0. WARNINGS
IMPORTANT
Read this instructions manual carefully before switching the oven on.
The appliance is designed exclusively for professional use and should be operated by qualified personnel
only.
FOR YOUR SAFETY
Do not use or store petrol, inflammable liquids or gases near this equipment. Nothing should be baked in this
oven that contains alcohol or gives off inflammable gases during baking
STARTING UP INSTRUCTIONS
This unit must be grounded for your protection in order to avoid the risk of electrical discharges. It should be
connected directly to the ground terminal of the control cabinet. The ground cable must not be cut or
disconnected from the oven.
CAUTION
During the baking process in order to avoid the possibility of burns produced by the steam, the door shall be
opened with care.
NOISE LEVEL
The acoustic power emitted by the oven is lower than 70 dB.
Keep this instruction manual in a safe and accessible place.

1. PREASSEMBLY INSTRUCTIONS
1.1 STORAGE AND TRANSPORT
The oven is sent disassembled or fully assembled, but is always sent packed on a wood platform,
and covered with plastic film, that protects the machine against humidity and rain.
The oven should be transported in a completely closed vehicle, and it should never be left
outdoor.
1.2 CONDITIONS FOR USE
• The oven has been manufactured to be installed indoor. It is not made to work outdoor. Any
possible contact with water has to be avoided.
• The oven should not be installed in places with excessive heat, steam and/or humidity production.
• The oven is prepared to work under the following external conditions: -10 + 40 ºC, and 0 + 90 %
of humidity.
• The room in which the oven has to be installed must have adequate ventilation. If there is a
fumes extractor, then a window with at least the section of the fumes extractor should be kept
open.
• The position of the oven regarding the side and back wall of the installation premises should have
a minimum distance of 2" (50 mm) between the oven sides and the walls of the room.
VERY IMPORTANT
The base on which the oven is fitted has to be of a nonflammable material and able to withstand a
constant temperature of 300º C (572 ºF) without deteriorating.

1.4 OVEN POSITIONING
The floor on which the oven is to be positioned should be perfectly flat and levelled. The floor
could be concrete in order to allow for the introduction of four “Fischer” metal plugs. The oven
area should be, as a minimum, as follows:

floor should withstand an over load of 500 kg/m2(102.23 lbs/ft2).

1.5 ELECTRICAL CONNECTION
This should be carried out by authorized professionals according to regulations in the country in
question. The electrical installation and the motors should be ventilated.
Admissible allowance between rated (230V or 400V) and real voltage is ±10% as a maximum.

The gas supply installation should be carried out through stretched steel (without welding) or copper
pipe. The interior diameter can be seen in the following table:

Gas pressures slated reffor to the ovens entry point. All components of the gas-line must be
designed for the power of the corresponding feed.
The gas-line must rely on a manual valve of cut-out of rapid work, before of all the components, for
insulating the burner. This valve must be operational to a pressure of 1,5 times the maximum
pressure of feed and must be easily accessible. The valves can be positioned in a angle of 90º,
designed for preparing any fortuitous handling, but it is easy to handle it in the necessary position.
A filter must be provided before the safety valve on the gas line to prevent the entry of foreing
particles. Filter’s mesh maximum dimension will not be greater than 1.5 mm (0.06 inc.) and the
mesh will not allow a 1 mm. in diameter cylindrical probe though.
The feed of gas must stay controlled through a device, which secures the stability of the pressure in
the head of the burner and guarantees that the calorific consumption does not deviates more than +/-
5 % from the fixed value. If the device is a pressure regulator, for pressures of an inlet up to 200
mbar, it will be in line with the norm EN 88. For pressures of an inlet higher to 200 mbar, the
pressure regulator will be adapted to these pressures. The regulator will be accessible of form which
you can fit easily, but you must take precautions, so that they could be difficulties the overhauls are
not authorized.
The gas inlet site of the oven is shown in the 4 Figs. point 2.

It is absolutely necessary to place a diesel filter before the start-up. This filter is provided by SALVA
INDUSTRIAL, S.A.. It is very important to regulate properly the burner, in order to avoid ashes.

