vTo extend thelifeofthemotor,do notpress aknifeon
thewheelsohard thatthemotorisnotabletorunor
runsataveryslowspeed.Slowing orstopping the
motor will overloaditand shortenthelifeofthemachine.
vIf yourknifeisbent,straighten itbeforesharpening.Haveto
cleanall knives,includingthehandle,beforesharpening;
makesurethe blade isverydryand free ofoil,grease,and
foodparticles.Otherwise,damagemayoccurtothe
sharpeningwheelsreducingperformanceand the lifeofthe
sharpener.
J)HowdoestheMasterGradework?
Themachinehastwosharpeningopenings.Theleft opening
isfortheleftside ofthe blade,andthe rightopeningisfor
rightside oftheblade.Pull the knifebladethroughthe left
opening,and thenrepeatintherightopening.Continue this
alternatingprocess,decreasingpressurewitheachpass, until
the bladeissharp.
Thefirsttimeyousharpenyour knifeon theKnife
Sharpener,you willneedtospend moretimetoestablish
thedesired15 angle.Thisisaccomplishedwiththe
coarsewheels.Subsequentsharpeningshouldbedone
withthefinewheelsand will requireonlyafewpasses.

K)Howtore-profileaknife’sbevel
(Use CW-280 wide opening cover)
1) Removethetop coverbyunscrewingthe inset hand screw.
2) Removethefinewheels(FS-304F)byunscrewingcaps.
3) Insert the coarsesharpening wheels (FS-300C).
4) Afterscrewingthe wheelcapsback on snugly,re-install
the top.(The wide openingtop CW-280.)
5) Makesurethewholeknifeisdryandclean.Ifknifetipis
bent, straightenit beforesharpening.
6) Holdyourknifefirmandinsertthebladeintotheleft
openingleaningyourknifetothe left. Tilttheknife against
sharpeningwheeland drawthe knifesmoothlyback
towardsyou withmoderatedownpressure, ifyou hearthe
motor isslowing down,you areusing toomuchdown
pressure. (Fig3)

7) Inserttheknifeintotherightopening,leaning yourknifeto
theright. Tilttheknife againstthesharpeningwheeland
drawthe knifesmoothlyback towardsyou withequaland
constantdownpressureasinstep6.(fig4)
8)Continuealternatingprocess until you seethe slicerknife
bevel5 ~15 ,cleaverbevel15 ~25 .Theprocessofre-
profiling thebevelmaytake 10 or morepasses
depending on thebladecondition and bladetemper. The
nextstage usestheFS-302Mmediumsharpeningwheelsto
smooththeedge.Finally,tomakearazorsharpedge–
followinstructionsonpages8and page10.

L) Howtosharpenacleaverorknifeblade
thatis thicker than³/16”or4mm
(If attemptingtosharpenabladethat is

1)Removethetop coverbyunscrewingthe inset hand screw.

2)Insertthepropersharpeningwheels(for regularknivesuse
FS-304Ffinesharpeningwheels,forcleaversuseFS-302
mediumwheels, seefig2on page6)
3)Afterscrewingthe wheelcapsback on snugly,re-install the
wide openingcover(theCW-280cover).
4)Makesurethewholeknifeiscleananddry.Iftheknifetipis
bent, straightenit beforesharpening.
5)Holdtheknifefirmlyand startwiththe knifeintheforward
positionwiththeblade intheleft openingandparalleltothe
flatsurface(seefig5).Drawthe knifesmoothlyback
towardsyou withmoderatedownpressure (ifyou hearthe
motor isslowingdown,you areusing too muchdown
pressure). Somekniveshaveacurved end,soastheknife
curves,rotateyourarmupwardssothatthecontactsurface
isalwaysparalleltotheflat surface.
6) Repeatthe process inthe rightopeningtosharpen the other
side ofthe knife,seefig6(ifthe knifehasonlyone
sharpenededge,
useonlythe onerelevantopening).
Continuealternatingthe processdecreasing pressurewith
eachpassuntil theknifefeelssharptothetouchorslicing
paperfeelssmooth. (USE CAUTION-AVOIDCUTTING
YOURSELF).When re-profiling theedgeofadull knife
theprocess maytake 10 or morepasses depending on
thecondition and thebladetemper.
7)Makesurebladehasno burrs(seefig7a&bonpage9&
11),otherwiserepeatstep 5&6withminimumpressure
(FEATHERTOUCH)until theburrsdisappear.


