INSTRUCTION FOR USE
1. Foreword
Thank you for choosing one of our products, result of technological research and everyday tests to improve
our product in matter of safety, reliability and performance. Here you can find information and advices to
work safely and efficiently.
2. Introduction
This manual provides instructions for use and maintenance. YOU MUST STRICTLYFOLLOW THE
INSTRUCTION HERE INCLUDED. USE ONLY ORIGINAL SPAREPARTS.
The device is for professional use, so only qualified people are allowed to use it.
Instructions, drawings, charts and everything you can find in this manual are reserved. You can’t divulge
them without written consent of the manufacturer, which is the only owner and, therefore, reserves the right
to make all the changes it will consider necessary, without any notice.In event of dispute, the only valid
version of this text is the Italian one.
3. General Information
We recommend you to read carefully the owner’s instructions, remembering that it is an integral part of this
equipment, and it must be kept with care.
In case of loss or damaging of the presentmanual, don’t hesitateto request another copy of it, specifying the
model and the date of purchase of the product.

4. Elementary safetymeasures
•Unplug beforemaking any kind of intervention on the electrical parts: the contact can
causedeath.
•Don’t usethedevicewith dampor wethands or feet.
•Unplug beforecleaning thedevice.
•Do not insert any screwdriver, kitchen utensil, etc. among the moving components or the
protections.
THE MANUFACTURER DECLINES ANY WARRANTY OBLIGATION IN CASE DAMAGES TO THE
DEVICE, TO PEOPLE OR THINGS HAPPEN DUE TO IMPROPERINSTALLATION AND/OR NOT IN
ACCORDANCE WITH THE EXISTING LAWS.
The deviceis to be use for the only purpose it was designed for: blast chilling/deep freezing/preservation of
foodstuff.
5. General rule
The main features of this device are specified at page 7 and shown in the EC silver label.
6. Preliminarychecks
At the receiving of the product, you must immediately verify the packaging integrity checking if there is
damage due to shipment.
Open the packaging and make sure that all the accessories are present.
If there have been transport damages, please sign the transportation document as “goods uncheck”; within
three days the damagemust be confirmed by recorded delivery letter addressed to the forwarder sending a
copy of it directlyto the producing company or its reseller.
Every claim must be notified within 8 days from the receiving of the goods.
7. Warranty terms
This product is covered by a 12 months warranty starting from the date of the purchase, except for the
electrical components. The spare parts will be eventually supplied under warranty ex works our
warehouse.
Before the delivery of spare parts under warranty, there must be the returning of the damaged goods.

The producing company declines any responsibility in case of improper use of the appliance.
The installation must be performed by a qualified technician.
For any technical problem and any request for assistance or intervention, please take contact with
your authorized dealer or service center only. The necessary information for the dealer or for the
service center are on the CE plate.
8. Installation
Once the device is unpacked, place it in the final spot: the freshest and most ventilated area in the room
guarantee the best performance and lower energy consumption, because the refrigerating system is less
stressed.
Youmust verify the refrigerator leveling and the door alignment, by checking the feet height if necessary.
Check the accessibility of the electric socket.
Take off the coating PVC film inside and outside the device.
The appliancemust use an electric socket equipped with an automatic cut-out, respecting the safety
regulations.
The system earthing is mandatory.
In case the device is kept not in operation for a long time, unplug it from the electric socket.
8.1. Positioning
The installer must verify the presence of fire prevention regulations, and place the appliance in full obedience
of the industrial injuries legislation and the current regulations.
The appliance works with an air condenser, so it is necessary to pay attentionto the placing, keeping free
the side of the incomingof the cooling air.
Besides,it is alsonecessaryto keep it at least at 20 cm from wallor other appliances nearby the air exit, so
as to obtain the best performances.
Do not place the device in narrow or poorly ventilated spaces, do not expose it directly to sun-beams and
heat sources.
8.2 Ambient
Generally, the refrigerators with air condensing units work with a maximum ambient temperature of 30°C.
The declared performances are not guaranteed with higher temperatures.
Note
To correctly install the device:
- Verifythe electricalconnections
- Verifythe absorptionat workingdevice
- Turnthe refrigerator on and let it reachthedesiredtemperature beforefillingit with foodstuff.
If the device has been transported in a non-appropriate way (i.g. non-vertical position or laying on the back),
wait at least 4 hour before switching it on.
The final user must be informed on the right use of the device.
8.3 Cleaning and maintenance
Everyday cleaning and maintenance can be performed by non-specialized staff, only by strictly following the
instructions hereafter.
Before starting any operation, unplug the device!
Washthe internal part with water and neutral detergents, without water jets or abrasive materials. Then, dry
accurately the grids and place them back (do this operation at least every 6 months).
Periodically clean also the condenser, using a brush or a vacuum cleaner: unplug the device before it and be
careful not to bend the aluminum wings.
ATTENTION!!!! The condenser has sharp extremities, make sure to wear protective gloves duringthe
cleaning operations.
The products inside the refrigerator must be placedon the grids, without going beyond the border, in order to
ensure the best air flow.
In order to perform a correct maintenance of the device, the user, the technician or the staff must, first of all,
keep in mind the elementary safetymeasures. It is also mandatory not to remove safety devices and
protections during everyday maintenance.
THE MANUFACTURER DECLINES EVERY RESPONSIBILITY FOR DAMAGES OR INCIDENTS
CAUSED BY THE NON-COMPLIANCEWITH THE HERE ABOVE OBLIGATIONS.
Keeping in mind the previous rules, you should clean the cell daily in order to have the best performance

