• The cutting board and other food surfaces should
be kept dry when not in use. Resident bacteria sur-
vive no more than a few hours without moisture.
Keep moisture of any type from standing on the
cutting board for long periods of time. Do not allow
moisture to collect beneath the cutting board. Prop
up one end of the cutting board if it is on the
ceramic top and not in use.
• During use, scrape the cutting board often with a
scraper or a spatula. Scraping removes much of
the moisture that builds up on the cutting board.
Never scrub the cutting board with a steel brush (a
steel brush will mar the finish). An occasional sand-
ing will return the cutting board to a smooth luster.
• Each week that the cutting board is used, it should
be oiled to seal the grain against bacteria. Oiling
also helps to prevent the wood from cracking or
pulling apart at the joints. Use an oil that is both
edible and tasteless. USP-grade mineral oil is a
popular choice as it is the cheapest pure food-
grade oil you can buy (do not use vegetable or
olive oil because it can turn rancid). Before apply-
ing oil to the cutting board, warm the oil slightly.
Apply the oil with a soft cloth, in the direction of the
grain, allowing the oil to soak in. Remove all sur-
face oil with a dry, clean cloth.
• Some professional cooks add beeswax to the min-
eral oil for a more durable finish. In a microwave-
safe dish, shave about 1/2 teaspoon of beeswax
into 1 cup of mineral oil, and microwave it on high
for about 45 seconds. Apply the oil to the cutting
board while it is still warm. Allow the oil to soak in
for a few minutes, and then remove all surface oil
with a dry, clean cloth. Save or dispose of the
remaining oil.
