INSTALLATION INFORMATION
The installation should be done by professional persons with knowledge of the ovens.
Before you start to use the appliance, carefully read the user manual and ensure that the person
reading it will read it. The instructions in this manual contain important information on safe
assembly, use, maintenance and cleaning of the device, so keep it in a place where the operator
and technician can easily reach it. The more you care about your Greenox model devices, the
longer your device will last.
The user is responsible for damages caused by not following the guidelines in the
guide.
TRANSPORTATION AND SETTLEMENT
TRANSPORTATION ;
•It needs to be connected to vehicle during transportation.
•During the transportation,close the covers of the Oven and tape it to prevent it from
opening.
•Do not place any weight on top of the appliance during transportation and transport,
and do not stack the ovens on top of each other.
•Never place the device on its side during transport, carry it upright.
•Use suitable transport vehicles to avoid damage to the oven.
•For transports made with pallet trucks or forklift trucks, transport vehicles must be
used by drivers who has driving license.
•You can drive the oven in its steep position and push it on its wheels .
Settlement
•Remove protective nylon on the oven.
•Clean the surface of the oven with a nonabrasive solvent.
•Ensure that the distance between the wall and the oven is at least 10 cm so that the
appliance can operate properly. Never stick the oven on the wall.Look at

•Place the oven under a hood where adequate ventilation can be made to prevent
smell and smoke formation. The distance between the hood and the oven should be
at least 20 cm.
•The installation surface must be on a flat surface in terms of compliance with safety
requirements.

GENERAL WARNINGS AND SAFETY PRECAUTIONS
•Do not go outside the intended use.
•Firstly,You should read this booklet carefully in terms of safety, maintenance and use.
•Keep this booklet for future problems and help.
•The installation of the oven must be done by a professional person.
•It is recommended that this device be always used by one responsible person.
•Be sure to disconnect the oven from the electricity, gas and water connection during
any breakdown or repair.
•You should only have the equipment serviced and faulted by the person dispatched
by a specialist service.
•Before using the oven, clean the inside and outside with a nonabrasive soap and warm
water.
•When you start the product for the first time, a smell and smoke may be generated
from the insulating material and the heating elements. For this reason, bring all the
thermostats to 220 degrees and start the product for 30 minutes before commencing
use. After 30 minutes have passed, let the oven cool down.
•Do not store liquid or solid combustible material near the equipment when it is in
operation.
•Use gloves when using the appliance.
•If the device is not used, turn it off.
•For prolonged use, they should be rested for at least 10 minutes every two hours.
•Never operate the machine idle for a long time so that the machine is long-lasting.
•Take care not to pull the plug from the socket while the appliance is running.
•Do not operate the appliance where there is a gas leak..
On Ovens by powered Gas
If the gas burns outside the combustion chamber of the furnace;
•Firstly,be calm; Do not panic.
•Close the gas tap of the oven.
•Turn off burning substances (candles, gas lamps, etc.) immediately.
•Open doors and windows to ventilate.
•Do not try to burn any device.
•Do not touch any electrical switch or socket.
•Do not burn matches or lighters in dangerous areas, do not smoke.
•Close the gas valve outside the building.
INSTALLATION INSTRUCTIONS
The installation of the oven, the conversion and maintenance of the electrical inputs for
different gas groups must be carried out by an authorized specialist in accordance with the
manufacturer's instructions.

The gas and electricity connections of the appliance must be made in accordance with the
manual and electrical diagram given in this manual.
The manufacturer accepts no liability for any damage caused to humans or property due
to maintenance or technical interventions not performed by authorized technicians, from any
operation performed without the guidance.
Things to do before installation
Please note that before installation, the following are true and complete. If it is not possible
to install due to a failure due to any of the following; the road and hour charge will be requested
from the customer.
•Plumbing belongs to the customer.Elektrik veya gaz ile çalışan cihazların tesisatın
çekilmesi müşteriye aittir.
•The earth line must be found in the electrical wiring to be towed.
•The installation should be brought to the point where it is used.
•If the electrical ovens will be connected to the switch;plug-in phases must be observed
absolutely.
•Working pressure must be observed on gas operated ovens. It is mentioned in the T2
Table.
•In electrical ovens worked by 380 V; The electrical connection must be made by a
specialist service members, otherwise your device is not covered by the warranty.
•On gas powered Ovens; The gas connection must be made by a specialist service
memebers, otherwise your device is not covered by the warranty.
•This information should not be left out, otherwise the oven will be out of warranty.
Electrical Connection
•The oven must be connected to the network in accordance with DIN, VDE 0100
electrical installation standards.
•Supply the oven with the operating voltage and frequency specified in the Table T2.
•Use cable of quality H07 RN-F for the electric panel connection line. The cable cross
section to be used is indicated in the T2 Table.
•Voltage tolerance must not exceed +/- 10%.
•The oven must not be operated until the ground connection is made.
•Automatic fuse must be fitted to the input line of the oven at the value specified in
the T2 Table.
•Our company is not responsible for problems caused by frequent interruption of mains
voltage and irregular voltage changes.
Water Connection
•A tap must be connected between the water inlet of the oven and the main network.
•The oven water inlet R 3/4 "exits from the factory as a male.
•The water connection of the device should be done with a hose with R 3/4 "thread.
•A mechanical filter must be installed in the water inlet of the device and any dirt or
metal particles that may enter the device must be filtered.
•Before the last pipe part is connected to the oven, some water should be drained from
the pipe and the dirt inside should be thrown out.
•Check for water leaks at the connection points.
The inlet water pressure should be between 1.5 ~ 2.5 bar.

