INSTALLATION INFORMATION
The installation should be done by professional persons with knowledge of the ovens.
Before you start to use the appliance, carefully read the user manual and ensure that the person
reading it will read it. The instructions in this manual contain important information on safe
assembly, use, maintenance and cleaning of the device, so keep it in a place where the operator
and technician can easily reach it. The more you care about your Greenox model devices, the
longer your device will last.
The user is responsible for damages caused by not following the guidelines in the
guide.
TRANSPORTATION AND SETTLEMENT
TRANSPORTATION ;
•It needs to be connected to vehicle during transportation.
•During the transportation,close the covers of the Oven and tape it to prevent it from
opening.
•Do not place any weight on top of the appliance during transportation and transport,
and do not stack the ovens on top of each other.
•Never place the device on its side during transport, carry it upright.
•Use suitable transport vehicles to avoid damage to the oven.
•For transports made with pallet trucks or forklift trucks, transport vehicles must be
used by drivers who has driving license.
•You can drive the oven in its steep position and push it on its wheels .
Settlement
•Remove protective nylon on the oven.
•Clean the surface of the oven with a nonabrasive solvent.
•Ensure that the distance between the wall and the oven is at least 10 cm so that the
appliance can operate properly. Never stick the oven on the wall.Look at
PLACEMENT SCHEME
•Place the oven under a hood where adequate ventilation can be made to prevent
smell and smoke formation. The distance between the hood and the oven should be
at least 20 cm.
•The installation surface must be on a flat surface in terms of compliance with safety
requirements.

GENERAL WARNINGS AND SAFETY PRECAUTIONS
•Do not go outside the intended use.
•Firstly,You should read this booklet carefully in terms of safety, maintenance and use.
•Keep this booklet for future problems and help.
•The installation of the oven must be done by a professional person.
•It is recommended that this device be always used by one responsible person.
•Be sure to disconnect the oven from the electricity, gas and water connection during
any breakdown or repair.
•You should only have the equipment serviced and faulted by the person dispatched
by a specialist service.
•Before using the oven, clean the inside and outside with a nonabrasive soap and warm
water.
•When you start the product for the first time, a smell and smoke may be generated
from the insulating material and the heating elements. For this reason, bring all the
thermostats to 220 degrees and start the product for 30 minutes before commencing
use. After 30 minutes have passed, let the oven cool down.
•Do not store liquid or solid combustible material near the equipment when it is in
operation.
•Use gloves when using the appliance.
•If the device is not used, turn it off.
•For prolonged use, they should be rested for at least 10 minutes every two hours.
•Never operate the machine idle for a long time so that the machine is long-lasting.
•Take care not to pull the plug from the socket while the appliance is running.
•Do not operate the appliance where there is a gas leak..
On Ovens by powered Gas
If the gas burns outside the combustion chamber of the furnace;
•Firstly,be calm; Do not panic.
•Close the gas tap of the oven.
•Turn off burning substances (candles, gas lamps, etc.) immediately.
•Open doors and windows to ventilate.
•Do not try to burn any device.
•Do not touch any electrical switch or socket.
•Do not burn matches or lighters in dangerous areas, do not smoke.
•Close the gas valve outside the building.

INSTALLATION INSTRUCTIONS
The installation of the oven, the conversion and maintenance of the electrical inputs for
different gas groups must be carried out by an authorized specialist in accordance with the
manufacturer's instructions.
The gas and electricity connections of the appliance must be made in accordance with the
manual and electrical diagram given in this manual.
The manufacturer accepts no liability for any damage caused to humans or property due
to maintenance or technical interventions not performed by authorized technicians, from any
operation performed without the guidance.
Things to do before installation
Please note that before installation, the following are true and complete. If it is not possible
to install due to a failure due to any of the following; the road and hour charge will be requested
from the customer.
•Plumbing belongs to the customer.Elektrik veya gaz ile çalışan cihazların tesisatın
çekilmesi müşteriye aittir.
•The earth line must be found in the electrical wiring to be towed.
•The installation should be brought to the point where it is used.
•If the electrical ovens will be connected to the switch;plug-in phases must be observed
absolutely.
•Working pressure must be observed on gas operated ovens. It is mentioned in the T2
Table.
•In electrical ovens worked by 380 V; The electrical connection must be made by a
specialist service members, otherwise your device is not covered by the warranty.
•On gas powered Ovens; The gas connection must be made by a specialist service
memebers, otherwise your device is not covered by the warranty.
•This information should not be left out, otherwise the oven will be out of warranty.
Electrical Connection
•The oven must be connected to the network in accordance with DIN, VDE 0100
electrical installation standards.
•Supply the oven with the operating voltage and frequency specified in the Table T2.
•Use cable of quality H07 RN-F for the electric panel connection line. The cable cross
section to be used is indicated in the T2 Table.
•Voltage tolerance must not exceed +/- 10%.
•The oven must not be operated until the ground connection is made.
•Automatic fuse must be fitted to the input line of the oven at the value specified in
the T2 Table.
•Our company is not responsible for problems caused by frequent interruption of mains
voltage and irregular voltage changes.
Gas Connection
•The OVEN can work with both LPG and NATURAL GAS. The injectors required for
replacement are supplied with the OVEN.
•Gas connections and gas conversions must be made by a specialist service members.

