Initial Heating
Priortoputtinganyrangeorovenintofulltimeoperationatnormalcookingtemperatures,itmustbethoroughly
“seasoned”ordriedout.Moistureabsorptionintheclosedspaces,intheinsulationandeveninsidetheheating
elementscancausefuturetroubleifnotproperlytreated.
Beforetheinitialuseoftherange,theovensmustbethoroughlyallowedtodryout.Thisisdonebysettingthetop
andbottomovenswitchestothe“low”position,andsettingthethermostatto350OFdegrees.Allowtherangeovens
tosaturateuntilallvaporandcondensationhasbeeneliminated.Forbestoperatingresultsallowtherangeovensto
thoroughlydryout.Allow8to12hoursforthisprocess.Cleantopplatesthoroughly.Applysaladoil.Turneachplate
switchorthermostattoalowpositionandallowplatetoheatforthreehours.
Iftheunitisoutofuseforthreeormoredays,aonehourpreheatscheduleshouldbeused,especiallywhenexposed
tohighhumidityand/orcooltemperatures.
Seasoning the Griddle Surface
Thecookingsurfacemustbe“seasoned”inordertoeliminateproductstickingduringcooking.ThisappliestoRanges
equippedwithgriddlesurfacesONLY.
Toseason,heatthegriddleto250°F(121°C).Onceat250°F(121°C),coatthecookingsurfacewithnon-salted
vegetableoil.Allowthegriddletostandat250°F(121°C)untilthecookingsurfacelooksdrythencoatitagain.Heat
thegriddleto350°F(176°C)andrepeattheprocedure.
NOTICE: Duringtherstfewhoursofoperationyoumaynoticeasmallamountof
smoke coming off the unit, and a faint odor from the smoke. This is normal
foranewunitandwilldisappearaftertherstfewhoursofuse.
WARNING ALWAYS KEEP THE AREA NEAR THE APPLIANCE FREE FROM
COMBUSTIBLE MATERIALS.KEEP FLOOR IN FRONT OF EQUIPMENT
CLEAN AND DRY. IF SPILLS OCCUR, CLEAN IMMEDIATELY, TO AVOID THE
DANGER OF SLIPS OR FALLS.
Ovens
Therangeovensmustbethoroughly,preheatedbeforesatisfactorybakingcanbedone.Therangeovenswillnot
bakeuniformlyifnotsufcientlypreheated.
Tocompensatefortemperaturedropwhenloadingtherangeovens,setthethermostatup50°Fdegreesoverthe
desiredtemperature.Resetthermostataftertheovensisloaded.
Therangeovensmay,ofcourse,bepreheatedwiththe3heatswitchessetatalowerpositionthan“High”,butthe
timerequiredwillbeproportionallylonger.Afterpreheating,setthetwo3heatswitchesforproperratioof“top”and
“bottom”heattosuittheproducttobebakedorroasted.
The12”high“RoastingandBaking”rangeovensisequippedwitharemovablerack.Forbakingpies,bread,orfor
roastingoperations,therackmaybeplaceddirectlyonthemetaldeckandthepansplacedontherack.Forbaking
cakesorpastriestherackshouldbelocatedinthelowerpositionprovidedbytheracksupportsatthesidesofthe
rangeandthepansplacedontherackinthislowerposition.
