INSTALLATION
1. All installations must comply with regulations established by local and national; electrical,
gas, ventilation, sanitation, and re codes. Commercial rotisserie ovens fall under the Gas Fired
Food Service Equipment classication. Such codes vary widely by region and therefore US Res-
taurant Group Inc shall not responsible, in any manner, for the installation of these machines.
2. ese gas units should be operated under a proper ventilation / exhaust hood, in a room that
is ventilated, per your region’s rules in regulations.
3. Units should be installed securely on re proof ooring, either on legs, equipment stands, or
installed casters. Units must have a minimum of 6” clearance from re proof walls.
4. Units are setup for Natural Gas by default. LP nozzles may be included in the unit for con-
version to LP by a licensed professional. Before connecting to gas, ensure that the gas type you
have purchased matches the gas type on the information plate on the unit.
5. An external gas regulator is required for this machine. is unit does not have a built in regu-
lator. e gas regulator must match the gas type and is required for operation.
6. is unit features a 1/2” gas intake pipe. Any gas hose or disconnect should be 1/2” diameter.
7. Depending on your locality, additional safety accessories such as quick disconnect gas hose
or gas lter may be required.
Southwood units come with a 1 Year Parts warranty, and a 3 Year Motor Replacement War-
ranty.
Due to its fragile nature, glass is not covered under warranty. Ceramics are consumable prod-
ucts and will not be replaced under warranty. Motor replacement, switch replacement, fuse
replacement are considered user serviceable tasks. Gas must be turned o, unit unplugged, and
unit cleaned before any service or maintenance is performed.
In case of NON-USER SERVICEABLE repairs, only an approved and certied service techni-
cian should be called in.
e installation can only be carried out by a certied installer. Otherwise, the warranty will be
voided

1. Operating instructions are to be provided to any operator of the machine. Operators must be
familiar with the functions of a commercial rotisserie before using.
2. Ensure you have a gas regulator in place to match your gas type.
3. Nominal gas pressure should be 5.5” W.C. for natural gas and 11” W.C. for LPG. If the mea-
sured pressure falls below the range mentioned above, the installer should try to nd the cause
of the problem and resolve it. A typical source of this problem is that the gas line (pipe) diam-
eter leading up to the unit is too small. If it is not possible to resolve the problem, the local gas
company or gas supplier should be contacted so that they can resolve the problem.
If the nominal pressure is below 5.5 “ W.C. for natural gas or below 11 “ W.C. for LPG, the unit
should not be operated.
If the pressure is too high and can not be adjusted downward, check to see if the proper adjust-
ing spring is in place. If this is correct, the regulator membrane may have been ruptured by
excessive gas pressure and may have to be replaced. Do not operate the rotisserie. If the pres-
sure is too low and can not be adjusted upward, also check the regulator. If this is correct, verify
the pressure coming out of the main gas meter or the diameter of the gas pipe feeding gas to the
unit. If the gas line is under-sized, the appropriate pressure may not be reached. Do not operate
the unit if the pressure falls below 5.5” W.C.
WARNING: Aer an installation, repairs, or maintenance, make sure that there are no gas leaks
anywhere in the gas lines or system.
4. Machines can be setup for both natural Gas or LP Gas. If converted it is important to also
change your gas regulator to match the gas type. Any conversion should take place with gas
valves turned o and unit unplugged from electrical outlet. Unit must also be cleaned before
any conversion.
5. Aer converting a machine, the air intake valves must be re-calibrated for optimal air intake
Aer a conversion, a new installation, or aer a repair, it is important that the unit be tested to
insure that it operates properly. is should include the following:
Test for gas leaks.
Check that the unit has enough clearance behind and to the sides.
Check that the air intake has been adjusted for the gas type.
Check for potential hazards such as ammable objects
Check for proper ventilation and exhaust.
Check for proper room ventilation.

WORKING PRINCIPLES
METHOD OF OPERATION
LIGHTING & SHUT DOWN
How it works: Each spit is independently controlled by a small motor.
Each motor has its own switch for easy control.
Each burner should hold ceramic bricks, placed 1” to 1.25” apart, for even
roasting.
Structure: e equipment includes the electrical control system, mechanical
transmission system, the body and frame, and the burner heating system.
Connect to the electric power, turn on the power switch.
Turn on each motor switch, idle the machine to conrm it can run smoothly.
Puncture the chicken, ducks and other food into the skewers. Adjust the dis-
tance between the skewers. When nished, shut the side door and the front
glass door.
Observe the product when roasting. Change the direction of rotation of the
motor to ensure uniform cooking.
1. To light burner, turn the gas ball valve to the On position.
2. Light burner with ignition device. If burner does not light, turn o gas and
wait 5 minutes before trying again.
3. With Burner lighted, Leave Ball Valve in ON position to cook. Adjustment to
ball valve will control strength of burner.
4. To shut o, Turn Ball Valve to OFF position. Wait 5-minutes before re-lighting.

TURN OFF AND CLEAN AFTER EACH USE
DO NOT ATTEMPT TO CLEAN WHILE HOT.
1. e exterior should be cleaned with a non-abrasive stainless steel cleaner Bon Ami or Noxon
2. e glass should be cleaned with a so cloth and de greaser. If necessary, a plastic scraper can
also be used to remove carbon when using a de greaser.
WARNING! e glass must be cool. Do not use steel wool or abrasives To clean
the glass! is will weaken the tempered glass and could cause it to shatter.
3. e spits and drip pans should be removed from the machine and cleaned thoroughly with a de
greaser.
4. Before cleaning the interior surfaces carefully cover, protect, or remove all ceramics.
5. e interior stainless steel surfaces can be sprayed with a de greaser for best results.
6. For best results on the interior metal, use a steam cleaner or a scrubbing sponge. Be careful not
to use excessive water since this could damage the insulation on the rear, side, and front panels.
7. e lters in the exhaust hood must be cleaned as required by the manufacturer.
8. On a monthly basis, to ensure that the burner is operating eciently, remove the ceramics and
use a paper clip to clean any debris from the burner openings. Additionally the venturi air inlet
gap needs to be cleaned. is can be done using a paring knife or business card.
9. Every 6 months. Clean the sliding door tray and grease the lower slide.
10. Every 6 Months inspect glass doors for chips. If chips found, replace doors as soon as possible.
Replace with tempered glass from local glass manufacturer.

1. In all cases a qualied and licensed electrician and/or plumber must install
the rotisserie machine.
2. In the event a user smells gas, instructions for procedures to follow must be
placed in a prominent location. is information should be obtained by con-
taining your local gas supplier or professional.
3. Improper installation, adjustments, alterations, or service can cause prop-
erty damage, serious injury, or death. Do not attempt to install or service this
machine unless you are a professional.
4. Place the machine in an area that is free of dra and open for accessible for
proper maintenance and use.
5. Keep this machine free and clear from combustibles. Do not store or use
gasoline or other ammables in the vicinity of this machine 6. Do not ob-
struct the ow of combustion and the ventilation of air. Steps must be taken to
ensure machine has adequate air supply
7. Gas Machines use 110V electric for the motor. Do not attempt to connect to
220V
8. Units may only be operated in conjunction with a canopy type exhaust
hood.
