Even though all the safety instructions in this Owner’s Guide are important and should be read and understood before us-
ing this appliance, these are some of the more important user instructions. Failure to comply could result in a re, property
damage, or personal injury.
1. This appliance is for outdoor use only and should never be left unattended. Constant supervision is necessary.
2. Never operate this appliance within 10 feet (3m) of any structure, extended awnings, combustible material, or other
LP cylinder. Never operate this appliance within 25 feet (7.5m) of any ammable liquid.
3. Read all the operating instructions before lighting the burner. If ignition does not occur in 5 seconds, turn the burner
control OFF, wait 5 minutes, and repeat the lighting procedure.
4. Do not ll a cooking pot beyond its maximum capacity.
5. Never allow oil or grease to smoke or get hotter than 400° F (200° C). If this happens, immediately turn the
burner and gas supply OFF.
6. Hot cooking liquids remain at dangerous temperature levels long after the burner is OFF. Never touch the
appliance until liquids have cooled to 115° F (45° C) or less. Do not move or put the appliance into storage
until it is cool to the touch.
7. If a re should occur, immediately move away from the appliance and call your local re department. Do not
attempt to extinguish an oil or grease re with water.
8. Disconnect the LP cylinder whenever this appliance is not in use.

Family
Congratulations on your choice of a Carolina Cooker®
Fryer stand. This Owner’s Guide covers the Carolina
Cooker® 12 inch (60 pound capacity) and the 22 inch
(40 pound capacity) Fryer Stands. Both stands are
equipped with a 46,000 BTU cast iron burner.
These fryer stands make outside cooking simple whether
camping, tailgating, or for family gatherings.
The Carolina Cooker® fryers have been
engineered for safe and ecient operation. The Carolina
Cooker® fryers are energy-saving,
environmentally friendly, and convenient to operate. When
properly maintained, the appliances will provide a long and
trouble-free service life.

The appliance does not include an LP cylinder.
The appliance is supplied with a pressure regulator
and hose assembly designed for an LP cylinder Type 1
connection. Do not use any other type of gas regulator
or LP cylinder. The contents also include the base and
burner.
1.5 End of Life Cycle
This appliance is designed to prepare food for human
consumption. When the appliance is no longer capable
of performing its designed function, destruction of the
appliance should be conducted according to federal
and local environmental regulations. Do not use any
materials or components from the appliance or the LP
cylinder for any other purpose.

3.7.1 LP Cylinder Specications
When purchasing or exchanging an LP cylinder for
this appliance, it must be constructed and marked in
accordance with the applicable standards of the US
and/or Canadian governing agencies.
The cylinder must also be equipped with:
• A shut-o valve terminating in a Type 1 LP cylinder
valve outlet.
• A Type 1 valve that prevents gas ow until a positive
seal is obtained.
• A collar to protect the cylinder shut-o valve.

3.7.2 Transporting and Relling an LP Cylinder
1. Never transport an LP cylinder inside a car or in
the trunk of a car. Use an open vehicle, such as a
pickup truck.
2. Allow only qualied LP gas dealers to properly ll
or repair the LP cylinder. DO NOT OVER FILL.

3. Check the dates on the cylinder collar, and if the
cylinder is past its re-qualication date, return it
for a new LP cylinder. Do not rell an out-of-date
LP cylinder.
3.7.3 Using an LP Cylinder
1. Never use the LP cylinder in a position other
than upright. Do not lay an LP cylinder on its side
during use.
2. Propane gas is heavier than air and will collect
in low areas. Proper ventilation is extremely
important.
3. When the appliance is not in use, the gas must
be turned OFF by closing the LP cylinder valve
and the gas pressure shuto valve.
4. Before storing the appliance after use, always
disconnect the LP cylinder.
5. Never use an LP cylinder if it shows signs of
dents, gouges, bulges, re damage, corrosion,
leakage, excessive rust, or other forms of visual
external damage. The cylinder may be hazardous
and should be checked by a qualied LP supplier.
3.7.4 Storing an LP Cylinder
1. LP cylinders must be stored outdoors, out of
reach of children, and must not be stored in
a human dwelling place, garage, or any other
enclosed area.
2. Never place a connected LP cylinder under the
appliance.
3. Do not store an LP cylinder within 10 feet (3m)
of any cooking appliance.

