1 Introduction
1.1 About these operating instructions
These operating instructions contain information that ensures the safe operation of this device. They constitute a compon-
ent of the device and must be stored in a place which is accessible for the user. In order to work safely with the device,
the safety and operating instructions provided must be observed. Compliance with applicable national accident prevention
regulations and general safety provisions must be ensured.
1.2 Copyright
These instructions are protected for the manufacturer by copyright.
The instructions contain guidelines and drawings or parts of drawings of a technical nature, which may not be repro-
duced, distributed, used for the purposes of competition without authorisation or shared with others, either in whole or in
part.
The operator of the device is only permitted to make copies – including extracts – expressly for internal use in connection
with the operation of the device. The manufacturer is entitled to claim damages for any infringements. Further rights re-
served.

1.3 Proper use
– The device is for use by foodservice and related establishments to dry plastic dishes, e.g., cups, plates or cutlery. The
device may only be used if the plastic dishes can withstand temperatures of at least 75 °C in the long term.
– Operate the device only as described in these operating instructions.
– The device is a piece of technical equipment for commercial use and is not intended for private use.
1.4 Improper use
– Do not make any changes, additions or modifications without the approval of the manufacturer.
– Winterhalter Gastronom GmbH accepts no liability for any damage caused if the device is not used as intended.
– Do not dry easily flammable materials such as kitchen or hand towels.
– Do not place any objects on the device. The grease filter must not be covered.

2 Safety notes
Winterhalter Gastronom GmbH assumes no liability or warranty in the event of non-compliance with these safety and op-
erating instructions.
2.1 Operator obligations
The device is used in the restaurant industry and similar businesses (bakeries, butcher’s shops, etc.). The operator is
therefore subject to the legal obligations for occupational safety. In addition to the warning and safety information in these
operating instructions, the operator must comply with the current provisions regarding safety, accident prevention and en-
vironmental protection for the area of application of the device. To ensure safe use of the device, the operator must take
the following measures:
– Arrange for the device to be connected by authorised personnel according to the locally applicable standards and reg-
ulations.
– Provide the user with information on the provisions regarding occupational safety.
– Ensure that only personnel who have read and understood the operating instructions and safety notes and are trained
in handling the device work with it.
– Refer users to the safety notes and inform them of potential dangers. Repeat training sessions at regular intervals to
prevent accidents.
– Arrange for the Winterhalter customer service team or a specialist dealer to provide instruction in operating the
device.
– Provide the instructions to the user and keep them in a safe place.
– Operate the device only when it is in perfect technical and hygienic condition.
2.2 User obligations
In addition to the warning and safety information in these operating instructions, the user must comply with the current
provisions regarding safety, accident prevention and environmental protection for the area of application of the device.
In particular, the user must take the following measures:
– Adhere to the applicable occupational safety regulations.
– Follow the allocated responsibilities for installation, operation, maintenance and cleaning.
– Read the operating instructions and safety notes.
– Work with the device only after receiving training.
– Operate the device only when it is in perfect technical and hygienic condition.
– Ensure cleanliness and tidiness around the device.

2.4 Mechanical dangers
– In order to avoid the risk of slipping on wet floors when operating the warewasher, prevent dirt from accumulating on
the floor and wear non-slip footwear.
– In order to avoid cutting injuries on sharp metal edges, wear protective gloves for assembly and repair work.

– Rusting foreign bodies inside the warewasher can cause even “rust-free stainless steel” to corrode. Use only undam-
aged wire grate baskets, rust-free wash items and suitable cleaning utensils to ensure that water pipes are protected
from rust.
– In the case of installation and operation in vehicles, follow the additional requirements for unstable surfaces.
2.5 Electrical dangers
– The device many only be connected to the electrical mains supply by a specialist electrical company approved by the
energy supplier.
– Work on the electrical system, installation and maintenance work and repairs may be carried out only by qualified
specialists. The electrical engineering safety rules must be observed to avoid electrical accidents:
– Disconnect all poles from the power supply.
– Secure the machine to prevent it from being switched on again.
– Ensure that there is no voltage.
– Earth and short circuit.
– Cover or cordon off neighbouring parts that are live.
– The electrical safety of this device is guaranteed only if it is connected to a correctly installed protective circuit.
Winterhalter cannot be held responsible for damage caused by a missing or broken protective conductor (e.g. electric
shock).
– If the mains cable is damaged, it must be replaced by Winterhalter, its customer service team or another qualified per-
son to prevent danger. The mains cable must be a H07RN-F type or equivalent.
– Touching live components can lead to death by electric shock. In the event of a defect or damage to an electrical
component / cable or its insulation, switch off the power supply immediately and arrange for repair by a specialist.
– Never insert or pull out the mains plug with wet hands.
– Never remove the plug from the socket by pulling on the cord.
2.6 Maintenance, repair and spare parts
– Only service technicians who have been trained and authorised by Winterhalter are permitted to carry out mainten-
ance work and repairs. Improper maintenance or repairs may cause significant danger to the user, for which
Winterhalter cannot assume liability.
– Only original Winterhalter spare parts may be used for maintenance and repairs. If original spare parts are not used,
the warranty is invalidated. The information in the spare parts catalogue is definitive in this respect.
– Arrange for an installer or an electrician to remedy on-site water and electricity supply malfunctions. Arrange for other
malfunctions to be remedied by an authorised service technician or dealer.

