard supplied with 100 mm. (315/16”) deep perforated containers in gastronorm 1/3 and 2/3 sizes.
•Heating is external to the well and has integral overheat protection.
•Fitted with a frame to support gastronorm containers (with divider bars) and a flush stainless cover.
•Control and heat adjustment by thermostatic switch with indicator light.
•Cast brass control knob and backing plate set back from the top.

2. OPERATION
2.1.CONTROLS
2.1.1. THE HOB POWER
ÀHEATING
•Heating is controlled by a single control for each
hob (heating area) :
1 on MUS.CM2 and MUS.CM3.
2 on MUS.CM4, MUS.CM5 and MUS.CM6.
ÁTEMPERATURE ADJUSTMENT
•Turn the control knob to obtain the required
setting.
•The heating is controlled by a thermostat that
regulates the temperature according to the setting
from 1 (low temp) to 10 (high temp).
•An indicator light shows that the hob is heating and
its position shows which hob area the control
corresponds to. LOW TEMP HIGH TEMP

•Turn the control knob to the “l” position
(indicated on the cast back plate).
2.1.2. THE WATER SUPPLY
CONTROLS
•The water supply of well is controlled by a manual
mixer tap on the front on facia.
•Output is increased by turning the knob anti-
clockwise.

2.2.DIFFERENT FUNCTIONS
This unit offers several methods of cooking and reheating:
•Bain-marie : The function of a wet well bain-marie is to keep hot food products hot:
The bain-marie operates with a relatively low water level to ensure good steam exchange.
To function effectively food product that is already hot should be placed in Gastronorm sized stainless steel
containers. These should be placed in the frame over the Bain Marie which can be arranged to accommodated
sub multiples of Gastronorm sizes using one or more of the cross bars provided.
•Reheating sous vide sachets (vacuum packs):
With the cooker operating on high power and the water level at maximum.
The food packs should be fully immersed in the well to ensure optimum and even heat transfer from the water.
•Steaming individual portions:
With the cooker operating on high power and a medium water level.
The product should be in individual perforated gastronorm containers with lids, or the lid supplied with the unit.
Containers can be arranged as indicated above.
•Boiling individual portions:
With the cooker operating on high power and the water level at maximum
The product should be in specific stainless baskets
To skim the surface starch (cooking pasta) fill the well to the point that it overflows to drain. This can be done
occasionally as required or by setting the tap to a low flow rate and leaving it on.
It should be noted that containers suited to every operation are not supplied with the cooking suite.
2.3.OPERATING
•Fill the well to the required level with hot water.
•Heat the water using full power and with its lid in place (to reduce the heating time).
•Reduce the temperature as required.
•Keep an eye on the water level during service.
WARNING!: NEVER OPERATE WITHOUT WATER !
2.4.CLEANING
The Multifunction Cookers have fully rounded corners to allow easy daily cleaning with a damp sponge.

3. MAINTENANCE AND AFTER SALES
3.1.TECHNICAL ACCESS ACCESS TO CONTROLS
1- Remove the stainless facia strip or panel (Modern range) or
the cover (Classic range) that supports the hob’s controls (see
procedure in paragraph 5 in the general instructions).
2- Access to thermostat(s) and heat indicator light(s).
ACCESS TO HEATING COMPONENTS
1- Remove the stainless facia strip (Modern range) or the cover
(Classic range) located in front of the hob (see procedure in
paragraph 5 in the general instructions).
2- Access to the hobs and the fixing clamp(s).
3- Remove the clamp which supports the hob, by undoing
the two M5 screws that hold it in place. 4- Access to the hob, the control thermostat bulb and to
the fixing clamp.
