1. PURPOSE
The purpose of this document is to describe the Picadeli Arctic salad bar Concept and Usage to the
customer.
2. INTRODUCTION
This manual should be read before carrying out any operation on the salad bar. This manual has been
designed and organised to permit quick easy consultation. For all topics discussed, illustrations or tables
are provided to facilitate comprehension. The instruction manual is divided into various chapters. Each
chapter contains one of the topics specified in the table of contents.
3. GENERAL INFORMATION
•Do not lift or move the Arctic units after installation. This could damage the cables and other
parts.
•During maintenance of Arctic or surrounding areas, make sure to follow guidelines for food
safety. If there is risk of contamination of food, remove the food from the salad bar before
maintenance. Consider the food temperature when turning off the system.
•When maintenance has occurred in Arctic or surrounding areas, ensure proper cleaning
afterwards.
•It is important to inform the store staff about performing maintenance before, during and after
service.

4. SAFETY
•If this document, and other related documents are not followed, both the user and
equipment safety is compromised and the supplier's warranty and product liability
cease.
•Carefully read the instructions in this document, as it contains important safety
information about the product.
•Installation and testing must be done by a qualified technician and according to the
manufacturer's instructions.
•The product electrical connections must be carried out in accordance with applicable
standards and regulations.
•Only use original Picadeli spare parts when replacing.
•Operation and maintenance should only be done by personnel trained for this
product.
•This product is not intended for use by persons (including children) with disabilities
or limitation of physical, sensory or mental capabilities unless it is done under the
supervision of a trained adult person or on the instructions of the same.
•Children should be supervised to ensure they do not play with salad bar.
•Do not store explosives, such as aerosol cans with flammable propellants in this
appliance.
•Picadeli salad bar is used only for storage and stockpiling of Picadeli containers.
Nothing else may be stored in the units as it may affect the performance of the
cooling system.
•All handling of food must conform to current local standards and regulations.
•Mandatory to keep the doors to the AU service cabinet and FCU compressor locked.

explanation)
•Keep clear of obstruction all ventilation openings in the appliance enclosure or in the
structure for building-in
•Do not use mechanical devices or other means to accelerate the defrosting process,
other than those recommended by the manufacturer
•Do not damage the refrigerating circuit
•Do not use electrical appliances inside the food/ice storage compartments unless they
are of the type recommended by the manufacturer

5. PRODUCT DESCRIPTION
5.1 BASIC DESIGN
The Picadeli salad bar is made and adapted in order for the consumers to be able to compose their own
meal from a buffet. The buffet consists of salads, other vegetables, fruit and trimmings such as toppings
and dressings. Information about the products and current special offers and other things that add value
for the consumer is available on digital signage, product display and digital labels.
The construction simplifies and streamlines the handling of the content of the salad bar for the store
personnel. Such functionality is, for example, different types of alarms in case of malfunctioning, use of
hand held scanner unit, electronic labels, order online and tracking functionality.
The salad bar is offered in two basic designs, described below:
Salad bar Small
This salad bar consists of 1 Accessory Unit Small (AUS) and 2-6 Fresh Cool Units (FCU).
Salad bar Large
This salad bar consists of 1 Accessory Unit Large (AUL) and 2–6 Fresh Cool Units (FCU) depending on the
need of the customer.
Dish repository, topping dispensers containing trimmings, product display, etc. are positioned in the AU.
Each FCU can store 47 pcs of disposable canteens for salad, 12 pcs placed in the bar accessible to the
end consumer, 24 pcs stored in the large fridge and 11 pcs in the small fridge. Both the small and the large
fridge is only intended for storage of sealed disposable canteens and pre-filled soft plastic containers with
food products from Picadeli assortment. The disposable canteens come in two standards sizes. Big ”GN

1/3” and Small ”GN 1/6”. These are delivered to the store pre-filled, ID marked and sealed with peal off
plastic, to be placed in the salad bar.
5.2 SMART FUNCTIONALITY
The basic construction of the salad bar and the disposable canteens with QR codes, along with the hand-
held scanner, allows for a number of smart functionalities. Full traceability, alarms, electronic labels with a
dynamic planogram along with easier handling of self-monitoring, replenishment and ordering are a few
examples.
New information and current campaigns are generated through a connection to the server at Picadeli and
are sent directly to the product display and digital signage on the AU.
Electronic and dynamical labels make it easier, for both store personnel and end customer to find what
they are looking for among the different salad ingredients. The QR code of each canteen is connected to
the electronic label and the correct name of the salad ingredient is automatically displayed to the
customer. Scan the QR-code of the new canteen, using the hand-held sensor unit, to change the
placement of the ingredients in the salad bar and update the electronic label.
5.3 CLIMATE SYSTEM
The climate system is built using one compressor in each FCU. Cool air is shunted, as necessary, from the
evaporator enclosure to the different zones of the cooling unit. There is also a circulation fan in the large
fridge. The system also has the capability to add heat in order for automatic defrosting. See principal
layout below.