•The person to carry out the gas connection must carry out in accordance with the
rules laid down by the local energy distribution company in the country where the
oven is used.
•Attention; The max. the gas pressure is 50 mbar.
•At pressures above 50 mbar there is a gas leak risk. When this is the case, Your device
may be deteriorated and may not be covered under warranty..
•If you want to operate your device with LPG, use the regulators with outlet pressure
of 30 mbar and the regulator with output pressure of 20 mbar if you want to operate
your device with NATURAL GAS.
•Gas inlet G 1/2 "comes out of the factory as a male.
Water Connection
•A tap must be connected between the water inlet of the oven and the main network.
•The oven water inlet R 3/4 "exits from the factory as a male.
•The water connection of the device should be done with a hose with R 3/4 "thread.
•A mechanical filter must be installed in the water inlet of the device and any dirt or
metal particles that may enter the device must be filtered.
•Before the last pipe part is connected to the oven, some water should be drained from
the pipe and the dirt inside should be thrown out.
•Check for water leaks at the connection points.
The inlet water pressure should be between 1.5 ~ 2.5 bar.
After installation in an electrical or gas installation, position your oven so that it is 10
cm from the walls.
FIRST OPERATION
•When you first start your device; remove the protective nylon from the top of the
appliance and wipe the inner parts with a damp, dry cloth.
•Do not use detergent for cleaning the oven.
•During the first operation, a temporary fear and smoke may form from the warmed
parts of your device.
•In such a case, the smell or smoke will come out in a short time, do not worry.
•Always wear gloves when using your oven at high temperatures.
WARNING
* The dough prepared for baked goods is sometimes stored or kept in the coolers by the
user
* When the production process is started, the dough (product) released from the cooler
should be re-blasted and kept waiting until the coiling process..
* As soon as it is out of the refrigerator, the product is not cooked efficiently
* The product, which has not been adequately swollen, is "cooked" without "consistency".

* The manufacturer suggests that the cooker should be sensitive to this issue and be
cautious.
* After the fermentation process is started in the fermented pastries, the continuous
opening of the fermentation cabin's door (for the control of the dough) causes the pasta
consistency to deteriorate.

USE OF CONTROL PANELS
Control Panel of Convection Oven
The appliance is an oven control panel that can work with 8 different cooking programs, provides
different heating in 1 zone, can warn the user with an audible warning at the end of cooking
time, warns the user with error codes and makes troubleshooting easier.
This oven panel is only produced for the Greenoks company.
2-PANEL INTRODUCTION
A-KEY DEFINITIONS:
ON / OFF KEY: Allows the system to be turned on
and off. Cancels all controls and extinguishes the
displays. (It does not close the lamp relay, it does not
close the real time clock indicator.)
START STOP KEY: It is used for starting and ending
the cooking process. When the system is in start
mode, the button lights up and goes out when
stopping.
TABLINE KEY: The system allows the manual
operation of the turntable in the ON position. Pressing
this key a second time when the table is replaced or
the process is terminated.
STEAM SET KEEP: The steam time to be given in
each program can be entered by pressing this key.
RESET KEY: Used for burner reset operation.
FAN KNOW: Used to cool the system.
LAMP KEY: Turns the lamp on and off when the
system is on or off.
STEAM KNEE: It is freeze to give steam for the set
time when the oven reaches the desired level.
DURATION START: The system is used to run the
schedule after it has been started.
TIME STOP: Stop the timer. Shut up the buzzer.
OK KEYS: Used to set the data.
B - DISPLAY DEFINITIONS:
TEMPERATURE (HEAT) INDICATOR: The oven
does not show the resistance temperature values in
the ten positions. The indicator does not work when
the oven is off.
OVEN SET DISPLAY: Displays the set value when
the oven is in the on position.
TIME INDICATOR: Displays the real time clock
when the oven is off and the cooking time when the
oven is in the on position.
TIME SET DISPLAY: When the oven is off, the
opening time is shown in this display. When the
oven is in the on position, the time setting value is
displayed

