Procedure for Returning BE&SCO Parts:
1. Call BE&SCO Parts Department at 1-800-683-0928 or email [email protected]. At this time you
may request a repair and return, advance replacement or a credit of the component. The Parts Department
will then issue you an RA (Return Authorization) number to return the BE&SCO part. After you are issued
an RA number. You have 10 working days to return the old part for full credit or you will be invoiced for the
new part.
2. Package the component and a detailed description of what is wrong with the component. Write the RA
number on the outside of the package in a visible place and send the return to:

To obtain warranty on return parts the customer or the end user will be responsible for that particular item to be
shipped back to BE&SCO. Freight is not covered under warranty, going or coming. BE&SCO recommends
that you insure any parts that are being returned to BE&SCO, as BE&SCO Inc. is not responsible for any
damage or loss that occurs during shipping. If the part is damaged or lost during shipping, BE&SCO will not
be responsible for repair or replacement of the parts.
Returning BE&SCO Parts:
To return any BE&SCO parts you must follow BE&SCO’s procedure for returning. No returns will be accepted
outside of this procedure. BE&SCO warrants parts for 1 year or 3000 hours, which ever comes rst, for full
credit. This does not include wear and tear items as stated in our manual.
This warranty does not cover any defect due to or resulting from handling, abuse, misuse, improper
maintenance and cleaning, or harsh chemical action, nor shall it extend to any unit from which the serial
number has been removed or altered, or acts of God. Adjustments such as calibrations, leveling, tightening
of fasteners or plumbing connections normally associated with original installation are the responsibility of
the dealer or installer and not of BAKERY EQUIPMENT & SERVICE CO., INC.

Storyboards
The laminated poster included in your shipment is called a Storyboard. A
Storyboard describes how to operate or care for the machine in an easy, quick
format. It should be posted on a wall close by the machine. Both front and back
have the same information but in two different languages - Spanish and English.
Delivery & Damage
We tightly pack all our equipment and strap them on heavy wooden skids
before giving them to the shipping company. After we give the merchandise to the
shipping company, they are responsible for delivering your purchase; therefore,
BE&SCO will not be responsible for the loss or damage of your shipment. If you
nd your purchase damaged call the shipping company.
Wedge Press Manual
The Wedge Press manual explains how to clean, maintain, and troubleshoot
while operating the Wedge Press, as well as how to make dough, how to make
tortillas, and how to change the size of tortillas. The Beta Max manual covers the
set-up of each unit, how to use the Wedge Press with the Beta Max, and cleaning
and maintaining the oven. Please use both manuals when making tortillas.

Oven Placement
Placement of the unit must meet all the following standards.
• Base part of the placement on where the Exit Conveyor is. Watch how it
comes from the right-hand side of the Wedge Press in the diagram below.
• Put it in an open work area. This way anyone can use the Beta Max easily.
• An area where ventilation will not be blocked.
• Far from any strong air currents.
• On level ground, not on a curb base.
• Six (6) inches (152) away from any combustible material.
• At least 2 feet (24 inches) distance, all the way around the machine, from any
wall.
• Where your gas and electrical outlets match the Beta Max specications.

Installation Requirements (for Qualied Service Person)
A Qualied Service Person will be responsible for completing the work in
the sections listed below. Anyone else doing so could easily damage the Beta
Max, hurt him or himself, and void the warranty.

A Qualied Service Person is an employee of a rm, a corporation or a
company that will:
1. Install, connect, repair, service, and replace parts of Beta Max either electrical
mechanical.
2. Follow rules and regulations of the National Electrical Code, ANSI /INFPA 70
or Canada’s CSA STD. C22.1, or any other local codes.
3. Follow all rules and regulations of the National Fuel Gas Code, NFPA 54-
1984 and ANSI z223.1-1984, Section 1.4 and Canada’s “Installation
Codes for Gas Burning Appliances and Equipment” CAN-I-B149.1 and
B149.2.

Electrical Specications
The Beta Max works on the 120 volt grounded circuits. The voltage and phase
must be compatible with the intended power supply to safely operate. Any installation
not matching the electrical specications for the machine will void the warranty and may
damage the unit. Installation must follow rules and regulations of the National Electrical
Code, ANSI/ INFPA 70 or Canada’s CSA STD. C22.1, or any other local codes.

