COOKWAW Tws

STainless Steel: highiy recommefzded
Especially good with asandwichclad bottom. The
sandwich bottom combinesthe benefits of stainless
steel (appearance,durability and stability)with the
advantagesof aluminum or copper(heat conduction,
even heat distribution).
Alun]inum:heavy ~veighrrecommended
Good conductivity.Aluminum residues sometimes
appear as scratcheson the cooktop, but can be
removed if cleaned immediately.Because of its
low meltingpoint, thin weight aluminum shouldnot
be used.
Porcelai~namel:
Good performance only with athick, flat, smooth
bottom. Avoidboiling dry, as porcelain can melt and
fuse to the surface.
Copper Bottom: heavy vveightrecomnzeizded
Good performance, but copper may leave residue
if pot is allowed to boildry.Overheatedmetalcan
bond to glass cooktops. If pot boils dry, leavinga
residue on the glass,clean immediately.
Glass-ceramic: Ltsable,butnot recommended
Poor performance.May scratch the surface.
Stoneware: usable,butrxotrecommetzded
Poor performance.May scratchthe surface.
Cast Iron: usable,but]zotrecommended
Poor performance.May scratch the surface.
HowtocheckPanPerformance
Use of correct cookware can affect the cooking
formance and cleaning of your cooktop.
correct cookware reduces the temperature of
ooktop surface and minimizesthe chance of
overs burning onto the cooktop.
must use pans with perfectly flat bottoms.
Some pans may have curved or rounded bottoms or
may be warped. If you are unsureof the fiatness of
your pans you may do this quick test.
Turn yoLIrpan upside
down on the countertop,
place :1ruler flat against I’))l!l Lti
the pan surface. The
bottomof the pan and the b~
straightedge of the ruler
shouldfit flLIshagainst each other all the way across.
Turn the ruler afull 360 degrees, checking for any
space between the ruIer and the bottom of the pan.
Pans with rounded, curved, ridged or warped bottoms
are not recommended.
Another simpletest to determineeven heat distribution
acrossthe cookwarebottomis to put one inchof water
in the pan. Bringthe waterto aboil and observethe
locationof bubblesasthe water startsto boil.
Good flat cookware willhave an even distributionof
bubblesover the bottomsurfacearea of thepan.
Bubbleslocalizedin only aportion of the bottom
indicateuneven contactof thepan to the surfaceunit,
uneven heat transferor an unsuitablepan.
Use pans that match the diameter of the surface
unit. Cookingperfollnance will notbe as good if
the cookware is either smalleror larger than the
surface unit.

HOME CANNINGTWS
tha[extend beyond 1inch of the surfdceunit’s
are not reconlmendedfor mostsurfacecooking.
\’er,when canning with water-bathor pressure
r. larger-diameterpots may be used. This is
becauseboiling water temperatures (even under
pressure)are not harmful to the cooktopsurfaces
surroundingthe surfaceunits.
HOWEVER, DO NOT USE LARGE DIAMETER
CANNERS OR OTHER LARGE DIAMETER POTS
FOR FRYINGOR BOILING FOODS OTHER
THAN WATER.Most syrup or sauce mixtures-and
all typesof frying—cook at temperatures much higher
than boilingwater. Such temperaturescould
eventuallyharm the glass cooktop surfaces.
observetheFollowingPointsincanning
1. Be surethe canner fits over the center of the
surfaceunit. If your cooktop or its location does not
allowthe canner to be centered on the surface unit,
use smaller diameterpots for good canningresults.
2. Fla~-bottomedcanners must be used. Do not use
canners with flanged or rippled bottoms(often
found in enanlelware) because they don’tmake
enoughcontact with the surfaceunits and take
alongtime to boil water.
RIGHT WRONG
3. When canning, use recipes and proceduresfrom
reputablesources. Reliablerecipes and procedures
are availablefrom the manufacturerof your canner;
manufacturersof glassjars for canning, such as
Balland Kerr; and the United States Department of
AgricultureExtension Service.
4. Rememberthat canning is aprocessthat generates
lwge amountsof steam. TO avoid burns from steam
or heat,be careful when canning.
NOTE: If your househas low voltage;canning may
take longerthan expected, even though directions
have been carefully followed. The process time will
be shortenedby:
(1) usingapressure canner, and
(2) startingwith HOTtap water for fastest