3 - PARAMETERS:
To enter the device parameter menu, the START key is pressed for 3 seconds while the system
is OFF. The key is released when the PAS message is displayed on the screen. The defined
password is entered with the upper temperature arrow keys. The START key is pressed to
confirm. If the password is correct, the user can access the parameter menu.
The PR.0 = O-1 offset parameter will need to be added to -20 -> + 20 degrees.
PR.1 = O-2 offset parameter will be needed for the addition of -20 -> + 20 degrees.
PR.2 = O-o offset parameter will need to be added for -20 -> + 20 degrees.
PR.3 = hSt hysteresis parameter is in the range of 1 -> 10 degrees.
PR.4 = btP Steam permissible temperature is entered in the range of 50 -> 200 degrees.
PR.5 = bCt Steam expiration time limit parameter. The steam value added to every program
will be set by the user. The time entered here will remain the upper limit for the user.
PR.6 = hr-Time setting parameter. Enter between 0 and 23.
PR.7 = The minute setting parameter can be entered in the range of 0 -> 59.
PR.8 = ObA - Automatic Steam activated parameter. 0 - 1 can be entered. If it is 0, automatic
steam can not be given.
PR.9 = FtY Fan operating mode selected. 0 -> one way and always saga, 1 -> timed saga and
left. default 0
PR.10 = Frt Saga rotation time (if PR.9 == 1) 10 - 240 sec range. Default 10 sec.
PR.11 = FLt Left turn time (if PR.9 == 1) 10 - 240 sec range. Default 10 sec.
PR.12 = FSt Fan stop time (if PR.9 == 1) 10 - 240 sec range. Default 10 sec.
PR.13 = CFt Cooling fan allowance temperature. 10 - 100 degrees can be entered. default is
10 degrees.
PR.14 = tCF Cooling dead time parameter. Enter from 0 to 999 seconds. 0, this operation does
not occur. default 0.
PR.15 = ASP Allow aspirator relay work. 0 is not working, 1 is working. Default is 1.
PR.16 = ASS Aspirator time (seconds) parameter. If 0 is entered, it will stay on continuously, it
will only be closed with the door. Default 60 sec
PR.17 = Sub Alarm time parameter. (seconds) If 0 is entered, it will remain on continuously.
default 10 sec
PR.18 = Lit Oven is the upper limit temperature. The default value is 350 degrees. 100 - 350
can be entered.
PR.19 = Tbt Tray waiting time parameter. It can be entered in 0 - 10 seconds range.
4 - FACTORY SETTING TO PARAMETERS:
When the system is off, pressing both of the time setting arrow keys for 3 seconds will display -
-- in the upper left display. After the display --- the keys are released and the parameters are
set according to the factory settings.
5 - PROGRAM SELECTION AND REGISTRATION:
In this process, the user will select the desired program number by pressing once. The selected
program number will be active.
After making changes in the program, the program will be registered by holding down the
program button for 3 seconds. The screen starts flashing while recording. The key will be
released during this time.
6 - CHANGE SET VALUES:
All of the device set values can be changed with the up and down arrow keys on the bottom of
the device when the system is on. During the change, the display will flash. The display will be
expected to disappear for the record to be saved. No other keys should be pressed during this
time.
This value is not saved in the program memory. The program registration process must be
performed to register.
7 - STEAMING:
Steam can not be given until the oven reaches the parameter temperature after the system has

