cautiontoprotectyourselfandproperty.Placeremainingcoalsandashesinanoncombustiblemetal
containerandcompletelysaturatewithwater.Allowcoalsandwatertoremaininmetalcontainer24
hourspriortodisposing.
• Extinguishedcoalsandashesshouldbeplacedasafedistancefromallstructuresandcombustible
materials.
• Withagardenhose,completelywetthesurfacebeneathandaroundsmokertoextinguishanyashes,
coalsoremberswhichmayhavefallenduringthecookingorcleaningprocess.
• Storethesmokeroutofreachofchildren,indoorsinadrylocationwhennotinuse.
• Ifabristlebrushisusedtocleananyofthecookingsurfaces,ensurenoloosebristlesremainonthe
cookingsurfacespriortogrillingasloosebristlesmayattachtofood.
• Properlydisposeofallpackagingmaterial.

PREPARATION FOR USE
& LIGHTING INSTRUCTIONS
PLACE THE SMOKER OUTDOORS ON A HARD, LEVEL, NON-COMBUSTIBLE SURFACE
AWAY FROM ROOF OVERHANG OR ANY COMBUSTIBLE MATERIAL. NEVER USE ON WOODEN OR OTHER SURFACES THAT
COULD BURN. PLACE THE SMOKER AWAY FROM OPEN WINDOWS OR DOORS TO PREVENT SMOKE FROM ENTERING YOUR
HOUSE. IN WINDY WEATHER, PLACE THE SMOKER IN AN OUTDOOR AREA THAT IS PROTECTED FROM THE WIND.
READ ALL SAFETY WARNINGS AND INSTRUCTIONS CAREFULLY BEFORE OPERATING YOUR SMOKER.
Prior to your first use of the smoker, follow the instructions below carefully to cure
your smoker. Curing your smoker will minimize damage to the exterior finish as
well as rid the smoker of paint odor that can impart unnatural flavors to the first
meal prepared on your smoker.
IMPORTANT: To protect your smoker from excessive rust, the unit must be
properly cured and covered at all times when not in use.
Step 1
Remove the hood and center section before lighting the charcoal. We
recommend the use of charcoal briquettes for your smoker. Lump charcoal or
pre-treated charcoal are not recommended.
WARNING: Never use charcoal impregnated with charcoal lighter fluid. Failure
to follow this warning may result in injury, or fire, causing damage
to property.
Step 2
Make sure that the charcoal grate is properly placed in the charcoal pan.
Step 3
Open the air vent on the base pan.
Step 1
Fill the charcoal pan with approximately 10-12 lbs. of charcoal. Pile the charcoal
towards the center of the charcoal grate.
Step 2
Open the air vent on the base pan.
Step 3
Saturate charcoal with lighting fluid and follow the instructions on the lighting
fluid container. Store charcoal lighting fluid safely away from the smoker.
NOTE: If you choose to use charcoal lighting fluid, ONLY use charcoal
lighting fluid approved for lighting charcoal. Do not use gasoline,
kerosene, alcohol or any other flammable material for lighting
charcoal. Follow all manufacture’s warnings and instructions
regarding the use of their product.
Step 4
Use a long-neck lighter or matches to light charcoal.
Step 5
The charcoal is ready when grey ash is beginning to form on the top of coals.
Spread the coals evenly over the charcoal grate with a pair of tongs or a long
handled metal tool.

Step 6
Place the main body and hood onto the base pan and make sure the
main body and base pan are lined up properly to lock the three latches.
Open the top air vent.
Step 7
With coals burning strong, close the hood and allow the temperature
to reach 250˚ F on the temperature gauge. You may have to close the
bottom air shutter down to achieve this temperature. Maintain this
temperature for 2 hours.
Step 8
Increase the temperature to approximately 300-400˚ F. This can be
achieved by opening the bottom and top air shutters and adding more
charcoal and/or wood (see “Adding Charcoal/Wood During Cooking”
section of this manual). Maintain this temperature for 1 hour then allow
the unit to cool completely.
NOTE: Never exceed a temperature of 450˚ F in cooking chamber. It
is important that the exterior of the smoker is not scraped or
rubbed during the curing process.
YOUR SMOKER IS NOW CURED AND READY FOR USE.
Step 1
Fill the charcoal pan with the approximate amount of charcoal (20 lbs.
maximum). Pile the charcoal towards the center of the charcoal grate.
Step 2
Saturate charcoal with lighting fluid and follow the instructions on the
lighting fluid container. Store charcoal lighting fluid safely away from
the smoker.
NOTE: If you choose to use charcoal lighting fluid, ONLY use
charcoal lighting fluid approved for lighting charcoal. Do
not use gasoline, kerosene, alcohol or any other flammable
material for lighting charcoal. Follow all manufacture’s
warnings and instructions regarding the use of their product.
Step 3

The charcoal is ready when grey ash is beginning to form on the top
of coals. Spread the coals evenly over the charcoal grate with a pair of
tongs or a long handled metal tool.
Step 5
With coals burning well, carefully add wood chunks using long cooking
tongs (see “Flavoring Wood” and “Adding Charcoal/Wood During
Cooking” sections of this manual).
Lighting Instructions

Step 1
Place the main body and hood onto the base pan. Make sure the center section
and the base pan are lined up properly to lock the three latches. Place the water
pan in position on the lower brackets.
Step 2
Using the appropriate container (i.e. pitcher), fill the water pan 1” from top.
Place the lower cooking grate directly above the water pan.
WARNING: Do not spill any water onto the hot coals. This can cause steam and
ash to rise and could cause injury or death.
Step 3
If you are cooking on all three of the cooking grates, place food to be smoked
on the bottom grate before installing the middle and top grates. position the
middle and top cooking grates on brackets.
Step 4
Close the hood and open the vent on the lid.
Step 5
The vents are used to regulate heat within the smoker. Opening the vents
increases the temperature and closing the vents decreases the temperature.
WARNING: Always use protecting gloves or mitts to protect hands and arms.
Step 6
The water in the water pan helps keep the temperature low in the smoker. Check
the water pan every 2 hours. If you notice the temperature going up in the
smoker, fill the pan with more water. You can either pour water through the top
of the smoker or through the top door.
Step 7
To add more wood or charcoal, open the bottom door and using long handled
tongs, set the wood chunks/chips and/or charcoal on top of the burning coals,
and then close the door.
Step 8
The ideal smoking temperature is between 175˚ F and 250˚ F. For large cuts of
meat, allow approximately one hour of cooking time per pound of meat. Always
use a meat thermometer to ensure food is fully cooked before removing from
smoker.
Step 9
When smoking is completed, clean your cooking grates with a grill brush to
loosen and debris and close both vents to extinguish the coals.
Step 1
Unhook the three latches and remove the main body and hood.
Step 2
Add the appropriate amount of charcoal to the charcoal pan for grilling
(5 to 8 lbs.) and follow the “Lighting Instructions” listed in the owner’s manual.
Make sure the bottom air vent is open fully for grilling/searing foods.

Place the cooking grate on the base pans outer rim.

Step 1
Unhook the three latches and remove the main body and hood.

Remove the charcoal pan from the base pan and set to the side.

Put the main body and hood back onto the base pan and latch the three
latches.
Step 4
Open the hood and remove the top cooking grate. Then, place the
charcoal pan on the top brackets.
Step 5
Add the appropriate amount of charcoal to the charcoal pan for grilling
(5 to 8 lbs.) and follow the “Lighting Instructions” listed in the owner’s
manual. Make sure the bottom and top air vents are open fully for
grilling/searing foods.
NOTE: Make sure the hood stays open until flames have gone.