5. Assembly and Startup Procedure
Before beginning assembly, read and
understand the information contained in this
Owner’s Guide.
Safety precautions and warnings are provided
in this Owner’s Guide and on the appliance. If
these hazard warnings are not heeded, bodily
injury or death could occur to you or to other persons.
5.1 General Assembly Instructions
1. This appliance is specically designed to be used
with a LP cylinder with a Type 1 cylinder valve and an
overlling protection device (OPD).
a. A Type 1 valve can be identied by its large
external threads. Do not connect to a cylinder that
uses any other type of valve connection device.
Note: Any LP cylinders used with this appliance must meet
the standard, as outlined in “3.7 LP (Propane) Gas and LP
Cylinder Safety” on page 8.
2. Make sure all the parts have been shipped with
the appliance before starting assembly. The
shipping box should contain:
a. The base assembly.
b. Regulator hose assembly with brass orice tting.
c. Air shutter and spring.
d. Legs with attaching hardware. (only M40322)
e. Stabilizing ring. (only M40322)
f. Hardware bag. (only M40322)

5.3 Assembly
Note: Steps 1 through 4 are for Model M40322 only. For
Model M49469, go to Step 5.
1. Place the burner upside down on a level surface.
2. Bolt the legs onto the wind shield using two M6 bolts
and nuts on each leg. Do not fully tighten the bolts.
3. Bolt the stabilizer ring to the legs using two M6 bolts
and nuts on each leg. Do not fully tighten the bolts.
4. Tighten all twelve bolts securely.
5. Verify that the burner head is fastened securely to
the base with the bolt and nut.
Note: The burner comes bolted to the frame but could
have loosened during shipping.
6. Connect the regulator hose assembly to the burner
assembly. The brass tting should be tightened
securely, but not so tight that it binds the air shutter.
The air shutter should turn by hand, but hold its
position when released.
Note: To prevent damage to ttings or burner assembly
when tightening connection, hold the brass tting with
one wrench while tightening the regulator hose
assembly tting with the other wrench. Do not tighten
the connection using a single wrench.

7. Connect the regulator hose assembly to an LP
cylinder, as described in section “5.4 Connecting the
LP Cylinder” on page 13.
8. Perform the Soapy Water Test, as described in
section “5.5 Soapy Water Test” on page 14.
9. Follow the safety and cooking guidelines, as
described in section “6. Cooking Guidelines” on
page 16.

3. Remove the protective cap from the LP cylinder

the connector. Hand tighten only.
Do not use tools to tighten this connection.
4. Make sure the hose is not kinked and is routed away
from any sharp edges or hot surface. The LP cylinder
should be placed at least 24 inches away from the
appliance.
The supply hose can be a trip
hazard. Tripping over the gas
supply hose can cause spillage of hot oil or food,
resulting in serious burns. Place the LP cylinder away
from human or pet trac. Do not walk between the
appliance and the LP cylinder.

5.5 Soapy Water Test
• Thesoapywatertestmustbeperformedoutdoors
inawell-ventilatedarea.
• Donotperformthetestaroundopenames,sparks,
litmatches,lighters,orcigarettes.
• Neveruseanopenametotestforgasleaks.
The “soapy water test” must be performed each time:
• the LP cylinder is reconnected, or
• any time the appliance has been moved, or
• at least once per year and/or the appliance has not
been used for more than 60 days.
1. The regulator shut-o valve and the LP cylinder
valve should be in the OFF or closed position.
2. Prepare a soapy water solution by combining one
part dish washing liquid with three parts water.

3. Open the LP cylinder valve.
(with the shut-o valve in the closed position).
4. Apply the soapy water solution to all connections
between the LP cylinder and the shut-o valve.
5. Inspect the connection(s) for bubbles. Close the LP
cylinder valve immediately if bubbles appear.
6. Re-tighten the loose connection(s) and repeat the test.
7. If bubbles continue to appear after tightening any loose
connections, close the LP cylinder valve. Disconnect the
LP cylinder and do not use the appliance. Contact the
local retailer where the appliance was purchased.
8. If the appliance will not be used immediately, close the
LP Cylinder valves and disconnect it.
9. Replace the protective LP cylinder cap when the tank is
not connected.

5.6 Lighting Instructions
Note: To prevent leaving the appliance unattended, have
the food prepared, safely stored, and outdoors before light-
ing the appliance.
To prevent burns, do not place
any part of the body inside the
frame of the appliance when lighting. Keep your hands,
hair, and face away from the burner. Do not lean over
the appliance when lighting the burner or cooking.
1. Open the LP cylinder valve.
2. Open the shut o valve.
3. Use a long match or spark igniter and slowly open
the shut-o valve until the burner lights.
If the burner does not light
within ve seconds, rst close
the shut‑o valve and then close the LP cylinder valve
OFF. Wait ve minutes for fumes to diminish before
relighting.
4. If the burner does not light, inspect the inside of
the burner tube for blockage caused by insects or
other small animals and/or outdoor debris such as
leaves, grass, etc.
To remove any blockage:
a. Close the LP cylinder gas valve and shuto
valve.
b. Use a narrow bottle brush or a sti wire to re
move any blockage.
5. After the burner is lit, open the shut-o valve until
the ame is blue in color.
6. Use the air shutter on the burner to adjust the ame
until it turns blue. Rotate the air shutter by hand to
either increase or decrease the amount of airow.
7. If the burner ame does not burn blue, check the
burner venturi for any obstructions. Dirt daubers,
spiders, and other insects will build nests blocking
air and gas ow.

