Thank you for choosing the Lakeland Mini Oven.
Please take a little time to read this booklet before you use your machine and keep it in a safe place
for future reference.
The Mini Oven has an 18L capacity and includes eight pre-set functions offering a range of cooking
opportunities, from toasting and grilling to baking and roasting. There is also a pizza function as
well as reheat, warm and defrost functions. Its compact size is ideal when space is at a premium,
and where a full size oven can not be accommodated. It offers a convenient way to cook meals
for one or two people or alternatively it makes a great compliment to your existing oven when
cooking for a large number.

THE CONTROL PANEL AND PROGRAMMES
• LCD – this displays a variety of working modes of the Mini Oven through text and graphics.
The display lights up when selecting a programme or adjusting the time and temperature.
• Start/Stop button – press the button once and the Mini Oven starts the selected menu
programme. If you need to suspend the programme part way through cooking, press the
button once more and the oven will stop working but saves the current working status.
• Oven light button – press the button once to turn the oven light on, or press the button again
to turn the light off. The light goes off automatically after one minute.
• Convection fan button – press this button once to start the fan function and the fan icon
ashes.Oncetheprogrammestartsworkingthisiconrotates.Pressthebuttonagainto
stop the fan function (and the fan icon is hidden). This function cannot be used alone-only in
addition to other programmes selected on the menu.
• Temperature or Time adjustment dial - turn the dial clockwise and the time or temperature will
be increased. Time can be increased in multiples of 1 minute, temperature can be increased
in multiples of 5ºC. To decrease time or temperature turn the dial anti-clockwise. Time can be
decreased in multiples of 1 minute and temperature can be decreased in multiples of 5ºC
• Temperature/time button – you can adjust the default temperature and time settings for
each of the menu functions. Press the button once for temperature setting, the temperature
willashandusingthetemperature/timeadjustmentdialyoucanincreaseordecreasethe
temperature from 60-230ºC. Press the button once again to convert time settings. The time
willashandusingthetemperature/timeadjustmentdialyoucanincreaseordecreasethe
time from 0-120 minutes.
• Menu function selection dial – turn the dial to select one mode (a total of eight modes)
from the menu function. When you select a mode the symbol appears to the left of the
selected programme, with the exception of the defrost mode. When you select the defrost
mode the iconashes.Oncethedefrostprogrammestartsworkingtheiconwillrotate.
• When you select the TOAST function the programme has a default set for 4 levels and 4 slices.
Pressthetemperature/timebuttonandthenumberoflevelswillash,turnthetemperature/
time adjustment dial clockwise to increase or anti-clockwise to decrease the level, choose
between 1-7 levels, the toast is darker as the level increases. Press the temperature/time
button again to determine how many slices of bread (choose between 1-6 slices). Press start
to begin the programme.

•  TheMiniOvenhasastandbymode,thebacklightoftheLCDwillstayonforoneminuteand
go off automatically if there is no operation within a minute.
•  TheMiniOvenhasachildlockfunction–pressthe button and start/stop button at the
same time for two seconds to activate the child lock function. The icon will appear, and all
function buttons will be locked. Press both buttons at the same time for two seconds again
and the child lock is unlocked. The icon is displayed and all function buttons can operate
normally.
HOW TO ASSEMBLE THE MINI OVEN AND USING FOR THE VERY FIRST TIME
• Carefully unpack the Mini Oven and remove any packaging.
• Read all the instructions included in this booklet.
•  PlacetheMiniOvenonaatsurface,withspacearoundtheovenforventilation
• Wash the wire rack, grill/roasting pan and pizza tray and dry thoroughly before use.
• Plug the Mini Oven into the mains, the LCD will light up and the buzzer will beep twice. The
LCD will display all the modes and setting and then go into standby mode.
• Heat the Mini Oven for 3 minutes before putting any food inside to eliminate new heating
odours.
• There may be some slight smoke when the machine is first used, do not worry this is normal.
INSTRUCTIONS FOR USE
•  PlugtheMiniOvenintothemains,thebuzzerwillbeeptwiceandtheLCDwilllightup
•  Turnthemenufunctionselectiondialtoselectthemodeyouwishtouse
•  OncetheprogrammehasbeenselectedtheLCDwilldisplaythedefaultsetting.
•  Toalterthedefaultsettingspressthetemperature/timeselectorbutton.
•  Pressonceandthetemperaturewillash.Usingthetimeandtemperatureortimeadjustment
dial you can increase or decrease the temperature by turning the dial clockwise to increase, or
anti-clockwise to decrease.
•  Toalterthecookingtimepressthetemperature/timebuttonagainandthetimewillash.
Usingthetimeand temperatureortimeadjustmentdial youcanincreaseordecrease the
time by turning the dial clockwise to increase the minutes, or anti-clockwise to decrease the
minutes.
•  Onceyouhavesetthetemperatureandtimepressthestartbuttonandtheovenwillbegin
working.
•  Thefanfunctioncanbeselectedaccordingtorelevantfunctionmenus.
•  Whentheprogrammeisnishedthebuzzerwillbeepthreetimesandtheovenwillgointo
standby mode.
•  Remembertouseovenglovestoremovehottraysordishesfromtheoven.
•  Iffurthercookingtimeisrequiredyouwillneedtoreselecttheprogrammefromthemenu
function mode, and alter the temperature and time (as described above).
•  If you need to stop the programme part way through cooking and before the timer has
reached 0 you can press the start/stop button and the oven will stop working. Press the start/
stop button again and the programme will resume, having saved the current programme
status.
A GUIDE TO INGREDIENTS
This versatile oven can cook anything you would normally cook in a regular oven, however,
consideration need to be given to the portion size you are cooking, particularly items such as
meat joints. You will need to ensure that food is not touching the top elements of the oven, and
ensure you use the correct tray/dish size to fit the oven.
ADAPTING YOUR OWN RECIPES
After you have made some of the recipes supplied you may wish to adapt a few of your own
recipes.
Start by selecting one of the recipes in this booklet, which is similar to your own and use this as
a guide.
Your new oven may bake or roast differently to other appliances you have used, you may need to
adapt your usual temperature settings and cooking times