and hygiene of the foodstuff. Youcan use water and non-abrasive detergents. Wash and rinse using a rag or
a sponge.
DO NOT USE SHARP OR ABRASIVE OBJECT, NOR SOLVENTS OR DILUENTS.
Youmust also keep the condenser clean for a better air flow, keeping also clean from the dust the condenser
wings. In order to have access to the condenser, first thing you must unplug the device, then unscrew the
frontal panel (part 19) without puttingexcessively in tractionthe electrical connection. Use a vacuum cleaner
in order not to spread the dust in the air. Do not scrape with sharp or abrasive objects.
Once the operation is complete, put the frontal panel back paying attention in screwing it back. The
condensed steam is collected in a tray in the bottom part of the blast chiller.
In event of extraordinarymaintenance at the refrigeration system, it is possible to remove the rear panel;
this kind of operationcan be performed only by refrigeration technicians and, in any case, only after having
unpluggedthe device.
Clean up the gaskets with a soft towel and water only, do not use any aggressive and/or corrosive
additive.
8.4 Replacement of the feeder cable
If the feeder cable is damaged, its replacement must be performed by the manufacturer care service or by a
qualified technician. In any case, make sure to unplug the device first.
9. Operational anomalies
If the temperature inside the device has an irregular raise, you must verify at first if:
-Theplugis correctlyconnectedinthe socket
-Thetension is not susceptible of variations of +-10%
In case of anomalies if these two data are correct, you should call the reseller. Inform them on the type of
device and the registration number: both data are shown on the silver label in each device.
10. Correct disposal
Legislative decree n. 151 - 25/07/2005 (ROHS –RAEE)
Implementation of directives 2002/95/CE, 2002/96/CE and 2003/108/CE, concerningthe
reduction of the use of hazardous substances in electronic and electrical devices, as well as
waste disposal (G.U. 29-07-2005 n.175 s.o. n.35)
Correct disposal of this product (wasteelectrical and electronicequipment) (Applicable in the
European Union and other European countries with separate collection systems)
This marking shown on the productor its literature, indicates that it should not be disposed with other
householdwastes at the end of its working life.
Toprevent possible harm to the environment or human health from uncontrolled waste disposal, please
separate this from other types of wastes and recycle it responsibly to promote the sustainable reuse of
material resources.
Household users should contact either the retailer where they purchased this
product, or their local government office, for details of where and how they can take this item for details of
where and howthey can take this itemfor environmentallysafe recycling.
Business users should contact their supplier and check the terms and conditions of the purchase contract.
This product should not be mixed with other commercial wastes for disposal.
Some economic sanctions to the defaulting user are provided for wrong wasting of the products with RAEE
mark.