M) Howtosharpencleaver& knifeblades
thinner than³/16”or4mm.
Note: Theoutdoormodel doesn’t haveanarrowopening cover,
therefore,use thesameproceduresinLonpage8
1)Removethetopcoverbyunscrewingtheinsethandscrew.
(see fig1onpage6)
2)Install thesharpeningwheels(regularknivesuseFS-304F
finesharpeningwheels,forcleaversuseFS-302medium
wheels). see fig2onpage6).
3)Afterscrewingthe wheelcapsbackonsnugly,re-install the
top (thenarrowopening top CN-280).
4)Makesurethewholeknifeiscleananddry.If theknifetip
isbent, straightenit beforesharpening.
5)Holdthe knifefirmlywiththe blade inthe forwardposition,
asshowninfig8.Startwiththe knifeintheforward
positionwiththebladeintheleftopeningtoline 1on cover
and paralleltothe flatsurface.Drawthe knifesmoothly
back towardsyou withmoderatedownpressure(ifyou
hearthemotorisslowingdown,you areusingtoo much
pressure). Someknives haveacurvedend,soas the
knifecurves,rotateyour arm upwardssothatthe
contactsurfaceisalwaysparalleltotheflatsurface.
6)Repeattheprocessinrightopening(see fig9toline1).(If
theknifehas onlyonebeveledge,thenuse onlythe
relevantopening).Continuealternatingthe process,
decreasingpressureand positionbladetoline 2(fig10&
11).Repeatprocess and positionbladetoline 3(fig12&
13)until theknifefeelssharptothetouchorslicingpaper
feelssmooth (USECAUTION-AVOIDCUTTING
YOURSELF).
7)Makesurethe bladehasno burrs(see fig7a&b),
otherwiserepeatstep5&6withminimumpressure

(FEATHERTOUCH)until the burrsdisappear.The
process ofre-profilingthe edgemaytake10 ormore
passesdependingontheconditionandhardness ofthe
knifeblade.

N)Howtosharpenserratedknives
1)Usewide openingcover(CW-280)
2)Makesurethewholeknifeisclean and dry. Iftheknifetipis
bent, straightenit beforesharpening.
3)Startwiththeknifeinthe forwardpositioninthe leftopening
.
Ratherthan droppingthe bladedeep intothe slotofthe
coverasinstep5above, keep the bladeelevated sothatit
makescontactwith only the upperpartofthewheel;
simultaneouslytilttheblade tothe left applying minimal
pressure(feathertouch),excessivepressuremayripthe
wheeland damagetheblade. (fig14)
4)Repeatinrightopeninguntil bothsidesoftheblade are
smooth. Donotattempttosharpenthebottompartofthe
serrated teeth.
O)Howtoremovechipsfromdamaged
knives (useFS-300Ccoarsewheel)
1)Ifyourknivesare³/16”or4mm thick ormore usethewide
openingcover(CW-280)otherwiseusethe narrowopening
cover(CN-280).
2)TheMASTERGRADEcanrepair chipsup to ⅛”.Ifchips
arebiggerthan ⅛”do notattempttorepair.It maycause
damagetothesharpening wheel and machine.
3)Useonlythe FS-300Ccoarsewheel.
4)Makesurethewholeknifeisclean and dry. Ifknifetipis
bent, straightenit beforesharpening.
5) Inserttheknifefirstthan turnonthemachine. Startwiththe
knifeinthe forwardposition withtheblade intheleftside
openinginfrontofchip. Slowlypull the knifethroughtheslot
paralleltotheflatsurfacepastthechip.Next,drawthe knife
smoothlybackwardandforward.Continuetheprocess inthe
rightopeningalternatingthe process until chipsdisappear.