3 Device description
3.1 Description of function
Fresh air is sucked in via a grease filter, warmed in the drying device and blown into the interior. This dries the wash
items with warm air from above and below. The energy-saving ECO programme dries the wash items with cold air.

4.1.1 ECO programme

The PIN for accessing the chef menu is entered in this
menu.

4.3.1 Changing programme parameters
The chef can change specific programme parameters. An authorised service technician can change other parameters,
such as the drying temperature or turning on or off the ECO mode.
ØSelect the desired parameter with the and buttons.

5 Commissioning
5.1 Setting up the device
Set up the device according to the assembly instructions.
5.2 Electrical connection
DANGER
Electric shock due to live components
A fatal electric shock can occur when the device is connected to the electrical mains supply.
ØThe device must be connected by an electrical company authorised by the relevant electricity supplier
as per the locally applicable standards and regulations.
ØLocally applicable standards and regulations must be observed when connecting to the electrical mains
supply.
ØConnect the protective circuit according to the instructions.
ØDisconnect the device from the electrical mains supply.
ØCheck that there is no voltage.
ØThe electrical safety of this device is guaranteed only if it is connected to a correctly installed protective circuit.
ØThe wiring diagram must be observed.
ØThe device may be operated only at the voltages and frequencies specified on the rating plate.
ØFor devices delivered without a plug, a fixed connection must be installed as an overriding priority.
ØWe recommend installing a mains isolation switch with all-pole disconnection from the mains supply in the case of a
fixed connection (without plug) so as to be able to ensure the absence of voltage during installation and maintenance.
ØThe electrical connection must be secured as a separately fused circuit with slow fuses or circuit breakers. The fuse
protection depends on the total connected load of the device. The total connected load is specified on the rating plate
of the device.
ØIf a residual current circuit breaker is provided on-site, we recommend installing a Class B all-current sensitive resid-
ual current circuit breaker.
ØDevices delivered from the factory that are fitted with a mains cable and a CEE plug (triple-phase) may only be con-
nected to the mains network indicated on the rating plate. Devices may only be connected to an individually protected
safety socket. Do not use extension cables or multi-socket adapters.
Connecting the device
The device must be connected by an electrical company authorised by the relevant electricity supplier as per the locally
applicable standards and regulations.
ØCAUTION!Possible risk of injury due to sharp edges! Wear protective gloves.
ØRelease the screws behind the upper cover.
ØRemove the cover (1).
ØFit the cable gland (2).
ØGuide the mains cable (3) through the cable gland.
ØTighten the cable gland.
ØReplace the cover (4).
ØConnect the mains cable on-site.

Note:We recommend installing a mains isolation switch with all-pole disconnection from the mains supply in the
case of a fixed connection (without plug) so as to be able to ensure the absence of voltage during installation and
maintenance.
Establishing equipotential bonding
ØInstallation with base tray (front loading): Connect the device to the on-site equipotential bonding system via the
stud on the bottom of the base tray.
ØInstallation without a base tray (passthrough-/ corner installation): Connect the device to the on-site equipoten-
tial bonding system via the screw connection (4 screws) to the warewasher table.

6 Operation
6.1 Switching on the device
ØPress the button for 3 seconds.
ðThe display lights up green.
ðThe device is in stand-by mode.
6.2 Selecting a programme
ØNavigate left and right with the and buttons.
ðThe programme highlighted in black is selected.
6.3 Starting the programme
ØTo start the programme, slide in the rack.
ØIf the rack holder does not register the rack or if it is defective, start the programme by pressing the button.

The multi-rack programme offers a variety of operation options.

Rack-to-rack
Note:If the drying programme has ended and the rack remains in the device for longer than 60 seconds, and the but-
ton has not been pressed, programme selection is displayed again.
6.3.4 Multi-rack programme plus
Operation of the multi-rack programme plus is identical to the operation of the multi-rack programme. However, the heat-
ing shut-off delay is unlimited. The device dries as long as it is switched on and the rack has started a programme for the
first time.
6.4 Cancelling the programme
ØCancel the programme with the button.
6.5 Switching off the device
ØPress the button.
ðThe display is not lit.
ðDevice is switched off.

7 Notifications
In the event of incurable errors:
ØSwitch off the device.
ØDisconnect from the power supply.
ØCommission an authorised service technician with the repair, and notify them of the error code (ERR X).
7.1 Warnings
– In case of warnings, the display lights up yellow.
– Operation remains possible with limited heating output.
ØPress the button several times to return to the pro-
gramme overview.
7.2 Errors
– In case of errors, the display lights up red.
– Operation is no longer possible.

gramme overview.