11. Advice on use
The blast chiller/shock freezer ALEXANDER allows to reduce the product heart temperature: in 90 minutes
from +70°Cto +3°C in the blast chiller function, and in 240minutes from +70°C to -18°C in the deep freezer
function.
N.B. ATTENTION: THE BLAST CHILLER/FREEZER MUST NOT BE USED AS A NORMAL
REFRIGERATINGDEVICE.
N.B. DO NOT INSERT FOOD WITH HIGHER TEMPERATURE THAN 70°C: THE ELECTRICAL
CONTROL DEVICEWILL INDICATE AN ERROR.
In order to obtain the best performancefrom the device, you should pre-cool the empty cell by completing
working cycle (blast chilling or freezing) at least until the reaching of the preservation temperature.
Moreover, to avoid damages to the device:
•Do not leave heated foodstuff insidethe devicewithoutstarting a cycle.
•Start thesuitable working cycleimmediatelyafter having putting the foodstuff in the cell.
•Avoid covering the holders (also with isolatingfilm): the more surface is exposed, the best performance you
canachieve.
•Do not overload thedevice:
5T chilling 16 kg –freezing 12 kg;
10T chilling 38 kg –freezing 25 kg;
15T chilling 60 kg –freezing 45 kg;
•In order to allow a better air flow, leave enough spacebetween theholders.
•Place the holderon theprovided gridsand not directlyon the bottom part.
N.B. REMEMBER TO CHECK PERIODICALLY THE CONDENSED STEAM TRAY ON THE BOTTOM OF
THE DEVICE, AND TO EMPTY IT.
11.1. Features of the product
Considering that the reference time of the cycles start from +70°C (chilling cycle from +70°C to +3°C;
freezing cycle from +70°C to -18°C) :
•Do not leave the food at ambient temperaturefor a longtime: the higheris the humiditylost from the
product, the lower will be thesoftness.
•Put the product inat a temperature higherthan +70°C.

TOUCH SCREEN DISPLAY USE
1. User interface
Hereafter the possible operating conditions:
- “off” (the deviceisnot pluggedin);
- “stand-by” (the deviceis pluggedin and turnedoff);
- “on” (the deviceis plugged in, on and waiting foran operatingcycle to start);
- “run” (the device is pluggedin,on andrunningan operatingcycle).
Then, with “device power on” we define the transition from “stand by” to “on” and with “power off”
the transition from “on” to “stand by”.
If an interruption of the power source occurs during the “stand by” or the “on” operating condition, at the
reactivation the operating condition will be the same as beforethe interruption.
If an interruption of the power source occurs during the “run” operatingcondition, at the reactivation the
device will work in the following way:
- if a blastchillingor a deep freezing were running, the operating cycle will be restarted
takingaccountof theduration of the power source interruption;
- if themaintaining process was running, the cycle will restart with the same settings;
- if a slow cooking process wason, the cycle will restart from where it stopped.
If the interruption of the power source causes the “RTC” code (clock error), time and date must be reset.
Youcan find the time and date settings on the settings screen, service section.

1.1 First starting of thedevice
After approximately 5 seconds, the device will go back to the operating condition where it was before being
unplugged, as follows:
- on theOn/stand-by screen, from where you can go backto the Home screenby clickingon
the central window;
- directly on the Homescreen.

Switching on/off the device
Toswitch on the device, from the On/stand by screen, click on the
central window: the Home screen will appear.

Lock/Unlock the keyboard
If the keyboard is locked, a pop-up will appear when the deviceis on,
indicating that the keyboard is locked and how to unlock it. You can
unlock the keyboard by sliding with the finger to the right.

The device can run the following operating cycles:

It is also possible to run the following functions:

Select the operating procedure
From the “Home” screen you have access to all the operating
procedures of the device, choosing between the available options.