After installation in an electrical or gas installation, position your oven so that it is 10
cm from the walls.
FIRST OPERATION
•When you first start your device; remove the protective nylon from the top of the
appliance and wipe the inner parts with a damp, dry cloth.
•Do not use detergent for cleaning the oven.
•During the first operation, a temporary fear and smoke may form from the warmed
parts of your device.
•In such a case, the smell or smoke will come out in a short time, do not worry.
•Always wear gloves when using your oven at high temperatures.
WARNING
* The dough prepared for baked goods is sometimes stored or kept in the coolers by the
user
* When the production process is started, the dough (product) released from the cooler
should be re-blasted and kept waiting until the coiling process..
* As soon as it is out of the refrigerator, the product is not cooked efficiently
* The product, which has not been adequately swollen, is "cooked" without "consistency".
* The manufacturer suggests that the cooker should be sensitive to this issue and be
cautious.
* After the fermentation process is started in the fermented pastries, the continuous
opening of the fermentation cabin's door (for the control of the dough) causes the pasta
consistency to deteriorate.

USE OF CONTROL PANELS
Digital Set Top Model Convectional Ovens’ Control Panel
• The device measures temperature with 1 piece J type thermocouple.
• The device performs temperature control with 1 piece heater output.
• The device controls the fan speed with 2 pieces cycle outputs.
• The device makes lighting control with 1 pieces relay output.
• The unit performs system check with 1 pieces relay.
• The device can control fan direction with 2 pieces different direction relays.
• The appliance is equipped with an audible signal at the end of the cooking period and control
of the cooking time.
• The device is capable of giving automatic steam for each prohram.
• The device has 20 program capacities.
• Each program can be used with up to 5 step steps. (parametric property.)
• The device is suitable for door control.
• The device switches off the system by giving a breakdown in case of rupture and
temperature rupture.
PANEL INTRODUCTION
KEY DEFINITIONS:
ON OFF BUTTON: Used to switch on the device when the device is switched off.
If pressed, the timer and device are switched on in the timer display mode. Device
the device switches off when it is pressed during operation. In this case, the
Off writes the message.
START BUTTON: It can be used in an open device. Heating operation
Starts. If pressed, the display will show the Strt message.
STOP BUTTON: If this button is pressed in the start state (heating)