The diesel inlet into the oven is shown in Figs. 3 and 4, point 2.
The total length of pipes should be able of withstanding 1 lbs/ft2 (0.5 Kg/cm2) of loss of head during
the vacuum process. If the loss of head is higher, burner's pump might deteriorate.
NOTE: When dealing with pressurized gas-oil installations the maximum pressure supply must
be 0.5 kg/cm2. A pressure gauge must be fitted for the purpose.

The dimensions of the burner should coincide with the geometrical requirements indicated below.
The operating principle is based on the fact that part of the air
required for complete combustion is mixed with gas/gas oil, taking
advantage of the excess pressure created by an air compressor
mechanism.
This burner with premixed flame is generally capable of producing all
types of mixes, simply by regulating the air and gas/gas oil
proportions. Thanks to the premixing operation, a more uniform heat
release is achieved, or in other words, a lower combustion volume
for a specific capacity. However, it is vital that the mixture enter the
chamber at a speed lower than that at which the flame spreads, otherwise the flame could be forced
back.
The burner is lit by an electric arc produced in the ignition spark plug, which in turn is activated by a high-
voltage transformer triggered when the ignition button is pressed. The ignition operation does not halt
until the air-gas/gas oil mixture is lit.

The installed burner should have a voltage of 230 V, 50 Hz and should be equipped with an
ionisation flame control system, timers and a gas pre-purge system which is triggered
automatically when the ignition button is pressed, delaying the functioning of the burner until the
pre-purge operation has been carried out.
The maximum working field of the burner depends on the counter-pressure in the combustion
chamber.
1.8 CHIMNEY
The oven needs to have TWO INDEPENDENT CHIMNEYS for a proper installation, one in order to
allow the exhaust gases coming out, and a fumes damper, in order to allow the fumes coming out
from the baking chamber.
The installation of the chimneys should be carried out by authorized professionals according to each
country regulations.
Fundamental aspects for the installation:
A.- The top of the chimney must
be, at least, 1 meter (3 ft) higher
than the upper part of the roof. Or
than any other obstacle within 10
meters (30 ft) distance.
B.- If you want a hood on the top of
the chimney, this must be made
with the same diameter as the
chimneys damper. And a cone
must be placed inside the hood to
make the fumes draft easier.
C.-The chimney should incorporate
a system for preventing backflow of
condensates.
D.- Sections should not be horizontal, but should instead have a slope of at least 10º.
E.- Bends or elbows of radius less than twice the tube diameter should not be made.

• The chimney should be preferable insulated along its length and not in contact with
combustible materials (such as wooden beams and ceilings).
• If several ovens are installed within the same premises, the chimney of each of the ovens
should be fitted independently from those corresponding to the other ovens.
1.8.1 Exhaust gases outlet
This chimney has to be design considering burner's power and the premises conditions. The
exhaust gases outlet of the oven (Figs. 3 point. 8) is an insulated pipe with (200 mm (7.9") inside
diameter for SP-21, SP-22, SP-23, SR-21, SR-22, SR-23 models) and (150 mm (5.9") inside
diameter for SK-21, SK-22, SK-23 models).
The closing mechanism that adjusts the combustion fumes draft, should be placed in such a way
that the fall in pressure that is generated is between –0,1 & 0,4 mbar.
1.8.2 Baking chamber fumes chimney
The fumes damper has to be independent from the exhaust gases outlet. It is recommendable to
use a standard insulated damper of 200 mm ( 6.9”) inside diameter.
• The chimney has to be coupled to the fumes damper of the oven. (Fig. 3, point 4).
1.9 WATER INSTALLATION
It is very important that feedwater to the oven be demineralized, therefore the installation of a
decalcifier device between the water intake from network and the water inlet into the oven proves
necessary. (Not supplied with the oven). The decalcifier device includes the pressure regulator.
The place where the oven will be installed, must have a water intake (water pressure between 1,5
and 2,5 Kg/cm2 , with a 3/8" (17.2 mm) pipe diameter or similar, that ends in a 3/8" (17.2 mm) or
1/2" (21.3 mm) male connector, so it can be connected to the manual valve of the decalcifier.
The installation between the water outlet of the decalcifier and the solenoid valve (Figs. 3, point 9),
has be made with a 3/8" (17.2 mm) pipe diameter or similar, that ends in a 1/2" (21.3 mm) male
connector in both sides.
In order to regulate the water pressure of the oven, operate in the manual valve (3).