RECIPES
TOAST FUNCTION - Cheese and ham toastie
Serves 1
Ingredient Quantity
Bread 2 slices
Mustard mayonnaise 1 teaspoon
Gruyère cheese 1 slice
Thin sliced ham 2 slices
1. Spread the mustard mayonnaise on one slice of bread.
2. Lay the cheese slice on top of the mustard mayonnaise, cover the cheese with the slices of
ham and top with the other slice of bread.
3. Place the sandwich on the wire grill shelf on the middle shelf position.
4. Cook using TOAST function on level 5, (4 slices) for 4.50 minutes or until golden and the
cheese is gooey (you may want to turn half way during cooking to get an even golden colour
on both sides)
5. Carefully transfer to a chopping board, cut and serve.
Tip- you can make your own mustard mayonnaise by combining a small amount of your favourite
mustard with mayonnaise.

PIZZA FUNCTION – Cheese and tomato pizza
Makes 4 pizzas
For the dough (makes sufficient for 4 pizzas)
Ingredient Quantity
Strongwhitebreadour 400g
Finegroundsemolinaour 100g
Fine sea salt 1 teaspoon
Sachet of dried yeast 1 x 7g
Golden caster sugar 1 teaspoon
Lukewarm water 325ml
For the tomato sauce (makes sufficient for 4 pizzas)
Ingredient Quantity
Garlic 1 clove
Olive oil 1 tablespoon
Chopped fresh basil 1 small bunch
Tinned plum tomatoes 400g (good quality)
Caster sugar 1 teaspoon
Sea salt
For the topping (sufficient for 4 pizzas)
Ingredient Quantity
Torn mozzarella cheese 2 x 125g balls
Fresh basil leaves
To make the dough
1. Placetheoursandsaltonacleanworksurfaceandmakeawellinthecentre.
2. In a jug mix the yeast and sugar with the lukewarm water and leave for a few minutes before
pouring into the well.
3. Usingaforkslowlybringtheourinfromthesidesandmixwiththeliquid.Continuetomix,
andwhenitstartstocometogetherworktherestoftheourinwithyourclean,our-dusted
hands(youmayneedtousealittlemoreourifthemixtureistoosticky).
4. Knead the dough for about 10 minutes until you have a smooth, springy soft dough.
5. Placethedoughinalargeourdustedbowl.Coverwithakitchentowelandplaceinawarm
room for about an hour until the dough has doubled in size.
6. Emptythedoughontoaour-dustedsurfaceandkneaditforafurther1-2minutes.Divide
the dough into 4 balls.
7. Ifyoudonotrequireallthedough,ouranysparedoughballs,wrapinclinglmandfreeze
for another time.
Prepare the tomato sauce
1. Peel and thinly slice the garlic clove.
2. Heat the olive oil in a saucepan over a medium heat and gently cook the garlic until it begins
to turn golden.
3. Chop the basil leaves and add to the garlic, along with the tinned tomatoes and caster sugar.
4. Cook over a gentle heat for 20 minutes.
5. Season and set aside to cool.
(Note:thisquantitymakessufcientsaucetocover4pizzas.Ifyoudonotneedallthesaucethen
store in the fridge for up to a week or the sauce can be frozen).
To make the pizza
1. Dustthepizzatraywithalittleour.
2. Dusttheworksurfaceandthedoughwithalittlesemolinaourandrolloutintoarough
circle, about 5mm in thickness, and place into the pizza baking tray, stretching it to fit to the
edge of the tray.
3. Spread about 6 tablespoons of tomato sauce over the base, and scatter over about 60g of
the torn mozzarella and a few basil leaves (remember to divide the sauce and mozzarella
between the 4 pizzas)
4. Cook using the PIZZA function (this is preset at 230ºC for 10 slices/13 minutes)
5. Allow the oven to warm for 3 minutes and cook the pizza for the remaining 10 minutes or
until the pizzas are golden and crispy.
6. Repeat this process for any additional pizzas you are making, but please note that you will not
need to pre-heat the oven. Instead reduce the cooking time to 10 minutes when you select
the PIZZA function.
You can add your own toppings, but don’t overload the pizza with toppings.
Please note, you can make smaller pizzas in the pizza tray, reduce the quantity of dough and
toppings you are using and adjust the cooking time by selecting less slices – you can choose from
10, 8 or 6 slices depending on the size of pizza you are making.