WAKEUP BUTTON: Press this button once when the system is on
the tripping process is switched on or off. When activated TEMP displays ON. If disengaged,
no message is shown on the screen.
If the same button is pressed for 3 seconds, OPEN will be displayed. Opening here
time is set.
SET TEMP BUTTON: Used for entering temperature setpoint setting
This is the button. Set + Step number is shown on the display when pressed. Other
the set value will be displayed on the display.
SET TIME BUTTON: Used to enter cooking time setpoint setting
This is the button. If pressed, the display shows the T + Step number. Other
the set value will be displayed on the display.
SET STEAM BUTTON: Used for entering steam time setpoint setting
This is the button. If pressed, the display shows the STE + Step number. Other
the set value will be displayed on the display.
ENTER BUTTON: Value is used to save and confirm data.
REVIEW BUTTON: Used to monitor the entire program when the system is on.
When the system is off, it is used to control opening time and opening status.
ESC BUTTON: To exit the menus and end the value entry
used.
PROGRAM BUTTON: Used for program selection and recording.
PARAMETER BUTTON: Used for parameter input.
STEP BUTTON: To access the next step data during set value input
used.
Program Menu:
Program selection and saving operations will be described here. If P key is pressed once while
the system is on, P NO message is displayed on the left display. The other display shows the
current program number. Arrow keys to the desired program number progress and regression
is done.
Press ENT or P to select the program again. If this menu is entered by mistake, it will be
enough to wait 10 sec without pressing any button. Or press ESC to exit the menu.
To save the program, press the P key for 3 sec. The recording process is complete when the
dispenser starts blinking.
Set Temperature Adjustment:
SET TEMP BUTTON a 1 time when the system is on
makes. The display shows Set + Step number.
If stepped operation has been opened in the system, the step pad will be changed and the
step button
by switching to other steppes. The step number can be monitored from both leds and display
messages.
If stepped operation is not active, the LEDs will not light and the other steppers cannot be
accessed with the step button.
The change will be activated by pressing the Arrow keys in this menu. The degree value input
can be made between the upper temperature parameter set by 50 and the set value. Press
ENT button to save. Press ESC button or wait to exit without saving.
Set Time Set:
When the system is ON, SET TIME BUTTON is pressed 1 time to enter the time change
process. The display shows the T + Step number.
If stepped operation is opened in the system, the step pad will be changed and the step
button can be pressed to switch to other steppes. The step number can be monitored from
both leds and display messages.
If stepped operation is not active, the LEDs will not light and the other steppers cannot be
accessed with the step button.

The change will be activated by pressing the Arrow keys in this menu. The time value can be
entered from 0 to 99 minutes. Press ENT button to save. Press ESC button or wait to exit
without saving.
If any step cooking time 0 is entered when stepping operation is active, then the stepper and
subsequent steps are completely reset and cannot be used. Thus a program can be set to
1/2/3/4/5 stepper and can be used.
Set Steam Adjustment:
When the system is in the ON position, SET STEAM BUTTON a is pressed to enter the set
change operation. The display shows STE + Step number.
If stepped operation is opened in the system, the step pad will be changed and the step
button can be pressed to switch to other steppes. The step number can be monitored from
both leds and display messages.
If stepped operation is not active, the LEDs will not light and the other steppers cannot be
accessed with the step button.
The change will be activated by pressing the Arrow keys in this menu. Steam Time value input
can be made from 0 to 99 minutes. Press ENT button to save. Press ESC button or wait to exit
without saving.
The time set here is the time when the steam is started. This steam will be given
automatically. This timing starts counting with the PLAY button with the cooking time, waits
with PAUSE and ends with TIMER STOP.
Parameter Menu:
When the system is off, this key can be pressed for 5 seconds. The keys will be released while
the Pr message is shown on the display. On the right display, the parameter number is
displayed on the left display. Use the arrow keys to move up to the desired parameter value.
Press the ENT key to select the parameter.
The desired setting is made with the arrow keys and saved with ENT. If no change will be
made, ESC will return to the previous parameter number selection menu. If no operation is
performed, the menu closes after 30 sec.

Clock Setting:
To set the real time clock, press the TIME ADJ button while the system is off.

Wait until the TI.AD message appears on the display. After the message exits, the watch
starts blinking. The clock is set with the arrow keys. Press the ENT key and record. The minute
portion starts flashing. It is also set and saved. Press ESC to exit without saving.
Wakeup Setting:
It is used to turn on the system with the clock. The oven will automatically open and start
working even if the user is not near the oven.
WAKEUP button is pressed for 3 sec continuously to set wake up time. OPEN is expected. As
soon as the message arrives, the opening time is set as if setting the time. At the end of the
process, return to the main screen. If the user presses the WAKEUP button once and leaves
the key, the auto power-up operation is activated and the message ON is displayed. If the
same button is pressed again, this operation is deactivated.
Oven Operation:
The device is manually switched to On. The desired program is selected and edited and
recorded if necessary. Then press the start button. The STEAM led will blink until the oven
interior temperature reaches the vapor temperature. In this case, the user can not steam,
automatic steam can not be given.
In case of door opening, all relays out of the lamp and system on relay will be closed.
The display will also show the door.
If you want to change the fan speed, the RPM BUTTON will be pressed and the fan speed will
be changed. After the oven temperature reaches the desired level, pressing the PLAY button
starts the cooking process. If there is a step work, a short alarm will be given at the end of
each step and the other step will be passed. The STEP message will also be printed on the
display during stepping. When automatic steam is supplied, the display will automatically show
the A-ST message and the STEAM led will also light up. The user can also manually steam at
any time. When all cooking is finished, an alarm will be generated and the display will show
END. The temperature control process will continue at the end of the cooking process. The
furnace must be in STOP position to terminate.