Note: Due to the intense heat from the burner, it is normal
for discoloration to occur on the appliance during the rst
few uses.
9. Disconnect the LP cylinder from the appliance when
it is not in use.
10. If the burner is hard to light or does not appear to be
working correctly, check for an internal obstruction. If
not obstructed, replace the burner assembly.
Obstruction of combustion and
ventilation airow can prevent
proper gas mixture inside the burner, resulting in a
burner tube re which can cause personal injury.

6.2 Typical Cooking Guidelines
1. Visually inspect the entire appliance, including the
base, LP cylinder, regulator hose assembly, hose,and
burner assemblies before each use. Replace any
damaged or worn parts.
Note: Check the ll level of the LP cylinder prior to cooking.
If the level is low, use a new or relled LP cylinder. Do not
attach a new LP cylinder once cooking has started.
Do not disconnect the regulator
hose assembly or loosen any gas
tting while the appliance is in operation because the
LP gas can cause severe burns form freezing.

2. Light the burner. Refer to section “5.5 Soapy Water
Test” on page 14.
To prevent personal injury from
an open ame, be careful of
placing loose hair and clothing near the ame during
operation as they could catch re. Keep a grease‑rated
re extinguisher nearby.
3. Place the pot on the base and ll with cooking liquid.
Do not overll the pot.
4. Heat the cooking liquid to the desired temperature.
a. Remember that it can take anywhere from 20
minutes to an hour to heat the cooking liquid,
depending on the amount of cooking liquid and
the outside temperature and weather conditions.
b. A typical temperature for deep frying oil is
350° F. However, it can quickly reach its ash
point once this temperature is achieved.
The base (frame) and pot will get
dangerously hot, posing a se-
vere burn hazard. To prevent injury, always use proper-
ly‑tting oven mitts or pot holders when handling hot
cooking accessories.
5. When using cooking oil to fry food, turn the
burner OFF before placing the food item into the pot.
This is especially important when placing large food
items into the pot, as outlined in Step 6.
6. Large food item cooking tips.
a. Do not deep fry any food item which has been
stued with another food item.
b. Make sure the food item is completely thawed
before cooking.
Note: This fryer was not designed to cook turkeys.
Make sure the food item is com-
pletely thawed and dry before
placing it into the hot oil. Introduction of water or ice
from any source into hot oil could cause overow and
severe burns from hot oil and water splatter.
c. Completely dry the food item with cloth or paper
towels.
d. Make sure the food item is completely submerged
and covered in at least two inches of oil.
e. Turn OFF the burner.

f. Slowly and carefully lower the food item into the
hot oil.
g. Relight the burner. Make sure the food is
completely cooked before removing.
h. Turn OFF the burner.
i. Slowly and carefully remove the food item
making sure to drain any possible trapped oil.
7. Whenever placing a large food item into hot
cooking liquid, make sure the food item will not cause
the liquid in the pot to overow onto the burner.
a. Premeasure the cooking liquid by placing the
large food item into the cooking pot.
b. Cover the food item with at least two inches
of water while still allowing at least three inches
of space between the top of the pot and the
water.
c. Remove the food item, making sure to drain all
the water back into the pot.
d. The water level in the pot is now the maximum ll
level for the cooking oil.
e. Pour out the water and dry the pot prior to lling
it with oil.
8. Begin cooking.
a. Use the same size pieces to ensure even
cooking.
b. Carefully lower basket into oil.
c. Batter-covered foods should be lowered
carefully, one by one, into the basket or placed
into the basket and then lowered into the oil.
d. Do not add food while the basket is submerged
in oil to prevent splattering oil.
e. Avoid water-based marinades.
f. Always use metal tongs or slotted spoons tore
move food. Never use plastic utensils.
g. Do not overcrowd the frying basket, which can
cause under cooking, uneven cooking, and
overowing of the oil.
h. Do not salt foods over the appliance as this will
contaminate the oil and can cause damage to
the vats or mesh baskets.
i. Because frying is a very fast cooking process,
food can blacken, burn, and become a potential
re hazard if cooked only a few minutes too long.
j. Keep all ammable products such as paper
towels and other cloth items away from the
appliance.
k. While in close proximity to the appliance, wear
eye protection and use oven mitts to
protect against burns.
Note: Do not test the internal temperature of the food while
it is submerged in the hot oil, as this will lead to an inaccu-
rate temperature reading.
9. Remove the cooked food and test it with an accurate
food grade thermometer.
10.When cooking is complete, always close the
gaspressureshutovalverst,thenclosetheLP
cylindervalvelast.
11. Allow the cooking liquid to cool (approximately two
hours) and dispose of or store it properly. Refer to
section “6.3 Reusing Cooking Oil” on page 18 for
storage tips.

6.3 Reusing Cooking Oil
1. Cooking oil can be reused. Most cooking oil brands

orltered.Itcanthenbestoredinacool,darkplace
from three to nine months.
a. When planning to reuse the oil, strain it through
acheeseclothorsieve.
b. During the storage period, bacteria can form on
poultry,sh,oranimalfatsremainingintheoil.
c. Typically this bacteria is quickly destroyed when
theoilisreheated.However,ifitsmells
unpleasant or rancid, discard properly and use
new cooking oil.