By pressingthe window, you enter the blast chilling modality, that implies the selection/setting of a standard
blast chilling/deep freezing cycle.
By pressing the window, you enter the special cycles modality and choose one of
the special cycles available for the device set-up, for example ice cream hardening,
slow cooking etc.;
By pressingthe window you enter the recipe book section where you can find an
history of pre-set cycles or cycles saved by the user.
This window allows you to choose a cell pre-cooling cycle;
This iconwillappear in caseof alarm.
Pressingthis icon gives you access to a datahistoryrecordedduring the
operatingcycles;
1.5 Blast chilling
By pressing this window, the screen here below will appear:

Then, you can choose between one of the following windows: blast chilling, deep freezing, continuous
cycle, customized cycle.
You can select a standard blast chilling cycle, uploading its default data.
From the same screen, you can select the hard blast chilling cycle: in this case, the
procedure includes two phases at two different temperatures.
You can select a standard deep freezing cycle, uploading its default data.
From the same screen you can select the soft deep freezing cycle: in this case, the
procedureis run in two phases at two different set points. At the end of the deep freezing
procedure, the corresponding maintaining phase will be run, with set points defined by the
chosen deep freezing type.
You can select a blast chilling/deep freezing continuous cycle.
By pressingthis window you can start the procedureto create a customized cycle. This
cycle may have up to four phases. Once the phases are set, you can run the cycle or save
the procedure in the “recipes book” section.
This icon will appear in case of alarm.
A. Blast chilling/deepfreezing
By pressing one of these windows, you can activate a blast chilling or a deep freezing cycle. After selecting
one of the two options, one of the following two screens will appear and the Probe icon will be lit up
in blue. The default standard blast chillingcycles are temperature-based. To switchto a time-basedcycle,
presstheicon Clock : theprobe icon will turn off and the clockiconwill be lit up.

After selecting a cycle, you will visualize the settings uploaded for
that cycle. By pressing the icon Edit it will be possibleto modify
themainsettings on the display.In order to change thetemperature
in different phases of the selected cycle, you can select the“expert”
mode by pressing the icon Expert . Once you complete the different
settings, press the icon Exit to end the phase: a summary screen
will appear, with the data concerning the set cycle, as you can see
hereafter.
Press thewindowSave in order to save theprogram just
set, or thewindowStart to run thecycle.
If the cycle is temperature-based, a test will be run to verify the correct
insertion of the probe in the food to be blast-chilled. If the test fails, the
cycle is automaticallycommuted in time-based: an audible signal will be
followed by the visualization on the display of the alarm icon.
During the cycle, on the display you will see the main temperatures and
a diagram of the temperature trend.
It is possible to end a cycle in every moment by touching the icon Stop
.
Once the blast chilling/deepfreezing cycle is over (because it reached
the target temperature or the time limit) a beep will signal the beginning
of the preservation phase.
B. Hard blastchilling
In the Blast chilling settings display it is possible to set a “hard blast chilling cycle” by pressing the Hard icon
.This cycle has two blast chilling phases at different setpoints, and a following maintaining phase.
- thefirst phase,called “hard”, to blast chill at a set point defined by the related set parameters,
that cannot be modified bythe user;
- thesecond phaseof blast chilling/deep freezing with theset point set upby theuser;
- themaintaining phasewith the set point set up by the user.
At the end of a phase, the controller automatically passes to the following.A beep signals the end of both the
first two steps. It is also possible to select the time-based execution:in this case the transition to the following
step happens whenthetime limitis reached.

C. Soft deep freezing
It is possibleto set up a cycle of “soft deep freezing” from the deep freezing settings, by pressingthe Soft
icon . This cycle has two phases of deep freezing, withdifferent set points,and a following maintaining
phase.
- the first phase, called “soft”, with a set point defined by the relatedset parameters, that
cannot be modified by theuser;
- thesecond phaseof deep freezing withthe set point set up bytheuser;
- themaintaining phasewith the set point set up by the user.
At the end of a phase, the controller automatically passes to the following.A beep signals the end of both the
first two steps. It is possible also for this cycle to select the time-based execution: in this case the transition to
thefollowingstep happens whenthetime limitis reached.
1.6 Continuouscycle
By touching this icon, it is possible to select a cycle in multi-timer mode. Once the cycle is selected, you will
visualize a screen where you can adjust the cell temperature for the continuous cycle (preset).
By pressingtheicon the continuous cycle will start: from here, it is possibleto set up to four different
timers.
When the timing is set and the timer confirmed, the counting automatically starts. Each timer is independent
and, once it is over,it can be set up again to restart the counting.
The cycle ends only whenall the set up timers areover. A beep will signal the end of the counting of each
timer and the display will show a notificationand the value “0 min.” in green.