started. As soon as the system reaches the temperature, the steam is given automatically for 1
time until the parameter is reached. (If automatic steam generation is active.)
If desired, steam can also be manually fed by pressing the steam button.
8 - BURNER RESET:
After the oven is turned on, it is started. If the burner does not perform the ignition operation,
the burner error input level is set to 1 position. The display shows brL as an error. In this case,
if the Reset key is pressed, reset is performed as long as the key is pressed.
9 - OVEN COOLING:
If the device is requested, it can be put into the cooling process by pressing the Fan button after
opening the door. In this case, the circulation fan is switched on and hot air is pushed out of the
door. In this view, a rapid fall in the furnace's inner heat will come into play.
Stopping in front of the oven door can cause trouble for the user when doing this. For this
reason, do not stand directly in front of the oven.
To close the process, it is enough to close the door or press the Fan button again.
10 - LAMP CONTROL:
The lamp relay can be turned on and off by pressing the lamp button. If the lamp relay
parameters are set, it can also be operated on time.
11 - ERROR INDICATORS:
The error indicators for this device are described below.
E-1: Termocouple failure. The system is automatically shut down.
E-2: The box is overheated. This malfunction occurs when the controller overheats. The system
is automatically shut down.
E-3: If the device's resistances overheat, it will fail. The system is automatically shut down.
Opn: Device cover is open warning. The fan and resistor are turned off. When the door is closed
again, these operations are activated automatically.
Bad: If the steam temperature is lower than the set steam temperature and the steam can not
be supplied, this error is displayed on the screen.
12 - AUTOMATIC OPENING WITH HOUR:
When my site is off, press the start time key. The time on the set indicator starts to show the
automatic turn-on time which is not displayed until then. If the time is to be changed, the time
is adjusted with the set arrow keys and saved with the Start Time key.
When the time is equal to the actual time displayed on the counter display, the device
automatically opens and starts running.
To cancel When the time set display has time to open, it is necessary to press the time stop key
once. This will turn off the Duration set indicator and cancel the automatic power-on.
13 - ELECTRICAL CONNECTIONS:
The connection pattern must be observed when the device is electrically connected. The device
supply voltage is 220 VAC 50 Hz.
The device relays should not be used to drive loads above 1 amp. The external contactor must
be used for this operation.
The device can only measure the temperature with a J-type thermocouple. Measurement made
with other types of sensors will be incorrect. Electrical connections should only be made by
technical personnel. The system energy must be cut off before the exchanges to be made in the
connection. The system should not come into direct contact with water.
Control Panel of Stone-Based Deck Oven
The appliance is an oven control panel that can work with 8 different cooking programs, providing
different heating possibilities in 2 areas 6 zones, warning the user at the end of the cooking cycle,

warning the user with error codes in case of failure, and facilitating troubleshooting.
INTRODUCTION OF PANEL:
A - KEY IDENTIFICATION:
ON / OFF KEY: Allows the system to be turned on and
off. Cancels all controls and extinguishes the displays. (It
does not close the lamp relay, it process. The key lights up
while the system is in start mode, and the led goes out
when it is does not close the real time clock indicator.)
START STOP KEY: Used to start or stop the cooking
stopped.
STEAM KEY: When steam parameters are provided, this
button is used to make steam. The system must be in the
start position for operation.
LAMP KEY: Turns the lamp on and off when the system
is on or off.
REVIEW KEY: The system does not show the program
set values set by the user and the measured temperature
values of the system when the system is in the ON
position.
OUT I / O KEY: This key can be used in start mode. It
will be used for steam preparation.
DURATION START KEY: The system is used to run the
schedule after it has been started.
TIME STOP KEY: Stop the timer. Shut up the buzzer.
OK KEYS: Used to set the data.
P1 - P8 KEYS: Used for program selection and program
recording.
B - DISPLAY DEFINITIONS:
TOP TEMPERATURE INDICATOR: When the oven is in
the ON position, the upper resistance does not show the
temperature values. The indicator does not work when the
oven is off. The error indication is made from this display.
BOTTOM TEMPERATURE INDICATOR: When the oven
is in the on position, it does not show the lower resistance
temperature values. The indicator does not work when the
oven is off.
TOP SET (SHOW SET) INDICATOR: Displays the Set
value when the oven is in the ON position.
BOTTOM SET (ALT SET) INDICATOR: Displays the set
value when the oven is in the on position.
TIME DISPLAY: Displays the real time clock when the
oven is off and shows the cooking time when the oven is
in the on position.
TIME SET DISPLAY: When the oven is off, the opening
time is shown in this display. When the oven is in the on
position, the time setting value is displayed.
STEAM NOT READY LED: When the external steam
boiler is warmed up while the oven is in the start position,
this led lights up. Steaming can not be done at this time.
STEAM READY LED: When the oven is in the start
position, this led lights up when the external steam boiler
heats up. Steam can be given at this time.
LEDs 1 to 6: Specifies the heating relays in the open state
in the start state and the temperature in the preview
mode.