6)Ifchipsaredeeperthan '/16”.Afterall chipsareremoved,
drawthe knifesmoothlyback towardsyou withmaximum
downwardpressure(ifyou hearthe motorisslowingdown,
you areusingtoo muchdownpressure).Continue

alternatingthe processineachopeninguntil the edgeis
straight. (See fig16).

P)Special instructionsforextreme
temperedknives
Mostextremetempered knivesusespecialmaterialslike
440 steels,highspeed steels…etc.You mayfind those
materialsuseinGerman knives,MasterGrade knivesand
JapaneseGlobalKnives.Thoseknivesthesharpened
edges arenotaseasytosharpenevenly asmostother
knives.So,specialcareand proceduresarenecessary
when sharpeningtheseexpensiveknives.
Werecommendthatbeforeyou sharpen aboveknives,
you “breakin”the NEWFS-300Ccoarsesharpening
wheel bysharpeningconventionalknivesafewtimesto
re-profilethecorrectbevel.Afteryou getthe correctbevel
forthe blade,usethe FS-302Mmediumsharpeningwheel
tosmooththe edge.
FinallyuseFS-304Ffine sharpeningwheeltore-movethe
burrsandrestorearazorsharpedgetotheseknives.In
ourexperience,the mosteffectivewaytosharpensucha
knifeistousethe leftopeningmorethanthe right. Using
verylightpressure,trythe followingsequence: LEFT,
LEFT, RIGHT,LEFT
Q)MAINTENANCE
1) DAILYMAINTENANCE: Toclean debrisloosen hand
screwon bottomofunit, removecoverandremovethe
sharpeningwheel.Shakeunitupside downand brushto
clean.Repeatcleaning atleast onceadayorafterevery
fiveuses. (Seefig17)
2) CLEANINGSHARPENINGWHEEL: Tocleardebrisfrom
sharpeningwheel,useabrush(hardbristles)with
detergentscruboff debrisandrinsewithcleanwater.
Allowatleast24 hourstocompletelydrybeforeusingit
again(see fig18).

pressureand achieving desired bevels.

sharpenyourknife,especiallythe lastfewpasses,doit
lightly-minimumpressure(FEATHERTOUCH)until all burrs
havedisappeared (seepage8Step7and fig7A &B)or
you can useasharpeningstick toremovetheburrs.

15)Q:WhenIturn on themachinethemotor isrunning but
bothsidewheelsarenotturning atthesamespeed.
A: Inourexperience,therearetwopossiblecauses:
1. Aknifeblade wasinsertedforcefully(sudden entry)into
the slotandpusheddowntoo hardandcausethewheel
tostop rotatingwhilethe motorcontinuestoturn.This
will dislocatedanddestroythe gears,andthewheelswill
appeartorotateatdifferentspeeds.Afterashorttime,
the wheelswillstop rotatingall together.Theunitwill
needtobeserviced.
2. Themachinewasdroppedfromover5feethigh,which
couldhavedislocatedthe gear.Thenexttimethatyou
turnon the machine and the gearisnotinthe proper
position,itwill destroythe wholegearandcauseitto
malfunction. The unitwill need tobeserviced.
16)Q: Whythesharpening wheelsDONOTlastasspecifiedin
question #5?
A:1.Iffinesharpeningwheelsareused forre-profiling,itwill
causeexcess wear. Useonlycoarsewheelsforprofiling.
2.Ifyourkniveshavechip(s),the sharpeningwheelswill
wearout quicklyortheymayripthe sharpeningwheel.
3.Useofexcessivepressurewhen sharpeningyourknife
will shorten the lifeofthe wheels.
4.Dirtyknivesthathavefoodparticlesorliquidonthemwill
damagethewheelsurface.
5.Afterapproximatelyhalfofsharpeningwheellife,you will
noticethatonlyhalfofyoursharpeningwheel hasbeen
used.Removethewheelfromtheunitandturnitover.
