Congratulations on the purchase of your new Breville ikon Electric Knife Sharpener. We at Breville are very
safety conscious. We design and manufacture consumer products with the safety of you, our valued customer,
foremost in mind. In addition, we ask that you exercise a degree of care when using any electrical appliance
and adhere to the following precautions:
IMPORTANT SAFEGUARDS FOR YOUR
BREVILLE IKON ELECTRIC KNIFE SHARPENER
•Carefully read all instructions before operating and
save for future reference
•Remove any packaging material and promotional
labels before using the knife sharpener for the
first time.
•Do not place the knife sharpener near the edge of a
bench or table during operation. Ensure the surface
is level, clean and free of liquid or other
substances.
•Do not place the knife sharpener on or near a hot
gas or electric burner, or where it could touch a
heated oven.
•Do not use on metal surfaces, for example, a sink
drain board.
•Always ensure the knife sharpener is properly
assembled before connecting to the power outlet
and operating.
•The appliance is not intended to be operated by
means of an external timer or separate remote
control system.
•Always ensure the knife sharpener is turned off at
the power outlet and the cord is unplugged before
moving the appliance, when not in use, if left
unattended and before cleaning or storing.
•Do not place any part of the knife sharpener in
the dishwasher.
•Keep the appliance clean. Follow the cleaning
instructions provided in this book.

SPECIAL SAFETY INSTRUCTIONS
•Do not attempt to operate the knife sharpener
by any method other than those described in
this booklet.
•Do not leave the knife sharpener unattended
when in use.
•Handle all knives to be sharpened with extreme
care – before and after sharpening.
•Ensure knives to be sharpened are clean and dry.
•Ensure knives to be sharpened are straight-edged.
Do not sharpen serrated-edged knives.
•Make sure that only the blade of the knife to be
sharpened comes in contact with the rotating
ceramic pins of the sharpening wheel.
•ever insert your fingers or other items into the
rotating ceramic pins of the sharpening wheel.
Keep hands, hair and clothing away from the
knife sharpener when the appliance is switched
on and the ceramic pins of the sharpening wheel
are rotating.

•Unwind the cord fully before use.
•To protect against electric shock, do not immerse
cord, plug or appliance in water or any other liquid.
•Do not let the cord hang over the edge of a bench
or table, touch hot surfaces or become knotted.
•This appliance is not intended for use by young
children or infirm persons without supervision.
•Young children should be supervised to ensure they
do not play with the appliance.
•This appliance is for household use only. Do not
use this appliance for anything other than its
intended use. Do not use in moving vehicles or
boats. Do not use outdoors.
•It is recommended to regularly inspect the
appliance. Do not use the appliance if the power
supply cord, plug or appliance becomes damaged
in any way. Return the entire appliance to the
nearest authorised Breville service centre for
examination and/or repair.
•Any maintenance, other than cleaning, should be
performed at an authorised Breville Service Centre.
•The installation of a residual current device (safety
switch) is recommended to provide additional
safety protection when using electrical appliances.
It is advisable that a safety switch with a rated
residual operating current not exceeding 30mA
be installed in the electrical circuit supplying
the appliance. See your electrician for
professional advice.

Before first use
Before using your knife sharpener for the first time,
remove any packaging material and promotional
stickers and labels. Ensure the appliance is
switched off at the power outlet and the power
cord is unplugged.
Step 1
Collect the knives you wish to sharpen and ensure
they are clean and dry.
Step 2
Place the knife sharpener on a flat, dry surface such
as a bench top. Insert the power plug of the knife
sharpener into a 230/240V power outlet and switch
the power on.
The knife sharpener will only sharpen straight
edged, stainless steel or carbon steel knives. Do
not use serrated knives with the knife sharpener.

Step 3
Hold the knife you wish to sharpen in your right hand.
Switch the knife sharpener on by pressing and
holding down the On/Off button with index finger of
your left hand.
Step 4
Hold the knife firmly by the handle and ensure that
the blade edge it is held straight, horizontally, and
aligned with the rotating wheel (refer to image fig.1
and 2). Place the thickest part of the blade (located
just above the handle) into the ceramic sharpening
pins of the rotating wheel. With slight pressure, pull
the knife slowly towards you so that the blade of the
knife, from the thick end of the blade to the tip,
passes through the ceramic sharpening pins (this will
take approximately 3 to 4 seconds). Switch the knife
sharpener off by releasing the On/Off button.

Step 5
Repeat Step 4, three to five times and then carefully
check the sharpening results. If necessary repeat
Step 4 until the desired sharpening is achieved.
A honing steel can be used in between using the
electric knife sharpener to maintain the life and
quality of your knife.

How often knives require sharpening will vary
with usage. Knives that are used often will need
to be sharpened more frequently than knives that
are rarely used.

Step 6
Switch the knife sharpener off by releasing the On/Off
button. Switch off at the power outlet and remove the
power plug.
Step 7
Carefully wipe the sharpened blade of the knife with
a soft damp cloth to remove any residue metal
filings. Dry thoroughly with a soft cloth.
Care for knife blades by storing knives individually
in knife blocks, separate drawer compartments or
pouches. Storing knives with other utensils can
damage and blunt the sharpened blade edges.

Ensure the knife sharpener is switched off by
releasing the On/Off button. Then switch the
appliance off at the power outlet and remove
the power plug.
Wipe the outer housing with a damp cloth and
dry thoroughly.
Use a clean, dry pastry brush to clean around the
ceramic sharpening pins and remove any residual
metal filings. (refer to fig.3)
Any excess metal filings that may collect under the
ceramic sharpening pins of the rotating wheel of the
knife sharpener, can be removed by unscrewing the
compartment cover positioned underneath the
appliance. Gently shake and/or use a vacuum cleaner
to suck out the residual filings from the opening.
Then place the cover back on the compartment and
screw firmly back into position.
Storage
Ensure the knife sharpener is switched off and
cleaned before storing. Stand the knife sharpener
upright on the feet under the base. Do not place
anything on top of it.