3 - PARAMETERS:
To enter the device parameter menu, the START key is pressed for 3 seconds while the system is
OFF. The key is released when the PAS message is displayed on the screen.
Here the password screen appears. The user password is fixed to 016.
The parameter page can not be entered without entering the password.
Here, the upper temperature set arrow keys will be used to change the parameter number.
The lower temperature set arrow keys will be used to change the parameter value. The Start Time
button will be used to save the parameter. To exit this menu, the Stop key will be used.

2 -> Thermostat + heating mode. There's steam. Steam preparation works. It works according to
input and temperature. It makes a wait.
3 -> Generator + heating mode. There's steam. Prepare steam. It will work according to
temperature and duration. Both the start and the steam wait between them. Input is not required.
PR23 = bht: Steam is the waiting time. Log in as min. This parameter is active when parameter 22
value 1 is entered.
PR24 = tot: Temperature measurement type selection. When 1 is entered, it works with 2
thermocouples. When 0 is entered, 6 termocouple le is run.
4 -FACTORY SETTING TO PARAMETERS:
When the system is off, pressing both of the time setting arrow keys for 3 seconds will display
the FBR in the upper left display. After the display FBR is seen, the keys are released and the
parameters are set according to the factory settings.
5 - PROGRAM SELECTION AND REGISTRATION:
To select a program, press the P1 - P8 keys once while the system is in the ON position and the
button is released. When the selection is made, the key is lit and the values in the memory are
displayed.
For program recording, it will be necessary to press one of the P1 - P8 keys for 3 seconds after
the values have been set. As soon as the display starts flashing, the button is released and data

is recorded.
6 - CHANGING SET VALUES:
When the temperature set values are changed, the ball set or bottom set key is pressed first.
The set value is indicated on the display as S-1 ..... S-6. The change is made with the arrow
keys. Use the top set or bottom set key to move to the other set value. The upper group values
are entered in order of S-1 / S-2 / S-3. The lower group temperatures are entered as S-4 / S-5
/ S-6.
The time setting operation is done with only the arrow keys. There is a waiting time of 3 seconds
for recording.
7 - STEAMING:
Steam can not be given until the oven reaches the parameter temperature after the system has
started. When the steam input is ready, the user will be given steam by pressing each key.
8 - LAMP CONTROL:
The lamp relay can be turned on and off by pressing the lamp button. If the lamp relay
parameters are set, it can also be operated on time.
9 - ERROR INDICATORS:
The error indicators for this device are described below.
Mean: The box is active if the temperature sensor can not read.
Tc1: 1. Termocouple is faulty. The system is automatically shut down.
Tc2: 2nd thermocouple failure. The system is automatically shut down.
Tc3: 3rd thermocouple failure. The system is automatically shut down.
Tc4: 4. Termocouple is faulty. The system is automatically shut down.
Tc5: 5. Termocouple failure. The system is automatically shut down.
Tc6: 6. Termocouple failure. The system is automatically shut down.
10 - AUTOMATIC OPENING:
When my site is off, press the start time key. The time on the set indicator starts to show the
automatic turn-on time which is not displayed until then. If you want to change the time, press
the Start key until the setting is written on the screen. Then the setting is made with the arrow
keys and saved with the Start Time key.
When the time is equal to the actual time displayed on the counter display, the device
automatically opens and starts running.
To cancel When the time set display has time to open, it is necessary to press the time stop key
once. This will turn off the Duration set indicator and cancel the automatic power-on.
11 - ELECTRICAL CONNECTIONS:
The connection pattern must be observed when the device is electrically connected. The device
supply voltage is 220 VAC 50 Hz.
The device relays should not be used to drive loads above 1 amp. The external contactor must
be used for this operation.
The device can only measure the temperature with a J-type thermocouple. Measurement with
other types of sensors will be incorrect.
Electrical connections should be made only by technical personnel. The system energy must be
disconnected before the exchange operations to be made in connection.
The system should not come into direct contact with water.

