maintenanceprocedures.Theinstructionsinthismanualhave
beenpreparedtoaidyouinlearningtheproperprocedures.

Installationofthisunitshouldbeperformedonlybya
qualiedservicetechnician.
Do not puncture the skin of the unit with drills or screws,
or component damage or electrical shock could result.
TheHennyPennyhumidiedholdingcabinethasbeen
tested,inspected,andexpertlypackedtoensurearrivalatits
destinationinthebestpossiblecondition.
Noteanyshippingdamageinthepresenceofthedelivery
agentandsignedpriortohisorherdeparture.
ToremovetheHennyPennycabinetfromcarton:
1. Carefullycutbandingstraps.
2. Liftcartonofftheunit.
3. Lifttheunitoffthecardboardpaddingandskid.
Full-size cabinets weigh approximately 300 lbs. (136 kg).
Care should be taken when lifting unit to prevent personal
injury.

Placethehumidiedholdingcabinetinanareathatallowsthe
doorstobeopenedwithoutinterferenceofloadingandunloading
product.Also,keeptheunitlevelforproperoperation.
Nominimumclearancesarerequiredfortherearandsidesof
thecabinet.
To avoid electrical shock, the cabinet must be adequately
and safely grounded (earthed) according to local
electrical codes, and this appliance must be equipped
with an external circuit breaker which will disconnect all
ungrounded (unearthed) conductors. The main power
switch on this appliance does not disconnect all line
conductors.

To prevent electric shock hazard this appliance must be
bonded to other appliances or touchable metal surfaces
in close proximity to this appliance with an equipotential
bonding conductor. This appliance is equipped with an
equipotential lug for this purpose. The equipotential lug is
marked with the following symbol .

size SmartHold Humidified Holding
Cabinet. Units are designed to provide
ideal environment for safely holding a wide
variety of hot foods in quality condition for
very long periods of time.
•Unit features a patented closed loop control
system to regulate precise temperatures
and humidity levels.
•Unit shall have Proofing Mode, a lower
temperature range setting.
•Unit shall be of 300 grade stainless steel
construction throughout.
•Provide choice of 5 or 15 count-down
timers.
•Provide choice of right or left-hand doors,
solid back or pass-through design.
•Provide choice of racking configurations for
10, 13 or 15 pans.
•Unit shall include recessed 3 gal. (11.4
liters) stainless steel water pan.
•Unit shall have full perimeter door gasket and
fully insulated sidewalls and control module.

Beforeusingthehumidiedholdingcabinet,thoroughlyclean
theunitasdescribedintheCleaningProceduresSectionof
thismanual.
1. Plugunitintoelectricalreceptacle,orturnonwallcircuit
breaker.WiththePOWERswitchturnedtoOFFthedisplay
shows“POWEROFF.”
WithPOWERSwitchoff,displaymayshow“PURGING”.
Thismeanshumidityhasreached95%insideunitandthefan
runstohelpdropthehumidity.Oncethehumidityreaches
92%,“POWEROFF”againshowsinthedisplay.
Even though POWER switch is OFF, it does not
disconnect all electrical supplies to the controls. Unplug
power cord, or turn off wall circuit breaker before
servicing any electrical components, or electrical shock
could result.
2. Turnonwatersupply.
3. TurnthePOWERswitchtoON,andthedisplaycycles
throughacoupleitemsandstopswith“185°F”ontheleftand
“50%”ontheright.
4. Thecabinettemperatureispresetat185°F(85°C).Tochange
thetemperature,pressTEMPERATUREbuttonandwhilethe
LEDisashing,presstheUPandDOWNbuttonsuntilthe
desiredtemperatureshowsinthedisplay.
5. Thecabinethumidityispresetat50%.Tochangethe
humiditylevel(10to90%),pressHUMIDITYbuttonand
whiletheLEDisashing,presstheUPandDOWNbuttons
untilthedesiredhumiditylevelshowsinthedisplay.
6. Allowtheunittopreheatforabout1hourpriortoplacing
productinthecabinet.Thisallowstheinteriorconditionsto
stabilize.

3-5. CLEANING
PROCEDURES
1. TheLEDsabovetheTEMPERATUREandHUMIDITY
buttonsgooutwhenthedesiredtemperatureandhumidityare
reachedinsidethecabinet.Placehotproductonpan.
Theminimumholdingtemperatureforpotentiallyhazardous
productis150°F(66°C).Also,thecabinetproductload
capacityforthehalfsizeunitis125lb.(57kg.).Viewthe
temperatureatanytimebypressing .
2.Slidepanswithhotproductontotheracksofthecabinet.
Ifoatswitchinwaterpansenseslow,ornowaterafter5
minutes,“WATERPANNOTFILLING,CHECKWATER
SUPPLY”showsindisplay.Checkwaterllsystem.
3. Opendoorsonlyasneededtoloadandunloadproduct.This
helpstokeepinteriorconditionsconstantandsavesenergy.
Daily:
1. Turncontrolsandwateroffanddisconnectelectricalsupply.
To avoid burns, allow the unit to cool before cleaning.
2. Opendoorsandremovealltraysandracksfromunit,andtake
themtoasinktothoroughlyclean.Figure3-2.
3. Removewaterpancoversandconcentrationringfromtop
ofwaterpanandpullstandpipetodrainwaterpan.Take
coversandconcentrationringtoasinktoclean.Figure3-3.
4. Cleanwaterpanandoatswitch.
5. Wipeinteriorandexteriorofcabinetwithdampcloth,soap
andwater.
Do not use steel wool, other abrasive cleaners or cleaners/
sanitizers containing chlorine, bromine, iodine or ammonia
chemicals, as these will deteriorate the stainless steel, and
glass material, and shorten the life of the unit.
Do not use a water jet (pressure sprayer) to clean the unit, or
component failure could result.