Gas Piping (for Qualied Service Person)
Gas piping must agree with local codes or to the National Fuel Gas
Code, NFPA 54-1984 and ANSI Z223.1-1984. The gas usage and information is
listed below.
• The gas pressure regulator presets at 3.5 inches of water column pressure
, (.87 KPa) at the gas manifold.
• While the burners are on, the unit will run 100 Cubic feet (2.84 cu.m) at
100,000 BTU’s per hour (29.3 KW) of natural gas. Make sure your gas sup-
plier can meet this standard.
• Gas piping system ought not to run excess of ½ psig (3.45 KPa).
a) If the gas supply piping system tests at ½ psig (3.45 KPa) or less,
close the manual shutoff valve to isolate that system.
b) If the gas supply piping system tests in excess of ½ psig (3.45 KPa),
disconnect the shutoff valve from that system.
• Before connecting the Beta Max, make sure the gas line is all clear. After
connection, check gas pressure.
• The gas piping system should be able to meet the maximum demand of all
appliances on that line without pressure loss.
• Do not install a regulator to gas supply unless gas line pressure exceeds 5.5”
W.C.

Assembly Instructions (for Qualied Service Person)
The Beta Max comes put together for the most part, except for the oven
hood and conveyor. To complete the assembly,
1. Seat the oven hood on top of the oven over the ange.
2. Put the 6” vent pipe over the hood vent pipe.
3. Attach conveyor to base of oven and support chain to conveyor.

Ventilation (for Qualied Service Person)
A well-designed ventilation scheme will allow the oven in the Beta Max to
release unwanted vapors with ease. Because the Beta Max uses the air in the
room while it operates, and the direct vent cannot restock the air supply, make
sure about 30 CFM is available for use. Failure to vent the oven will result in
major operational problems. If need be, consult a ventilation expert to increase the
supply of air entering the room. Also if you nd the oven does not rise to the set
temperature or the ame lifts from the burner, the damper, built into the hold, may
need adjusting.
Initial Adjustments (for Qualied Service Person)
The installation remains unnished until some adjustments, tests and an
inspection of the machine are done. The warranty does not cover these adjustments.
They include, but are not limited to,
• Calibration of the thermostat
• Tightening of fasteners
• Burner adjustment
• Testing of gas pressure
• Leveling the unit by adjusting the legs.
• Adjusting the conveyor to an angle of 20 degrees (max.)
• Positioning the damper in the hood vent for the burner to run in top form.

Wedge Press Placement
1. Place the Wedge Press on top of the stand.
2. Lower the Oven Chute Heat Shield about 1”.
3. Set the operating temperature.
4. Place Wedge Press Exit Slide through the Oven Chute about 1”.
5. Tortillas should slide down Exit slide, through Oven Chute, and land on the
without hitting the shaft. If tortillas hit the oven shaft, move the Wedge Press
further from the Oven Chute or slightly bend or atten Exit Slide until the
problem is solved.

Oven Control Panel
1. The MASTER POWER SWITCH is a red mushroom-head button. This switch
shuts off power to the oven sections in an emergency and for servicing.
2. The AUXILIARY SHUT OFF is a red mushroom- head button that powers
the oven. Pull to turn power ON and push to turn OFF power.
3. The HOUR METER tracks the operation time in hours.
4. The CONTROL FUSES protect the oven from a power overload.
5. OVEN SPEED knob changes how fast the oven plates turn. Factory set at
speed 4.
6. The IGNITOR SWITCH powers the Spark Igniter. When OFF, the oven
plates can rotate without the burners. When ON, the oven plates can turn
with burners ON.

1. The HOUR METER tracks the operation time in hours.
2. The MASTER SWITCH is a red mushroom head button that turns power ON and OFF. It also acts as
an emergency shutdown switch.
3. PRESS MOTOR SWITCH turns power to the Press Plates ON & OFF.
4. TEMPERATURE INDICATOR/ CONTROLLER controls the temperature of the Press Plates.
5. PRESS SPEED knob changes the speed of the Bottom Press Plate rises and falls, and the rate of the
Hopper Gate opens and closes.
6. CONTROL CIRCUIT FUSES prevents from any power supply overload from damaging the machine.
7. PRESS MOTOR FUSE protects the oven motor from power overload.
8. DATA PLATE identies the machine for servicing.
9. INSTRUCTION & CAUTION PLATE explains basic care and operating machine.

Changing Temperature
On the Temperature Controller:
Press FUNC key. The letters SP appear in lower display window. Press Up or
Down change temperature. Press FUNC key twice and wait until the new numbers
show. You have set a new temperature. Allow the machine to heat for few minutes
before making tortillas. The machine will rise above the new setting, and settle at a set
temperature.
Pressing the function key repeatedly will scroll through a variety of pre-settings.
The factory preset and locked the other settings. You can only change the SP mode. If
you have any problems, please call your Qualied Service Person.
