A GENERAL INSTRUCTIONS
A1 Introduction
This chapter describes the symbols used (that mark and
identify the type of warning) and gives the definitions
of terms used in the manual, responsibilities and
copyright.
A2 Definitions
Listed below are the definitions of the main terms used
in the Manual. Carefully read them before making use
of the Manual.
Operator:
machine installation, adjustment, use, maintenance,
cleaning, repair and transport personnel.
Manufacturer:
Electrolux Professional SPA or any other service centre
authorised by Electrolux Professional SPA.
Operator for normal machine use:
an operator who has been informed and trained
regarding the tasks and hazards involved in normal
machine use.
Technical assistance or specialised technician:
an operator instructed/trained by the Manufacturer and
who, based on his professional and specific training,
experience and knowledge of the accident-prevention
regulations, is able to appraise the operations to be
carried out on the machine and recognise and prevent
any risks. His professionalism covers the mechanical,
electrotechnical and electronics fields.
Danger:
source of possible injury or harm to health.
Hazardous situation:
any situation where an operator is exposed to one or
more hazards.
Risk:
a combination of probabilities and risks of injury or harm
to health in a hazardous situation.
Protection devices:
safety measures consisting of the use of specific
technical means (guards and safety devices) for
protecting operators against dangers.
Guard:
an element of a machine used in a specific way to
provide protection by means of a physical barrier.
Safety device:
a device (other than a guard) that eliminates or reduces
the risk; it can be used alone or in combination with a
guard.
Customer:
the person who purchased the machine and/or who
manages and uses it (e.g. company, entrepreneur,
firm).
Emergency stop device:
a set of components for the emergency stop function;
the device is activated with a single action and prevents
or reduces the risk of injury or damage to property.
Electrocution:
an accidental discharge of electric current on a human
body.

For best use of the manual, and therefore the machine,
it is advisable to be familiar with the terms and
typographical conventions used in the documentation.

A9 Keeping the manual
The manual must be carefully kept for the entire life of
the machine until scrapping. The manual must stay with
the machine in case of transfer, sale, hire, granting of
use or leasing.
A10 Construction modifications
In order to be able to combine the extractor hood with
"Lengthwise 6-10 racks 1/1" convection ovens, the
hood has been specially designed for screwing directly
in the holes already existing in the top of the ovens (see
Fig. 1 B).

B GENERAL DESCRIPTION OF
MACHINE
B1 General description
The equipment is suitable for the extraction of steam
emitted from "Lengthwise 6-10 racks 1/1" ovens, from
the exhaust flue and frontally when opening the oven
door.
When the door is opened, the hood increases the
extraction speed in order to filter as much steam as
possible, gradually decreasing to the initial speed.
If the door is suddenly closed, extraction returns to the
initial speed.
The machine is designed for the above-mentioned
applications. Under no circumstances can the machine
be used for other applications or ways not envisaged in
this manual.
Thisequipmenthasbeendesignedtoaddresstheneeds
of a better working environment and better economy,
and is used in restaurants, canteens, cooking centres
and large institutions.
B2 Description of machine modules
The machine consists of the following zones:

Treated and purified air (odours) outlet zone, on theD. top of the hood.
B2.1 Zone A - Front extraction
The steam is sucked in this zone when the oven door
is opened. The presence of labyrinth filters allows
prefiltering, whereas the second filtering phase is
ensured by the filters in Zone D.
Thereisalsothecontrolpanelforcontrollingtheavailable
functions (see chap. "F DESCRIPTION OF CONTROL
PANEL").
B2.2 Zone B - Connections
The plumbing connections for filling and draining water
and,byremovingtherearpanel,descalingoftheinternal
condenser and attaching the hood to the oven must be
carried out in this zone.
There is also the power cable for connection to the
workplace electrical system.
B2.3 Zone C - Filtering zone
Filtering of the oven steam coming from the upper
exhaust occurs in this zone not visible to the naked
eye.
The steam passes through the grease condenser,
which eliminates cooking grease thanks to the presence
of cold water (the water is automatically drained and
refilledaccordingtohooduse),thenthroughthecatalytic
converter which eliminates odours and then to Zone D
where there are more filters.
B2.4 Zone D - Silica gel filters
This zone has the silica gel filters for eliminating the
residual moisture of steam extraction from Zone C and
Zone A.
Together with the silica gel filters there are also air
filtration acrylic cloths.
The silica gel filters can be removed and regenerated.

D TRANSPORT, HANDLING AND
STORAGE
D1 Introduction
Transport (i.e. transfer of the machine from one place to
another) and handling (i.e. transfer inside workplaces)
must occur with the use of appropriate and adequate
means.
The machine can be transported by road, rail, sea or
air. Except for transport by road, the machine is placed
insideacontainerinwhichtherearealsoothermachines.
The machines can be placed inside the container by the
Manufacturer or by the forwarder.
ATTENTION!
Given the size of the machine, during
transport only one machine can be
stacked on top of another, which
eliminates any risk of tipping of loads
due to stacking.
The Manufacturer declines any liability for possible
damage to the packages and the machine.
On receiving the machine, check that the packages
and components are not damaged. In case of
damage, immediately notify the carrier and inform the
Manufacturer.
If the appliance received has visible or hidden damage,
a claim can be made with the forwarder.
Visible losses or damage must be reported in the
transport document at the time of delivery. The
transport document must be signed by the forwarder's
representative (e.g. driver). If the transport document is
not signed, the forwarder can reject the claim.
A request for inspection must be made to the forwarder
within 15 days in case of hidden damage or losses
detected only after unpacking the appliance.

The forwarder will arrange an inspection. Keep all the
contents and packing material. Under no circumstances
should a damaged appliance be returned to the
manufacturer without prior notice and written
permission.
The machine must only be transported, handled and
stored by qualified personnel, who must:

Be familiar with the general safety rules;• Be able to recognise and avoid any possible hazard;•
The Manufacturer declines any liability whenever
transport is undertaken by carriers chosen by the

D1.1 Transport: instructions for the carrier
During the journey the tightness of the fixing systems
must be checked several times, and in particular:

When removing the anchoring systems, make sure the
stability of the machine parts does not depend on the
anchoring and, therefore, that this operation does not
cause the load to fall off the vehicle.

The product must only be combined with Electrolux
Lengthwise 6-10 Racks 1/1 ovens.
A water supply with 3/4'' connection and a water drain
with 1/2'' connection must be present near the machine
workplace.

A suitable space must be left around the machine (for
operations, maintenance, etc.). The passages enabling
personnel to operate on the machine must be at least
700 mm wide, except at the back of the machine, see
diagram on page 2.
