Oven Door
TheOvenDooristtedtotheOvenwiththescrewsgoingintothethreaded
metalinserts(supplied)thatarebuiltintotheOvenDome.TheOvenDoor
shouldalreadybeinstalledwhentheArchisattachedtotheDome.The
suppliedscrewsleavetheOvenDoorinplacethankstometallicinsertsplaced
intheArchandtheseamthatensurewatertightnessandactasinsulation.
Chimney
WhenbuildingtheChimney,itisimportanttorefertoyourlocalbuilding
codestandards.
EveryCBO-750Ovencomeswithametaldamperchimneypiececoupling
whichisttedinplacewithscrewstothepre-installedinsertnuts.
Oncethecouplingisinplace,usemortartomakeanairtightseam
betweentheueandOvenDome.
TheCBO-750Ovenallowsforusinga6"diameter,rigid
orexiblemetalchimneydesignedforwoodres.
NOTE: Neveruseanycombustiblematerialsnear
theMetalDamperassembly.Allbuildingmaterials
usedneartheMetalDamperassemblyshould
benon-combustibleandnevermadeofwood.

Arch Dome Insulation Blanket
VERY IMPORTANT FOR CORRECT FUNCTIONING AND LIFE OF THE
CBO-750 OVEN!
TheOvenDomemustbecoveredwiththesuppliedCeramicFiberInsulation
Blanket.TheBlanket,whichwithstandshightemperatures,shouldcover
theentiresurfaceareaoftheDome.YoucancuttheCeramicFibertoinsulate
aroundtheMetalDamperassembly.Sincemostheatlosswilloccuratthe
MetalDamperandtopoftheoven,youshouldensurethesespotsarewell
insulated.YoucanchoosetoinsulatetheOvenfurtherbypackingVermiculite
orothernon-ammableinsulatingmaterialabovetheBlanket.
Operating Instructions
Please follow these instructions exactly as written. Failure to follow
instructions may cause permanent damage to your oven and your
warranty may be void.
Althoughyourovenmayseemdryonceyoucompletetheinstallationprocess,
therearesmallamountsofmoisturepocketsthatneedtoworktheirwayout.
If you build a large fire in your oven from the onset, you could compromise your
oven's longevity and cooking efficiency, and can ultimately cause permanent
damage, which may void the manufacturer’s warranty.
Whenlightingtherstre,keeptheameslowsothemoisturecanbeslowly
releasedfromtheovenandsurroundingmasonrywork.Thiscuringprocess
shouldbeconductedatatemperatureascloseto212°F(100°C)aspossible(do
not exceed that temperature)foraperiodofthreedays.
Agoodsuggestionistobuildareinaseparatelocationandplacethecoalsintothe
oven.Youwillgenerateheatwithouttheameandtheovenwillcureasrequired.
Due to thermal expansion, small cracks may appear in the Dome or Hearth during
the curing process. Do not worry; this is normal and the quality of your oven will
not be compromised.
Afteryouhavecuredyourovenandarereadytostartcooking,lightasmall
reandslowlybuilditup.TheinteriorDomeoftheovenwillatrstturnblack
fromtheresmoke.Youwillknowtheoventemperaturehasreached572°F
(300°C)whentheinnerwallsturnfromblacktoawhitishgrey.Thisisaperfect
temperatureformanytypesofcooking.
It is a good idea to not exceed this temperature (572°F/300°C) because it may
cause serious damage to the oven.