GRILL FUNCTION - Bruschetta
Serves 2 (as a snack or starter)
Ingredient Quantity
Tomatoes 3 large
Olive oil 2 tablespoons
Crushed garlic 1 clove
Salt and pepper
Chopped fresh basil 1 tablespoon
Ciabatta bread 4 slices
1. Prepare the tomatoes – score a cross in the skin of the base of each tomato. Place in a bowl
and pour boiling water over the tomatoes.
2. Leave for a few seconds until the skin near the cross starts to curl. Carefully remove from the
hot water and peel off the skin. (Don’t leave the tomatoes in the hot water for too long as
theeshwillstarttocook).
3. Cut the tomatoes into quarters and using a teaspoon scoop out the seeds.
4. Dice the tomatoes and mix with 1 tablespoon of olive, crushed garlic, salt and pepper and
chopped basil leaves. Set aside.
5. Cook using GRILL function.
6. Grill the bread slices for 4-5 minutes on each side, until nice and golden.
7. Drizzle remaining olive oil over one side of each of the bread slices.
8. Top the bread (olive oil side up) with the tomato mixture and serve immediately.
BAKE FUNCTION - Lemon drizzle tray bake
Makes 16 squares
Ingredient Quantity
Butter at room temperature 175g
Caster sugar 175g
Medium Eggs 3
Zest only from 1 ½ lemons
Selfraisingour 175g
Milk 3 tablespoons
To make the syrup:
Ingredient Quantity
Lemon juice from 1 lemon
Granulated sugar 100g
To make the drizzle
Ingredient Quantity
Icing sugar 100g
Lemon juice from ½ lemon
Equipment – 20cm square baking tray.
1. Line the bottom and sides of a 20cm square baking tin.
2.  Creamtogetherthebutterandsugaruntillightanduffy.
3. Add the eggs one at a time, beating well after each one. Add the lemon zest and mix to
combine.
4.  Gentlyfoldintheour,addthemilkandmixthoroughly.
5. Spoon the mixture into the prepared cake tin.
6. Cook on BAKE function. Set the temperature at 170ºC and the timer for 25 minutes.
7. The cake should be golden brown and firm to the touch.

For the syrup
1. Put them lemon juice and sugar into a small saucepan and heat gently until the sugar
dissolves.
2. As soon as the cake is out of the oven, puncture the cake with a skewer and pour the syrup
over.
3. Leave the cake to cool completely before removing from the tin.
To make the drizzle
1. Combine the icing sugar and lemon juice until smooth and white
2. Make sure the cake is completely cool before drizzling over the glaze.
3. Allow the drizzle to set before cutting the tray bake into squares.
ROAST FUNCTION - Roast pork joint with apple and potato wedges, with root vegetables
Serves 2
Ingredient Quantity
Pork joint 700g boneless rolled pork loin
Olive oil 2 tablespoons
Apple 1, Peeled, cored cut into 8 wedges
Peeled potato 1 medium, cut into even sized wedges
Peeled carrot 1 medium, cut lengthways in quarters
Peeled parsnip 1 medium, cut lengthways in quarters
Peeled shallots 4
Peeled turnip 1 medium, cut in quarters
Sprig of thyme
Honey 1 tablespoon
Dijon mustard 1 tablespoon
Salt and pepper
Equipment – roasting tin or oven dish measuring 27cm x 21cm
1. Rub the pork joint with 1 tablespoon of olive oil and salt. Place in the roasting tin or oven dish
and cook on the ROAST function at 220ºC for 20 minutes
2. Whilst the pork joint is roasting take prepared apple and vegetables and mix with the olive oil,
honey and mustard.
3. When the oven beeps add the vegetable mixture to the roasting dish with the sprig of thyme.
4. Return the dish to the oven. Cook using ROAST function, set the temperature to 200ºC and
the timer for 45 minutes and press start.
5. When the programme has finished check the joint is cooked. Serve the pork and roasted
vegetables with the juices from the dish.