Manuel Set Top Model Convectional Kontrol Panel
It is the control panel which makes cooking with manual temperature and time adjustment.
PANEL INTRODUCTION
KEY DEFINITIONS:
A button: This button activates the device. On Off positions are available. The timer is
electrified when the device is switched on.
B key: Press this button to set the cooking temperature. 50-300 oC.
C key: Press this key to set the cooking time. When the timer is set, the fans and the lamp are
activated.
D button: Press this key to manually steer the cabinet. Vapor during the time it is held.

Manuel Control Panel for Fermentation Cabinet
This device is designed as a brewing cabinet controller. It mechanically controls the
fermentation cabinet with the 30-90 C thermostat on it.
PANEL INTRODUCTION
KEY DEFINITIONS
A key: Press this key to operate the
device. When the appliance is switched
on, the circulation is switched on at the
fan.
Button B: This button controls the lamp in
the cabinet.
Thermostat: This thermostat controls the
heating elements. The desired
temperature in the cabinet is adjusted
with the thermostat.

CLEANING, MAINTENANCE AND REPAIR
Cleaning
•Electrical, gas and water connections of the oven must be turned off before cleaning.
•Clean the oven thoroughly with a degreaser at the end of each working day, then
clean with soapy water.
•When cleaning the surface of the oven, avoid the use of abrasive detergents and
chemicals, and do not use materials that can scratch the wire-like surface.
Regularly clean and maintain the equipment to make it work more efficiently.
Maintenance
•The daily care of the device is done by the consumer.
•Make sure the electrical, gas and water connections are disconnected during every
maintenance of the oven.
•After every use, the machine will provide you with ease when it is warm.
•Stainless body can be cleaned with warm water and soap sponge.
•There are no user-serviceable parts of the device that can be repaired or serviced.
For this reason, no lubricator or tool will be provided with the machine.
•Please call the authorized service when dangerous and unusual situation is observed
on the device. Never allow your device to intervene by unauthorized persons .
Repair
In repairs connected to the system, repairs are carried out at the production address
or at the user address upon the user's request.

WARRANTY
The service life determined by the Ministry; the service life for industrial goods is 10 (ten)
years in accordance with the directive on after-sales services. (Official Journal Date
14/06/2003-Issue: 25138)
The furnaces specified by the ALİ DEMİRÖZ-GREENOKS INDUSTRIAL KITCHEN INDUSTRY
COMPANY and specified in its specification manual are warranted for 2 (two) years from the
date of sale, provided that they are used in accordance with the instructions in the operating
instructions and operated under normal conditions.
It was determined by the Law No. 4077 dated 23 December 1995 on the Protection of the
Consumer;
1. The Ministry of Customs and Trade ...... the document number and ...... the
document release date and the conditions specified in the GUARANTEE DOCUMENT
issued are valid.
2. The start date of the guarantee is the date when the vendor signs the date of
delivery to the buyer by typing in the warranty document.
MANUFACTURER ASSISTANCE
OFFICIAL GAZETTE dated 24 April 2011 and numbered 27914 REGULATION ON THE
PRINCIPLES OF THE IMPLEMENTATION OF GUARANTEE DOCUMENT Article 12- Companies
manufacturing or importing goods which are not included in the list attached to this directive
are entitled to organize a WARRANTY DOCUMENT within the scope of their responsibilities.
REQUIREMENTS FOR WARRANTY
1- The warranty period starts from the delivery date of the goods and is 2 (two) years.
2- All of the device, including all of the parts of it, are covered by our guarantee.
3- If the device malfunctions within the warranty period, the time remaining in the repair is
added to the warranty period. Product repair time can not exceed 20 (twenty) business days.
This period shall commence from the date of notification of the defective appliance to the service
station, in the absence of the service station, from the vendor, dealer, agent, representative,
importer or manufacturer of the goods. Failure notification of the consumer; telephone, fax, e-
mail, registered mail or similar. If the malfunction is not rectified within 10 working days, the
manufacturer-manufacturer or importer has to allocate it to the use of another consumer with
similar characteristics until the repair of the goods is completed.
4- In case of malfunction due to material or workmanship, or due to erroneous installation in
the warranty period of the goods, labor cost, repair cost shall be repaired without any request
under any other name.
5- Despite the Consumer's right to repair, the Goods;
-In addition to the fact that the same failure is repeated twice or more than four times in different
defects, or the sum of different defects is more than six times within the specified warranty
period, as well as the fact that these failures are made permanent,