Control Panel of Fermentation
This device is designed as a Controller for Fermentation. It is used to control the moisture and
temperature values of the fermentation site.
Instantaneous temperature and% humidity values, temperature and humidity set values are
displayed with the device indicators. The functions are indicated by the led indicators.
4 relays in the device; Fan control, Heater control, Steam control and Lighting control are
provided.
The device has ± 2% heat and humidity reading accuracy when read.
The device will not be tampered from outside and is produced in one piece for easy installation
INCREASE AND REDUCTION KEYS
When entering the temperature or humidity value, you can increase and decrease the data by
using these buttons.
TEMPERATURE ADJUSTMENT KEY
This key functions in two different ways. The first function will work if the button is pressed
once. The keypad lights and the temperature indication data can be changed. If no key is
pressed for 3 seconds, the value stored in the display is stored in the memory. In this case the
LED goes out. The second function will work if this key is pressed continuously for 2 seconds.
The device will display instantaneous temperature and humidity values for 5 seconds on the
required displays. At the end of the period will get old.
SETTING OF HUMINITY KEY
This key functions in two different ways. The first function will work if the button is pressed
once. The keypad lights and the humidity indicator data can be changed. If no key is pressed
for 3 seconds, the value stored in the display is stored in the memory. In this case the LED

FAN CONTROL KEY
The breeding chamber allows the fan to be switched on and off. If the LED is burned, turn it
on otherwise it is not on. If the fan is not on, heating and humidification will not work.
LIGHTING ON (OPEN /CLOSE ) KEY
The fermentation room lighting functions as opening and closing. If the led is lit, the lighting is
on. Otherwise it is closed.
HUMIDITY CONTROL KEY
The humidity control function starts by pressing the button. The key is lit. Pressing the button
again will end the function and the led will go out.

SYSTEM ON OFF KEY
It is red when the unit is off, and it lights up when it is on. It is enough to press 1 time to turn
on the device. To close it, press and hold for 3 seconds. No control will operate when in the off
position.
TEMPERATURE KEY
This display is at the same level as the heating set keys. Normally the set temperature shows.
When the temperature or humidity setting key is pressed for 2 seconds, the instantaneous
temperature value is displayed on the screen. With the LED on the side, it is also checked
whether the heating is done or not. If the LED is lit, the unit is not at the set value and is
heating. The set value is reached when the led turns off.
HUMINITY KEY
This indicator is at the same level as the humidity set keys. Normally the set shows the
humidity value. If the temperature or humidity setting key is pressed for 2 seconds, the instant
humidity value is displayed on the screen. With the LED on the side, it is also checked whether
the humidification is done or not. If the LED is lit, the unit is not at the desired setpoint and is
humidifying. The set value is reached when the led turns off.
WORKING OF THE PANEL
When the device is first powered up, the device is switched off. All indicators and LEDs are off,
only the red LEDs are off. When the ON / OFF button is pressed, the device switches on but no
control is switched on.
It is possible to operate by pressing the Lamp and Fan keys. These functions are deactivated
when the key is pressed repeatedly. Heating and humidification controls after the fan is switched
on; can be turned on and off by pressing the control keys. The appliance will humidify and heat
up to the set value. When the desired value is reached, the humidity and heat outputs will be
deactivated. Once these values are below the set values, the outputs belonging to these controls
enter the circuit. If there is no humidification or heating, the leds are shown.
CODES OF FAULTS
E1 FAILURE: This is the only fault code found on the device. This error message is displayed
if the sensor is broken or the connection of the sensor and the brewing controller breaks. The
error remains on the screen until it is cleared. The device checks are turned off as long as the
error persists.
PARAMETERS
While the device is off, press and hold both of the humidity setting arrow keys for 3 sec. Buttons
are not released until Pr appears on the screen. The display will show the temperature control
process status in the upper display group and the lower display will show the status of the
humidification process.
1 is active, 0 is inactive.
The arrow keys next to the display will be used to change the processing format.
At the end of the process the fan button will be used for output. The process is not displayed
on the screen and the relay output will not work.
