This operating manual contains information and instructions for safe operation of the appliance. Read the
operating manual carefully before starting up the appliance. The owner must ensure that the operating
company has been understood. In addition, the owner must inform its personnel about any potential hazards.

This operating manual is intended to help you ensure effective and optimum operation of your appliance.
If all information is followed, you can avoid hazards and extend the service life of the appliance.

3.1 Appliance data
3.2 Standard configuration
If you have ordered the appliance with factory settings other than the standard configuration, it is possible that
some of the descriptions in the operating manual no longer apply.
If this is the case, please also refer to documents provided as supplements to the operating manual.
3.3 Limitations of the appliance
The appliance may be operated only within the limitations specified by the manufacturer.
Failure to adhere to these limitations are considered a violation of the intended use.
3.3.1 Limitations of use
3.3.1.1 Intended use – appliance
The appliance is designed only for supervised baking of common baking goods and for cooking selected foods
(in accordance with the applicable legislation for food, food contact materials and feedstuffs) in a commercial
environment. The appliance is a piece of technical equipment that is intended solely for commercial use.
It may only be operated by persons who have received an induction, are above the age of 14 and have no
limited mental, physical or sensory capacity, unless they are supervised by a person who is responsible for
safety. Cleaning is executed automatically for the baking chamber with the appropriate function and manually
by the operating personnel for other areas accessible from the outside (e.g. baking chamber, surroundings).
Any other use or use beyond this is not considered to be intended use. The appliance must be installed in
a closed, dry, frost-free room and not outdoors. It is also not permitted to install the appliance in a commercial
kitchen.
Intended use also includes adhering to all information in this operating manual, adhering to safety-related
parameters and not exceeding the limitations of the appliance.

Limitations of the appliance

3.3.1.2 Intended use – proving chamber
The proving chamber is intended only for proving raw dough or similar products on stainless steel transport
devices in compliance with the applicable food legislation. It is a piece of technical equipment (according to the
German Equipment and Product Safety Act [GPSG]) that is intended to be used only for work and by persons
over 14 years of age. The appliance must be installed in a closed, dry, frost-free room and not outdoors.
Intended use also includes adhering to all information in this operating manual, adhering to safety-related
parameters and not exceeding the limitations of the appliance.

3.3.1.3 Intended use – loading trolley

parameters and not exceeding the limitations of the loading trolley.

3.3.1.4 Design limitations
The information in the technical data for this appliance defines the design limitations. More information on the

3.3.1.5 Reasonable foreseeable misuse
The following actions are included in the reasonably foreseeable misuse identified by the manufacturer:
•Use as a room heater
•Operation outside of the design limitations
•Baking, cooking or heating highly flammable, volatile or explosive liquids and substances
•Inexpert use of the appliance and its accessory devices
•Inexpert commissioning, operation and maintenance of the appliance
•Operation of the appliance and its accessory devices with defective or deactivated safety devices
(door switch, over-temperature limiter, fan motor thermal contacts, etc.)
•Structural changes to the appliance and its accessory devices
•Inexpert and incorrectly implemented maintenance work by unauthorised expert personnel
•Use of spare parts that are not original DEBAG spare parts
•Use of unapproved consumables and auxiliary materials
•Inexpert electrical installation of the mains supply provided on site (overvoltage, undervoltage, etc.)
•Inexpert drying and storage of fuels, textiles and food in or on the appliance
(including when the appliance is switched off)
•Heating highly flammable, volatile or explosive substances
•Installing the appliance in cold storage rooms and refrigeration chambers
•Installing and using the appliance in commercially used kitchens

Not all possible instances of misuse can be considered. The reasonably foreseeable cases of
misuse are listed to the best of our knowledge based on experiences with the appliance and
human behaviour.
3.3.1.6 Operating modes
The appliance can be operated in the following modes:
•Operation (see page 67: Control > Normal daily operation of the appliance)
•Automatic activation (see page 112: Control > AUTO on)
•Stand-by (energy-saving mode) (see page 84: Control > Standby)
•Cleaning (see page 149: Cleaning)
The appliance is designed for automatic operation.
3.3.1.7 Intervention options
The operator of the appliance has to carry out the following tasks during operation:
•Baking common bakery product types
•Cooking selected food (in accordance with the applicable legislation for food, food contact materials and
feedstuffs)
•Cleaning the appliance
•Refilling operating fluids (cleaning agent and rinse aid)
The operator of the appliance has to carry out the following tasks in case of a fault:
•Cancelling the program execution
•EMERGENCY STOP by disconnecting the power supply or the on-site main switch
•Switching from program mode to manual mode
•Switching off the individual appliance
•Access using emergency interlock release
3.3.1.8 Personnel
The personnel working with the appliance must be authorised and trained for the respective task and
personally suitable. Information on the groups of persons can be found in the chapter “Safety” > “Personnel
qualification” (page 29).
3.3.2 Space limitations
The appliance is intended for commercial use.
Information on the working areas and hazard areas can be found in the chapter “Appliance overview” >
“Appliance sections” (page 44).

Warranty and liability

3.3.3 Time limitations
Safe use of the appliance over its service life requires that it is operated within its performance limits.
Other requirements are compliance with the defined maintenance intervals and maintenance work
(annual service).
Information on the maintenance intervals and maintenance work can be found in the chapter “Maintenance,
dismantling and disposal” > “Maintenance, dismantling and disposal” (page 170).
3.4 Warranty and liability
Warranty and liability are exclusively covered by our General Terms and Conditions (see DEBAG website
http://www.debag.com). Conditions of delivery and service. These terms and conditions form part of the
contract documentation.
Warranty and liability claims for injury and damage are specifically excluded if they result from one or more of
the following causes:
•Use of the appliance other than for its intended use.
•Water damage due to on-site shut-off valves left open in the water supply line for the appliance and its
accessory devices (outside of the owner’s business hours).
•Damage to the appliance and its accessory devices or impairment of baking quality due to limescale
deposits.
3.5 Scope of delivery
The appliance is delivered fully assembled, in accordance with the contractual terms. You must check that the
scope of delivery is complete upon goods receipt. Any missing or damaged parts must be reported to DEBAG
Deutsche Backofenbau GmbH immediately.
3.5.1 Optionally supplied accessories
For using the optionally supplied hand-held spray unit, a drinking water connection in accordance with the
applicable drinking water ordinance must be supplied in direct proximity to the appliance (300 - 600 kPa, 3-6 bar).
The hand-held spray unit must be connected to the on-site water supply in accordance with the manufacturer's
instructions.
The hand-held spray unit may only be used for short-term application (cold shock) of a cold water jet to the
finished bakery products in front of the oven with the baking tray half pulled out.
Safety information: Electric shock and risk of slipping
The hand-held spray unit must not be used for cleaning the appliance housing from the outside. There is a risk
of a lethal electric shock if spray water enters the housing. After use of the hand-held spray unit, the wet floor
in front of the appliance can pose a risk of slipping.

3.5.2 Spare parts
No spare parts are supplied with the appliance. Spare parts are available from DEBAG Deutsche Backofenbau

4.2.1 Requirements for the surroundings – appliance
Safety information: Condensate occurring!
When installing the exhaust pipe, unhindered draining of condensate must be ensured (permanent gradient).
The individual pipe segments may only be fitted into each other in flow direction to prevent any backflow
condensate from escaping. The pipe connections must be sealed with a heat-resistant sealant (silicone) as
needed.
Safety information: Sufficient ventilation space required!
A sufficiently large ventilation space above the appliance is of great importance for WSC functionality.
This area must not be covered or blocked.