5.4 ELECTRIC SYSTEM
The electric system is divided between the AU and two or more FCUs. There are two different designs of
the AU, large and small. The large AU is equipped with at digital signage and a product display that are
used to show special offers and other pertinent information. The small AU is only equipped with the
product display. Both large and small AU contains a fuse box that distributes the supply voltage to the
FCUs through a Picadeli designed cable solution. They both also contain an AU ECU containing Wi-fi
access point, RS-485 and HDMI. These handle the communication between the FCUs and the surrounding
equipment. Each FCU contains an electronic control unit that controls the cooling system. Sensors
monitor the temperature and whether the doors are open so that the salad ingredients are cooled
correctly.

6.1.1 AU –ACCESSORY UNIT
The AU comes in two different sizes.
AUL - Accessory Unit Large
AUS - Accessory Unit Small
The AU is the control center of the Arctic salad bar. The
Arctic cooling system is designed with one compressor in
each FCU controlled by the Picadeli developed software.
The FCUs are connected to the AU with power cables and
communication cables.
The AU is the ’’brain’’ of the salad bar and controls all the
functionalities.
6.1.2 DIGITAL SIGNAGE
The Display shows current campaigns, recipes and other
information. The display is turned on when the AU main
switch is turned on.

6.1.3 PRODUCT DISPLAY
The Product Display in the AU offers information
about the food for the consumer. It also shows
current temperatures in the FCU buckets. The
display is connected to the wireless network
(Arctic).
6.1.4HAND SANITIZER
The hand sanitizer dispenser promotes consumer hygiene. Hand
sanitizer refill bags can be ordered in the customer portal. The
hand sanitizer dispenser helps your customers to keep a good
hygiene.

6.1.5 DOORS
The Arctic doors must be kept
locked/tightened due to different reasons.
The AU cabinet and the compressor doors
must be kept locked.
The doors to the refrigerators and fridges
must be tightened in order to ensure the
correct temperature. If doors are left open an
alarm is sent to the hand unit. If doors are left
open for longer periods of time an alarm is
sent to the server.
Make sure to tighten the doors to ensure the
correct temperature inside the refrigerators.
Also lock the doors to the AU cabinet and the compressor to prevent injuries.
6.1.6 FUSE BOX
AU contains the main electric box where the main
switch is located. It can be used to shut down the
Arctic salad bar in case of an emergency.

6.1.7 FCU –FRESH COOL UNIT
Each FCU has three refrigerators. Always maintain
“First In First Out” when working with the storage
to minimize waste and ensure good food safety.
All trays must be properly covered or wrapped
during storage. Only keep open trays in the tray
bucket in the salad bar.
The shelves in the refrigerators can take a
maximum weight of 9 lb which corresponds to
three Big (GN 1/3) trays per shelf.
Only Picadeli products may be stored and served in the FCU.
Frozen products must be stored in a store freezer. Similarly, toppings and other ambient products must be
stored in store area.
6.1.8 TRAYS
Each FCU has the capacity to store 47 trays of food. The food trays are available in two sizes. The food
trays delivered are sealed with a plastic film and a labeled with product information. A QR code is also
printed on the label.
All products must be checked at delivery. Do not serve trays that are unlabeled. It is not recommended to
stack more than three full Big (GN 1/3) trays on top of each other. The trays can be recycled as hard
plastic.

6.1.9 TRAY TIN-PLATES
The tray tin-plates and side glasses can be removed
from the salad bar and washed. The tray tin-plates
can be washed in washing machine but the side
glasses must be washed manually.
The food is cooled by cool air coming from the
bucket and the tower. If a product is missing put an
empty tray in its place in order to keep the cold air in
the bucket.
The trays can be recycled as hard plastic. The tray
tin-plates and the side glasses must be removed and
cleaned regularly.
